1: In the Kitchen with... | St. John's Preschool | Spring 2011 | Spring Benefit Dinner 2011

2: From the Kitchen of: Sue Knetsch Recipe: Pepperoni Bread Ingredients: 1 frozen bread loaf 1 egg dash of garlic 1 tsp. oregano 2cups shredded co-jack cheese Enough pepperoni to cover the bread rolled out (I use turkey pepperoni to cut down fat.) Thaw the frozen bread loaf overnight in the refrigerator (I put it in a plastic bag). The next day flour and roll dough out to approx. a 9x13 size. Mix the egg, garlic & oregano. Brush 1/2 of the mixture on the bread. Cover with pepperoni and the cheese. Roll up jelly roll style (the long way). Brush other half of the mixture on top of bread. Make a couple of slashes on the top. Bake at 350degrees for 30 minutes. Serve with pizza or spaghetti sauce for dipping. My kids loved this cold and I sent it for lunch with them the next day!

3: From the Kitchen of: Janine Marchand Recipe: Rocky Road Fudge 1 package chocolate chips 2 tablespoons margarine or butter 1 can Eagle Brand Sweetened Condensed Milk 2 teaspoons vanilla extract 2 cups peanuts 1 bag mini marshmallows Melt chocolate chips with butter and milk over low heat or in double boiler. When melted, remove from heat. Stir in vanilla and nuts. Cool until lukewarm then fold in marshmallows. Line the bottom of a 9x13 pan with wax paper. Pour warm mixture into pan (on top of wax paper). Chill 2 hours. Remove from pan and cut into pieces.

4: Zoe Kempke | Yummy Morning Smoothie | 1 banana fresh or peeled and frozen overnight 1 cup frozen or fresh blueberries 1 cup fresh or frozen strawberries | 4-6 cups | 1/2-1 cup fresh or frozen blackberries. | 2 cups orange juice | 2 Cups fresh spinach | 1) Add juice, banana and berries to blender. | 2) Blend on high for 30 seconds. 3) Add spinach. | 4) Blend on high for 10-20 seconds to desired consistency. Put yogurt, blueberries, ice, milk, and | almond extract in blender. | 2. Cover with lid and blend on high | Pour into glass. Serve at once. | speed until mixture is smooth. | 5-6oz servings | My favorite food is blueberries... I really don't like crust.

In greased 9-inch | 1 2/3 cups mixed veggies, thawed | 1/2 cup milk | 1 cup Bisquick Mix 1 egg | 1 cup cut-up cooked chicken | 1 can (10 3/4oz) condensed cream of chicken soup | pie plate, stir vegetables, chicken, and soup. | In medium bowl, stir remaining ingredients until | blended. Pour into pie plate. Bake uncovered about 30 minutes or until crust is golden brown. | 30minutes | My favorite food is hot dogs... 7: From the Kitchen of: Jack Pitoscia Recipe For: Granny's Sweet Potato Casserole 3 cups mashed sweet potatoes or 2 1/4lb can 1 cup sugar 1/2 tsp cinnamon 1/2 tsp salt 1/2 tsp nutmeg 2 eggs 1/2 stick butter 1 tsp vanilla Combine. Put into greased 2 qt casserole dish. In separate bowl, melt 1/2 stick butter with 1 cup coconut, 1 cup brown sugar, 1/3 cup flour, 1 cup chopped pecans. Pour over top. Bake 350 degrees for 35 minutes. | My favorite food is mixed veggies... I really don't like Sloppy Joes! | "When I grow up, I want to be a Doctor." -Jack Pitoscia

8: From the Kitchen of: John Meyer Recipe for: Guacamole 1 avocado 1/8 teaspoon salt 1/8 teaspoon pepper 1/3 lime, squeezed hot sauce (optional) 1 clove garlic minced 4-5 cherry tomatoes 1 tablespoon Blue Cheese dressing (optional) onion, slice 1/4inch 1 teaspoon-1 tablespoon chopped cilantro Put all ingredients in food processor and pulse until desired consistency. Serve with tortilla chips. | My favorite food is chicken. | I really don't like hamburgers. | "When I grow up, I want to be an eight year old." -John Meyer

