1: This Cookbook is inspired by all of the talented cooks in our family.
2: Crab Cakes | 1 lb canned or cooked crab meat flaked 2 - 2 1/2 cups soft bread crumbs 1 egg, beaten 3/4 cup mayonnaise 1/3 cup each celery, onion, green pepper finely chopped 1 tbsp seafood seasoning 1 tbsp minced fresh parsley 2 tsp lemon juice 1 tsp dill 1 tsp Worcestershire sauce 1 tsp prepared mustard 1/4 tsp pepper 1 tbsp cocktail sauce 1 tsp butter on top of all cakes In bowl combine crab, crumbs, egg, mayo, veggies, and seasonings. Shape into 8 patties. Put butter on top of all cakes and broil for ~ 4-5 on each side until golden brown. | Whiskey Dogs 1 pkg Ball Park Franks (do not substitute) 1/4 cup ketchup 1/2 cup whiskey 1/2 cup brown sugar Cut hot dogs into 1" pieces. Cook at 200 - 250 degrees for ~ 1 1/2 hours, stirring occasionally with the syrup.
3: Dill Pickles 2 Qt Water fresh dill 1 cup white vinegar fresh garlic 1/3 cup salt 2 cloves fresh garlic 1/4 cup sugar 7 large cucumbers Boil together water, vinegar, salt, and sugar. Allow to cool. Pour over sliced cucumbers. Add dill & garlic. Spicy Mexican Dip Regular size Velveeta 1 can Hormel Chili, no beans 1 can chopped jalapenos 1 can chopped mild chili peppers Spray square baking dish with Pam. Cut Velveeta into large pieces and spread around dish. Spread chili over Velveeta. Top with jalapenos and chilis. Bake covered at 350 for 30 minutes, then uncovered for 30 minutes, stirring in between. Emeril's Southwest Essence Seasoning 2 tbsp chili powder 2 tsp ground cumin 2 tbsp paprika 1 tbsp dried oregano 1 tbsp ground coriander 1 tsp cayenne pepper 1 tbsp garlic powder 1 tsp crushed red pepper 1 tbsp salt 1 tsp black pepper New Town Pizza Sauce 3 tbsp butter 6 tomatoes/ 1 can plum tomatoes 1 onion 1/3 cup white wine oregano salt & pepper
4: Suzy Mountz | Chicken Wing Dip | 3 chicken breasts, boiled & shredded 1 cup blue cheese dressing 1 12 oz bottle Red Hot sauce 2 8 oz packages cream cheese Shredded cheddar cheese Layer bottom of 9x13 pan with chicken. Mix cream cheese, blue cheese & hot sauce together and pour over chicken. Top with cheddar cheese. Bake at 350 for 30 minutes until bubbly. | 350 30 min | Broccoli-Cheese Casserole 1 can Cream of Mushroom Soup 1 cup Mayonnaise 1/4 cup finely chopped onion 1 egg, beaten 3 (10 oz) pkgs frozen chopped broccoli Salt to taste 8 oz shredded Sharp Cheddar Cheese 2 pinches Paprika Ground black pepper to taste Preheat oven to 350. Butter a 9x13 baking dish. In medium bowl whisk together cream soup, mayonnaise, egg, and onion. Place frozen broccoli into a very large mixing bowl and break up. Use a large rubber spatula to spread soup-mayo mixture on top of broccoli and mix well. Sprinkle on cheese on mix well. Spread into baking dish and smooth top of casserole. Season to taste with slat, pepper, and paprika. Bake for 45 minutes - 1 hour.
5: Judy Stinson | Beau Monde Dip | 1 1/4 cup sour cream 1 1/4 cup mayonnaise 1 tbsp chopped onion 1 tbsp Beau Monde 1 tbsp dill weed 6 oz chopped, dried beef Hollow out center of 1 round loaf of rye bread and toast a short time. Mix dip ingredients together. Serve the dip in the hollow of the bread. Make cubes out of the bread center and use to dip. | Crab Muffins 1/2 stick butter 1 lb crab meat 1/2 jar Old English cheese spread 1 tbsp mayonnaise 6 English muffins, split and quartered Melt butter & cheese. Add crab meat and mayo. Mix well. Toast muffins in oven. Spread mixture on toasted muffins and broil until cheese is bubbly.
