Mix together 3 cups of mashed sweet potatoes (or 1 large can), 1 cup sugar, 2 eggs, 1 cup milk, 1 stick of melted butter, and 1 teaspoon vanilla. Pour the mixture into the pan. For the topping, Mix together 1 cup of brown sugar, 1/2 cup flour, 1/3 cup butter, and 1 cup chopped pecans. Put the topping on top of the sweet potato mixture. 19: Grandma Hanks' Thanksgiving Stuffing 2 cubes butter, melted 1 large onion, chopped fine 1 small celery bunch, sliced salt pepper 1 can water chestnuts 1 apple, peeled and chopped bread crumbs (big bag) poultry seasoning 1 large can chicken broth 3 eggs Saute the onion, celery, chestnuts, and apple in butter. Add bread crumbs, chicken broth, and salt and pepper. Beat the eggs and toss in. Grease the baking dish and then add the mixture. Bake for 1 1/2 hours. Cover for half the baking time.
20: Granny Cloward's Homemade Noodles 2 c. flour 4 eggs, well mixed 1/2 tsp. salt Put flour on bread board. Make a hole in the center of the flour and pour the egg mixture into the hole. Add salt. Take a fork and pull the flour into the egg mixture until it forms a soft good ball. Roll out onto a bread board and dry for 3 hours. Roll up and cut into thin strips. Drop into hot broth one strip at a time. Cook for 15 minutes at medium boil heat. Serve over mashed potatoes or in soup.

44: Christina Campbell's Tavern Sweet Potato Muffins 1/2 c. butter 1 1/4 c. sugar 2 eggs 1 1/4 c. canned sweet potatoes, mashed 1 1/2 c. flour 2 t. baking powder 1/4 t. salt 1 t. cinnamon 1/4 t. nutmeg 1 c. milk 1/4 c. pecans or walnuts, chopped 1/2 c. raisins, chopped Preheat oven to 400 degrees. Crease 1/1/2-inch muffin tins. Cream the butter an sugar. Add the eggs and mix well. Blend in the sweet potatoes. Sift the flour with the baking powder, salt, cinnamon, and nutmeg. Add alternately with the milk. Do not overmix. Fold in the nuts and raisins. Fill the greased muffin tins 2/3 full. Bake at 400 degrees for 25 minutes.
49: Grandma Hanks' Buttermilk Chicken Marinate clean chicken breasts in buttermilk for 3 or 4 hours. Drain and bread with panho or cracker crumbs. Salt and pepper. Bake for 1 hour.
51: Grandma Hanks' Christmas Prime Rib Heat oven to 250 degrees. Season roast and cook fat side up uncovered approximately 30-40 minutes per pound. A meat thermometer is recommended to insure the desired doneness. Remove roast from oven at 138 degrees for rare, 148 degrees for medium, and 158 degrees for well done. Larger roast often cook faster than times listed, so watch your thermometer. Roast will continue to cook approximately 5 additional degrees once removed from oven. Temperature may be adjusted to speed up or slow down cooking process. Let roast set for at least 15 minutes before carving.
52: / | Thanksgiving Turkey Preheat oven to 325 degrees. Clean, wash, and season turkey. Place foil tent over turkey; remove the final hour to brown. Stuffed turkeys require an additional 30 to 60 minutes cooking time. When using a thermometer, cook to 160 to 180 degrees.
53: Cafe Rio Pork (This was a Christmas Eve favorite!) For the pork: 3 lbs. pork (butt or shoulder) 20 oz. Coca Cola 1 to 1/1/2 c. ketchup 1 clove garlic, minced For the sauce: 2 c. tomatillo sauce 1 1/2 c. brown sugar (more or less, to taste) juice of 2 limes salt and pepper (to taste) chili powder (if desired) more ketchup (if consistency needs thickening) To prepare the pork: Place the pork in a crock pot. Stir together the cola and ketchup. Add minced garlic. Pour mixture over meat. Cover and cook (on high) for several hours. When pork is tender, remove it from crock pot and shred. To prepare the sauce: Return meat to crock pot and mix in the remaining ingredients for the sauce. Cove and simmer on low until ready to serve.

Fry bread is cooked in lard usually.

Filling: 1 1/2 c. pumpkin (unseasoned, solid pack) 3/4 c. sugar 1/2 tsp. salt 1 tsp. cinnamon 1/4 tsp. ground cloves 1/2 tsp. ginger 1 12 oz. can evaporated milk 2 eggs Mix together well and pour over crust. Topping: 1 c. reserved cake mix 1/2 c. sugar 1 tsp. cinnamon 3 TBSP butter (firm) chopped nuts (optional) Mix dry ingredients together. Cut in butter. Crumble over top of filling. Bake at 350 degrees for 1 hour. Serve warm.
72: Grandma Hanks' White Cake with Berries 1 white cake mix 1 c. buttermilk 3 eggs 1 8-oz Philly cream cheese Mix well and beat for 3 minutes. Bake in 2 cake pans. Serve with fresh fruit and cream. If I have time, I make a pound cake.
73: Grandma Hanks' No Bake Cookies 2 c. sugar 2 T. butter 2 T. cocoa 1/2 c. cream 1/4 tsp. salt vanilla 3/4 c. chunky peanut butter 2 c. oatmeal Mix sugar, cocoa, and milk. Bring to a boil. Do not stir after it starts to boil. Boil for 1 minute. Turn off the stove and add the peanut butter, oatmeal, and vanilla. Drop on wax paper and let set up.
74: Colli's Pecan Pie 4 eggs 3/4 c. sugar 1/2 t. salt 1 1/2 c. light corn syrup 1 T. butter, melted 1 t. vanilla 1 c. pecan halves Preheat oven to 400 degrees. Beat the eggs lightly and add the sugar, salt, corn syrup, cooled butter, and vanilla; stir until mixed well. Spread the pecan halves on the bottom of your uncooked pie crust and cover with the filling. Place in the oven and immediately reduce the heat to 350 degrees. Bake for 40 to 50 minutes or until the mixture is firm in the center. Cool before serving.

