1: This Cookbook is inspired by many talented cooks in our family - especially our mother Carla Jacks.

4: Using a Bread Machine | Mom uses Krusteaz Bread Mix Country White put water in the bottom of the mixer bread mix on top of the water make a small well in the flour for the yeast do not let the yeast get wet Let the machine do the work! | before mixing | 4

6: Grandma and Mom Homemade Potato Soup | Cook: Potatoes (5lbs) for a large batch Don't get the potatoes too soft, or they'll turn to mush in the soup The more you stir it, the more the potatoes fall apart Melt : Stick of butter (or 1/2) depends on serving you're making Add to butter: Celery Carrots (not as many) Bayleaf Nutmeg (a dash) Clove (a dash) Parsley flakes Seasoning salt Pepper Garlic Salt (easy on the salt) Then, dump potatoes back in to pot Add milk (to desired thickness) Cook on 3/10.. A little lower than medium | Medium | 40 min | 5 | 6

7: Homemade Potato Soup | Melt : 1 Stick of butter in a large pot Add to butter: Celery Carrots Bay Leaf a dash of Nutmeg a dash of Clove Parsley flakes Seasoning salt Pepper Garlic Salt | pour potatoes back in to pot Add milk (to desired thickness) Cook on medium to low heat | family recipe passed down many generations | Tagen's Favorite

8: Chili | Brown Hamburger meat (4 to 8 lbs) add to large pot: browned hamburger 1 large can tomato juice 6 cans light/dark red kidney beans Rotel or fresh tomatoes Salt, pepper & garlic Williams Chili Seasoning 1 can of beer Cook over medium-low heat until hot *this is a large serving size | Mom's Recipe | 8

11: Mammy's Recipe | Salad: fresh spinach 1 cup pecans 12 oz. dry curd cottage cheese | Dressing: 1 cup sour cream 1/2 cup sugar 3 tbsp vinegar 1 1/2 tsp dry mustard 4 tbsp horseradish 1/2 tsp salt | Preparation Time:5 minutes | Spinach Salad Supreme | Place the fresh spinach on a plate, put a spoonful or two of cottage cheese on top of the spinach. Top with dressing and pecans.

Bake @ 350 degrees for 15 minutes | 14 | Ingredients: Large Mushrooms 5 oz Fresh Shredded Parmesan Cheese 8 oz. Crab Meat 2 -3 tbsp. Butter 2 tsp. Garlic Powder

16: Wanton wraps Bake in greased muffin tins @ 350 degrees for 5 min put on baking sheet after cooking Mix: 1 lb sausage 1 can black olives 1 onion Colby jack cheese Ranch dressing to thickness, not too runny, not too thick Garlic, salt & pepper Stuff the wonton shells Bake @ 350 degrees for 15-20 min A Crowd Favorite | Puke Pockets | 16

18: Fried Okra | wash and cut okra into 1/2 inch pieces whip up two eggs and pour them over the cut okra in a bowl pour Panko, cornmeal, salt, pepper and garlic into a larg ziploc bag place a small portion of the egg coated okra into the ziploc and shake until all okra is coated with panko fry in olive oil in a sauce pan or deep fryer on medium to high heat until golden brown | ingredients: Panko Bread Crumbs Fresh Okra Corn Meal salt, pepper, garlic 2 eggs olive oil | place fried food on paper towels to soak up excess oil after cooking | 18

19: cut and season the squash with salt, pepper and garlic whip up the eggs and flour in a bowl seasoned with seasoning salt, pepper and garlic (thick enough that the batter doesn't fall off of the squash) put Panko bread crumbs in a pie pan one by one, dip the squash into the flour batter and then into the Panko crumbs fry in 1/4 inch of olive oil in a fry pan on medium to high heat until both sides are golden brown | ingredients: Panko Bread Crumbs Fresh Sliced Squash/Zucchini fFour seasoning salt, pepper, garlic 2 eggs olive oil | Fried Squash | 19

