1: This Cookbook is inspired by all of the talented cooks in the family & some good friends.

2: Beth Hoover | Sausage Ring | 1 lb, loaf of bread dough 1 lb. mild Italian sausage 2 eggs t. Italian seasoning 1 C shredded cheese 1 T parmesan cheese Let bread dough defrost overnight or stand at room temperature 2-2 hours. Cook sausage and let cool. Beat 1 egg; add to sausage along with seasoning and shredded cheese, stir. Roll dough out to 6” x 18” rectangle. Spoon sausage mixture onto dough. Roll up dough, pinch seams to seal. Put on large greased baking sheet, slash top with inch slits about 1 inch apart. Beat remaining egg and brush over bread; sprinkle with parmesan cheese. Cover and let rise in warm place about 35 minutes. Bake bread at 350 for ? minutes. | 350 | 60 mins | 4-6

3: Crustless Quiche 8 pieces of bacon, cooked & crumbled 1 cup milk cup Bisquick 1/3 cup butter melted 3 eggs dash of pepper 1 cup shredded cheese Combine eggs, milk, Bisquick, butter & pepper. Mix until well blended. Pour into greased pie plate. Gently press bacon & cheese below surface. Bake at 350 for 30 minutes or until knife comes out clean.

4: Taco Soup | 1 pound ground beef 1 can diced stewed tomatoes 1 can tomato sauce 1 can rotel 1 can kernel corn 2 can kidney or pinto beans 1/2 onion, chopped 1 packet taco seasoning 1 packet ranch style dressing mix 2 cups water Cook ground beef and drain fat. Add all other ingredients to meat. Simmer for 20 minutes and serve. | Tortilla Soup 1 rotisserie chicken, de-boned 8 corn tortillas 1 onion 1 can corn 2 cans diced tomatoes 1 box and 1 can of chicken broth 3 Tbsp chili seasoning 2 Tbsp cheyenne pepper Chop up tortillas and onion sauté in a pot. Add chicken and remaining ingredients. Simmer for 30 minutes.

5: Chicken Noodle Soup 1 whole chicken 1 package lipton onion soup mix salt & pepper 1/2 package of noodles Boil chicken with liption onion soup. Debone chicken. Cook noodles in chicken broth. Place chicken back in chicken broth and add water.

6: Summer Tea | 6 C boiling water 6 Large tea bags 24 mint leaves Steep until cool Remove mint and tea bags Add: 2 C orange juice 1 C sugar C lemon juice 11 C cold water

7: Hot Spiced Cider 1/4 cup brown sugar 1/2 teaspoon whole allspice 1 teaspoon whole cloves 1 cinnamon stick 1 pinch ground nutmeg 2 quarts apple juice Place filter in coffee basket and fill with all ingredients except apple juice. Pour apple juice into coffee pot and brew. Serve hot.

8: Aunt Marilyn’s Chicken Salad 2 chicken breasts, boiled & chopped 1-2 celery stocks, chopped 1/4 cup chopped walnuts 3/4 cup grapes, halved Mix. Dressing: 1 tsp. lemon juice 1/2 cup mayonnaise, real 1 tbs. honey Mix together & pour over chopped chicken mixture. Salt & pepper to taste. Refrigerate. Good with croissants. Serves 6-8 people.

9: Dee's Salad | Beth Hoover | Broccoli Salad | 1 large bunch broccoli 1/2 cups raisins 1/2 medium onion 8 pieces of bacon 1 cup mayonnaise 1/2 cup sugar 2 tablespoons cider vinegar Mix mayo, sugar, & vinegar. Pour on broccoli, raisins, onion & bacon mixture. Chill in refrigerator. Broccoli Salad

10: 1 package Velveeta (16 oz) 1 lb ground beef 1 package taco seasoning 1 can regular rotel 1 can mexican rotel 1/4 cup jalapeños Cube Velveeta and place in greased crockpot on high. Brown ground beef and drain. Add to Velveeta. Add rest of ingredients to crockpot. Cook until melted, stirring occasionally. Add milk if too thick. | Cheese Dip | Dips

11: 7 Layer Dip Black olives, chopped or sliced Sour cream (16 oz) with taco seasoning Refried Bean Dip Guacamole Grated cheese Tomatoes, chopped Green onions, chopped Layer: bean dip, guacamole, sour cream with taco seasoning, cheese, tomatoes, olives & onions. Cover & refrigerate.

