1: This Cookbook is for my granddaughters, Shelley, Tiffany, Kimberly, and Audrey. May these recipes bless your own families.
2: Mamaw Shirley | Dill Pickles | 2 qt. water, 1 qt. vinegar, 3/4 cup canning salt, fresh dill or 2 tbsp. dill seed, 1/2 tsp. alum, 1 garlic bulb | Arrange cucumbers in hot jar, putting large cucumbers in first. Put dill, garlic, then finish with small cucumbers at top, leaving 1 inch at top of jar. Fill jars with boiling liquid. Put alum in and seal. Keep lids in boiling water. When finished canning, pour hot boiling water over jars and put towel over jars until cool. If lid is sunk down it is sealed, if not, open and heat liquid again and reseal. | Mamaw Shirley | Tomato Relish | 3 qt. peeled and chopped tomatoes, 3 cups chopped celery, 2 cups chopped bell peppers, 3 cups chopped onion, 2 cups sugar, 1/4 cup brown sugar, 1/4 cup salt, 1 1/2 tsp. red pepper, 1 1/2 tsp. pickling spice | Combine tomatoes, celery, onion, green pepper, and salt. Let set over night in fridge. Drain, do not press, place in large pan, add sugar, brown sugar, pepper and spice tied in cheese cloth. Add vinegar and boil 30 minutes. Seal in hot jars. Can double or triple recipe.
3: Mamaw Shirley Pepper Relish 15 red peppers, 15 green peppers, 10 onions | Mamaw Shirley Cheese Ball 2 lb. Velveeta cheese, 1 8 oz. cream cheese, 2 cups chopped nuts, 1 tsp. cayenne pepper, 1 tsp. garlic powder | Leave cheese at room temp until soft enough to work. Blend in all cheese, nuts, and spices. Blend thoroughly with hands and roll into logs or a ball. Roll in chili powder until covered and chill. | Grind everything together and pour enough boiling water to cover veggies over top. Let stand in water until cool. Drain and add 2 cups sugar, 2 cups vinegar, and 2 tsp. salt. Boil 20 minutes and seal while hot. Can add jot peppers if you wish.
4: Mamaw Shirley Stew | Can use beef, pork steak, or deer. Cut meat into small pieces, sliced carrott, and cut potatoes into small pieces. Add enough water to cook. Also slice one onion and add to the above. When meat and potatoes are almost done add frozen corn or canned whole kernnel corn, and one quart tomatoe juice. Salt, pepper, garlice powder, chili powder, and soy sauce to taste. I put about 3 tbsp. brown sugar. Cook until done.
5: Mamaw Shirley Chicken Soup | Cut one or two boneless chicken breasts. into small pieces. Add potatoes cut into small cubes, can use carrots, one chopped onion. Add enough water to cook. When almost done, add one can of cream of chicken soup, salt and pepper to taste.
6: Mamaw Shirley | Mamaw Shirley | Broccoli & Cauliflower Salad | 1 broccoli, torn to small pieces, 1 cauliflower torn to small pieces 1/2 cup bacon torn to small pieces 1 medium onion, chopped 1 cup shredded cheese | Dressing: 1/4 cup sugar, 2 tbsp. vinegar, 1/2 cup salad dressing I double the dressing. Toss together and chill until ready to serve. | Salad | 1 can LeSaw or early green peas, 1 chopped onion 1 can white shoepeg corn, 1 chopped bell pepper, 1 jar diced pimentos, about 2 stalks celery chopped fine, Drain peas and corn. Mix all ingredients together. Bring the following to a boil & pour over veggies, refrigerate. 1/4 cup oil, 1 cup sugar, 1/2 cup vinegar, 1 tsp. salt, 1 tsp. pepper
7: Mamaw Shirley | Seven Layer Salad | 1 head of lettuce, 1 cup green onion chopped, 1 cup green sweet pepper- chopped, 1 16 oz. can sweet peas- drained, 1 pt. mayo, 3 tbsp. sugar, 1 lb. bacon- fried, 1 lb. shredded cheese | Layer 1- spread broken lettuce in bottom of oval dish Layer 2- onion & sweet pepper Layer 3- spread peas over onion & pepper Layer 4- spread mayo over peas (not salad dressing) Layer 5- sprinkle sugar over mayo Layer 6- crumble bacon over sugar Layer 7- top with cheese, saran wrap and chill overnight | Mamaw Shirley | Corn Salad | 1/2 cup sugar, 2 tsp. celery seed, 1/2 tsp. pepper & salt, 1/2 tsp. dry mustard, 1/2 cup vinegar, 2 tbsp. green pepper, 1- 2 oz. jar pimento, 1 tbsp. minced onion, 1 17 oz. whole kernel corn- drained Mix ingredients all together.
