1: This book contains recipes my mom made while growing up, and are now family favorites
2: Crumb Layer: 1 cups rolled oats 1 cups flour 1 cup brown sugar 1 tsp baking soda 1 cup softened butter Date Filling: 1 cups pitted dates 2/3 cups water 1/2 cup white sugar Combine crumb ingredients in large bowl. Cut in butter until mixture resembles coarse crumbs. Press little more than half firmly in greased 9 X 9 pan. Set aside. Combine dates, water and sugar in medium saucepan. Bring to a boils and reduce heat to simmer 10 minutes until dates are softened and water is evaporated. Add more water if needed while simmering to soften dates. Spread evenly over crumb base. Sprinkle remaining crumbs evenly over top. Bake 350 for 30 minutes. Cool and cut. | Date Squares
3: Raisin Buns 2 1/2 cups flour 5 tsp baking powder 1/2 cup sugar cut in 1/2 cup butter add in 1 cup raisins and enough milk (approx 3/4 cup) to make a soft dough Roll to 1/2 inch thickness. Use glass to cut out buns Bake at 425 degrees for 15 minutes | Making Raisin Buns with Grandma
4: Great Grandma's Pancake Recipe 2 cups flour 3 tsp baking soda 2 tbl butter 1/4 cups sugar\ 1 egg (dropped in) 1 tsp vanilla 2 cups (+ or -) milk Mix flour, baking powder, sugar together. Add butter and mix in dropped egg, vanilla, and milk. Add enough milk until right consistency. Drop onto hot pan and enjoy !
5: 8 cups puffed wheat cereal 3 Tbl unsweetened cocoa powder 1/3 cups corn syrup 1/4 cup packed brown sugar 1/3 cup butter Place puffed wheat in a large bowl and set aside. Grease one 9X9 pan. grease the rim of a medium saucepan to prevent boil over./ Place the cocoa powder,corn syrup, brown sugar and butter in the saucepan. Cook over medium heat stirring often until comes to a full boil. Allow to boil for 1 minute and then remove from the heat. Pour chocolate mixture over the puffed wheat and stir until evenly coated. Using a buttered spatula, press the mixture into the pan. Allow to cool then cut. Wrap individually or store in airtight container | Chocolate Puffed Wheat Squares
7: Moms Meatloaf | 1 package lean ground beef 1 tsp worstershire sauce 2 Tbl chopped onion 2/3 cups rolled oats 1 egg 1/4 cup ketchup salt/pepper 1/2 cup water Mix all ingredients together. Grease dish. Place above mixture in and top with 1/4 cup ketchup or BBQ sauce. Bake at 350 degrees for 1 hour
8: Cabbage Rolls | mmmm......Good | 1 package Lean Ground Beef 1 small onion 1 leafy head of cabbage 1 can tomato soup Cook Onion and mix in lean ground beef. Don't cook the ground beef. Roll uncooked mixture into cabbage and place in greased pan. Pour tomato soup with little water over cabbage rolls. Bake 350 degrees 1 1/2 hrs
9: Beef Stew | Dumplings | 1 cup flour 2 tsp baking powder titch butter milk until very wet, but dough will form add to rapidly boiling stew - cook 7-8 minutes covered DO NOT LIFT COVER ! | 1 medium package precut stewing beef, or steak cut into cubes 2 tbl oil 2-3 tbl flour 2 cups water 1 cup beef broth 3 medium potatoes 1 onion 3-4 carrots mushrooms | Coat beef with flour and pepper. Heat 2 Tbl oil and cook beef until brown. Stir in chopped onion. Drain. Add 2 cups water, 1 cup beef broth. Cover and simmer 2 hours in 350 degree oven. Stir in diced potatoes, cubes onion, carrots,mushrooms. Cook additional 30 minutes. Mix 1/2 cup cold water with 2 Tbl corn starch and mix into stew, will thicken sauce.
10: Best Ever Macaroni & Cheese | 2 cups elbow macaroni, cooked and set aside 3 Tbl butter 3 Tbl flour 2 cups milk 2 1/2 cups shredded old cheddar cheese 1/2 bread or cracker crumbs (optional) Melt butter, mix in flour. Add milk. Stir frequently until thickens. Add salt and pepper. Add 2 cups shredded cheese. Stir until melted. Put cooked macaroni in greased dish. top with sauce mix. put remaining shredded cheese and breadcrumbs on top. Bake at 350 degrees for 30 minutes.