12: 2 lbs ground beef 1 diced onion 1 can rotel 1 can cream of chicken soup 1 can ranch style beans 2 tablespoons chili powder Flour tortillas Shredded Mexican cheese Brown meat and drain grease. Put meat in pot and add rotel, soup and beans. Cook on low. Add chili powder. Let simmer. Layer casserole dish with torn up tortillas, meat mixture and cheese. Repeat. Cover with foil & bake at 350 for 30 minutes. | Aunt Karen's Mexican Casserole

13: Chicken Spaghetti | 1 chicken boiled & de-boned 1 onion 1 bell pepper 1 package vermicelli 1 can cream of mushroom soup 1 can mushrooms 1 package shredded cheese Cook & de-bone chicken. Sauté chopped onion & bell pepper in a few Tbsp of butter. Cook vermicelli in chicken broth. Mix chicken, soup, mushrooms, onion & bell pepper in vermicelli. Spread in lightly greased casserole dish. Top with cheese. Bake at 350 for 15-20 mins.

14: Bohemian Chili 1 1/2 - 2 lbs. hamburger meat or chili meat 1/2 cup chopped onion 1 can tomato sauce (16 oz) 1 can Ranch Style Beans 4 small potatoes cubed & boiled 1 package McCormick Chili seasoning 1 can beef broth 1 can rotel Brown meat with chopped onion. Drain grease. Add remaining ingredients. Simmer for 30 mins.

15: Monica Bolin | Stew | 1 1/2 - 2 lbs stew meat 1 package Lipton Onion Soup mix 4 carrots, cubed 3-4 small potatoes, cubed 1 can Delmonte Mexican Stewed Tomatoes 1 can beef broth Cook stew meat with salt & pepper, soup mix and a few tablespoons of water. When meat is almost done, add tomatoes. Add carrots and potatoes. Cover with beef broth and water. Cook until vegetables are done. Mix 1 tablespoon flour in a 1/2 cup of water. Add to stew to thicken. Cook until done.

16: 1 chicken boiled & de-boned 1 onion chopped 1 small or 1/2 large bell pepper chopped 1 can cream of celery soup 1 can cream of chicken soup 1 can rotel 1/2 cup chicken broth 1 small package Doritos (crushed) Mix soups, onion, bell pepper, rotel & chicken broth in bowl. Add de-boned chicken. Place crushed Doritos on bottom of casserole dish sprayed lightly with cooking spray. Place chicken mixture on top of Doritos. Top with "4 Cheeses Mexican" Kraft cheese. Cover with foil & bake at 325 for 35 mins. Uncover & bake for another 10 mins. **Note: When cooking the chicken salt & pepper to taste & add one package of Lipton Onion Soup** | Chicken Dorito Casserole

17: Monica Bolin | Mexican Casserole | 1 - 1 1/2 lbs. hamburger meat 1 can cream of chicken soup 1 can cream of mushroom soup 1 can diced green chiles 1 jar taco sauce (8 oz) 8 oz Velveeta cheese (grated) 1 bag Taco Doritos Brown hamburger meat. Drain grease. Heat soups, taco sauce, chiles & 1 can of water. Line bottom of casserole dish with 3/4 bag of crushed Doritos. Place drained meat on top of Doritos. Grate cheese on top of meat. Pour soup mixture over cheese. Top with remaining Doritos. Bake at 350 for 20 mins. | 350 | 20 mins | 6

18: Mom's Pot Roast | 2 lbs beef roast 4 potatoes, peeled and cut into 1-inch cubes 1 1/2 cups baby carrots 1 large onion, quartered and pulled apart 1 1/2 cups beef broth 1 (1 1/2 ounce) envelope dry vegetable soup mix (I use Knorr) Place roast into crockpot and surround with vegetables. Combine beef broth and vegetable soup mix, then add to crockpot. Cover and cook on LOW 6-8 hours or HIGH 3-4 hours.