Add salt and eggs. Mix really well and then add flour and oats. Pour into a pan and press down tight. Bake at 350 degrees for 30 minutes. 90: Grandma Hanks' Pumpkin Gooey Butter Cakes Cake: 1 (18 1/4-ounce) package yellow cake mix 1 egg 8 TBSP butter, melted Filling: 1 (8-ounce) package cream cheese, softened 1 (15-ounce) can pumpkin 3 eggs 1 tsp. vanilla 8 TBSP butter, melted 1 (16-ounce) box powdered sugar 1 tsp. cinnamon 1 tsp. nutmeg Preheat oven to 350 degrees. Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 x 9-inch pan. To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure to not overbake as the center should be a little gooey. Serve with fresh whipped cream.
91: Name | Elder Boyle's Italian Cream Cake (Although this may not be Grandma's exact recipe, this cake was Grandma Gammett's signature entertaining cake. She made this whenever she was had people over.) Cream together: 1 cube butter 1/2 c. shortening 2 c. sugar 5 egg yolks Sift together: 2 c. flour 1 tsp. baking soda Add the flour and baking soda mixture to the wet ingredients alternately with 1 cup of buttermilk. Add 1 teaspoon vanilla, 1/2 package of coconut, and 1 cup chopped walnuts or pecans. Beat 5 egg whites until stiff and then fold them into the cake mixture. For the frosting, Mix the following ingredients together: 1 8-ounce pkg. cream cheese 1 cube butter 1 lb. powdered sugar 1 tsp. vanilla 1/2 c. chopped nuts
92: Grandma Hanks' Yogurt Pie 1 graham cracker crust 1 quart flavored yogurt 1 medium tub of Cool Whip fresh fruit, if desired Fold the yogurt and Cool Whip together. Add any desired fruit and put in the pie crust. Chill for 3 hours and enjoy. Grandma Gammett's Snowballs or Mexican Wedding Balls 1/2 butter, at room temperature 1/2 c. sugar 2 T. vanilla Beat until fluffy. Add: 2 c. flour 2 c. pecans Roll in 2-inch balls or smaller. Bake 15 minutes (Don't let them brown.). Cool and then roll in powdered sugar.
93: Apple Dapple Cake 3 eggs 1 c. cooking oil 2 c. sugar 1/4 c. water 3 c. sifted flour 1 t. salt 1 t. soda 2 t. vanilla 3 c. chopped apples 1 c. chopped pecans or walnuts Topping: 1 c. brown sugar 1/4 c. milk 1/2 c. butter In large bowl, combine eggs, oil, sugar, and water. Beat well. Sift dry ingredients and add to creamed mixture. Add vanilla, apples, and nuts. Bake in a greased and floured 12-cup bundt pan at 350 degrees for 55 to 60 minutes or until done. Cool in pan 10 minutes. While cake is cooling, make topping by combining all ingredients in pan and soaking for 3 minutes. Remove cake from pan and spoon 1/3 of the topping over top of cake. Carefully place cake back in and pour remaining topping over cake. Let stand 5 minutes. Invert on serving plate and let stand 5 minutes. Then remove pan.
94: Todd's Orange and Raspberry Cake (from Giada De Laurentiis) Ingredients for cake: butter, for greasing the pans flour, for dusting 1 (18.25 oz.) box white cake mix (recommended: Duncan Hines Moist Deluxe) 1 large orange, zested, about 1/4 cup 1 1/3 c. no pulp orange juice 3 egg whites 2 T. vegetable oil Ingredients for frosting: 4 T. unsalted butter, at room temperature 1/3 c. creme fraiche 1 pound powdered sugar 1/4 c. raspberry jam water, as needed 1 (6 oz.) container fresh raspberries For the cake: Arrange an oven rack in the center of the oven. Preheat the oven to 350 degrees. Butter and flour the bottom and sides of 2 nonstick, 8-inch round baking pans. Set aside. In the bowl of a stand mixer, fitted with a whisk attachment, combine the cake mix and orange zest. Mix for 20 seconds at low speed until the zest is incorporated.
95: Add the orange juice, egg whites, and vegetable oil. Blend at low speed for 30 seconds. Increase the speed to medium and beat for 2 minutes, scraping the bottom and sides of the bowl with a spatula, as needed. Divide the batter between the prepare pans and bake until golden and a cake tester inserted into the center of the cakes comes out clean, about 30 to 32 minutes. Remove from the oven and cool the pans on a wire rack for 15 minutes. Turn the cakes out onto a wire rack and allow to cool completely, about 1 hour. For the frosting: In the bowl of a stand mixer, fitted with a paddle attachment, beat together the butter and creme fraiche at high speed until smooth, about 10 seconds. With the machine running at medium-low speed, gradually add the powdered sugar until incorporated. Add the raspberry jam and increase the speed to high. Beat until the frosting is smooth and spreadable, adding water, 1 teaspoon at a time, if needed. To assemble the cake: Arrange 1 cake layer, flat side up, on a cake stand. Using a spatula, spread a thin layer of frosting on the cake. Place the top layer of the cake on top of the frosting. Frost the top and sides of the cake.
