2: Eggnog for 6 | Ingredients: 6 eggs Dash salt 1 1/2 - 2 c. powdered sugar | pinch soda 1 tbs. vanilla 1 3/4 c. rum 1 pt. whip cream 2 c. milk nutmeg | Cooking Instructions Separate eggs. Beat white (dash of salt in whites), beat yokes adding powdered sugar 1/4 c. at a time. Add pinch of soda and vanilla to yokes. Add rum to yokes. Pour yokes into whites and fold in. Add whipped cream. Add milk.Serve with nutmeg

4: Mother Nature's Spicy Banana Nut Bread | Ingredients: 1/2 c. margarine 1 c. firmly packed brown sugar 1 egg 1 tsp vanilla 1 1/4 c. all-purpose flour 3/4 c. whole wheat flour 2 1/2 tsp baking powder | 1/2 tsp salt 3/4 tsp cinnamon 1/2 tsp nutmeg 1/8 tsp cloves 1 1/4 c. mashed ripe bananas 2 tbs milk 1/4 c. chopped nuts | Cooking instructions: Place margarine and sugar in large mixing bowl. Mix well. Add egg and vanilla and mix until light and fluffy. Blend flours and remaining dry ingredients; then add alternately with bananas and milk. Spoon into a greased 9/5/2 in. loaf pan. Sprinkle top with nuts, pressing lightly into batter. Bake at 350 for 55 to 60 minutes. Cool then remove from pan. If allowed to age, flavors blend. Makes one loaf. Smaller loafs (2) 7x3x2 bake for 40 to 45 minutes.
5: Ingredients: 2 1/2 c. flour 1/2 c. sugar 1 tsp. salt 2 1/2 tsp. baking powder 1 c. milk 1 c. ground or chopped nuts | Cooking instructions: Bake Temp: 350 Bake Time: 1 hour Makes: About 1 lb. pan Sift together three times; flour, sugar, salt, and baking powder. Add milk to beaten egg. Mix all ingredients with chopped nuts. | NUT BREAD
6: Cooking Instructions Sift together flour, baking powder, and salt; add milk and beaten egg; beat well. Into this dip bread. Fry in hot deep fat, and serve hot with sugar and cinnamon. | French Toast | Ingredients: 1/2 c. flour 1 tsp. royal baking powder 1/4 tsp. salt 1/2 c. milk 1 egg sliced bread
7: Dream Biscuit Cinnamon Rolls | Ingredients: 2 c. flour 1/2 tsp. salt 4 tsp. baking powder 2 tbs. butter 1 c. milk, scant | Cooking Instructions Mix dry ingredients. Work in butter gradually adding milk. Drop from tip of spoon onto buttered tin and bake at 450-475. *Cinnamon Rolls* Use above recipe only with more butter. Roll out about 1/8" thick. Sprinkle liberally with sugar and cinnamon. Cut in about 1" strips and roll up. Bake 15 to 20 mins.
8: Baked Chicken | Ingredients Mix: 3 tsp. salt 1/4 tsp. pepper 1/4 tsp. garlic powder 1/4 tsp. onion powder | 2 tbs. Worcestershire sauce 2 tbs. lemon juice 1/2 c. salad oil 1/4 c. vinegar 1/4 tsp. marjoram | Cooking instructions Place cut up chicken pieces in a shallow pan. Pour over sauce and bake 1 1/2-2 hour in 300 degree over basting occasionally.
9: Chicken Pot Pie | Cooking Instructions Make a pie crust and line pan. Stew a fryer. Cut chicken off bone. Add to broth and add butter 1 or 2 tbs. butter, depending on fatness of chicken. Cut corn from cob (1-2 ears) and add to mixture. Add milk or cream (1 c.) Mix flour (heaping tsp) and water (1/3 c.), add to mixture. Cook all together until it thickens. Pour that into pan lined with crust, add top crust, and bake (350 degrees) for 30-45 minutes or until crust is brown.
