1: This Cookbook is inspired by all of the talented cooks in the family.

2: Aunt Emma | Grandmother's Old Fashioned Teacakes | 1 cup of sugar 1/2 cup of shortening 2 eggs 1 tsp vanilla 2 cups of flour 2 tsp baking powder 1/2 tsp salt Cream sugar and shortening well. Add eggs and flavoring and blend. Fold in dry ingredients. Bake at 350.

3: Aunt Emma | Old Fashioned Ginger Snaps | 3/4 cups real butter 1 cup sugar 1/4 cup dark molasses ( grandma's brand) 1 egg 2 cups flour 2 tsp soda 1/4 tsp sal1 1 tsp ground ginger Cream sugar and butter. Add egg and molasses. Beat well. Stir together dry ingredients. Gradually add to creamed mixture. Chill dough. Roll out thin. Bake at 375 for 10 minutes.

4: Flap Jacks 1 1/2 cup flour 1 tsp salt 1/4 tsp baking powder pinch soda buttermilk Cook like pancakes Pineapple filling (for Aunt Emma's Cake) 1 number 3 can crushed pineapple 1 cup sugar 1 tbsp flour 1/8 tsp salt 4 tsp butter Mix and cook until thick. Spread on vanilla cake. Ice with vanilla icing. | 1 1/2 cup flour 1 tsp salt 1/4 tsp baking powder pinch soda buttermilk Cook like pancakes

5: Cream and Sugar Pie (Grandmother Cammack's recipe, over 120 years old) Aunt Emma's Grandmother 1 cup of sugar 2 c whipping cream 2 tbsp flour 1/8 tsp salt 2 eggs beaten 1 tsp vanilla 1 pkg dried peaches or apricots 1 pie shell Cook peaches or apricots with enough water to cover. When tender drain off and mash. Sweeten to taste. Place in unbaked pie shell. Combine sugar, flour, salt. Add whipping cream and eggs. Stir until sugar is dissolved. Add flavoring. Pour into pie shell. Bake at 400 for 10 minutes, then reduce heat to 350 and continue baking until custard is set.

6: Three Wonderful Pies from Aunt Emma | Sweet Potato Pie 1 1/2 cup mashed potatoes 1 c carnation milk 1/2 cup butter pinch of salt 1/2 tsp nutmeg 2 whole beaten eggs 1 cup sugar Mix well and pour into unbaked pie shell. Bake until crust is brown and filling is firm. Pecan Pie 3 eggs beaten 1 cup light karo syrup 1/2 tsp salt 1 cup sugar 2/3 c pecans 1 tsp vanilla Mix all and pour into unbaked pie shell. Bake in hot oven 10-15 minutes. Reduce heat and bake until inserted knife comes out clean. Buttermilk Pie 1 1/3 cup sugar 3 tbsp flour 2 eggs 1 cup melted butter 1 cup buttermilk 1 tsp lemon extract 1 tsp vanilla Combine sugar and flour . Beat eggs and add. Add butter and buttermilk. Add flavoring. Pour into unbaked pie shell. Bake until crust is brown and filling is firm.

8: Fresh Apple Cake ( or pear) 4 c chopped apples 2 c sugar 1 c oil soak for 1 hour 2 eggs beaten 3 c flour 1 tsp cinnamon 2 tsp soda 1 tsp salt 1 tsp vanilla. Add to above mixture, then add nuts and 1 c dates. Bake 1 hr 15 minutes at 325 degrees. | Banana Bread ( monkey bread) 1 3/4 c flour 1 1/2 c sugar 1 tsp soda 1/2 tsp salt 2 eggs 2 ripe bananas, mashed 1/2 c oil 1/4 cup buttermilk 1 tsp vanilla In a large bowl, stir together flour, sugar, soda, salt. In another bowl combine eggs, bananas, oil, buttermilk and vanilla. Add to flour mixture and stir well. Fold in nuts and pour into greased loaf pan. Bake at 325 for 1 hour and 20 minutes.

9: Aunt Emma Sweet Potato Casserole 3 cups mashed potatoes 3 /4 stick butter 1 cup canned milk 1 1/2 cup sugar 2 eggs 1/2 tsp each of vanilla and nutmeg Mix potatoes, butter, milk, sugar, eggs and flavoring. Pour into greased baking dish. Bake at 425 for 15 minutes. Topping: 1 cup crushed cornflakes 1/2 cup nuts 3/4 stick butter 1/2 cup brown sugar Melt butter and brown sugar. Add nuts and cornflakes. Spread over top of potatoes and bake 15 minutes at 400 degrees.

