1: This Cookbook is inspired by all of the talented cooks in the family.

2: Nana Hill's Christmas Rock Candy Cooking Temp.: 350 degrees Cooking Time: 15 minutes Ingredients: 6 c. self-rising flour 1/2 c. whiskey 1 t. cinnamon 3 c. brown sugar 1/2 t. cloves 6 eggs 1 t. nutmeg 1 1/2 boxes raisins (floured) 2 rounded t. soda 3 c. walnuts 2 c. margarine Instructions: Mix dry ingredients together. Beat eggs well. Add whiskey to eggs, beating as you add melted butter. Slowly add flour and nuts and raisins. Mix well. Let stand overnight in refrigerator. Drop by teaspoons to cookie sheet. Bake at 350 degrees for 15 minutes. Makes 200 cookies.

3: Nana's Souperburgers Cooking Time: 5-10 minutes Ingredients: 1 lb. ground beef 1 T. shortening 1 can lean Campbell's vegetable soup 2 T. Ketchup 1 t. prepared mustard Dash of pepper 6 hamburger buns (toasted and buttered) Instructions: Brown beef and onion in shortening. Stir to separate meat particles. Drain grease. Add soup and seasonings. Simmer about 5 to 10 minutes to blend flavors. Serve on buns.

4: Granny Hays' Jam Cake Cooking Temp: 250 degrees Cooking Time: 1 1/2 hours Ingredients: 2 c. light brown sugar 1 T. cocoa 2 c. buttermilk 1 t. ground cloves 1 c. raisins 3 eggs separated 3 1/2 c. sifted flour 1 c. butter or margarine 2 t. soda 1 c. blackberry jam 1 t. cinnamon 1 c. chopped nuts Instructions: Cream butter and add brown sugar. Beat egg yolks separately and add to cream mixture. Beat well. Add jam. Flour nuts and raisins with about 1/4 c. flour. Add cocoa, cinnamon and cloves to remaining flour and sift again. Dissolve soda in buttermilk and add alternately with flour mixture beginning and ending with flour. Add floured raisins and nuts. Fold in stiffly beaten eggs whites. Oil a 9in. tube pan or 2 loaf pans and line with brown paper or wax paper. Turn batter into pans. Bake at 250 degrees about 1 1/2 hours or until cake leaves side of pan.

5: Butterhorns (Dinner Rolls) From: Heidi Hays Cooking Temp: 400 degrees Cooking Time: 10-12 minutes Ingredients: 1 pkg. yeast 1/2 c. sugar 1/4 c. warm water 2 tsp. salt 3/4 c. milk 1 c. flour 1/2 c. shortening 3 eggs 3 1/2- 3 3/4 c. flour 3 or 4 tsp. melted butter Instructions: Combine yeast and water, set aside. Microwave milk, shortening, sugar, and salt and stir to combine. Pour mixture into a mixing bowl and add 1 c. flour, yeast, and eggs. Beat well. Stir in 3 1/2 c. flour and knead for 5-8 minutes. Place in greased bowl and let rise for 2 1/2 hours. Punch down dough and divide into thirds. Roll each third into a 12 inch circle and brush with butter. Cut like a pizza into 8 pieces. Starting with the base of the piece, roll in toward the center. Place on a greased baking sheet and let rise 1 hour before baking.

6: Lasagna From: Heidi Hays Cooking Temp.: 350 degrees Cooking Time: 30-40 minutes Ingredients: 1 1/2 lbs. ground beef or sausage 1 (12oz.) can tomato paste 1 medium onion 2 c. water 2 cloves of garlic 1 t. basil 1 T. salt/ pepper 1 t. oregano 1/2 c. red wine 4-6 bay leaves 1 (16oz.) can whole tomatoes 1 lb. grated mozzarella 3/4 c. Parmesan 1 1/2 lbs. ricotta 1 t. sugar 1/4 c. Parmesan 1 egg 1 t. parsley salt and pepper 1 lb. lasagna noodles Instructions: Cook beef, onion, and garlic until slightly brown. Ad salt, pepper, wine, tomatoes, paste, water, basil, oregano, and bay leaves, and simmer on low heat for 2 hours. Remove bay leaved. Mix together mozzarella and Parmesan. In separate bowl mix ricotta, sugar, Parmesan, egg, parsley, and salt and pepper. Cook and drain lasagna noodles. Layer in casserole dish: SAUCE- PASTA- CHEESE MIX- RICOTTA MIX, repeat ending with sauce on top. Bake uncovered.

