FC: Seasoned With Love | 2010

1: This Cookbook is inspired by all of the talented cooks in the family.

2: LaVonne & Colin Webb | IMPOSSIBLE QUICHE | 3 Eggs, 1/2 C. Bisquick Mix, 1/2 C. melted Butter, 1 1/2 C. Milk, 1/4 tsp Salt, 1 C. shredded Swiss Cheese (may want to use only 1/2 c.) 1/2 cup Ham or Bacon crumbles. * 1/2 C. Mushrooms, * 1/2 C. chopped Onions** Optional Place egg, biscuit mix, milk, salt & pepper in bowl and mix well with a mixer. Add butter and mix well Pour into a greased 9-10" pie pan or Quiche dish. Sprinkle Cheese & Ham or Bacon on top. | 350 | 45 | 6-8

5: ZUCCHINI SOUP Brown: Ground Turkey (1-2 lbs) or Chorizo or Sweet Italian Sausage. Drain. Add 2 C. sliced Celery & cook 10 min. longer. Add remaining ingredients of; 2 lbs. Zucchini cut in 1/2" pieces. 1 cup chopped Onions 2 (28 oz) cans Tomatoes & 2 large cans Tomato Juice Adjust the following seasonings generously, or you can use generous shakes of Italian Seasoning Salt 1 tsp Oregano 1 tsp Sugar 1/2 tsp Basil 1/4 tsp Garlic Powder Cook for 20-30 min. Towards the end add 1-2 Green Peppers cut in 1/2" pieces. Simmer 10 more minutes. (I cut this recipe in half and still have some to freeze)

6: Rhonda C Wittorf's Persian Stew | GHORMEH SABZI Serves 6 1-1/2 lbs Stewing Lamb or Beef 1 Large Onion Finely Chopped 1/3 C. Cooking Oil 1 tsp Turmeric 1-1/2 C. Water 1/2 C. Dried Limes (or fresh Lime Juice) 3/4 C. Black-eye Beans or Kidney Beans Salt & Black Pepper 1 C. Green Onions, Finely Chopped 1-1/2 C. Spinach, Finely Chopped 1/2 C. Parsley, Finely Chopped 1/4 C. Coriander, Finely Chopped (optional) 1/4 C. Garlic Chives, Finely Chopped 1/4 C. Fenugreek, Finely Chopped Directions: Trim meat and cut into 3/4" cubes. In stock pot, fry onion over medium heat in half of the oil until golden. Add turmeric and fry for 2 more minutes. Increase heat, add meat cubes; stir over high heat until meat begins to brown. Reduce heat. Add water, beans, salt and pepper to taste. Cover and simmer gently for 1-1.5 hours until meat is tender. Time will depend on type of meat used. Fry vegetables using the remaining oil over medium heat until wilted. Add to sauce, then add dried limes, cover and simmer for another 10-15 minutes. Adjust seasoning to taste. Serve with white rice.

When cooking, go by your own taste." ~Laiko Bahrs | NORA & WENDELL WIDDOWSON | CHOCOLATE PEANUT BUTTER PIE | Microwave Chocolate and 2 Tbsps of the Milk in large microwavable bowl on | HIGH for 1 1/2 to 2 min. or until Chocolate is almost melted, stirring halfway | through heating time. Stir until chocolate is completely melted and stir in | peanut butter. Beat in cream cheese, sugar and remaining milk until well | blended. Refrigerate 10 min. Stir in Whipped Topping until smooth. | Spoon into crust. Freeze 4 hours. Garnish with Cool Whip. | 8 | 1/2 C. Choc. Chips, 1/2 C. Peanut Butter, 1/3 C. milk, Divided 4 oz. Cream Cheese, Softened. 2 Tbsp. Sugar, 1 tub (8 oz.) Cool Whip 1 Graham Cracker Pie Crust (6 oz.), Additional Whipped Topping for Garnish

10: Crust 1/2 (8 oz.) can (1/2 c) Hunts Tomato Sauce 1/2 cup Bread Crumbs, 1# Ground Beef 1/4 cup chopped Onion, 1/4 cup Green Pepper chopped, 1 1/2 tsp Salt, 1/8 tsp Oregano, 1/8 tsp Pepper Combine these ingredients and mix well. Pat meat mixture into bottom and pinch 1" fluting around the edges of a greased 9" pie pan. Set aside. Filling 1 1/3 cup minute rice, 1 cup water, 1 1/2 (8 oz.) cans (1 1/2 c.) Hunts Tomato Sauce, 1 cup grated Cheddar Cheese, 1/2 tsp. salt. Combine rice, Tomato Sauce, Salt, Water and 1/4 cup Cheese. Spoon rice mixture into meat shell. Cover with aluminum foil. Bake at 350 for 25 min. Uncover and sprinkle top with remaining cheese. Return to oven and bake uncovered 10-15 min. longer. Cut into pie shaped pieces. Makes 5 or 6 servings. | COUNTRY PIE

