2: 8 oz cream cheese 1/2 c. sour cream | 16 oz can of artichokes (drained and chopped) | 1/2 c. Parmesan cheese 1/2 c. salsa | 1 c. Monterey jack cheese 1/2 c. mayo | 1/2 c. heavy cream 1 tbsp lemon juice | 1/2 tsp tobacco sauce | 2 boxes of chopped spinach defrosted and well drained | * mix all ingredients together and place into your favorite baking dish. | 375 | 40min | 12 | Aunt Janet | Spinach Artichoke Dip | *till bubbly
3: bacon...mmmmm | Connie's Almond Stuffed Dates 16 whole almonds 16 whole pitted dates 8 slices bacon cut in half | 1. Place a raised rack on a cookie sheet. 2. Preheat oven to 400 3. Stuff an almond inside each date. 4. Wrap each date with a half slice of bacon. 5. Bake for 12-18 minutes till bacon is crispy
4: 1 lb ground beef 1/4 lb. ground sausage 1 large tub ricotta cheese 1 lb. shredded mozzarella cheese 1 box lasagna noodles (cooked) 2 jars of your favorite pasta sauce 1 large onion (chopped) 1. In a large pot cook onions. 2. Cook meats together in the cooked onions. Drain fat. 3. Add both jars of pasta sauce and heat through. 4. Coat a 9x13 pan with sauce then layer- noodles, sauce, shredded cheese, noodles, ricotta, noodles, sauce, shredded cheese, noodle, ricotta, noodle, sauce, shredded cheese. Bake at 350 till cheese is melted about 40min. | Mom's Lasagna
5: Grandma's Kid Friendly BBQ Spare Ribs | *2 lb. spare ribs *1 onion chopped *2 tbs. fat *1/4 c. lemon juice *1 tbs. Worcestershire *2 tbs. vinegar *2 tbs. brown sugar *1/2 c. water *1 bottle chili sauce *salt and pepper Preheat oven to 350. Cut ribs into serving portions and place in a baking pan. Bake for 30 minutes. While ribs cook brown onions in fat then add remaining ingredients Simmer sauce for 20 minutes. Drain fat from ribs then cover with sauce. Bake an additional hour.
6: Debbie's Meatballs | 2 lbs 90% lean ground beef 3 eggs | 2 tsp dried parsley 2 tsp dried basil | 2 c Italian seasoned bread crumbs | 1/3 c Parmesan cheese 1/4 tsp pepper | 2 garlic cloves minced 1/4 tsp salt | 1/4 to 1/2 c water | 1. Mix all ingredients together. Adding enough | water to keep mixture moist. 2 Roll meat into | two inch balls 3. Heat oil in a large skillet and | *oil for cooking in | cook meatballs till no longer pink in center.
7: Cuban Pasta Bake | 1 lb pasta 3 tbsp butter 3 tbsp flour 1 c chicken stock 2 c milk 1/4 c hot sauce 1/4 c yellow mustard 1/2 c pickles, chopped 3 c swiss cheese, shredded 1 lb cubed ham 1.Preheat oven to 400 degrees. 2. Cook pasta until just shy of al dente. 3. Heat a med skillet over med heat. Add butter. When melted, add flour and cook for 1 minute. Whisk in stock, milk, hot sauce, and mustard, bring to a bubble. 4. Stir in cheese (reserving some to sprinkle on top) until cheese is melted. .5. Fold in pickles, ham and salt and pepper to taste. 6. Combine pasta with sauce. 7. Pour into a 2 qt baking dish, bake for 10 minutes. Enjoy! Cathleen S.
9: -4 boneless/skinless chicken breasts pounded 1in thick -2 eggs –1 tbsp water -salt -pepper -1 1/2c dried bread crumbs -1c flour -olive oil -3 tbsp unsalted butter -1/3c lemon juice -1/2c white wine Chicken: 1)Heat oven to 400 and line a baking sheet. 2)Sprinkle chicken with salt and pepper 3)Mix flour, salt and pepper on a plate (plate 1) 4)Beat eggs and water on a 2nd plate 5)Mix bread crumbs salt and pepper on a 3rd plate. 6)Dip chicken into each plate in order 7)Heat 2 tbsp oil in a large pan over med-high heat 8)Cook breasts two at a time about 2min each side till brown 9) Finish cooking in oven for 5-10min. Sauce Bring 1 tbsp butter, wine, lemon, 1/2 tsp salt, 1/4 tsp pepper to a boil. Reduce by half then add 2 tbsp butter, melt then serve | White Wine Chicken
10: *1/2 - 1 lb bacon/pancetta/or salt pork *1 Lg Onion *1 red bell pepper *2 tbs garlic *paprika *parsley *salt and pepper to taste *1/2 lb corn *1 lb crab *Old Bay *1 qt light cream Chop and cook bacon in Dutch oven Once fat is rendered, add onion, and cook until soft Add garlic, add paprika, parsley salt and pepper to taste. Stir in corn and warm. Add crab and as much light cream as you like to reach desired consistency Add Old Bay to taste and re-season as needed. Do not let boil, slow heat -Jeff | Corn Chowder
11: Soup is liquid comfort. ~Author Unknown | Heidi | Christmas Soup | 32 oz chicken stock garlic salt | 15-20 | 4-6 | 5 oz frozen chopped spinach pepper | 12 oz jar roasted red peppers salt | bag frozen cheese tortellini crumbled feta | In soup pot cook spinach in the stock. Slice | pepper thin then add to pot. Cook tortellini | in the stock as package instructs. Salt(s) and | pepper to taste. Serve with crumbled feta | cheese sprinkled on top.