7: Mexican Spaghetti From: Megan Boone Cooking Temp: 350 degrees Ingredients: 1 lb. ground beef 2 t. chili powder 1/2 c. chopped inion 1 pkg. spaghetti, cooked 1/2 c. chopped bell pepper 1 c. grated cheese 1 large can tomato sauce salt and pepper Instructions: Brown meat, onion and pepper and then drain. Add tomato sauce and seasoning. Simmer 15 minutes. Place cooked, drained spaghetti in a baking dish. Pour over meat sauce. Sprinkle with cheese. Bake at 350 degrees until cheese melts. | Holy Cow Cake From: Megan Boone Ingredients: 1 German Chocolate Cake Mix (and ingredients to make it) 1 can Eagle Brand milk 1 jar caramel ice cream topping Cool Whip and Heath Bar sprinkles Instructions: Make cake as directed in a 9x13 inch pan, cool. Punch holes in the top of the cake. Pour over 1 can Eagle Brand milk and ice cream topping. Cover with Cool Whip. Sprinkle Heath Bar topping on top. Keep refrigerated.

8: Carrot Cake From: Ruth Sorace | Cooking Temp.: 350 degrees Cooking Time: 50-60 minutes Ingredients: 2 c. sifted flour 1 t. baking powder 1 t. baking soda 1 t. cinnamon 1/4 t. salt sift all above ingredients together 1 1/2 c. Wesson oil 2 c. sugar 4 eggs 2 c. finely grated carrots 1/2 c. butter or margarine 8oz. cream cheese 1lb.-2lb. confectioner sugar chopped pecans (if desired) | Instructions: Combine in a large mixing bowl, 1 1/2 cups Wesson oil and 2 cups sugar. Mix well. Add, one at a time, 4 eggs. Beat well after each addition. Gradually add dry ingredients, mixing well. Add 2 cups finely grated carrots. Mix well. Turn into a greased, floured tube pan. Bake at 350 from 50-60 minutes until toothpick comes out clean. Icing: Combine 1/2 c. butter or margarine and an 8oz. pkg. of cream cheese, both softened to room temperature or melted in microwave and cooled. Beat until light. Gradually add 1lb. to 2lb. of confectioner sugar. Add 1 t. vanilla and top with chopped pecans if desired.

9: Lasagna From: Ruth Sorace | Cooking Temp.: 350 degrees Cooking Time: 1 hour Instructions: Cook lasagna noodles until tender, then rinse. Brown hamburger and drain off grease. Add spaghetti sauce, rinsing jar with 2/3 c. water and then add to mixture. Simmer sauce about 15 minutes on low. Mix egg, mozzarella, and ricotta cheese in bowl. Layer meat sauce, then noodles, then cheese mixture in a 9x13 pan. Repeat layers a second time. Sprinkle top heavily with Parmesan cheese and bake at 350 degrees for 1 hour. Note: Sometimes I add extra cheese and less water to make sauce thicker and lasagna cheesier. | Ingredients: 6-7 lasagna noodles 1 1/2 lb. hamburger 1 (32oz.) jar spaghetti sauce with mushrooms 1 egg 1 (8oz.) mozzarella shredded cheese 12 oz. ricotta cheese or cottage cheese Grated Parmesan cheese

10: Ingredients: 1 stick of butter 1/2 c. milk 2 c. sugar 1 big spoon of peanut butter 1 t. vanilla 2 T. cocoa about 3 c. of oats | Oatmeal No Bake Cookies From: Brooke Young | Instructions: Mix the first three ingredients together and cook on high until boiling on the stove. Stir so mixture does not burn on the bottom of the pot. Remove from stove and promptly the add the remaining ingredients. After all ingredients have been mixed, prepare the cookie sheet by greasing it with butter before pouring the mixture onto it. Cookies taste best when put straight into freezer after being poured onto cookie sheet. *Milk can be added if mixture appears dry. | Chess Cale From: Brooke Young | Cooking Temp.: 350 degrees Cooking Time: 30-40 minutes Ingredients: 1 stick of butter or margarine at room temperature 1 box yellow cake mix 1 egg Mix all 3 ingredients together and pat into greased 9x13 pan. 1 lb. powdered sugar 2 eggs 1 (8oz.) pkg. cream cheese Mix together and pour on top of first layer. Bake until top is light brown.

