1: This Cookbook is inspired by all of the talented cooks in the family.
4: Fall Pumpkin Pancakes 1 1/2 c Flour 2 beaten eggs 2 tsp Sugar 2 c buttermilk 3/4 tsp sale 3 TB melted butter 1 1/2 tsp baking powder 1/3 c pumpkin 3/4 tsp baking soda 12 c milk Mix dry ingredients together. Add the rest of the ingredients but don't over mix. Use Carmel Sauce for syrup, yummy!
5: Don't count the calories! | Carmel Sauce 1 c sugar 1/2 c brown sugar 1 c cream 1/3 c corn syrup 1 tsp vanilla extract Bring to a boil and serve in a small pitcher as a substitute for syrup.
6: Crepes | 1 1/2 c milk 1 c flour 2 eggs 1 TB cooking oil 1/4 tsp salt Beat all ingredients together until smooth. Lightly grease crepe pan. Add 2 TB batter, roll the batter around to cover the bottom of the pan and brown one side only. Fill with yogurt and sour cream mix then top with fresh berries of choice. Makes 16 crepes
7: Cindy | Basic Fruit Syrup | 2 c apple juice 2TB cornstarch 1 tsp vanilla In a medium pan cook over low heat until thickness you desire, add vanilla & any chopped fruit you like. Apples, blueberries, strawberries, peaches or bananas. You can also add chopped nuts.
8: I have a great passion for anything breakfast. I have always enjoyed eating it and each bite brings me great pleasure! Breakfast food gives you so many options and is truly heaven. If Kelly would allow me it would be on our dinner table at least twice a week.
9: Homemade Granola 4 c oats 1/2 c bran flakes 1/2 c coconut 1/4 c wheat germ 1/4 c cornmeal 1/4 c chopped pecans 1/4 c almonds 1/4 c corn oil 1/3 c honey 1 tsp vanilla In large bowl mix all dry ingredients. In a bowl add the corn oil, honey and vanilla then add to the dry ingredients and mix really well. Spread the granola out in the baking pan in an even layer and bake at 325 degrees until granola is golden brown, about 45 minutes. Enjoy in a bowl of milk, by itself or on yogurt. Will stay good for 2 months. It is so good on a cold day and the smell will wake the house up, yummy!
10: Pound Cake Muffins 1 3/4 c flour 1/2 c sour cream 1/2 tsp salt 1 tsp vanilla 3/4 tsp baking soda 3/4 c sugar 1/2 tsp lemon juice 2 eggs 1/2 c softened butter Mix flour, salt & baking soda. In different bowl beat together sugar, butter then add sour cream, vanilla & lemon juice. Beat in eggs, one at a time. Stir in dry ingredients and mix well. Fill greased muffin pan 2/3 full. Bake at 350 degrees for 20-25 minutes | Honey Butter 3/4 c butter 3/4 c honey 3/4 c powdered sugar 1 tsp cinnamon Mix well and enjoy.
11: Cottage Cheese Muffins 1/4 c cottage cheese 1/4 c water 1/4 c oatmeal 1 pkg vanilla pudding dash cinnamon 1 egg Mix together, place in muffin pan and bake at 350 for 30 minutes.
13: Mexican Casserole 2# hamburger 2 TB dried onion 1 pkg corn tortillas 4 c shredded cheese 1 1/2 c picante sauce 2 cans cream chicken soup Brown hamburger & onions, drain fat. Add soup & picante and simmer 10-15 minutes. Spray 9x13 pan. Tear up 4-6 corn tortillas into pieces and line the bottom of the pan with one layer. Pour half of the meat mixture over the tortillas. Sprinkle the shredded cheese then repeat the layers. Bake at 350 for 25-30 minutes or until bubbly hot.
14: Spaghetti Salad Cook 1# spaghetti, drain Once noodles are cold add, all are diced: 1 red onion 1 1/2 tomatoes 4 ribs celery 2 cucumbers 2 green peppers Then add 1 bottle of Wishbone 8 oz Italian Robusto Salad dressing. Mix together well, eat cold and enjoy. | Great dish for a Party!
15: Tortilla Mexican Chicken 3 c broken tortilla chips 2 c shredded cooken chicken 2 small cans cream of chicken soup 1 4oz can green chiles 1 c chopped onions 2 c shredded cheddar cheese Mix all together in large bowl, pour mixture in 13x9 baking dish. Top with extra cheese than bake uncovered at 350 for 35-40 minutes. Yummy!
16: Salmon Patties 2 - 12oz Pink Salmon - drained & de-boned 1/2 c chopped onion 2 eggs lightly beaten 1 c flour 3 tsp baking powder Mix altogether, fry in oil until brown. Granny made these for Dad and they are one of his favorite memories, he loves these. Dad loved when Granny made them.