12: New England Clam Chowder 2 6oz cans chopped clams 2 6oz cans minced clams 1 8oz bottle clam juice 6 strips bacon 1 large onion 3 tbsp butter | Begin by rendering the bacon on medium low heat in the soup pot. While the bacon renders dice the onion, peel and dice the potatoes. Open and drain the clams reserving the packing liquid. | 1/4 cup flour 1+1/2 cup light cream 5 medium red potatoes 1 tsp Old Bay Seasoning Black pepper
13: When the bacon is crispy remove from pot and set aside. Cook the diced onion in the bacon fat. Continue cooking on medium low, the goal is to sweat the onion and bring out its sweetness not add color. After about ten minutes add the butter. When the butter is melted add the flour and whisk thoroughly at this time turn up the heat to medium high. Let the roux cook for 2 minutes. Slowly add the cream while whisking continuously. You will end up with a thick paste loaded with bacony onions. While whisking continuously slowly add the reserved clam juice and half the bottled clam juice. Increase heat to high and allow soup to come to a boil. Once the soup boils add the potatoes and reduce the heat to medium high. Cook the potatoes for 15 minutes stirring frequently, then add the clams. Reduce the heat to low. Season with black pepper and Old Bay to taste. Allow to simmer for an hour. 14: 3 c. white potatoes 1/2 red onion chopped 1 tbsp. sugar 2 chives chopped 1 tbsp. white vinegar 1 tbsp. Nances Mustard 1 1/2 tsp. salt 3/4 c. mayo 2 hardboiled eggs chopped Boil whole potatoes with skins on till just soft. You want them to still have body, not mushy. Let cool. Then peel and chop into 1/2inch cubes. In a large bowl sprinkle sugar, vinegar and salt over potatoes. Add eggs, onion and chives. Mix mustard and mayo together in a small bowl then stir into potatoes till well covered. You can add more mustered and mayo to taste/texture. -Ann | Na’s Potatoes Salad
15: Michelle | Noodle Salad | 1 12oz box Tri-color Rotini | 1 bottle Parmesan Italian dressing | 1 c each-Chopped broccoli crowns, | celery, sweet peppers any color, carrots, | cucumbers | 1 bag diced pepperoni | 1/2lb Colby jack cheese cubed | 1/2 lb Cheddar cheese cubed | Mix all together. Adding dressing to | taste and as noodles absorb it | 12
16: Part of the secret of success in life is to eat what you like and let the food fight it out inside. ~Mark Twain | Nappa Cabbage Salad 1 large Nappa cabbage 1 cup salad oil 5 diced green onions 2 tbsp. Soy sauce 3 packages Ramen noodles 1 cup sugar 1/2 cup sesame seeds 1/2 cup vinegar 1/2 cup slivered almonds 1/2 cup butter Dice onion, cut off bottom of cabbage and cut leaves lengthwise, then cut across to thin slices. Chill. Meanwhile, in a skillet melt butter and toast noodles (break them up, discard flavor pouch), sesame seeds, and almonds. Set aside to cool. In a separate container, mix together salad oil, soy sauce, sugar and vinegar. Blend all together just before serving. From Cathy Beich
17: Na's Pistachio Salad | Na (Ann Beich) | Pistachio Salad | 6-8 | 8 oz. whipped topping (cool whip) | 1 box pistachio instant pudding (dry) | 20. oz. crushed pineapple – with juice | 2 cups miniature marshmallows | 1/2 cup nuts | Mix all the ingredients together and | refrigerate. | The start to yummy
18: Grandma Elaine's Cheesecake 1 3/4c. graham cracker crumbs, 1/2c. butter melted, 3 eggs, 16 oz. cream cheese softened, 1c. sugar, 1/4 tsp. salt, 2 tsp. vanilla, 1/4 tsp. almond extract, 3c. sour cream Combine crumbs, and melted butter. Press on the bottom and sides of a spring form pan Beat eggs, cream cheese, sugar, salt, vanilla and almond extract till smooth. Blend in sour cream. Pour into crust and bake about 35 minutes, cool then refrigerate. *Tastes great served topped with fruit or chocolate