11: Pat's Orzo Stew From: Pat Hays | Cooking Time: 20 minutes Ingredients: 2 T. butter 2 1/2 c. reduced sodium chicken broth 5 c. broccoli florets 1 (14..5oz.) diced tomatoes, undrained 1 c. uncooked orzo 1 lb. uncooked medium shrimp, peeled and deveined 3/4 t. salt 1/4 t. pepper 2 t. dried basil Instructions: In a large nonstick skillet or saucepan, bring broth to a boil. Add the broccoli, tomatoes and orzo. Reduce heat; simmer uncovered for 5 minutes stirring occasionally. Add the shrimp, salt and pepper. Cover and cook for 4-5 minutes or until shrimp turn pink and orzo is tender. Stir in basil and butter. Makes 4 servings. | Pat's Poppy Seed Chicken Casserole From: Pat Hays | Cooking Temp.: 350 degrees Cooking Time: 30-45 minutes Ingredients: 2 stacks Ritz crackers 2 T. poppy seeds 2 cans cream of chicken soup 8oz. sour cream Instructions: Crush crackers and mix with melted margarine. Add poppy seeds. Mix sour cream and soup. Add cooked chopped chicken breast. Now layer in a 9x13 casserole dish with cracker mixture on bottom and layer on top. Bake at 350 for 30-45 minutes.

12: Strawberry Pretzel Salad From: Pat Hays Cooking Temp: 350 degrees Cooking Time: 10 minutes Ingredients: Crust: 2 c. crushed unsalted pretzels 1 1/2 stick melted butter 1/2 c. sugar Filling: Topping: 8 oz. cream cheese 2 c. Pineapple juice 1 c. sugar 6 oz. strawberry jello 2 c. Cool Whip 20 oz. strawberries Instructions: Crust: Crush pretzels. Mix in melted butter and 1/2 c. sugar. Put in greased 9x13 pan. Bake 10 minutes at 350 degrees. Cool Filling: Mix softened cream cheese, 1 c. sugar and Cool Whip. Spread over cooled pretzel mixture. Topping: Heat pineapple juice. Add strawberry jello until dissolved. Add thawed & mashed strawberries. Let chill until gelled. Pour over cream cheese. Refrigerate.

13: "There is no love sincerer than the love of food." ~George Bernard Shaw | Cecil Hays | Cowboy Beans | Cooking Temp: Low Cooking Time: 8 hours Ingredients: 2 (28 oz.) cans pork and beans 1 c. Ketchup 1 (15oz.) can chili hot beans 1 c. barbecue sauce 1 lb. ground beef 1 c. brown sugar 1 chopped onion salt and pepper to taste 1 green pepper Instructions: Brown beef and drain. Mix together all ingredients. Simmer uncovered in crockpot for 8 hours.

14: Meat Loaf From: Erin Richardson Cooking Temp.: 350 degrees Cooking Time: 1 hour Ingredients: 2 lb. ground round, chuck or turkey 2 eggs 1 1/2 c. bread crumbs 3/4 c. ketchup 1 t. Accent 1/2 c. milk 1 pkg. dry onion soup mix 1/2 green pepper, chopped (optional) Instructions: Mix meat, eggs, bread crumbs, ketchup, milk and seasonings. Form into a loaf and cover with more ketchup, mustard, brown sugar and a couple strips of bacon. | Beer Cheese Bagel Dip From: Erin Richardson Cooking Time: 5-10 minutes Ingredients: 2 jars old English Cheese 1 brick cream cheese garlic salt 1 bag Lender's Bagels sliced into small wedges (pretzels are good also) Instructions: Mix Old English Cheese and cream cheese. Add garlic salt to taste. *I put mixture into microwave for easy mixing.