8: Mamaw Shilrey | Pork Steaks or Chicken | Place into a 9x13 baking dish. Peel & quarter potatoes, and lay on top of meat. Heat 1 or 2 cans or cream of chicken soup and pour over potatoes & meat. Cover with reynolds wrap and cook until done in a 350 degree oven for about 2 hours. | Mamaw Shirley | Meat Sauce for Spaghetti | Hamburger meat browned. 1 largeonion. 1 bell pepper 1 small can muschrooms 1 jalapeno pepper | Blend veggies in blender and add to burger. Season with oregano, black pepper, salt, and garlic powder. Add enough brown sugar to have a hint of sweet. Simmer on low at least 8 hours. | Mamaw Shirley | Tuna Patties | 1 can tuna 1 egg 3 tbsp. of flour Mix all three ingredients together. Drop in hot oil from tbsp. and brown on each side.
9: Mamaw Shirley | Hot Beef Dish | 1 lb. hamburger 1 can chilli beans 1 medium onion 1 pkg. taco seasoning 1 can rotel Brown mean and onion in frying pan, add other ingredients and simmer for ten minutes. Pour into a 9x13 pan. Cover with crushed taco or frito chips. Cover with shredded cheese. Heat in oven long enough to melt cheese. | Mamaw Shiorley | Mexican Chicken | 1 chicken 1 can cream chicken soup 1 can rotel 1 carton sour cream Doritos shredded cheese Boil chicken and pull from bone. Mix sour cream, rotel, soup, and chicken together. Line bottom of dish with Doritos and pour mixtures over. Top with cheese. Bake 350 degree for 30 to 45 minutes. | Mamaw Shirley | Sour Cream Chicken Enchiladas | 1 lb hamburger or cut up chicken (cooked) 1 small can green chilies, 1/2 pint sour cream, 10-12 tortillas 1/2 pounds grated cheese, 1/2 cup chopped onion, 3 cans or cream of chicken soup Mix sour cream, chicken soup, onion and green chillies. Place small amount of sour cream mixtures in center of flour tortilla along with hamburger or chicken and cheese. Roll up and place in a 9x13 pan. Pour remaining sauce over top. Top with remaining cheese and bake at 350 degrees for thirty minutes.
10: Mamaw Shirley | Chicken and Rice | Place cup up chicken in pan, salt and pepper. Pour one cup of rice over chicken. Add 1 can of cream of muschroom soup, 1 can cream of chicken soup, 1 can cream of celery soup, 1 can of water, and 2 1/2 tbsp. margarine. Heat in saucepan and pour over chicken. Bakle at 350 degrees for 2 hours. | Mamaw Shirley | Chicken Casserole | 2 packs of Ritz crackers 1 stick margarine (melted) Mix Put half of mixture in bottom of 9x13 pan One or two cans of cream of chicken soup 8 oz. sour cream 1/2 can chicken broth, salt and pepper Put cooked chicken pieces on top of crackers. Pour soup mixture over top and finish with the rest of crackers. Bake at 350 degrees for 25 mins. | Mamaw Shilrey | 2 lb. ground beef 1 jar enchilada sauce 1 large onion 1 small can green chillies 1 can cream of chicken soup 1lb Velveeta cheese 1 can cream of mushroom soup 1 can corn tortillas 1 can evaporated milk Brown meet and onions, drain. Blend all ingredients except tortillas. Layer tortillas and meat mixture. Cover dish with foil and cook at 350 degrees for 30 to 40 minutes. | Enchilada Casserole
11: Spaghetti Chicken | Mamaw Shilrey | 1 fryer chicken boiled 1 medium onion chopped 7 oz. vermicella spaghetti 1 can chicken souop 1/2 stick margarine 1 can rotel 1 small jar cheese whiz Cook spaghetti in chicken broth. Cut chicken in small pieces and mix with spaghetti. Mix in onion, chicken soup, margarine, rotel and cheese whiz. Heat. Put half of mixture with chicken mixture. Put the remaining on top. Bake at 350 degrees for 35 minutes. | Mamaw Shilrey | BBQ Sauce | 1 tbsp. vinegar 1 tsp mustard 4 tbsp. water 1 tsp. salt 4 tbsp. Worcester sauce 1 tsp red pepper 3 tbs catchup 1 tsp paprika 2 tbs margarine 1 tsp chili powder 3 tbs brown sugar Mix well. | Mamaw Shirley | 1 box of frozen corn or fresh, 1/2 stick margarine, about 3 or 4 tbsp. sugar and 1/4 cup evaporated milk. Cook in microwave about 10 minutes. Stir and add salt and pepper, return to microwave and cook another 10 minutes. | Corn