10: From the Kitchen of: Christopher Lopez Recipe for: Bacon Macaroni and Cheese | 1 lb cavatappi pasta 6 slices bacon 1 Tbsp. butter 3 Tbsp. flour 2 cups milk 1/8 tsp. onion flakes | 1/4 tsp salt, 1/4 tsp pepper 1/2 lb. sharp cheddar cheese, shredded 1 cup shredded colby-jack 1 cup shredded mozzarella 8 slices American cheese | 1) Heat oven to 350. Coat a 3qt baking dish. Bring a large pot of water to boiling. 2) cook cavatappi 8 min. in water, then drain, Meanwhile, in medium size saucepan, cook bacon until crisp. Transfer to paper towels. Pour off drippings, returning 2 Tbsp to pan. Add butter. 3) Whisk in flour until smooth. In a thin stream, whisk in milk. Stir in onion flakes, salt, and pepper. Bring to a boil over med-high heat, then reduce heat and simmer 2 minutes. In a large bowl, toss all the cheese, except American, together. 4) Remove milk mixture from heat, whisk in American cheese, 1 1/4 cups of shredded mixture. Toss bacon w/ remaining cheese. 5) In pasta pot, combine cooked pasta and cheese sauce. Pour half into baking dish. Sprinkle with a generous cup of the cheese/bacon mixture. Repeat layering. 6) Bake at 350 for 20 minutes. Turn oven to broil and broil 3 minutes until top is lightly browned. | My favorite food is hamburger... 11: "When I grow up, I want to be a McDonald's worker." ~Gretchen Rentschler | Gretchen Rentschler | Dinner in a Dish | 4 cups raw potatoes sliced 1/4" thick | 350degrees | 1 1/2 hours | 2/3 cup diced green pepper | 1 cup diced celery 1 cup diced onion | 1 tablespoon salt 1/2 teaspoon pepper | 1 lb ground beef-browned | 1 can tomato soup diluted with 1/2 cup water | Mix together, place in 2 quart casserole and bake at 350 degrees for 1 1/2 hours. | My favorite food is chicken nuggets and chicken...I really don't like any other meat.

12: From the Kitchen of: Benjamin Fish Recipe for: Dirt Cake | 1 1/4 lbs Oreo Cookies Mixture I 8oz cream cheese 1 cup powdered sugar 1/4 cup margarine | Mixture II 2 -3 oz pkgs Instant FrenchVanilla pudding 3 1/2 cups milk 1- 12oz Cool Whip | Crush Oreo cookies and set aside. Combine mixture I well. Set mixture I aside. Combine mixture II until smooth. Add mixture I to mixture II. Mix very well. Layer cookies and mix, alternating, and end with cookies on top. You can use a flower pot, bowl or 9x13 cake pan. If you are making this for a kid's party, you can add gummy worms in layers or on top. | "When I grow up, I want to be a Construction Worker." -Benjamin Fish | My favorite food is pancakes... I really don't like lasagna.

13: 2 large eggs 1 tsp vanilla extract 2/3 cup sugar | From the Kitchen of: Katie Howard Recipe for: Quick & Easy Chocolate Chip Cupcakes | Preheat oven to 350 degrees. Put all ingredients in a bowl and beat together until the mixture is smooth and slightly lighter in color. Line a muffin pan with muffin papers and half-fill each paper with cupcake batter. Bake the cupcakes for 18-20 minutes. You can tell they are done when they have risen up, are golden in color, and spring back into shape when pressed. | 1/2 cup soft butter 1 cup self-rising flour 1 cup chocolate chips | My favorite food is carrots... 14: From the Kitchen of: Tyler Louwagie Recipe For: Grandma's BBQs 2 lbs. hamburger 1 onion chopped 3/4 cup ketchup 2 T. brown sugar 2 T. mustard 1 T. vinegar salt & pepper to taste | Brown hamburger with onion and drain. Add remaining ingredients and simmer over low heat until flavored through. Serve on buns. | "When I grow up, I want to be a builder." -Tyler Louwagie | My favorite food is banana bread... I really don't like mushrooms.