17: Easy Chicken Pot Pie 4 cans cream potato soup 1 bag mixed veggies 1 can milk 4 chicken breast, cooked & diced Mix all together and put into a lightly greased pan. Then mix together in separate bowl 1 can milk 2 1/2 c bisquick 2 eggs Then cover the top of pie and bake at 400 degrees for 30 minutes.
19: Great White Chili 6 (15 oz) cans great northern beans, drained 6 c cooked chicken diced or shredded 2 tsp cumin 6 c chicken broth 1 small onion, diced 2 (4 oz) cans chopped green chili's or jalapeno 1 1/2 tsp hot sauce 1/2 tsp pepper 1 small block Velveta cheese 24 oz sour cream Boil onions in broth for 15 minutes. Add all remaining ingredients except the sour cream, simmer one hour. Fold in sour cream before serving.
20: Papa Wro's Chili Every year we would hear Dad talk about how the neighbors would go house to house and eat on Christmas Eve. in 2005 the McCrary's spent Christmas with Dad and got to see First hand the love that went into making his "famous" Chili. It was such a treat and we really enjoyed. It took Dad 3 days in advance to make but it worth the time.
22: Tortellini Soup 2# Italian Sausage, mild w/out casing 2 14 oz diced tomato 2 c chopped celery & carrots 1 tsp basil & oregano 1/2 tsp crushed red pepper flakes 4 c water or chicken broth 4 beef bouillon cubes 3 cloves chopped garlic 2 pk 3 cheese tortellini 4 med zucchini chopped 1 sm onion chopped Cook sausage, while cooking sausage put all other ingredients (except tortellini) in large pot and cook on low for 1 hour. Add sausage to pot when cooked. After pot has been cooking for an hour add tortellini and cook for another 30 minutes. Yummy with warm bread.
23: Corn Chowder 4 c frozen corn 1 onion chopped 1 red bell pepper chopped 1 # new potatoes cut 1 1/2 TB olive oil 1 tsp dried thyme salt & pepper to taste 6 slices bacon chopped 1 qt chicken broth In pan add olive oil, bell pepper and onions cook until tender then once they are cool place half this mixture into the blender with 2 c corn and blend until thick, adding water if needed. In a large pot cook bacon until crisp then add chicken broth, 2 remaining cups corn and potatoes and cook until potatoes are ready. Add the pepper mixture to the pot and let simmer for about 30-45 minutes.
25: Swedish Bread Dissolve 1 pkg yeast in 1/4 c luke warm water for about 5-10 minutes, don't stir up just move cup around to get water on the yeast. In large bowl add: 1 tsp cardamom, 1/2 c soft butter, 1/3 c sugar and 1 tsp salt. Pour 1 c scalded milk over the above, don't stir just wait for "scem" to happen. Beat in 1 c flour, add dissolved yeast then add 2 to 2 1/2 cups more of flour -add half the flour. Then add 1 beaten egg, then remaining flour. Turn dough onto lightly floured board and allow to rest 5-10 min. Knead and form dough in large ball, place in greased bowl, cover with wax paper and allow to double. When doubled repeat. Then punch down and seperate into 2 sections. With 1 section at a time divide into 3 so that you can make a braid. Roll each secion into long pieces then braid. Take an egg white and beat until bubbly, brush over the top of braid and sprinkle with sugar. Repeat with other section, let rise. Bake at 375 for 20-25 minutes
26: Beer Bread 3 c flour 1/3 c sugar 1 can light beer at room temp 2 TB margarine, melted Mix together all ingredients in bowl then pour into loaf pan. Bake at 350 degrees for 50 minutes or until golden brown.
27: Savory Herb Biscuits 2 c biscuit baking mix 3/4 c shredded cheese 2/3 c milk 1/2 tsp dried basil 1/2 tsp garlic powder 1/4 c melted butter Add biscuit mix, shredded cheese, milk, basil and garlic together and beat until mixed well. Roll out or drop onto baking sheet. Brush melted butter on top and bake at 425 for 12-15 minutes.

29: Side Dishes | Ranch Beans Grandma Erickson Cook 1 lb hamburger, drain grease, add to baking pan. Add the following: 1 pkg Lipton Onion soup mix 1/2 c water 1 c ketchup 3 TB brown sugar 4 slices bacon-uncooked 2 28 oz pork & beans 2 tsp butter 1 tsp mustard 1 tsp cider vinegar Cook all together and let simmer 30 minutes.
31: Oven-Roasted Vegetables 1 med zucchini 1 med summer squash 1 med red bell pepper 1 lb fresh asparagus 1 red onion 3 TB olive oil 2 tsp salt 1 tsp pepper Cut all into bit size pieces. Place into large roasting pan. Toss with olive oil, salt and pepper to mix and coat well. Bake at 425 for 30-40 minutes stirring occasionally until vegetables are lightly browned and tender.