6: Alison Diehl | Stuffed Pepper Soup | 2 lbs ground beef 1.5 cups water 1.5 cups cooked rice 2 c cooked chopped peppers 1 can diced tomatoes 2 tbsp brown sugar 1 can tomato paste 2 tsp salt 1 can tomato sauce 2 tsp pepper 2 beef or chicken bouillon cubes Brown beef. Combine all ingredients and simmer on low for ~30 minutes. | Vegetable Cheese Chowder 3 cups chicken broth 1/2 cup butter or margarine 3 cups hot water 2 cups milk 1/2 cup flour cube or dice: 3 cups shredded sharp cheese 1 cup potatoes 1 tbsp minced parsley 1/2 cup carrots salt & pepper to taste 1 cup celery 1/2 cup onions 1/2 cup green peppers Bring broth to a boil. Add vegetables and butter. Simmer about 1.5 hours or until vegetables are done. Dissolve milk and flour and stir slowly into hot broth. Add cheese and stir slowly until soup thickens.
7: Taco Soup 1 lb ground beef 1 can original Ro-tel 1 can corn 1 pkg taco seasoning 1 can Hominy 1 pkg ranch dressing 1 can kidney or chili beans Put in crock pot and add water to make a soup-like appearance. Serve with shredded cheese, sour cream, and Fritos. French Onion Soup 1 pound onions, sliced pinch ground pepper 3 tbsp vegetable oil 6 slices toasted French bread 2 (14 oz) cans beef broth 2/3 cup shredded Swiss cheese 1 tsp Worcestershire sauce Cook onions in vegetable oil in a large covered saucepan over medium heat for 20 min. Stir in broth, Worcestershire sauce and pepper. Heat to a boil and remove from heat. Place bread on baking sheet and sprinkle with cheese. Broil for ~1 minute until cheese is melted & golden. Ladle soup into bowls and top with bread.
8: Beef Jerky 1/2 cup dark soy sauce 2 tbsp Worcestershire sauce 1 tsp MSG (optional) 1/2 tsp onion powder 1/2 tsp garlic powder 1/4 tsp ginger, powdered 1/4 tsp Chinese 5-spice powder 3 lbs lean beef brisket, eye of round, or flank steak Trim all fat from meat and cut across grain into 1/8" thick slices. To aid in slicing meat, freeze until ice crystals are formed. Blend all ingredients except meat in small bowl. Dip each piece of meat into marinade, coating well. Place in shallow dish. Pour remaining marinade over top, cover and refrigerate overnight. Preheat oven to lowest setting, preferably 110 F. Place several layers of paper towels on baking sheets. Arrange meat in single layer on sheets and cover with additional toweling. Flatten meat with rolling pin. Discard towels and set meat directly on oven racks. Let dry 8-12 hours, depending on oven temperature. Hash Brown Casserole 1 stick butter 1 pint sour cream 8 oz shredded cheddar cheese 1 can cream of chicken soup 2 lbs hash browns 1/2 cup chopped onion Melt butter and combine other ingredients. Grease 9x13 baking dish and spread potato mixture evenly in pan. Bake for 1 hour at 375.
9: Savory Swiss Steak | 1/2 cup flour 1 tbsp dry mustard 2 tbsp vegetable oil 1 14oz can diced tomatoes 1 cup sliced onions 1/2 cup diced celery 2 or 3 diced carrots 2 tbsp Worcestershire sauce 1 tbsp packed brown sugar salt & pepper 1 1/2 lbs round steak, cut 1" thick Mix flour & mustard. Sprinkle mixture over steak and pound it in with a cleated meat mallet. Cut pounded steak into serving size pieces. Heat oil in a wide frying pan over medium heat. Add meat and cook, turning once until browned on both sides. Add tomatoes and their liquids, onion, celery, carrots, Worcestershire sauce and sugar to the meat in a baking or frying pan. Season to taste with salt & pepper. Cover and bake at 350 until meat is tender when pierced, about 1 1/2 hours.
10: Ingredients: 1 box lasagna noodles 1 large tub Ricotta cheese 1 large bag shredded mozzarella cheese Grated Parmesan cheese Sauce 3/8 teaspoon garlic powder 3 lbs ground beef 6 teaspoons salt 3/4 teaspoon pepper 1 1/2 teaspoons Rosemary 6 cans tomato paste 9 cups hot water Directions: Combine all sauce ingredients and cook on low for ~ 2 hours until sauce thickens. Spray pan and add a little sauce on the bottom of the pan. Layer noodles, ricotta, mozzarella, parmesan, and sauce. Start over, ending with sauce as top layer. Cook at 400 for ~ 1 hour or until bubbly. | Lasagna
11: Macaroni & Cheese | Ingredients: 4 tsp cornstarch 4 tbsp margarine 2 tsp salt 6 cups cooked macaroni 1 tsp dry mustard 5 cups milk 1/2 tsp pepper 5 cups shredded cheese Directions: In medium sauce pan combine first 4 ingredients. Stir in milk. Add margarine and stir constantly. Bring to a boil over medium heat and boil for 1 minute. Remove from heat and stir in 4 1/2 cups of cheese until melted. Add macaroni and stir. Pour into a greased 2 qt casserole. Sprinkle with remaining cheese. Bake uncovered at 375 for 25 minutes until bubbly.