15: Oven Porcupines From: Kaye Elliott Cooking Temp: 350 degrees Cooking Time: 40-50 minutes Ingredients: 1 lb. ground beef 1/2 c. uncooked rice 1/2 c. water 1/2 c. chopped onions 1 t. salt 15 oz. can of tomato sauce 1 c. water 2 t. Worcestershire sauce Instructions: Mix first 5 ingredients and shape into balls using 1 rounding tablespoon for each. Place in baking dish. Mix remaining ingredients and pour over meatballs. Bake. | Escalloped Potatoes From: Kaye Elliott Cooking Temp.: 350 degrees Cooking Time: 1-1 1/4 hours Instructions: Peel and cut medium potatoes into thin slices (allow one potato per serving) In

16: Brown Sugar Candy From: Shelly Hourigan Ingredients: 1 lb. light brown sugar 1 t. vanilla 1/2 c. white sugar 2 T. butter 1 c. half and half 1/4 c. corn syrup nuts, optional Instructions: Cook ingredients together 8 minutes, then boil until hard. Take off heat, stir in 2 T. butter and 1 t. vanilla. Spread into pan. Cut into squares. 5 Cup Salad From: Shelly Hourigan Ingredients: 1 c. sour cream 1 c. mini marshmallows 1 c. crushed pineapple (drained) 1 c. coconut 1 c. mandarin oranges (drained) Instructions: Mix together, Chill and Serve.

17: Cinnamon Sugar Pancakes From: Ruth Brady Cooking Temp,: Medium Ingredients: Hungry Jack Pancake mix and water (Hungry Jack because it is the easiest to prepare) Cinnamon and Sugar to taste. Instructions: Use box to decide how much mix and water to use. Hint: If box says it will make 4-6 pancakes, it will really just be one. Also, use just a little less water than the box suggests. After mixing water and package mix, add the cinnamon and sugar. Add as much as you want and mix it with the rest of the batter. After your frying pan has warmed, apply cooking spray and pour batter until it covers the bottom. Brown and then flip cake until cooked all the way through. | Ultimate 7-Layer Dip From: Ruth Brady Ingredients: 1 (16oz.) refried beans 1 c. Shredded Cheese 1 T. taco seasoning mix (Mexican style) 1 c. sour cream 1/2 c. green onions 1 c. taco original salsa (chopped) 1 c. shredded lettuce 7 T. sliced, pitted olives Instructions: Mix beans and taco seasoning. Mix and spread onto bottom of 9 in. pie plate. Layer remaining ingredients over bean mixture; Cover. Refrigerate several hours, or until chilled. Serve with tortilla chips or assorted crackers. Makes 48 servings about 2 T. each.

18: Mississippi Sin Dip From: Niki Hays Cooking Temp.: 350 degrees Cooking Time: 35-40 minutes Ingredients: 2-3 c. Sharp shredded cheddar cheese 8 oz. cream cheese 16 oz. sour cream 1 small can chopped green chilies 6 oz. pkg. sliced ham (chop in small pieces) 2-3 green onion tops, chopped 1 round loaf "Hawaiian Bread" 2 large bags Fritos Scoops Instructions: Mix all items in large mixing bowl, place in hollowed out Hawaiian Bread (similar to a bread bowl). Place on cookie sheet and bake at 350 degrees until cheese melts and is bubbly. Serve with Frito Scoops. | Barbecue Pecans From: Niki Hays Cooking Temp.: 400 degrees Cooking Time: 13-15 minutes Ingredients: 2 T. butter 1/4 c. Worcestershire sauce 1 T. ketchup 2 dashes Tabasco 4 c. pecan halves sallt to taste Instructions: Melt butter, remove from heat and add Worcestershire sauce, ketchup and Tabasco. Add pecans, stirring to coat. Spread pecans evenly over baking sheet. Bake, stirring every 5 minutes. Place pecans on paper towel and lightly salt. | YUMMY!

19: Crock Pot Potato Soup From: Susan Young Cooking Temp.: Low to High Cooking Time: 1-2 hours Ingredients: 1 1/2 c. milk 3/4 stick butter 8 oz. cream cheese (softened) 1 can cream of mushroom soup 1 can cream of celery soup 2 soup cans of water 1 lb. Velveeta (cut into small pieces) 1/2 c. diced onions 8-10 potatoes Instructions: Put all ingredients into a crockpot. Boil 8-10 potatoes ,peeled and diced, on stove. Drain and add to crockpot. Salt and pepper to taste. Keep stirring 10-15 minutes until ingredients are mixed together and cheese had melted. Topping: Shredded cheese and Bacon Bits. | Peanut Butter Brownies From: Susan Young Ingredients: Betty Crocker Hershey's Peanut Butter Supreme Bownie Mix 1 can Pillsbry "Classic White" frosting 1/3 to 1/2 c. creamy peanut butter Instructions: Follow directions on box of brownies. Cool brownies after baking. Add creamy peanut butter to icing. Spread on top of brownies. You can refrigerate until you are ready to serve. Cut and serve.