12: Spicy Chicken Lasagne Roll-Ups 2 cups shredded cooked chicken 1/2 cup Kraft 100% Parmesan Grated Cheese 1 egg, lightly beaten 1 tsp. crushed red pepper 1 tsp. Italian seasoning 6 lasagna noodles, cooked, rinsed and drained 1 can (19 fl oz / 680 mL) tomato sauce 1 cup Kraft Mozzarella Finely Shreds, divided PREHEAT oven to 375F. Mix chicken, Parmesan, egg and spices. Spread 1/3 cup chicken mixture onto each noodle; roll up tightly. PLACE, seam sides down, in 9-inch square baking dish sprayed with cooking spray. Cover with tomato sauce; sprinkle with half the mozzarella cheese. BAKE 20 min. Sprinkle with the remaining mozzarella cheese, baking 5 min. more or until cheese is melted.
13: Hot Artichoke and Spinach Dip 1 (8 ounce) package cream cheese, softened 1/4 cup mayonnaise 1/4 cup grated Parmesan cheese 1/4 cup grated Romano cheese 1 clove garlic, peeled and minced 1/2 teaspoon dried basil 1/4 teaspoon garlic salt salt and pepper to taste 1 (14 ounce) can artichoke hearts, drained and chopped 1/2 cup frozen chopped spinach, thawed and drained 1/4 cup shredded mozzarella cheese Preheat oven to 350 degrees F (175 degrees C). Lightly grease a small baking dish. In a medium bowl, mix together cream cheese, mayonnaise, Parmesan cheese, Romano cheese, garlic, basil, garlic salt, salt and pepper. Gently stir in artichoke hearts and spinach. Transfer the mixture to the prepared baking dish. Top with mozzarella cheese. Bake in the preheated oven 25 minutes, until bubbly and lightly browned. | mmmmm ....good
14: Fish Chowder
15: The Chowder was so good at a Maritime restaurant we visited, mom asked the cook for the recipe.....and he gave it to her ! | Fish Chowder Sauté 1 medium onion in tbl butter. Chop 5 medium potatoes into cubes and cook in boiling water until tender. Drain Add 1 lb haddock and scallops 1 tsp parsley 1/4 cup chopped green onions 1 litre BLEND (1/2 and 1/2 also works) salt and pepper simmer 30 minutes
16: Peanut Butter Cookies | 1 cup butter 1 cup white sugar 1 cup brown sugar 2 eggs 1 cup peanut butter 2 cups flour 2 tsp baking soda 1 cup coconut )optional) Mix butter, and sugar with eggs. Add peanut butter. Mix in flour and baking soda. Fold in coconut. Bake at 350 degrees for 10-12 minutes
17: Chocolate Mice | 1 cup peanut butter 1 cup icing sugar 1/4 cup butter 1 cup coconut 2 cups rice krispies Melt a block of parowax and 4-5 squares of chocolate, keep on low heat.. Mix all the above ingredients. Form into balls and dip into melted chocolate.. Line pan with parchment paper and place balls onto cookie sheet. Refrigerate | ....
18: Toast 1 cup pecans and 1 cup almonds in 300 degree oven for 5-10 minutes Prepare 12 cups popcorn. Preferable if made on top of stove Melt 1 1/2 cups sugar with 1 cup butter. Remove from stove and add 1/2 cup white corn syrup, 1/2 tsp cream of tartar, 1/2 tsp baking soda, 1 tsp vanilla. Grease a large bowl. Pour mixture over popcorn and nuts. Toss with a greased spoon. Spread mixed popcorn onto a couple flat pans and allow to cool, shaking, breaking up frequently. Store in air tight containers. | Caramel Popcorn | MMMM good
19: LEMON SLICE 1 cup softened butter 1 cup icing sugar 2 cups flour 1/2 tsp salt 4 eggs 1 1/2 cups lemon juice 1 1/2 cups white sugar Combine butter, flour, icing sugar and same. Mix to crumble. Press into 9 X 13 pan. Bake at 350 degrees for 20 minutes. Beat eggs, lemon juice, sugar. Pour over crust and bake another 25 - 30 minutes. Sprinkle with icing sugar. Cool and cut. Freezes well. | CHOCOLATE NO BAKE REFRIDGERATOR COOKIES 1/2 cup butter cup milk 2 cups white sugar 3 cups oatmeal cup coconut 6 Tbl cocoa 1 tsp vanilla Boil for 1 minute: 1/2 cup butter, 1/2 cup milk, 2 cups white sugar. Add 3 cups oatmeal, 1/2 cup coconut, 6 Tbl cocoa, 1 Tsp vanilla Spoon onto parchment or was paper lined cookie sheet. Refrigerate