10: 1 fryer, boiled and deboned 1 skillet cornbread celery and onion boiled together cream of chicken soul cream of celery soup 5 boiled eggs grated (optional) 6 slices white bread 6 raw eggs Enough broth to make soupy Cook at 375-400 in glass dish Cornbread 1 cup buttermilk 1 egg (put in last) 1 cup cornmeal heaping spoon of baking powder soda (little on end of spoon) little less than 1/2 cup flour not quiet 1 tsp salt Cook at 425 | Granny's Chicken and Dressing

12: Great desserts from Mom Strawberry pie Bottom layer: 1/2 of following 8 oz cream cheese 8 oz cool whip 1 cup sugar 1 tsp vanilla Put in cooked crust 1 1/2 cup water 3/4 cup sugar 2 tbsp cornstarch 1 pkg strawberry jello Cook until thick and cool. Put in crust and push in berries. Top with coolwhip. Banana pudding 1 twelve oz vanilla pudding mix 3 cup cold milk Beaten with pudding Add 1 can Eagle Brand milk Layer with bananas, cookies, and cool whip two times. Takes two 8 oz cool whip Blueberry Delight Graham cracker crust top with 8 oz cream cheese, 1 cup powdered sugar and 1 cup cookwhip. Top with blueberry pie filling and coolwhip.

13: Chess Pie 3 eggs beaten with fork 1 1/4 cup sugar 1 1/2 tsp cornmeal 1 tsp vanilla 1 tbsp lemon juice 1 tsp flour 1 stick butter 1/4 cup milk 1/8 tsp salt Beat all with fork. Preheat oven about 10 minutes. COok 35-40 minutes then turn oven down. Chocolate Charleston Pie 1 cup sugar 1/2 c flour 2 eggs 1 stick butter 1/2 cup pecans 1 cup chocolate chips Put in pie crust and bake on 350 for 40 minutes.

14: Brisket 2 tbsp liquid smoke 1 1/2 tsp salt 2 tsp worstershire sauce 1 tsp all seasoned salt 1 tsp pepper Rub over meat and wrap in heavy foil. Bake at 225 for 14-16 hours. Hot Water Cornbread 1 1/2 cup meal 1 tsp salt pinch soda 1/4 tsp baking powder 1 tsp flour 1 egg Hot water Fry in hot grease Chili 2 lbs ground meat, 2 tbsp flour and 1 large onion browned together. 2 cloves garlic. Put all together and add 1 can tomato sauce, 1 oz chili powder, 1 tbsp cumin, 2 tbsp paprika and 4 cups of water. Simmer 1 1/2 hour

15: Moma | Ice Cream | 6 eggs, beat whites separate 3 cups sugar 2 tbsp flour 2/3 tsp salt 3 cans pet milk 6 tsp vanilla Beat and finish filling with milk

16: Best fruit salad ever | 2 cans freestone peaches 1 can fruit cocktail 2 bananas strawberries 1 can chunk pineapple 1 pkg vanilla pudding. Save 1 cup juice from peaches and pineapple and beat with pudding. mix together. Mini Pecan Pies 3/4 c brown sugar 1 tbsp melted butter 1 egg 1 tsp vanilla 2/3 c chopped pecans Beat together. Drop in shell and bake at 325 for 30 minutes. Crust: 1 cup flour 3 oz cream cheese 1 stick butter pinch salt Cream together and refrigerate over night. Roll into balls and make crust.

18: Some of my Favorites Basic Pie 1 cup sugar 2 tbsp flour 2 tbsp cornstarch (mixed together) 3 egg yolks, 1 1/2 cup milk, 1 tsp vanilla, 2 tbsp butter Cocoa (1- 2 tbsp) or coconut or pineapple or raisins Meringue 3 egg whites, 6 tbsp sugar, 1 tsp cream of tarter, 1 tsp vanilla Chicken and Dumplings From Betty Baker 1 chicken boiled and deboned 1 can cream of chicken soup 1 cup boiling water 1/2 cup crisco 1 tbsp salt 1 egg 2 1/2 cup flour Pour boiling water over shortening. Gradually add flour, salt and egg (last). Knead down and let sit 20 minutes. Knead again, Roll out thin and cut into strips. Drop into boiling water until all is in. MIx small amt of broth with soup and add to dumplings Add chicken. oOok until dumplings are tender, do not overcook.