10: Cooking Instructions Have chicken cut for frying. Wash. Put on waxed paper and salt and pepper on both sides. Put some flour in paper bag, add dash of salt. Shake chicken in it, few pieces at a time. Heat skillet with about 1" of fat. Add chicken, brown with hot fire. Then cover, adding about 1/4 c. of water, reduce to medium heat. Cook until done, about 45 minutes, varying with size of bird, or until tender. Take cover off for least few minutes to crisp it. Don't let it burn. | Monnie's Fried Chicken
13: Spaghetti Mylius | Ingredients: 1 # ground beef 1 onion 2-3 cloves garlic 1 jar rague sauce 1 can stewed or chopped tomatoes 1/2 - 1 tsp each of: oregano marjoram thyme | Cooking instructions Brown meat, onion, garlic. Add remaining ingredients. Simmer 30-60 min.
14: Susan's Pot Roast | Ingredients: 1 1/2 - 2 Boneless Roast Chuck Round 1 onion soup pkg. dry 1 mushroom soup can Campbell | Cooking instructions Put foil in pan. Put roast in foil sprinkle onion soup on roast. Put soup over roast. Seal foil. Cook 350 degrees for 2 1/2 - 3 Hours.
15: Grandmother's Stuffing | Ingredients: 3 pkg. petridge farm season bread cubes 3/4 skillet corn bread (1 1/2" thick) 6 green onion + topper 1 small onion 5 stocks of celery 1 1/2 tsp. salt (to taste) 1 1/2 - 2 tsp. poultry seasoning 1 1/2 - 2 tsp. sage | Cooking instructions Mix dry. Add some of broth from (1/3-1/2 c.) from giblet boiling + boiling water until it lightly holds together. Stuff and cook.
16: Ingredients: 1 envelope instant cup of onion soup 1 c. finely chopped green onion 12 corn tortillas 1 (7 oz.) c. green chili in strips 1 pkg jack cheese grated 1 (10 oz) c. enchilada sauce 1 c. cottage cheese 1 c. sour cream | Cooking instructions Combine cottage cheese, sour cream, onion and soup mix.. Dip tortillas in oil and put 1/4 c. cottage cheese mix in center. Put chili strip and jack cheese on top, roll a fasten with toothpick. 9x13 pan seem side down cover with sauce and rest of cheese . Bake uncovered 30 minutes, at 350 degrees. Let stand 5-10 minutes. Serves 6-8 people. | Green Chili Enchilada
17: Ham Cornbread Dinner Ring | Filling - 1 lbs. ground cooked ham 1 egg, slightly beaten 1 1/2 tsp prepared mustard 1 tsp Worcestershire sauce | Dough - 1 cup quaker corn meal 1 1/2 c. sifted flour 3 tsp baking powder 1/2 tsp salt 1/3 c. shortening 3/4 c. milk | Ingredients: | Cooking Instructions | Combine all ingredients for filling. To make dough, sift together: dry ingredients. Cut in shortening until mixture resembles coarse crumbs. Add milk and mix lightly only until dry ingredients are dampened. (add a little more milk if necessary to make a soft dough). Turn out on a lightly floured board and knead a few seconds. Roll to form 11x16" rectangle. Spread with a ham filling. Roll up like jelly roll. Seal edges. Place on cookie sheet, curving t o look like "horse shoe." With scissors make 12 cuts about 1 1/4" apart, 2/3rd of the way into roll. Turn each section on it's side. Bake in hot over (425 degrees). 20 - 25 minutes. Serve hot with sauce. | Sauce - 1 can cream of mushroom 2/3 c. milk 1 1/2 c. defrosted frozen peas
18: Sally's Chicken | Ingredients: Boneless, skinless chicken breasts Sliced swiss cheese Plain yogurt Seasoned croutons | Cooking instructions Lay chicken breasts in shallow pan. Cover with swiss cheese, frost top with yogurt, sprinkle with croutons. Bake 350 degrees for 40 mins.
19: 3 Sister's Rice Salad | Ingredients 4 c. cooked wild rice 1/4 c. sliced celery 1/2 c. broccoli florettes 1/2 c. red bell pepper, chopped 1/4 c. red onion, chopped 1/2 c. toasted slivered almonds or sunflower seed 2 medium apples, chopped 1 c. dried cranberries 1/2 c. jicama, chopped (opt) Dressing: 1/2 c. mayonnaise 1/2 cup yogurt or sour cream 1 tbs lemon juice 1 tbs sugar 3/4 tsp celery salt'1/4 tsp white pepper | Wild Rice: Instructions: Add 1 c. wild rice to 3 c. boiling water. Add 1 tsp salt cook 40-50 minutes Drain any excess liquid.