32: Dad's Favorite Rice Dessert 3 c cooked rice, cool 1 jar drained maraschino cherries 1 pineapple tidbits 1 small can mandarin oranges 1/2 c colored marshmallows minis dry whipped topping mix 1 pk sugar free instant white chocolate pudding mix Take 2 pk dry whipped topping mix and whip with 3 1/2 c skim mild. Add 1 pkg pudding mix (powder), mix well. Pour over rice, add all other ingredients and mix well, chill then enjoy.
33: Broccoli Slaw 1 pkg broccoli slaw 1 pk sunflower seeds or almond slivers 2 pk oriental Ramen noodles Mix the following together well: 1/2 c oil 2 TB vinegar 1/3 c sugar 2 pk Ramen seasoning mix Add slaw & nuts and Ramen mixture, chill overnight. Crumble noodles on top before serving.
35: Drunkin Dogs Ski's Favorite Cook and prepare sausage links & place in crock pot. Add to pot: 3/4 c bourbon 1 1/2 c ketchup 1/2 c brown sugar 1 c chopped onion Cook on low and enjoy
36: Oyster Cracker Snack 1 pkg oyster crackers 1/2 c oil 1 pkg hidden valley ranch mix (buttermilk) 1/2 tsp lemon pepper 1/4 tsp garlic salt 1/4 tsp dill weed Heat oil until warm. Place crackers in large bowl, pour oil over crackers and mix well. Mix together remaining ingredients then drizzle over crackers and mix well.
37: Spinach & Artichoke Dip | 1 8oz package cream cheese 1 can artichoke hearts 1/2 c spinach - drained 1/4 c mayo 1/2 c parmesan 1/2 tsp. basil 1 clove garlic - crushed 1/4 c mozzarella cheese - shredded dash garlic salt Mix all, sprinkle top with cheese and bake at 350 degrees for 25-30 minutes.
38: 3/4 c oil 1/2 tsp cayenne pepper 1/2 tsp lemon pepper 1/2 tsp garlic powder 1 pkg ranch dry dip mix Put pretzels in zip lock bag, mix other ingredients and pour over pretzels. Zip shut and turn slowly to mix well. After a couple of turns. | Spicy Pretzels
39: Roasted Shrimp Cocktail 2 # shrimp 1 TB olive oil 1/2 tsp salt 1/2 tsp pepper Preheat oven to 400, peel and devein the shrimp, leaving the tails on. place them on a baking dish with olive oil, salt and pepper in one layer and roast for 8-10 minutes. Set aside to cool. Mix together: 1/2 c chili sauce, 1/2 c ketchup 3 TB horseradish, 2 tsp lemon juice, 1/2 tsp worcestershire sauce and 1/4 tsp hot sauce. Mix well and enjoy.
40: Dessert | Gu-Ru Fudge 2 6oz pkg chocolate chips 1 c peanut butter 4 c mini marshmallows Melt chocolate chips with peanut butter and stir until smooth. Take off heat and mix in marshmallows. Place into a buttered pan and chill in fridge until set.
41: Sopapilla Cheesecake | 2 8 oz packages cream cheese, softened 1 c sugar 1 tsp vanilla 2 8 oz packages crescent rolls 1/2 c butter, melted 1/2 c sugar 1 tsp cinnamon Preheat oven to 350 degrees, grease 9 x 13 baking pan. Cream together cream cheese, 1 c sugar and vanilla until smooth, set aside. Unroll 1 can of crescent rolls and pinch perforations to make one big rectangle and make flat. Place in bottom of pan. Spread cream cheese mixture evenly over crescent dough. Top with remaining can of crescent rolls. Brush top with melted butter. Stir together 1/2 c sugar and cinnamon and sprinkle on top of butter. Bake 30 minutes, cool before serving. | Kristina Wrobleski
42: Pumpkin Cookies 1 c brown sugar, packed 1 c canned pumpkin 1/2 c oil 1 tsp vanilla 2 c flour 1 tsp soda | Pumpkin Cookies 1 c brown sugar, packed 1/2 tsp salt 1 c canned pumpkin 1/2 tsp cinnamon 1/c oil 1/2 tsp nutmeg 1 tsp vanilla 1/4 tsp ginger 2 c flour 1 c raisins 1 tsp soda 1/2 c chopped nuts 1 tsp baking powder In mixing bowl beat together sugar, pumpkin, oil & vanilla. Sift together dry ingredients; add & stir until smooth. Blend in raisins & nuts. Drop by spoonfuls on greased baking sheet. Bake at 350 degrees for 12-15 minutes. NO eggs needed in these moist cookies.
43: Citrus Sugar Balls 1 tube (16 oz) sugar cookie dough 1/2 c flour 4 TB lemon rind 4 TB lime rind 4 tsp orange extract On well floured surface, knead dough with the lemon & lime rind, flour and orange extract. Roll into balls then roll into sugar. Place on un-greased cookie sheet. Bake at 350 degrees for 12-15 minutes. Megan made these for Mom and now they are Mom's favorite cookies!