19: Favorite Vacation Foods | Corn Fritters from the Old Mill in Pigeon Forge, Tn 1/2 cup bread flour 1/2 cup self rising flour 2 tbsp milk 1 tbsp melted butter 2 tbsp sugar 1 egg 1/2 tsp baking powder 1/4 cup frozen cream style corn Drop by spoon into hot grease Corn Chowder from the Old Mill 1 tbsp butter, 3 cups chopped onion, 3/4 unsalted oyster cracker crumbs, 1/4 c flour, 2 c water, 1 c clam juice, 3 c diced potatoes, 2 c half and half, 2 c frozen corn kernels, 1 red and 1 green bell pepper- sauted. mix liquids and butter. Add potatoes and onion and cook until done. Add cracker crumbs, flour and seasonings (blended) . Add peppers. Bring to boil Add cream and corn. Simmer for 20 minutes. Applesauce Muffins from the Apple Barn in Pigeon Forge, Tn 1 cup butter, 2 cups sugar, 2 eggs, 2 cups applesauce, 2 tsp soda, 4 cups flour, 1 tbsp cinnamon, 1 tbsp allspice, 2 tbsp vanilla. Preheat oven to 350. Cream butter and sugar. Add eggs, Add applesauce and dry ingredients. Bake 15 to 20 minutes.

20: Cream Cheese Cake 2 cups sugar 5 eggs separated 1 stick butter 1 cup buttermilk 1/2 cup crisco 2 cups cake flour 1 tsp vanilla 1 tsp soda Beat egg whites. Cream other ingredients, Fold in whites. Bake at 325. Icing 4 oz cream cheese, 1/2 stick butter, 1 cup pecans, 1 box powdered sugar, 1 tsp lemon flavoring. Chocolate Cake 2 stocks butter 2 cups flour 4 tbsp cocoa 2 eggs 1 cup water 1/2 cup buttermilk 1 cup sugar 1 tsp soda Mix butter, cocoa, water. Bring to boil. Mix sugar and flour. Add eggs, buttermilk and soda. Bake at 350. Icing: 1 stock butter, 6 tbsp buttermilk, 4 tbsp cocoa,1 tsp vanilla. Bring to boil, cook and add powdered sugar. | Ms. Hills Famous Cakes

21: 1/2 pound butter 1 1/2 cup dark brown sugar 1/2 cup dark karo syrup 1/2 cup buttermilk 1 tsp soda 2 cups cake flour 1 tsp cinnamon, cloves, allspice, nutmeg 6 eggs 2/3 cup fruit juice 1/2 tsp salt 1 cup raisins 1 lb pecans 1 lb mixed candied fruit 1/2 cup cherries 1/2 cup pineapple Small box chopped dates Mix and bake at 325 for 1 hour. | Christmas Cake

22: How to can corn Shear off, grease boiler. Get hot enough to bubble stirring constantly. Cool with ice and put in bags. To cook, defrost, add sugar and salt. Cook. Add butter and cook until it bubbles on 350 degrees.

23: Name | To can peas Bring almost to boil and cook with ice. Put in sacks. To cook while still frozen put two spoons of salt, start to boil, put back grease. Turn down and cook 45 minutes.

24: Name | Bubba's Recipes | Hot Rolls 2 1/2 tbsp fast acting yeast, 3/4 cup warm water, 1/4 cup sugar. Mix and set aside 10 minutes. In large bowl mix 2 c warm water or milk, 1/2 cup oil. Add yeast mixture then add 7 cups of flour and 1 tbsp salt. Set aside covered and let rise to double. Beat down and knead for two minutes. Make into rolls. Brush with butter, Let double again. Bake at 375 and brush with butter.

25: Biscuits 2 1/2 to 3 cups of flour, 1 tsp salt, 1 tsp soda, 1 tbsp baking powder, 1/3 cup oil, 1 to 1 1/3 cup buttermilk. Make swell with dry ingredients. Put liquid in middle. Knead and roll out in greased pan. Bake at 375 for 20 minutes. Italian Cream Cake 1 stick butter, 2 cups sugar, 5 egg whites,, 1 tsp soda, 1 tsp vanilla, 1 can coconut, 1/2 cup crisco, 5 egg yolks, 2 cups flour, 1 cup buttermilk, 1 cup pecans Cream butter, crisco, sugar. Add egg yolks and vanilla. Add dry ingredients and buttermilk. Fold in beaten egg whites. Add coconut and nuts. Bake at 350. Icing: 1 eight oz cream cheese, 1 box powdered sugar, 1/2 stick butter, 1 tsp vanilla, 1 cup pecans Honey Bars 1 cup sugar, 3/4 cup oil, 2 cups flour, 1/4 cup honey, 1/4 tsp salt, 1 tsp soda, 1 tsp cinnamon. MIx and bake at 350 for 20 minutes. Glaze with 1 cup powdered sugar, 1/2 tsp vanilla and water to thin.