19: Aunt Holly's Meatloaf 1 pound ground beef 1 package lipton onion soup mix 1 egg, beaten 1 8oz can tomato sauce half tube of crushed saltine crackers Pre-heat oven to 350. Combine all ingredients in bowl. Transfer mixture to loaf pan. Cook for 1 hour.

20: Chicken Parmesan | 4 chicken breast halves 1/2 cup Italian-seasoned breadcrumbs 1/3 grated Parmesan cheese 1 large egg, lightly beaten 2 tablespoons butter 1 can spaghetti sauce 1 cup shredded mozzarella cheese Place chicken in large ziplock bag. Flatten to 1/4 inch thickness, using a meat mallet or rolling pin. Combine breadcrumbs and Parmesan cheese. Dip chicken in beaten egg; dredge in breadcrumb mixture. Melt butter in large skillet over medium-high heat; add chicken and brown on each side. Arrange chicken in lightly greased casserole dish. Pour spaghetti sauce over chicken and top with cheese. Bake at 375 for 20 minutes.

21: Uncle Eddie's Enchilada Casserole 1 Lb hamburger 1 pkge Taco Seasoning 1 can each - Crm of chicken, Crm of mushroom, Enchilada sauce, diced green chiles 1 package of corn tortillas 1 big bag of Mixed cheese Brown meat with taco seasoning Mix all the cans and simmer Layer a baking Pam with cut up tortillas Put 1/2 of the meat and 1/2 of the sauce then cover with cheese Repeat the last steps - tortillas, meat , sauce, cheeses Bake at 350 for about 1/2 hour or so.

22: 1-2 lbs hamburger meat 1 cup Minute Rice 1 can chicken broth 1 small onion 1 small bell pepper Season All Cheyenne Pepper Brown hamburger meat with Season All and salt & pepper. Five minutes before meat is done add 1/4 teaspoon cheyenne pepper. Sauté chopped onion & bell pepper in margarine. Bring chicken broth to boil. Add rice. Turn off heat & cover. Mix rice, onion, & bell pepper. | Dirty Rice

23: Mexican Chicken & Rice 1 package thinly sliced chicken breasts 1 cup minute rice 1 cup medium salsa 1 can ranch style beans (jalapeño style) 1 can cream of celery 1 can red enchilada sauce Mix together rice, salsa, beans, cream of celery and of the can of enchilada sauce. Pour into baking dish. Place chicken on top of mixture. Cover with foil and cook for 45 minutes at 325. Take foil off and pour remaining enchilada sauce over chicken. Cook for 15 additional minutes. Name

24: Spaghetti | 1 can diced Delmonte basil, garlic, & oregano diced tomatoes 1 can tomato paste (6 oz) 1 package McCormick thick & zesty seasoning 1 1/2 - 2 lbs ground beef 1 small onion 1 package thin spaghetti or vermicelli Brown meat with onion and salt & pepper. Drain meat. Add 2 cans tomato paste water with rest of ingredients. Cook on low for 20 minutes.

25: Meat, Gravy & Mashed Potatoes 1 lb. hamburger meat 1 package Lipton Onion Soup 2 large potatoes flour Salt & Pepper to taste Brown hamburger meat. Drain grease. Add soup. Mix 2 tablespoons flour to 1/2 - 3/4 cup of water. Pour into meat. Add more water if it's too thick. Simmer for 15-20 mins. Serve over mashed potatoes.

26: Okra Gumbo 4 cups fresh okra, diced 1 large onion, diced 1 large bell pepper, diced 2 cloves garlic (or garlic powder), optional 1 can diced tomatoes with garlic & onion 1/2 cup bacon, chopped 1 teaspoon chili powder salt & pepper to taste Fry bacon until crisp. Add okra, onion, garlic & bell pepper. Let simmer about 5 minutes. Add tomatoes. Add enough water to cover and simmer until done. Serve over rice.