19: " | Crust Filling 1/3c. milk 6-7 large apples (20ouners) 1 tbsp. lemon juice 3/4 to 1c. sugar 2c. flour 1/3-1/2c. brown sugar 1 tsp. salt 1 tsp. cinnamon 1 tsp. baking soda 1/4 tsp. vanilla 1c. Crisco flour if needed For the crust-1) mix milk and juice together-set aside. 2) In large bowl combine dry ingredients 3) cut in Crisco 4) add milk/juice and spoon into a ball then divide into two. For Filling-1) Peel and slice apples. 2) Mix all filling ingredients together 3) Add flour if apple mix seems wet. Assemble-1) Preheat oven to 425 2) Roll out one crust ball and form to pie plate 3) Add apple filling 4) Roll out second crust ball and top pie 5) Cut vent slices on top of pie 6) Bake for 50-60 minutes covering crust with foil if browning quickly | Grandma Pearl's Apple Pie | “Good apple pies are a considerable part of our domestic happiness.” Jane Austen
20: Pecan Pie Filling 1c maple syrup 1c light brown sugar 1/2 c heavy cream 1 tbsp molasses 4 tbsp butter 1/2 tsp salt 6 egg yolks 1 1/2 c chopped pecans Oven at 450. Heat syrup, sugar, cream and molasses in saucepan till sugar dissolves. Remove from heat and whisk in butter till melted. Whisk in egg yolks. Scatter pecans in pie shell. Pour filling over pecans. Place in oven and immediately lower to 325. Bake 45 – 60 min, until filling is set. Cool on rack for 1 hour, in fridge for 3 hours to one day. Serve at room temp with whipped cream.
21: Chocolate Cake: 12oz bittersweet chocolate, chopped fine 1c unsalted butter 1c white sugar 1/2c flour 6 lg eggs : | Raspberry Sauce: 4c raspberries 1/2c white sugar 2tsp lemon juice | Sauce: Place berries and sugar in a small pan. Let boil over med-high heat stirring until the sugar dissolves. Add the lemon juice. Let cool. Puree half the sauce in a food processor then combine with the remaining half. Refrigerate until cold. Cake: Preheat oven to 35O. Generously butter and flour six 8oz ramekins. Melt chocolate and butter using a double boiler. Set aside to cool. In new bowl beat the sugar, flour and eggs until thick and fluffy- about 5 min. Gently beat in the chocolate mixture. Fill the ramekins 3/4 full. Bake until they puff up and set (15-20minutes). 22: 1. Preheat oven to 350. Line baking sheets with parchment paper 2. Whisk dry ingredients together. 3. Mix butter and sugers till well blended. Beat in egg, yolk and vanilla. 4. Combine wet and dry ingredients. 5. Drop dough onto tray as 1/4 cup mounds two and half inches apart. 6. Bake 16-18 min. till edges start to harden. 7. 23: Na (Ann Beich) | Key Lime Pie | 4 eggs 1 graham cracker crust | 350 | 10 | 8 | 1 can sweetened condensed milk | 1/3 cup key lime juice | Beat one whole egg and three additional yolks | Beat three egg whites till stiff. Set aside. | until thick. Add condensed milk and beat | again. Add the juice and beat until thick. | Fold in the egg whites. Pour the mixture | into the crust. | *refrigerate after cool | Mmmmmmn! | Condensed milk is wonderful. I don't see how they can get a cow to sit down on those little cans. ~Fred Allen
24: Apple Dumplings - Pre made pie dough (store bought for me!) -6 small baking apples peeled, cut in half & cored (place in ice water to limit browning) -For syrup - 1 c. sugar, 1 c. water, 1/8 tsp cinnamon, 1/8 tsp nutmeg 2 tbsp butter Syrup- 1. Place sugar, water, cinnamon and nutmeg in a small sauce pan. Bring to a boil. 2. Add butter heat till melted then set aside. -For filling mix in a small bowl 1/3 c sugar 1/2 tsp cinnamon and 1/4 tsp nutmeg. Assemble- 1. Roll out dough and cut into 5 inch squares. 2. Take a square and center an apple on it. 3. Hold the halves together and fill with sugar filling and place a pat of butter on top. 4. Fold the corners of the dough over the apple and pinch together. 5. Repeat with remaining apples and place them in a baking dish about an inch apart. 6. Pour the syrup over them and sprinkle with sugar. 7. Bake at 375 for 35 minutes. | -Meredith

26: Scottish Oven Scones (Aunt Cathy's) | 2 cups flour 2 tsp sugar 1 tsp cream of tartar 1/2 tsp salt 1 tsp baking soda 1/2c butter 3/4c milk Sift together flour, sugar, cream of tartar, salt and soda. Cut in butter until mixture is the consistency of coarse meal. Stir in milk to make a soft dough. Divide into 2 portions. Pat out on a lightly floured surface into a round, 3/4 inch thick. Cut across in both directions, making 4 pie-shaped sections. Place on baking sheet. Bake at 400F for 12-15 minutes. | Note: This recipe came from my grandfather's Scottish friend.