12: Potato Pancakes | 5 Potatoes 1 onion 1 egg 1/2 cup flour Peel potatoes and combine with water and onion in food processor. Drain and save liquid. Mix all ingredients together. Drain water from liquid, saving starch on the bottom of the bowl. Add starch to potato mixture and fry in hot oil. | Pasta Sauce 4 28 oz cans Don Pepino Sauce 6 tbsp olive oil 4 cloves garlic 2 tbsp parsley 2 tsp basil pepper In large pot heat oil and brown garlic. Add sauce & fill one of the cans 1/2 full with water and pour into sauce. Add seasonings.
13: Judy Stinson | Cube Steak | Dry Onion Soup Mix Cube Steaks Flour, salt, pepper 1 can Cream of Chicken Soup Dredge steaks in flour, salt, & pepper. Brown on both sides in hot oil. Mix soup and onion soup mix. Pour over steaks. Cover with foil and bake 1 hour at 350. | 350 1 hour | Swedish Meatballs 1 1/2 lbs ground beef 1 egg 1/4 lb Ground Sausage 1/4 cup ketchup 2 tbsp Worcestershire sauce 1 tbsp dry mustard 1 tbsp soy sauce 1 clove minced garlic 2 tsp salt 1 tsp pepper Sauce: 2 cans cream of mushroom coup 1 cup sour cream 1 tsp Worcestershire sauce dash Tabasco sauce 1/4 cup milk Mix all meatball ingredients together and shape into balls. Place on baking sheet with sides. Bate at 375 for 45-60 minutes until brown. Mix sauce ingredients. Place meatballs and sauce in crock pot. Cook on high until cooked through. Serve with rice or noodles.
14: Loads of Blueberries Coffee Cake 4 tbsp unsalted butter 3 cups blueberries 2 cups flour 2 1/2 tsp baking powder 1/2 teaspoon salt 3/4 cup milk 2/3 cup sugar 2 large eggs topping: 2 tbsp sugar + 1/4 tsp nutmeg Heat over to 350. Grease 9"x9" dish. Melt butter in saucepan and cool. Wash and drain berries, remove stems. Mix flour, baking powder & salt in bowl.Add milk, sugar and eggs to butter, whisk. Add to flour mixture, stirring to blend well. Fold in blueberries. Spread batter in dish. Sprinkle with sugar-nutmeg topping. Bake ~ 50-60 minutes.
15: "There is no love sincerer than the love of food." ~George Bernard Shaw | Alison Diehl | Cranberry Mold | 1 can whole cranberry sauce 1 3oz pkg Jello 1 cup boiling water 1/4 tsp salt 1 tbsp lemon juice 1/4 cup mayonnaise 1 apple, diced 1/4 cup chopped nuts Heat sauce & strain, set berries aside. Dissolve jello in hot juice, water, salt, lemon juice. Beat in mayo. Fold in berries, nuts, & fruit.
16: APPLE CRISP 6 apples cut into 1/2" cubes 2 tbsp lemon juice 1/2 cup brown sugar, divided 3/4 cup flour 3 tbsp butter, softener cinnamon 1/3 cup oatmeal or graham cracker crumbs Combine apples, lemon juice, cinnamon, and 1.4 cup brown sugar in medium baking dish. Toss to coat apples. In small mixing bowl, combine flour and butter - mix until it crumbles. Add oatmeal and brown sugar. Toss, rubbing together to make crumbles. Sprinkle over top of apples, using a spoon to push in between apples. Bake at 400 for 30-40 minutes until bubbly and crumb topping browns. | Linda Clair's Coffee Cake 2 cups flour 2 cups sugar 2 tsp baking powder 1/2 cup oil 2 eggs milk 2 tsp vanilla 2 sticks margarine powdered sugar Mix dry ingredients. In a 2 cup container mix oil, eggs, and vanilla. Fill to 2 cups with milk. Mix wet ingredients with dry. Bake at 350 for 40 minutes. When baked and hot, rub margarine over cake and sprinkle with powdered sugar.