27: Broccoli and Rice Casserole | 3/4 cup celery, chopped 3/4 cup onion, chopped 1 stick butter 2 packages chopped broccoli (16 oz), cooked 1 cup rice, cooked 1 can cream of mushroom soup 1 jar cheese whiz, 8 oz Sautee celery & onion in butter. Cook broccoli. Cook rice. Combine all with soup. Add cheese whiz. Bake at 350 for 30 minutes.

28: 1 onion, chopped 1/2 lb. bacon, cut up can of jalapeños 2 cans Van Camps Pork & Beans 1/2 cup catsup or BBQ sauce 1/4 cup dark Karo syrup 2 tsp. dry or regular mustard Brown onion with bacon. Drain jalapeños. Add rest of ingredients. Cover & cook for 30 minutes at 350. | Baked Beans Deluxe

29: Zoe Green | Zoe Green | Zoe's Beans | 3 cans Campbell’s pork & beans medium onion, diced cup ketchup pinch of ginger 1 tsp. powdered mustard pinch of baking soda cup molasses cup brown sugar 2 Tbs. bacon bits Cook onion in butter until transparent; take off stove & add ketchup, ginger, baking soda, molasses, brown sugar & bacon bits. Mix in beans. Heat on stove. Then put in oven at 350 for 1 hours. Check after 1 hour. Keep cooking until thick.

32: Moppy's Coffee Ice Cream Dessert 1 small package Oreos 1/2 C margarine 1/2 Gallon of ice cream, softened Crush Oreos and place in bowl. Melt margarine, add to Oreos and stir. Press into bottom of 9 x 13 pan. Place in freezer. After crust is frozen, fill with softened ice cream. Optional sauce: Melt 2 oz. of chocolate in 1 T butter, add C sugar. Then add slowly 1 can of Pet Milk. Cook stirring constantly til thick. Cool before pouring over ice cream.

33: Poppy Seed Cake | 1 box Duncan Hines yellow cake mix 1 box instant coconut cream jello pudding mix 4 eggs 1/2 Wesson oil 1 tsp. vanilla 1 tsp. butter flavoring 1/4 cup dry poppy seed 1 cup hot water Put 1/4 cup poppy seeds in bowl & pour 1 cup hot water over poppy seeds - set aside. Mix dry ingredients. Add eggs & oil. Beat well. Add poppy seeds, vanilla & butter flavoring. Beat 3 minutes. Flour & grease tube pan. Bake at 350-375 (depending on oven) for 45-50 minutes or until done. Topping: 1/2 cup sugar 1/4 cup buttermilk 1 Tbs Karo syrup (light) 1 Tbs margarine 1 tsp. vanilla 1/4 tsp. baking soda Mix all ingredients in pot on stove. Cook for 3 minutes. It will get foamy to the top. Leave cake in pan. Poke holes in top of cake. Drizzle topping over cake. Let cake cool completely. To get cake out of pan - grease your hands well & remove cake.

34: Peanut Butter Cookies 1 1/4 cup flour 1/2 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1/2 cup shortening 1/2 cup peanut butter 1/4 cup sugar 1/2 cup brown sugar 1 egg Sift flour, soda, baking powder & salt. Mix shortening & peanut butter gradually adding sugars. When creamed, add egg. Mix well the dry and creamed ingredients. Roll into 1 inch balls onto greased sheet. Flatten with fork. Bake at 375 for 10 mins.

35: Name | Snicker Doodles | 1/2 cup crisco shortening 1 stick softened margarine 1 1/2 cups sugar 2 eggs 2 3/4 cups flour 2 tsp. cream of tarter 1 tsp. baking soda 1/4 tsp. salt Cinnamon Sugar Mixture: 2 Tbs. sugar 2 Tbs. cinnamon Mix shortening, margarine, sugar & eggs well. Blend in dry ingredients. Chill dough for 2 hours. Roll dough into balls. Roll balls in sugar, cinnamon mixture. Bake at 350 for 10 - 12 minutes.