13: "There is no love sincerer than the love of food." ~George Bernard Shaw | SHARLENE & DUTCH LOFTS | HASHBROWN BAKE | PREHEAT OVEN TO 350 BAKE 45-50 minutes (uncovered) in a Greased 9 x 12 pan 1# Hamburger Browned and Drained 2#'s Frozen O'Brien Potatoes w/Green Peppers & Onions 1 can Cream of Chicken Soup Undiluted 1/2 tsp Salt, 1/4 tsp Pepper 1/4 cup melted Butter 8 oz Cream Cheese Softened 2 Cups CRUSHED Corn Flakes MIX EVERYTHING EXCEPT CORNFLAKES. PRESS INTO PAN AND POUR 1/2 CUT OF WATER OVER THE TOP. COVER WITH CRUSHED CORNFLAKES, COOK & SERVE. | 350 Degrees | 45 - 50

14: APPLESAUCE SNACK CAKE 2 Cups Diced Apples 1 Cup Apple Cider 1 & 1/2 Cups Flour 1 Teaspoon Baking Soda 2/3 Cup Sugar 1/2 Teaspoon Cinnamon 1/4 Teaspoon Nutmeg 1/8 Teaspoon Cloves 1 Cup Unsweetened Applesauce 1 Large Beaten Egg 1/2 Teaspoon Salt 8 Tablespoons Melted Unsalted Butter 1 Teaspoon Vanilla Preheat oven to 325 degrees. Spray an 8" square baking dish and dust with flour. Bring diced apples and cider to a simmer in a small saucepan over medium heat. Cook until liquid evaporates and mixture appears dry, about fifteen minutes. Remove from heat and let cool. Whisk flour and baking soda in a bowl to combine, then set aside. Whisk sugar, cinnamon, nutmeg and cloves together. Measure out 2 tablespoons sugar-spice mixture and set aside for topping. Process cooled apple-cider mixture with applesauce until smooth, scraping bowl sides as needed, then set aside. Whisk egg and salt in a large bowl to combine, then add sugar-spice mixture and whisk continuously, until well-combined and light colored. Add butter in three additions, whisking after each. Add applesauce mixture and vanilla, whisking to combine. Add flour mixture to wet ingredients, folding gently until just combined and moist. Turn batter into prepared pan, sprinkle reserved 2 tablespoons sugar-spice mixture over top, then bake for 35 minutes. Cool in pan on wire rack to room temperature.

16: CHICKEN ENCHILADAS | 1 Pound Cooked Diced Or Shredded Chicken 1 Can (10 Ozs) Green Enchilada Sauce 1 Can (10 Ozs) Red Enchilada Sauce 2 Cups Shredded Cheese (Of Choice) 1 Package Taco Seasoning 1 Package Cream Cheese 1 Package (10-12) Flour Tortillas Combine chicken, green enchilada sauce, taco seasoning and cream cheese. Simmer over medium heat, stirring occasionally, until cream cheese is melted and seasoning has cooked in. Add 1 cup shredded cheese, stir through and remove from heat. Preheat oven to 375 degrees. Spoon chicken filling onto tortillas. Roll up and place seam side down in a 13x9" baking dish. Pour red enchilada sauce over top and sprinkle with remaining cheese. Bake 15-20 minutes until heated through.

19: RANCH POTATO CUBES | 375 Degrees, 60 Minutes 9 x 13 Pan Greased Potato's cut into cubes 8 Tbsp's Butter cubed 2 cups (16 oz) Sour Cream 2 envelopes Ranch Salad Dressing 2 cups shredded Cheddar Cheese Bacon Bits Place potato's in a greased 9 x 13 pan. Dot with butter, cover and bake until tender. Combine Sour Cream and Salad Dressing Mix. Spoon over potato's. Sprinkle with Cheese. Top with Bacon Bits. Bake uncovered an additional 8-10 minutes until cheese is melted and sour cream mixture heated. Serve Immediately