12: Mamaw Shirley | Corn bread | Two parts corn meal to one part flour. Sugar to taste. 1 egg. Mix with half water and half evaporated milk. Melt 1/2 stick of margarine in iron skillet. Pour mixture in skillet and put in cold oven. Cook at 400 degrees until brown. | Corn meal, sugar to taste, egg, chopped onion, 2 chopped jalapenos. Add evaporated milk and water. Leave stiff enough to roll in small balls and drop in hot oil until brown. | Hushpuppies | Mamaw Shirley
13: "There is no love sincerer than the love of food." ~George Bernard Shaw | Mamaw Shirley | Refridgerator Dinner Rolls | 1 cup warm water 2 egg yolks 2 pkg. yeast 6 cups plain flour 3/4 cup margarine/butter 1 tsp. salt 3/4 cup sugar 2 beaten egg whites 1 cup boiling water | Dissolve yeast in cup of warm water. Cream margarine and sugar, add cup of boiling water and cool to lukewarm. Add egg yolks and yeast mixture and stir thoroughly. Stir in flour and salt. Fold in stiffly beaten egg whties. Dough will be soft looking, leave in mixing bowl, cover and place in refridgerator over night. Will keep 4 days. Two hours before baking, roll out dough and cut into biscuit shape. Place on greased pan to rise. | 375 15-20 min.
14: Congeal slightly, about 20 minutes, add 1 cup drained crushed pineapple, 1 3oz. pkg. of cream cheese 10 large marshmallows cut up (could use small ones) 1 can whipped evaporated milk Juice 1/2 lemon 1/2 cup chopped pecans | Mamaw Shirley | Congeal Salad | One box of white cake mix. 3/4 cup cooking oil 1 box strawberry Jello 1 tbsp. flour 3/4 cup strawberries 4 eggs Bake at 350 degrees Cake is done when toothpick comes out clean. Icing 1 stick margarine 3/4 cup strawberries 1 box powdered sugar Mix together and frost cake after | 1 pkg. lime jello 1/4 cup sugar 1 cup boiling water | Mamaw Shirley | Apple Dumplings | 2 can crescent rolls 2 Granny Smith Apples | Strawberry Cake | Mamaw Shirley | Peel and slice each apple into eight pieces. Wrap each piece in a crescent roll. Place in 9x13 pan, melt 1 1/2 sticks of margarine with 1 1/2 cup of sugar. Add 1 tsp. cinnamon. Pour over dumplings. Pour 12 oz. of 7up around dumplings (not on top). Bake 350 degrees for 45 minutes. Do not cover.
15: Mamaw Shirely | Graham Cracker Crust | 1 cup sugar 8 oz. cream cheese 1 pkg. lemon jello 1 cup boiling water Cream sugar, jello, and cream cheese until smooth. Add boiling water. Whip one large can evaporated milk (that has been cooled in fridge) add to above ingredients and fold in. Spoon into crust and garnish top with crumbled crust. Refridgerate overnight. (Follow crust recipe below) | 1 1/2 pkg. of graham crackers 1/4 cup sugar 1 stick margarine (melted) Crush crackers, add melted margarine and add sugar Line bottom of pan with foil. Fill with cheesecake mixture above or whatever else that needs a graham cracker crust. | Cheese Cake | Mamaw Shirley
16: Mamaw Shirley | Make Graham Cracker Crust (recipe on pg. 15) 1 8oz. pkg. cream cheese, softened 3 1/2 cup cool whip 1/4 cup sugar 2 tbsp. milk 2 pints strawberries/ or banans 2 pkg. Jello Vanilla instant pudding 3 1/2 cups evaporated milk Beat cream cheese with 1/4 cup sugar & 2 tbsp. milk until smooth. Folk in half of cool whip. Spread over crust. Arrange strawberries or bananas in even layer. Use 3 1/2 cups milk (I use evaporated). Prepare pudding as directed on pkg. Pour over berries or banans. Chill overight. Top with cool whip or fresh peaches or drained pineapple. | Berrie Delight Cake | Mamaw Shirley | Chocolate Marshmallow Cake | 1 1/2 stick margarine 1 1/2 cup flour 1 1/2 cup sugar 1 1/2 cup chopped nuts 3 tbsp. cocoa 1 tsp. vanilla 3 eggs 1 6oz. pkg. marshmallows Cream margarine, sugar, and cocoa. Add eggs, one at at time, beating well after each addition. Add flolur, nuts, and vanilla. Mix well. Put in floured oblong pan. Bake at 325 degrees for 40 minutes. Remove from oven and put marshmallows on hot cake. Icing recipe on following page.
