2: Yia-Yia Maria | Breakfast Cassarole | 1 loaf white sliced bread 8 eggs 9x13 pan Quart of milk Sliced ham, crisp bacon or both 2 cups of grated chedder or american cheese Line pan with breads and brush with melted butter (margarine) Add meat on top of each slice (or chop and sprinkle across) Sprinkle cheese over the meat Repeat until you reach top of pan Beat eggs with milk, pour on top of bread & bake | 350 | 40 min | 6-8

4: Made with Love | Irene | Smile for Pa-Pou's 80th | "All happiness depends on a leisurely breakfast." ~John Gunther | Greek Stuffed Peppers | 1lb chopped meat 6 peppers 1 onion 1/4 cup fresh parsley & mint 3 cups chicken broth 1 stick margarine (butter) 3/4 cup rice 1 tbs tomatoe paste Brown meat, onion, & fresh parsley & mint. After browned, drain greese. Add more margarine, add tbs tomato paste, add handful of rice, add 3/4 cups of chicken broth and water. Thicken, then season, salt & pepper.. Salt inside of peppers, fill, cover, more broth & margerine. Cover & cook until done then uncover to brown. | 350 | 1 hour | 6

6: Pastitsio (meatless) | 1 lb ziti 1/2 lb butter (margarine) Grated cheese 1 qt milk 5 eggs 1) Boil until 3/4 cooked, then drain 2) Melt butter then combine all ingredients and pour over ziti 3) Top with more cheese 4) Prepare crema same as mousaka and pour on top of ziti 5) Bake at 350 degrees for 45 minutes or until top is nicely browned Crema: Salt & pepper Nutmeg 1 stick butter (margarine) 1/2 cup parm cheese 3 cups warm milk 8 tbs flour 3 eggs 1) Melt butter (margarine) & wisk in flour 2) Add warm milk & slowly mix. 3) Beat eggs and add to thickened mixture 4) Add cheese, nutmeg, salt, & pepper

9: Recipe from Yia-Yia Maria 1 lb sweet butter 1 egg 1 tsp Crisco 3 cups flour 2 tsp vanilla Cloves (if desired) 1/4 cup powdered sugar Finely chopped almonds or walnuts 1) Beat & cream butter, Crisco & egg 2) Add vanilla & sugar, and then blend in flour until dough is smooth & soft 3) Add walnuts, mold into round balls and press down with palm of hand 4) If desired, place 1 clove on top of each cookie 5) Bake at 350 for 30 min. 6) Top of cookies will not turn brown, check bottom to test for readiness. 7) Let cool, then roll in powdered sugar. | Kourumbiedes

10: Tsoureki or Vasilopita (Greek Sweet Bread) Recipe from Yia-Yia Aliki – Aunt Mary 1 lb sweet butter Crisco scoop 5 lb flour8 eggs 3 full tsp baking powder 1/2 tsp Mahlepi 3 glasses milk Less than tsp Mastiha 3 large glasses sugar Tsoureki or Vasilopita (Greek Sweet Bread) Recipe from Yia-Yia Maria 1 qt milk 1 lb sweet butter (margarine) melted 4 cups sugar 6 packets or 2 sqs fresh yeast 1/2 tbsp Mastiha 1 tbsp Mahlepi 1/2 tsp salt 12 eggs 5-6 lbs of flour Sesame seeds – toast (5 lbs 1st rising; 8-10 cups 2nd rising) Scald milk & cool to lukewarm. Dissolve yeast in the milk & add melted butter. Add the eggs which have been beaten separately. Blend in the sugar & the seasonings. Sift the flour & add little by little until a soft dough is formed. Knead well, cover & let rise. Knead again & let rise. Shape into desired loaf size, place in buttered pans & brush with egg yolk. Bake 325 in moderate oven for 20-30 minutes. Bake for approximately 10-15 minutes, put seeds on & then complete bake.

13: "There is no love sincerer than the love of food." ~George Bernard Shaw | Yia-Yia Aliki & Maria | Keftedes (Greek Meatballs) | Group A: Brown in butter 2 lbs Chopped Meat Onion Breadcrumbs Garlic (fresh)Oregano Parsley (fresh)Salt & Pepper Mint (fresh) Brown Group A then add all ingredients to meat. Put tablespoon in flour, roll & fry in oil. Oil must be 350 degrees and 2-3 inches in the pan. Yia-Yia Maria 3 lbs chop meat, 1 large onion, 1 Tbsp salt, 1 tsp pepper, 1 Tbsp mint, 1 Tbsp oregano, 3-4 Tbsp flour. Add 1 cup of water & mix all together. Form into balls & fry same as above. | 1 hour | 4-6

14: Koulourakia 1 lb sweet butter 1 1/8 cup sugar 1/2 cup oil & lemon juice 2 tsp whiskey 6 cups flour 3 tsp baking powder 1/2 cup water 1 tsp vanilla Cream butter and sugar well Add all liquids and mix well Add all dry ingredients and mix, adjust flour if necessary Roll and shape Brush with egg and sprinkle with sesame seeds Bake on 375 for 15-20 minutes Yield 5-6 dozen

15: Live Laugh Love | Aunt Calli | Cranberry Apple Mold | 2 cans whole cranberry sauce 1 lg box strawberry jello 2 cups boiling water – 2 Tbsp lemon juice 1/2 cup mayonnaise 1/2 cup chopped nuts 2 cups chopped apples 1) Melt cranberry sauce over heat in saucepan 2) Drain berries and reserve liquid and put berries aside 3) Into liquid melt jello and add boiling water and 2 Tbsp lemon juice 4) Refrigerate until it molds slightly 5) Blend in mayonnaise with blender 6) Fold in cranberries, apple & nuts and turn into a mold and chill it. *Place in large tupperware mold | 6-8 | Rock Star