21: MOMS APPLE CRISP | \ | 1 cup flour 1 tsp baking soda 1 cup oats 3/4 cup brown sugar 3/4 cup butter\\ Combine all ingredients and bring to crumble texture. Grease a 9 X 13 pan. Peel and slice 4-6 apples, enough to line pan. Put 2 Tbl water over apples Spread crumble mixture over sliced apples. Bake at 350 degrees for 30 minutes
22: 8 squares chocolate Melt chocolate, set aside and cool 1 1/4 cup flour 1/2 cup cocoa powder 2 tsp baking powder 1/4 lb butter 1 1/3 cup brown sugar 2 large eggs 1 tsp vanilla 1/3 cup milk Sift flour, cocoa, baking powder. Keep aside. Beat butter, brown sugar until fluffy. Add eggs, vanilla, \Add melted chocolate. Add flour mixture and alternate with milk until all combined. Shape dough into oval disc, wrap in parchment paper and refrigerate for 2 hours. Cut into slices. Roll in icing sugar. Bake at 350 degrees for 12-15 minutes | Double Chocolate Crackle Cookies
23: LEMON LOAF | 6 Tbl butter 1 cup white sugar Cream together Add 1 1/2 cups flour 2 eggs 1/2 cup milk 1 Tsp baking powder Bake 350 degrees for 1 hour Mix 1/4 cup sugar with juice from 1 lemon, brush on hot loaf when removed from oven. | Cinnamon Buns | 2 cups flour 4 tsp baking powder 1 tsp sugar Chop in 1/4 cup butter and bring to crumble Add 1 egg with 1 cup of milk - add to above mixture until right texture. Roll out on floured surface. Butter entire flat surface liberally. Mis 1/4 cup sugar with 3 tbl cinnamon. sprinkle liberally over buttered dough. Roll entire surface. Slice to make buns Bake at 450 degrees for 15 minutes
24: Favorite Christmas Desserts | Christmas Cake 1 bag raisins 1 package cherries 3 cups water 1/2 lb butter 2 Tbl cocoa 1 1/2 cups brown sugar 1/2 tsp cinnamon 1/2 cup regular coffee brew Place all in a large saucepan and bring to boil, remove from heat and cool. Add 3 1/2 cups flour, 1 tsp baking soda Line baking dish with parchment paper and grease well. Bake at 300 degrees for 1 hour, then 325 degrees for 1 1/2 hours. Cover with tinfoil (just lay on top) so does not burn.
25: Christmas Fruit Cake | Cherry Cake 3/4 cups butter 1/2 lb cherries 3 eggs 1/2 tsp vanilla 1 cup sugar 1 3/4 cups sifted flour 1/2 tsp baking powder Cream butter and sugar and blend well, add in unbeaten eggs one at a time, beat well. Add vanilla. Coat cherries with flour . Sift remaining ingredients together and add to cream mixture. Stir in coated cherries. Grease and flour loaf pan. Bake 300 degrees for 2 hours
26: OREO Frozen Peanut Butter Dessert 2-1/2 cups Oreo Baking Crumbs 3 Tbsp. butter, melted 1 cup Kraft Smooth Peanut Butter 7 cups vanilla ice cream, softened 3 cups Cool Whip Whipped Topping (Do not thaw.) 6 squares Baker's Semi-Sweet Chocolate 1/2 cup peanuts, coarsely chopped MIX crumbs and butter; press onto bottom of 13x9-inch pan. Freeze until ready to use. Microwave peanut butter in small microwaveable bowl on HIGH 1 min.; stir. Swirl peanut butter into ice cream; spread over crust. Freeze 30 min. MICROWAVE Cool Whip and chocolate in medium microwaveable bowl on HIGH 1-1/2 to 2 min. or until chocolate is completely melted and mixture is well blended, stirring after each minute. SPREAD Cool Whip mixture over ice cream layer; top with nuts. Freeze 4 hours. Remove from freezer 10 min. before serving; let stand at room temperature to soften slightly before cutting. Freeze leftovers.