17: Gary Stinson | Banana Bread | 1/2 cup Crisco 1 cup sugar 3 over ripe bananas 2 cups flour 1 tsp baking soda 2 eggs 1 cup chopped nuts pinch of salt Cream Crisco and sugar. Mix in eggs, bananas, flour, baking soda, nuts, and salt. Bake at 350 degrees for about 50 minutes until bread begins to brown. | 350 | 50 min | Banana Bread | Judy Stinson | 3/4 cup dry rice 1 qt water 3/4 cup sugar 1 tsp vanilla 5 cups milk/evaporated milk 2 eggs Boil rice and water. Add milk and sugar. Simmer for ~ 1 - 1 1/2 hours. In a cup add eggs and vanilla. Fill the rest of the cup with milk. Stir into pot and continue to cook and stir until pudding thickens. | Rice Pudding
18: Mary Stinson | Press Cookies | TURTLE CAKE 1 box German Chocolate Cake mix 14 oz Bag Caramels 3/4 cup butter 1/2 cup evaporated milk 1 cup chocolate chips 1 cup chopped nuts Mix cake according to directions on box. Grease and flour 9x13 pan. Pour half of batter into pan & bake at 350 until done. In sauce pan melt caramels, butter, and milk. Stir into a sauce. Remove cake from oven and pour caramel mixture over it. Top with chocolate chips and nuts. Pour other half of batter over this and finish baking (~30 minutes). | 1 lb butter 2 cups sugar 5 eggs 2 tsp flavoring (vanilla, anise, etc.) 7 or 8 cups flour 1 tsp baking soda 2 tsp cream of tartar Combine all ingredients and mix into a dough. If dough is too soft, add more flour a little at a time. Bake at 400 degrees for 8-10 minutes. Makes a very big batch (~250 cookies). 400 8-10 min 250
19: When baking, follow directions. When cooking, go by your own taste. ~Laiko Bahrs | Judy Stinson | Popovers | 1 cup milk 1 tbsp melted butter 1 cup flour 1/4 tsp salt 2 eggs, beaten Bring all ingredients to room temp. Beat milk, butter, flour, and salt until just smooth. Add eggs one at a time - do not over beat. Fill into muffin cups, Bake for 15 minutes at 450. Lower heat to 350 without opening oven and bake 30 minutes. | 450, 350 | 45 minutes | Ambrosia 1/2 cup coconut 1 can mandarin oranges 1 cup mini marshmallows 1 can pineapple tidbits 8 oz sour cream Drain fruit thoroughly and mix all ingredients together.
20: Pineapple Cheesecake 2 cups sugar 2 cups flour 2 eggs 2 tsp baking soda 20 oz can crushed pineapple w/ juices Mix with fork in 9x13 pan. Bake at 350 for 40-50 minutes. 8 oz cream cheese 2 oz butter 1 tsp vanilla 2 cups 10x sugar Mix with hand blender. Spread over top of cake. Orange Creamcicle Cake Orange Supreme cake mix 1 cup boiling water 1/2 cup cold water 1 pkg orange jello 1 vanilla instant pudding 1 cup cold milk 1/4 cup 2x sugar 1 tsp vanilla 1 tsp orange extract 8 oz Cool Whip Prepare cake and bake in 9x13 pan. Let cool and poke holes all over cake with fork. Mix jello and water till dissolved. Let cool and pour over cake. Refrigerate for 1/2 hour. Beat remaining ingredients together and fold into Cool Whip. Spread on cake. Strawberry Sparkle Cake 1 angle food cake 1 pkg strawberry jello 1 lb frozen berries Cool Whip Dissolve jello in 1 cup boiling water. Add berries and stir to break up. Cut cake 1" from top. Make a tunnel by removing pieces of cake and putting them in strawberry mixture. Pour mixture into tunnel and place layer of cake on top. Cover entire cake with Cool Whip. Chill for 1 hour. Put berries on top.
21: Cream Puffs | 1/2 cup butter 1 cup flour 4 eggs 1 cup water prepared vanilla pudding Heat water in butter to a boil. Stir in flour, stirring constantly until mixture leaves pan and forms a ball (~ 1 minute). Remove from heat and cool. Beat in eggs one at a time until smooth and velvety. Drop from spoon onto ungreased baking sheet. Bake at 400 until dry, about 45 minutes. Allow to cool slowly. Cut off tops, scoop out dough, and fill with pudding. Jelly 4 cups fruit (10-14 peaches) 1/4 cup lemon juice 7 1/2 cups sugar 1 pouch certo 1/4 tsp margarine Soak peaches in warm water. Peel, pit and cut in half. Put in food processor to desired consistency. Heat glasses in hot water or dish washer. Add all ingredients except certo in large pot and bring to a full rolling boil on high heat, stirring constantly. Add certo and return to full rolling boil for ~1 minute, stirring constantly. Make sure flat lids have been heated while jelly is cooking. Quickly ladle jelly into jars, filling to within 1/8" from top. Wipe jar rims and threads. Cover with flat lids and screw bands tightly. Invert glasses 5 minutes then turn upright. After jars cool check seals by pressing lid with finger. If lid springs back, refrigerate. Let stand at room temp for 24 hours. Makes (7) 12 oz jars.