16: Galatobouriko Recipe from Yia-Yia Maria 2 qts milk 1 glass (8 oz) farina 1 glass (8 oz) sugar 8 eggs (beaten) 2 sticks butter (margarine), melted 20 sheets of filo dough 1) Mix all above together in large saucepan until thick and bubbly 2) Remove from flame and add 1 tbsp vanilla 3) Prepare pan (stainless roaster) with (8-10) sheets of filo dough, buttered in between each slice 4) Place cream mixture in middle 5) Cover with (8-10) sheets of filo as before 6) Slice filo topping into desired pieces 7) Bake at 350 for 45 minutes or until top is brown 8) Remove and top with ice cold syrup *Syrup made the same as Baklava

19: Baklava 1 lb filo dough 2 lbs walnuts chopped 2 tsps cinnamon 1/2 cup of sugar 1 lb sweet butter, melted Syrup Cloves (if desired) 1) In a medium bowl combined walnuts, sugar, & cinnamon. Set aside. 2) 9x13 baking pan, butter it and place 20 sheets of filo on the bottom, butter each sheet. 3) Cover with half of the walnut mixture 4) Layer 5 more sheets of filo dough 5) Spread the remaining half of the walnuts and cover with another 15 sheets of filo dough *Butter the top thoroughly 6) Score (cut through) into 1 inch diamonds or squares 7) Bake and preheat at 350 oven for 45 minutes-1 hour or until golden 8) Pour cold syrup over hot baklava Syrup Equal parts, sugar & water 2 glasses (8 oz) of sugar 2 glasses (8 oz) of water 1/2 Juice of a lemon & throw in rind Bring all ingredients to a boil, simmer for 1 to 2 hours Strain and cool completely in the refrigerator Pour over hot bakalava

21: Stuffed Cabbage (Sarmathes) 1 head cabbage, medium size 1 large onion, chopped 1 lb ground meat 1/2 cup rice 3 Tbsp parsley or mint chopped Salt & pepper to taste 3 tomatoes, sliced or 1 can tomatoes Remove outer leaves of the cabbage and lay in bottom of pot or pan being used. Remove as much core as possible from center, and drop head of cabbage in kettle of boiling water into which a little salt has been added. Cook about 5 minutes or until leaves are slightly soft. Do not overcook. Carefully remove leaves one at a time. Trim heavy center vein to facilitate folding and rolling. Into each leaf place about a Tbsp of the chopped meat which has been combined with the washed rice, onions chopped and seasonings. Carefully roll up, using toothpicks if necessary, and arrange in pot or baking pan. Cover in chicken broth. Cook over a low fire or bake in a moderate oven until tender. Make avgolemono (lemon) sauce out of the stock after fully cooked.

23: Lasagna Recipe from Yia-Yia Maria 1 lb of lasanga (pan boiled in salted, olive oiled water) 2 lbs ricotta (add parsley & 1 egg beat well) Mozarella (chopped) Mash meatballs and sausage Sauce Line 9 x 13 pan in following order: Lasagna Ricotta Meat Mozzarella & grated cheese Sauce- do not use all, drizzle sparingly & balance served on top Repeat ending in this order Bake at 350 degees for about 30-35 minutes Serves: 6 for appetizer; 4 for main course Meatballs & Sauce Recipe from Yia-Yia Maria Sauce: 2-3 lbs chop meat 1- 1 1/2 lbs Italian sausage 2 large cans whole tomatoes pure (add 1 can water) 1 can tomato paste Oregano (heavy) Garlic powder (heavy) Basil (light) Salt & pepper to taste Bay leaf (2 or 3) Sugar (2-3 tsps) Meatballs: 1/4 cup breadcrumbs Grated cheese (heavy) Parsley (dried) 2 eggs Mix all ingredients above to chopped meat and shape into balls. Roast in oven until browned with sausage or in frying pan. Discard excess grease and add meat to large saucepan. Add all remaining ingredients and simmer, stirring regularly for 2-3 hours, until thick.

24: Artichoke Spread Recipe from Aunt Calli 1 can artichokes in water – drained & chopped 1 tspn chopped onions 1 cup mayo 1/2 cup parmesan cheese 1/2 cup romano cheese Blend all above ingredients together and bake at 350 degrees until top is slightly browned. | You can do all things through Christ who strengthens you | Walkers for Calli

25: Mousaka Recipe from Aunt Mary 1) 4-5 lg eggplants- sliced, brown peeled skins in oil and blot with paper towels 2) Brown 3 lbs of chopped meat & 1 large onion. Salt & pepper, wine, 2 Tbsp tomatoes, nutmeg. 1/2 cup bread crumbs – 1/2 cup parmesan cheese and add to meat combo after cooked. Layer eggplants, meat, eggplants, etc. Crema: Salt & pepper 1 stick margarine 3 cups warm milk 8 Tbsp flour 3 eggs Nutmeg to taste 1/2 cup parmesan cheese 1) Melt butter and wisk in flour 2) Add warm milk slowly mixing 3) Beat eggs and add into thickened mixture 4) Add cheese, nutmeg, salt & pepper 5) Bread crumbs on bottom of pan 6) Bake for 1 hour at 350 degrees 7) Browns on top, then add paprika on top for color & parmesan cheese