15: "When I grow up, I want to be a Super Hero."~Joey Lenard | My favorite food is donuts and Bush's Original Baked Beans ...I really don't like broccoli. | From the Kitchen of: Joey Lenard Recipe For: Grandma Patty's Salmon Patties and Creamed Peas | 1 can (14 3/4 oz) Demings Red Sockeye Salmon 1 small onion, chopped fine 2 eggs, slightly beaten 1 tsp. fresh lemon juice (optional) 1 whole package saltine crackers, crushed | Directions: Empty 1 can salmon into a large bowl (remove bones). Add eggs, onion, lemon juice & crackers. Mix well. Form into patties 3/4 to 1 inch thick. In a large fry pan, heat 1/2 stick Parkay margarine until melted. Add patties and cook approx. 5 minutes on each side, adding more margarine as necessary. Patties should be nicely browned on each side and cooked through. | Creamed Peas Ingredients: 6 Tbsp. butter 4 Tbsp. corn starch 4 cups milk salt & pepper to taste- Directions: In a nonstick pan, melt the butter. Blend in the corn starch. Gradually add the milk, stirring constantly so it doesn't form lumps. Heat just until boiling, turn down the heat and continue stirring until the right consistency. Add 1 can drained peas or 1 package frozen peas, drained. Serve the patties with the creamed peas over them. Variation: Serve the patties & creamed peas over toast. Enjoy!

16: From the Kitchen of: Kate Gish Recipe For: Banana Bread | 1 cup sugar 1 egg 3 Tbsp Sour Milk 2 cups flour | 1/2 cup Crisco 3 mashed ripe bananas 1 tsp baking soda | Cream sugar and Crisco. Add egg and bananas. Dissolve soda in sour milk and add to above mixture. Add flour and mix well. Nuts and mini chocolate chips may be added. Spray 2 loaf pans with cooking spray. Divide batter into 2 pans and bake 1 hour at 350 degrees. Makes 2 loaves. | "When I grow up, I want to be a Vet/Zookeeper." -Kate Gish | My favorite food is cupcakes... I really don't like milk.

17: Jacob McPherson | Chocolate Chip Cookies | 1 cup soft butter 1 teaspoon baking soda | 3/4 cup brown sugar 2 cups chocolate chips | 2 eggs 1 teaspoon vanilla | 1/4 cup white sugar 2 1/4 cups flour | 1 package french vanilla pudding(dry) | Mix all together in any order. Bake at 350 degrees | 10 -12 minutes. | 350 degrees 10-12min | "When I grow up, I want to be a man." -Jacob McPherson | My favorite food is chicken... I really don't like peas.

18: 1 1/2 cup sugar - 1 1/2 cup brown sugar - 1 cup canola oil 4 eggs, beaten - 1 can(16oz) pumpkin - 1 3/4 cup all-purpose flour 1 3/4 cup whole wheat flour - 1 tsp. baking powder - 2 tsp. salt 2 tsp. baking soda - 2 tsp. cinnamon - 1 tsp. nutmeg - 1 tsp. allspice 1/2 tsp. ground cloves - 2/3 cup water - 1 cup pecans (optional) 1)Combine sugar, oil & eggs; beat until light and fluffy. Stir in pumpkin. 2)In separate bowl, combine dry ingredients and then stir into pumpkin mixture. Add water and nuts; mixing well. 3)Spoon batter into 2 well-greased 9"x4" loaf pans. 4)Bake at 350degrees for 60-70 minutes. | From the Kitchen of: Clare Schapman Recipe: Pumpkin Bread | "When I grow up, I want to be a Teacher."-Clare Schapman | My favorite food is cupcakes... I really don't like broccoli.