17: 4 tsp. margarine (room temp) 4 tbsp. cocoa 1 box powdered sugar 1 tsp. vanilla Cream margarine, add sugar and cocoa. Beat well, add vanill and spoon over warm Marshmallow cake. | Marshmallow Cake Icing | Mamaw Shirley | Mamaw Shirley | German Apple Cake | 2 eggs 1 tsp. vanilla 1 cup oil 2 tsp. cinnamon 2 cups sugar 1/2 tsp. salt 1 1/2 tsp. water 1 cup chopped nuts 1 tsp. baking soda 4 cups apples (peeled and thinly sliced) 2 cups flour Beat eggs with oil until foamy. Add sugar, soda, which has been dissolved in the water, flour, cinnamon, salt, and vanilla. Batter will be very thick. Add apples and nuts. Pour mixture into a 9x13 pan and bake at 350 degrees for 50 to 60 mins. Icing: Mix 1 8oz. cream cheese, 3 tbsp. melted margarine, 1 tsp. vanilla, and 2 cups powdered sugar. Spread over cake.
18: Mamaw Shirley | Bake Less Fruit Cake | 1 lb. box graham crackers. crushed. 1 lb. marshmallows, cut fine. ( I use small ones) 1 lb. dates (cut fine) 1 cup nuts (chopped fine) 1 cup evaporated milk 20 maraschino cherries (cut into pieces) Mix ingredients well and press into a log in waxed paper or foil. Leave in refridgerator at least 2 days. | Mamaw Shirley | Chocolate Frosting | 1/4 cup crisco melted (or margarine) 1/2 cup cocoa, 1/4 tsp. salt 1/3 cup evaporated milk 1 1/2 tsp. vanilla 3 1/2 cup powdered sugar In a saucepan, melt margarine. Remove from heat, add cocoa and salt. Stir in evaporated milk and vanilla. Put sugar in bowl and add chocolate mixture. Mix at med. speed until smooth and creamy.
19: Pecan Pie | 3 eggs well beaten 1 tsp. vanilla 1/4 tbsp. melted margarine 1 tbsp. flour 1 cup karo syrup 1 cup chopped pecans 1/2 cup sugar 1/2 tsp cinnamon 1/2 tsp. salt To eggs, add margarine, syrup, sugar, vanilla, cinnaomn, flour, salt, and pecans. Pour into unbaked pie shell and bake at 350 degrees until filling is set. Aprox. 45-55 minutes. | Pies | Mamaw Shirley | 3 eggs, well beaten 1/2 cup flour 1 cup sugar 1 tsp. vanilla 1 stick margarine (melted) 1 cup chocolate chips Mix all together and pour in unbaked pie shell. Bake at 350 degrees for 45 minutes or until filling is set. | Chocolate Chip Pie | Mamaw Shirley
20: Chocolate Pie | 3 egg whites 1/2 tsp. vanilla 6 tbsp. sugar Beat egg whites with vanilla until soft peaks form. Gradually add sugar, beating till stiff and glossy. Spread over pie filling, sealing to edge of pie crust. | Mamaw Shirley | 3/4 cup sugar 3 slightly beaten egg yolks 1/3 cup flour or 3 tbsp. cornstarch 2 tbsp. margarine 1/4 cup salt 1 tsp. vanilla 2 cups milk In saucepan, combine sugar, flour, and salt. Gradually stir in milk. Cook and stir over med. heat until bubbly. Cook and stir 2 minutes. Remove from heat. Stir small amount hot mixture, cook 2 minutes, stirring constantly. Remove from heat. Add margarine and vanilla. Pour into baked pie shell. Spread meringue on top & bake 350 degrees until meringue is slightly browned. | Use above recipe increasing sugar to 1 cup and us about 3 tbsp. cocoa. | Mamaw Shirley | Vanilla Cream Pie | Butterscotch Pie Substitute brown sugar in vanilla cream pie filling. Increase margarine to 3 tbsp. | Coconut Cream Pie add 1 cup coconut to vanilla pie | Banana Cream Pie Slice 3 bananas into cooled pie shell. Top with vanilla pie filling | Mamaw Shirley | Meringue
21: Candy | Old Fashion Fudge | Mamaw Shirley | 3 cups sugar 4 tbsp. cocoa dash of salt 1 cup evaporated milk 1/2 cup karo syrup Cook until forms a hard ball in a cup of cold water. Take off heat, add 1 tsp. vanilla, 1/2 jar marshmallow cream, and 1 stick margarine. Beat until thick and pour in a buttered pan. Let harden. Cut into squares. Store in air tight container. | Mamaw Shirley | Peanut Brittle | 1 cup sugar 1 tsp. margarine 1/4 cup water 1 tsp. vanilla 1/2 cup karo syrup 1 tsp. baking soda 1 cup peanuts Cook sugar, water and syrup until form hair like stirring from spoon. Add peanuts and cook until peanuts are done. Take off heat and add margarine, vanilla, and soda. Pour thin into a buttered pan. | Mamaw Shirley | Peanut Butter Balls | 1/2 cup margarine 2 cups crunchy peanut butter Melt in double broiler Mix 1 box powder sugar, 3 cups rice crispies Pour top mixture over bottom mixture and make into balls. Dip in melted chocolate.