21: Hobo Dinner Great For Camping | Compliments of Ciara & Peter Noble 1 lb of Ground Beef 1 White Potato (or several small red potatoes) sliced 1 large Carrot sliced (or 3-4 baby carrots per foil package) 2 Tbsp chopped Onion Heavy Duty Aluminum Foil Shape beef into a patty; place in the center of foil with potato, carrot and onion. Fold foil over and seal well. Makes 4-6 foil packs depending on how thick you want your patty. Place on baking sheet, bake at 350 degrees for 1 hour. May also grill covered, over medium coals for 45-60 minutes until hamburger is done. For an added twist, I like to add A1, Ketchup, Bar-B-Que Sauce, Butter or Ranch Salad Dressing depending on each person's wishes. Johnny Salt is also yummy mixed in with the hamburger.

23: Funny Cake | Sift together: 3 cups flour, 2 cups sugar, 1/2 cup cocoa, 2 tsp. soda, 1/2 tsp. baking powder, 1 tsp. salt Add: 2 tsp. vanilla, 2 tsp. vinegar, 2/3 cup oil, 2 cups water (cold) Mix well, bake in ungreased pan. This is a large chocolate cake-three layer or large square baking pan 350 degrees, 30-40 min Easy Fudge Frosting: 1 stick margarine, 6 Tbsp milk, 4 scant Tbsp cocoa ~Bring to boil~ Add: 1 box powdered sugar 1 tsp vanilla Beat well

25: Name | Chicken Marsala | 1 to 1.5 lbs boneless skinless chicken breasts, 1/4 cup all purpose flour, 2 T vegetable oil, 3 T butter, 1 small onion, finely chopped, 8 to 16 oz mushrooms, trimmed and quartered, 2 T minced garlic, 1 cup sweet Marsala wine 1 cup chicken broth (or dissolved bullion cube), 2 T lemon juice, 1 T minced fresh parsley 1. Cut chicken breasts in half to make cutlets, tenderize. Salt and pepper breasts then dredge in flour. Heat 1 T oil in large nonstick skillet over high heat until just smoking. Add 4 cutlets and cook until golden brown, 2 to 2.5 minutes per side. Transfer to large plate and cover with foil. Repeat with remaining oil and cutlets. 2. Heat 1 T butter in empty skillet until foaming. Cook onion and mushrooms until browned, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Transfer mixture to medium bowl and cover with foil. 3. (I do this step while mushrooms are browning in another skillet to save time) Add Marsala and broth to empty skillet. Bring to a boil over high heat, cook until reduced to about 3/4 cup, about 5 minutes. 4. Reduce heat to medium low, return chicken and juices to skillet with Marsala sauce. Turn chicken to heat through, about 1 minute. Transfer chicken to serving platter. Off heat, whisk in remaining 2 T butter, lemon juice, parsley, and mushroom mixture. Pour sauce over chicken and serve.

27: Preheat oven to 425 degrease Prepare one nine inch double pie crust Sift together: one cup sugar, two tsp cinnamon, and three to six tbs of flour Peel, core, and slice five apples Pour dry mix over apples and toss until thoroughly coated. Pour apple mix into pasty lined pie pan. Arrange four tbs thinly sliced butter on the top of the apple mixture. Place second pie crust on top, trim and flute the edges. Slice vents in the top crust and place in preheated oven. After ten minutes decrease the oven temperature to 350 degrees and continue baking for fifty more minutes, or until the crust is golden brown. four tbs butter . | Apple Pie

28: ITALIAN CHICKEN From the kitchen of: Kris & Walt | 6 Unbreaded Chicken Breast Filets, Thawed 1/2 Cup Chopped Onion 2 tsp Minced Fresh Garlic 1 tsp Dried Basil Leaves 1/2 tsp Dried Oregano Leaves 1/4 to 1/2 tsp Salt 1/4 to 1/2 tsp Pepper 2 (14 1/2 oz) cans diced tomato's 1 Cup shredded Mozzarella Cheese 1/4 Cup Grated Parmesan Cheese Cooked White Rice Heat oven to 325 degrees. Spray 9x13 inch baking pan with cooking spray. Layer ingredients in prepared pan in order given. Bake uncovered at 325 for 30 to 45 minutes or until chicken is no longer pink. Serve over Rice.

31: GOULASH (by Norma Lofts) Brown 1 lb. of hamburger and chopped white medium onion. Add 1(14.5 oz) can tomato sauce and 1(15 oz) can diced tomatoes. In a separate pan boil 2 cups elbow macaroni until done, then drain well and add to meat mixture. Salt and pepper to taste. This was Archie's favorite meal.