20: Susan's Egg Rolls | Heat together quickly in butter in the following order. 2-3 cans chicken meat Chopped water chestnuts Chopped or grated carrots Diced celery Diced green onions Sliced mushrooms, and bean sprouts. Stir together with soy sauce, sherry and bouillon Put some of the mixture on a single wanton skin or egg roll. Moisten edges and fold over to glue tightly shut. Keep out excess moisture and air or they will break or pop.
21: Ingredients: 1 medium onion 1 clove garlic minced 2 tbs oil 1 c. catsup 1/2 c. water 1/4 c. brown sugar 3 tbs worcestershire sauce 1 tsp salt 2 tsp mustard 1/4 tsp ground thyme Lemon juice Tabasco sauce | Zesty Barbecue Sauce | Cooking instructions Cook onion and garlic until tender, stir in remaining and simmer covered 5-10 minutes. 22: Butter Cookies | Ingredients: 1 c. soft butter 1/2 c. sugar 1 egg 3 tsp. extract flavoring (vanilla, lemon, etc.) 3 c. sifted flour 1/2 tsp. baking powder | Cooking instructions Oven Temp: 425 Bake Time: 5-7 mins. Makes: about 7 dozen 2" cookies Mix thoroughly butter, sugar, and eggs. Stir in flavoring. Sift together and stir in flour and baking powder. Chill. Roll 1/16". Ungreased baking sheet
23: Easy Chocolate Cake | Ingredients: 1 chocolate cake box mix 4 1/2 oz box instant chocolate pudding mix 12 oz package chocolate chips 2 eggs 1 3/4 cups milk optional: powdered sugar | Cooking instructions Combine all ingredients by hand. Put in greased bundt pan.Bake 50 minutes at 350. Do not over bake. No frosting needed,but may add powdered sugar sprinkled on top after baking.
24: Christmas Peppermuts | Ingredients: 2 c. brown sugar 2 eggs 1 tbs. hot water 1 tsp. soda 1 tsp. nutmeg 2 tsp. cinnamon 3 c. sifted bread flour 1 c. finely chopped nuts | Cooking instructions Mix sugar with beaten eggs, add soda in hot water, flour and spices. Roll out until dough is about 1/8" thick. Cut into tiny rounds and bake in quick oven. Roll at once in powdered sugar.
25: Cooking instructions Bake Temp: 375 Bake Time: 12-15 mins. Cream sugar and shortening well. 26: Lemon Cream Pie | Ingredients: 4 eggs 1 c. sugar 2 heaping tbs. flour 1 1/2 c. boiling water grated rind and juice of 2 lemons | Cooking instructions Beat the yolks and whites separately; to the yolks add the sugar, flour, lemon juice, rind and lastly the boiling water. Cook in double boiler and when it begins to thicken, to it add 1/2 of the beaten whites. Stir this in and cook until desired thickness. Meringue For each egg white add 1 tbs. sugar. Beat rather dry. Add lemon flavoring. Spread
27: Lemon Filling | Ingredients: Yolks of 2 eggs 1 c. sugar 1 lemon (rind and juice) 2 tbs. corn starch Butter size of walnut 1 c. boiling water | Cooking instructions Cook until thick, and if desired, add more lemon.