22: Mamaw Shirley | Mound Balls | Melt 2 sticks on margarine and let cool to luke warm. Add 1 can Eagle Brand milk. 2 boxes powder sugar, 2 cups nuts, and 2 cups coconut, and 1 tsp. vanilla. Mix together and let cool in refrigerator. Form into balls and dip each in chocolate mixture (below). Chocolate Mixture: Melt 1/2 cake paraffin and 12 oz. chocolate chips in double broiler. Keep warm while dipping, don;t burn. | 2 bags caramels 1/4 cup evaporated milk 4 cups chopped pecans 2 large Hersey bars Melt caramels with evaporated milk in double broiler. Add pecans, drop on buttered pan and let cool. Melt Hershey bars (can use chocolate chips) with 1/2 of cake paraffin. Dip balls in chocolate. | Mamaw Shirley | Millionaire Candy
23: Shelley, you became a member of our family March 20th, 1984. You, not only are our first granddaughter, you were also the first little girl in our family. You were a beautiful little blond haired girl, always busy. You would sit at my bar and talk while I cooked. You grew into a beautiful Christian girl. You are an example of what a Christian lady should be. You married Kirk, finished college, became a teacher, and now have a precious baby girl, Halle. You accomplished what you set out to do. Your Papaw and I are so proud of you. We love you so much! | Tiffany, you became a member of our family June 10th 1985. You were our beautiful little dark haired girl. You would sit for hours with me and I would rock and sing to you. You were a cuddly, precious little girl. You also grew up to be a beautiful Christian girl. You went to college, married Dustin, and became a school counselor. You have just gave birth to you son, Max. You have accomplished what you wanted in life. You too are an example of what a Christian lady should be. Your Papaw and I are so proud of you and love you so much.
24: Audrey you became a member of our family July 31st 2008. You are only three years old. You are our beautiful red haired baby girl. You have the sweetest personality. You like to please everyone. You are truly a blessing. God knew we needed one more little granddaughter. I don't know what profession you will choose, but I think you, like your cousins, will follow your dreams. I know in my heart, you will grow up be a beautiful Christian girl because you have the same family background and values as your cousins. Your Papaw and I love you so very much! | Kimberly you became a member of our family July 20th 1990. You were our beautiful little red haired baby girl. You were always smiling. You had, and still do, a wonderful personality. You and I spent a lot of hours on my porch swing, talking and swinging. You also, grew up to a beautiful Christian girl. You are still attending college. I know you have set goals for your life, and will accomplish them. You too are an example of what a Christian lady should be. All three of you girls are so different, but you all have the same upbringing, therefore you all have the same Christian values. You Papaw and I are proud of you and love you so much!
25: We want to remember Heather, our step grandaughter, who became a member of our family on April 21st 2000. When Keith and Denise married. God took her home on August 19th 2009. Heather was so much a part of our family. She was a big teaser and enjoyed life. She loved dill pickles. I asked her what she wanted for Christmas, and she said a jar of pickles. So from then on she would get a couple jars of pickles with her Christmas present. It was our private joke. We had her only a short time, but we will always remember and love her. One day we will all meet together in Heaven. We love you sweet Heather!
26: This book was prepared for my grandaughters. I hope you will all enjoy the recipes, and I hope you girls will realize how much I love you. I am very proud to be you grandmother!