27: Butterscotch Confetti 1/4 cup butter 1/2 cup peanut butter 1 cup butterscotch chips 8 oz colored marshmallows (1 bag) melt butter and peanut butter in large saucepan over low heat. Stir in chips until melted. Cool slightly. Add marshmallows and stir until well coated. Pack down in 9X9 wax paper lined pan. Refrigerate. Makes 36 squares
28: Cranberry Streusal Muffins 2 cups flour 1 Tbl baking powder 1 cup cranberries/blueberries 1 egg 2/3 cups white sugar 1/4 cup oil/butter 1 cup skim milk 2 tsp grated lemon peel Mix flour, baking powder and berries together. In separate bowl mix egg, white sugar, oil/butter, skim milk, and lemon peel. Add wet mixture to flour mixture and stir. Spoon into muffin pan. Mix 1/4 cup brown sugar and 1 tsp cinnamon together and sprinkle on top of muffin mix before placing in oven Bake 400 for 20-30 minutes
29: Oatmeal and Sesame Squares 3/4 cup butter 1 1/2 cups brown sugar 1 1/2 tsp vanilla Cook on stove top for 2 minutes Remove from heat and stir in 2 1/4 cups oatmeal 3/4 cups sesame seeds 3/4 tsp baking powder Press into 15X10 greased pan. Bake 375 for 7-10 minutes
30: Banana Loaf | 1/2 tsp baking soda and 1 cup boiling water - add together and let cool 1/2 cup butter\ 1/4 cup sugar Mix well. ADD 2 well beaten eggs 1 cup mashed banana Mix in 2 1/2 cups flour, 2 tsp baking powder (walnuts optional) Add water and baking soda mixture. Grease loaf pan, bake at 350 degrees for 1 1/2 hours
31: Cheese Garlic Biscuits (as served at \Red Lobster) 2 cups bisquick baking mix 2/3 cups milk 1/3 cup shredded cheddar cheese 1/4 cup melted butter 1/4 tsp garlic powder Mix baking mix, milk and cheese until soft dough forms. Beat vigorously tor 30 seconds. Drop by spoonful onto un-greased cookie sheet. Bake at 450 degrees for 8-10 minutes Brush melted butter and garlic mixture over warm biscuits before removing from cookie sheet
32: Raisin Sauce 1/2 cup brown sugar 2 tsp cornstarch 1/2 cup hot watter 1/2 cup raisins 1/2 tsp salt 1 tsp vinegar 1 tbl butter Mix sugar and cornstarch together in sauce pan. Stir in hot water. Cook 5 minutes. Stir often, add raisins. Cook 5 minutes. Stir in remaining ingredients | Pastry Dough 1 3/4 cups flour\ Mix in 3/4 tsp salt, 3/4 cup butter \mix to crumble then add 4-5 tbl ice cold water | The perfect addition to a ham dinner......yummy !
33: The Ultimate Butter Tart Tart Shells: 2 cups flour 3/4 tsp salt 1 cup crisco shortening or butter 4 Tbl ice water Prepare crisco pastry recipe for double crust as directed on package. Roll our thinly on lightly floured surface. Fit into muffin cups. If using frozen shells, thaw but do not cook. Fill and then bake. Filling: 1/2 cup brown sugar 1/2 cup corn syrup 1/4 cup crisco or butter 1 egg slightly beaten 1 tsp vanilla 1/4 tsp salt 3/4 cup raisins Combine all filling ingredients except raisins, mix well. Put raisins in pastry shells. Fill 2/3 full with syrup mixture. Bake 425 for 12-15 minutes. Over baking makes them runnier. Cool.
34: Pinecone Cheese Spread 1 pkg. (250 g) Philadelphia Light Brick Cream Cheese Spread, softened 2 cups Kraft Tex Mex Shredded Cheese 2 Tbsp. Dijon mustard 2 Tbsp. canned chopped green chiles 1/3 cup sliced almonds, toasted Ritz Crackers Make It PROCESS first 3 ingredients in food processor until well blended; spoon into freezer-proof container. Stir in chiles. Freeze 20 min. or until firm enough to handle. SHAPE into 4-inch oval on sheet of waxed paper. Insert nuts in rows to completely cover cream cheese mixture to resemble pinecone. Transfer to serving plate. REFRIGERATE 2 hours. Remove from refrigerator 15 min. before serving. Let stand at room temperature to soften slightly. Serve with crackers.
35: Sweet Brussels Sprouts with Balsamic Dressing 4 lb. (2 kg) Brussels sprouts 3 Tbsp. Kraft Calorie-Wise Balsamic Vinaigrette Dressing 3 Tbsp. no-sugar-added pancake syrup Grated peel from 1 large orange COOK Brussels sprouts in large pot of boiling water 6 min. or until tender. Drain well. HEAT dressing and pancake syrup in large nonstick skillet on medium heat. Add Brussels sprouts; stir-fry 3 min. STIR in orange peel. Boil the Brussels sprouts just until tender. They will continue to cook when stir-fried in the dressing. When cooked, they will have a vibrant green colour and provide only slight resistance when pierced with a fork