28: Magic Cookie Bar | Cooking instructions Pour melted margarine into bottom of 13x9x2 pan then crumbs, then nuts, chocolate and coconut. Pour milk over all. Bake 350 degrees, 25 mins or lightly browned ontop. Cool in pan 15 minute then cut into bars. | Ingredients: 1/2 c. butter or margarine, melted 1 1/2 c. graham crackercrumbs 1 c. chopped walnuts 1 c. (6 oz) semisweet chocolate or butterscotch bitz 1 1/2 c. (3 1/2 g) flaked coconut 1 1/3 c. (15 g) Eagle sweetened condensed milk
29: Ingredients: 2 c. milk 2 eggs, separated 2 tbs. cornstarch 3 tbs. coconut 1/2 cup sugar 2 tbs. butter dash of salt | Cooking instructions Add coconut to milk and scold in double broiler. Beat egg yolks thoroughly, add sugar to cornstarch. To this add scolded milk - stir thoroughly. Return to double boiler, add butter. Cook until thick - Turn into pie shell - Top with meringue, made of egg whites and 4 tbs. sugar. Sprinkle with coconut. Brown in oven. | Mother's Coconut Pie
30: Sour Cream Pie | Ingredients: 3/4 c. sugar 3 egg yolks 1 egg white Pinch nutmeg 1/4 tsp. cloves 1/2 tsp. cinnamon 1/2 c. raisins (chopped) 1 c. sour cream | Cooking instructions Mix together; sugar, egg yolks and egg white. Then add nutmeg, cloves, cinnamon. Fold in raisins and sourcream.
31: Name | Toasted Frosting | Ingredients: 3 tbs. melted butter 5 tbs. brown sugar 2 tbs. cream 1/2 c. coconut | Cooking instructions Mix, spread on cake and put in broiler, brown (5-10 minutes).
32: Sally's Raised Doughnuts | Ingredients: 1 pkg yeast 1/4 c. warm water 3/4 c. warm milk 1/4 c. sugar 1 tsp. salt 1 egg 1/4 c. shortening 3 + 1/2-3/4 c. flour powdered sugar optional | Cooking instructions Dissolve yeast in warm water. Stir in milk, sugar, salt. Mix flour with shortening and then add liquid ingredients. Knead dough until smooth elastic (= 5 minutes).l Place in greased bowl, greasing the top and bottom. Cover, let rise in warm place until double (1 1/2hrs) Punch down, let rise again 30 mins. Roll 3/8" thick, cut out with doughnut cutter. Let rise again until light and double 30-40 mins. Heat 3-4" fat to 375 degrees. Drop into hot fat. Turn doughnuts as they rise to the surface. Fry 2-3 minutes per side. Take out, drop quickly in cold water. (Dry utensil before putting back in hot grease) Put in warm (hot) oven to dry and crisp. Coat with powdered sugar if desired.
33: M O N N I E 'S | Fruit Cake | Aunt La Neil first made this recipe in 1931. | Ingredients: 7 eggs 1 c. sugar 1 c. butter 1/2 c. molasses 1/2 tsp soda 4 c. toasted flour 1 tsp. of salt, nutmeg, cinnamon and allspice 1/2 lb. citron 1/2 lb. candied cherries 1/2 lb. candied pineapple 1 lb. raisins 1 1/2 lb. pecans or other nuts 1 c. brandy (more or less) | Cooking instructions Cream butter and sugar. Add beaten egg yolks then whites. Dissolve soda in molasses and add to above. Then add spices. Dredge fruit in flour, then add remaining flour, then fruit. Add nuts. Pour in (3) one pound loaf pans lined with butcher or parchment paper and oiled. Bake at 275 degrees for 2 1/2 hours with pan of water in bottom of oven. Cool in pans. Turn out into well lined box or can. Pour brandy over slowly. Wrap in linen or similar lint free fabric. Store in cool dark place for one month. Optional: Monnie always basted her occasionally with more brandy during storage.
34: Chewy Chocolate Cookies | 1 1/4 x. butter or margarine softened 2 c. sugar 2 eggs 2 tsp vanilla 2 c. unsifted all purpose flour | Cooking instructions: Cream butter or margarine and sugar in large mixer bowl. Add eggs and vanilla; blend well. Combine flour, cocoa, baking soda and salt; gradually blend into creamed mixture. Stir in nuts, if desired. Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 350 degrees for -9 minutes. (do not over bake. cookies will be soft. They will puff during baking, flatten upon cooling.) Cool on cookie sheet until set, about 1 minute; remove to wire rack to cool completely. About 4 1/2 dozen | 3/4 c. 35: Delicious Lemon Cake | 1 pkg Betty Crocker Lemon Cake 1/2 c. Sugar 3/4 c. salad oil 1 c. apricot nectar or juice 4 eggs added one at a time. Bake as directed on pkg. Mix 2 tbs lemon juice 1 c. powdered sugar and pour over cake while cake is still hot