19: 2 cups peanut butter, divided 3/4 cup (1 1/2 sticks) butter, softened 2 cups powdered sugar, divided 3 cups graham cracker crumbs 2 cups Nestle Tollhouse mini semi-sweet chocolate chips Grease 13x9 pan, beat 1/4 cup peanut butter and butter in bowl until creamy. Gradually beat in 1 cup powdered sugar. With spoon, work in remaining 1 cup powdered sugar, graham cracker crumbs and 1/2 cup chocolate chips. Press evenly into pan, smooth top. Melt remaining peanut butter and chips in saucepan over low heat, stir until smooth, spread over crust in pan. refrigerate 1 hour. | From the Kitchen of: Madelyn Stephen | "When I grow up, I want to be an Airplane Driver." -Madelyn Stephen | My favorite food is cheese crackers and apples... Add butter to | peanut butter.Mix the 2 together. Add powdered | sugar slowly. Mix well. Lastly, add Rice Krispies. | Mix well. Roll into 1" balls and dip in melted | chocolate. | Or-for less mess, press P.B. mixture into | 9x9pan and pour melted chocolate over it. | Let set until chocolate is hard.

21: From the Kitchen of: Joseph Bradley Recipe for: Chocolate Chip Bars | 1/2 cup shortening 1/2 cup butter 1 cup brown sugar 1/2 cup granulated sugar 1/2 tsp baking soda | 2 eggs 1 tsp vanilla 2 1/2 cups flour 1 - 12 ounce chocolate chips | Preheat oven to 375 degrees. -Mix butter/shortening/brown sugar/white sugar (lg. bowl) -Mix eggs and vanilla (in a cup) -Combine sugar mix and egg mix -In separate bowl, mix flour & baking soda -Slowly add flour mix to sugar/egg mix -Add chocolate chips -Spread chocolate chip batter into a 15x10x1 baking pan. -Bake 15-20 minutes or until golden. Let cool and cut. -Makes 48 bars. | "When I grow up, I want to be a Manager of a store like my Dad." -Joseph Bradley | My favorite food is hot dogs. I really like all foods.

22: From the Kitchen of: Jack Teachworth Recipe: Potato Supreme 2 lb Hashbrowns (square kind) stick of butter (hard) 8 ounces of shredded cheddar cheese 1 pint sour cream 2 cans Cream of Chicken Soup (no water) Add hashbrowns, chicken soup, sour cream, to a cake pan (I use the aluminum throw away kind) and then sprinkle with salt & garlic powder (to your tasting). Add cheddar cheese to the top. Cut the butter in squares and put it on top of the cheese. Bake 1 hour to 1 hour 15 minutes covered at 350 degrees. Take out and cover with corn flakes (the crumbs) and bake until cheese is melted (uncovered). | My favorite food is pizza... 24: From the Kitchen of Jack Stephen-Soft Pretzels | 4 teaspoons Active Dry Yeast 1 1/2 teaspoons salt 1 teaspoon White Sugar 1/2 cup baking soda 1 1/4 cup warm water (110) degrees 4 cups hot water 5 cups all-purpose flour 1/4 cup kosher salt for topping 1/2 cup white sugar 1 Tablespoon Vegetable Oil | In a small bowl, dissolve yeast and 1 Teaspoon sugar in warm water, let stand until creamy, about 10 minutes. In a large bowl, mix together flour, 1/2 cup sugar and salt make a well in the center, add oil and yeast mixture. Mix and form into a dough. If mixture is dry, add 1-2 Tablespoons water. Knead the dough until smooth (about 7-8 minutes). Lightly oil a large bowl, place dough in bowl and turn to coat with oil. Cover and let rise in warm place until doubled in size, about 1 hour. Preheat oven to 425 degrees. In large bowl, dissolve baking soda in hot water. When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel, once shaped, dip each piece into baking soda solution and place on a greased baking sheet. Sprinkle with Kosher salt. Bake for 8 minutes, until browned. | My favorite food is mac & cheese and hot dogs... I really don't like tacos. | When I grow up, I want to be a Fireman and Policeman!