20: Fresh Garden Salsa | Mom's Recipe | 2 tbsp. salt 1 tbsp sugar 1 whole garlic 1 tsp. red pepper 2 tbsp. Lime Juice Argo fresh chopped tomatoes 2 chopped onions chopped green peppers chopped banana peppers 1 chopped jalapeno pepper Chopped Ki Ann Pepper | 20

21: Avocados (soft) Onion Jalapeño Garlic Salt Pepper Seasoning salt Lime/lemon juice | Guacamole | Chop Onion and Jalapeno. Mix all ingredients together with a fork. Stir to desired consistency. | Mom &Tagen's Recipe | 21

23: Annette's Dip 1 cup cottage cheese 8 oz. cream cheese 1 Jar old English cheese Green onions Garlic and pepper Mix & let it set in fridge before serving | 23

24: Ingredients: 2 - 8 oz Cream Cheese 1 - 8 oz crushed pineapple 1/3 cup chopped onion 1/4 chopped bell pepper 1 tsp seasoning salt mix together and roll into a ball roll the cheese ball over chopped pecans refrigerate. serve with crackers. | Pineapple - Pecan Cheeseball | 24

25: Ingredients: 10 large cucumbers 3 onions 3 cups sugar 1 1/2 pints vinegar 1 tbsp. salt 1 tsp celery seed 1 tsp mustard seed 1 tsp tumeric | Cucumber Relish | Mammy's Recipe | grind cucumbers through coarse food grinder squeeze out juice add vinegar and all other ingredients bring to boil, let boil for 5 min stir to prevent sticking fill jars and seal | 25

26: Homemade Mashed Potatoes | Ingredients 6-8 large potatoes 1/2 stick of butter 1/2 cup milk salt pepper garlic seasoning salt | Directions peel, rinse and cut potatoes. boil until tender. drain. add butter, milk, garlic, pepper and salt beat to desired consistency | 26

27: Chicken Fried Steak | Tenderized Cube Steak or tenderized round steak 3 eggs saltine crackers salt, pepper, garlic, seasoning salt milk canola oil 1 cup flour Mix eggs in pie pan Mix flour with crushed crackers, salt, garlic and pepper in separate pie pan Season steak with garlic salt pepper seasoning salt Dip steak lightly into flour mixture Then Dip into eggs Dip steak into flour mixture again Then cook steak in pan with canola oil (enough to cover bottom) on medium to high heat Cook one side at a time. When done: place steak on cookie sheet lined with paper towels to drain grease Make gravy with left over grease: Add 2 tbs. Flour to grease, let thicken Add milk to desired thickness Salt, Pepper and Garlic | Taylor's Favorite | 27

28: Chicken Fried Chicken | Chicken Breast Tenderloins seasoning salt Panko Bread Crumbs canola oil 1 cup flour 3 eggs pepper garlic milk salt | Mix up eggs in pie pan Mix flour with, salt, garlic and pepper in separate pie pan Panko, salt, pepper and garlic in another pan. Season chicken with garlic salt pepper seasoning salt Dip chicken lightly into flour mixture Then Dip into eggs then Dip chicken into Panko mixture Then cook chicken in pan with canola oil (enough to cover bottom) on medium to high heat Cook one side at a time. When done: place steak on cookie sheet lined with paper towels to drain grease Serve with Mashed Potatoes and Gravy -- pages 26 & 27 | 28

30: Chicken Alfredo | Ingredients: 6-8 oz. fettuccine noodles 1/2 tsp. salt 6 skinless chicken breasts 4 tbsp. margarine 1/4 cup finely chopped onion 2 cups sliced fresh mushrooms 3 tbsp. flour 1 1/2 cups chicken broth 1 1/2 cups half & half 1/4 tsp. nutmeg 1/4 cup Parmesan cheese 1/4 tsp. pepper 1 tbsp. chopped pimiento | Boil noodles until tender in a large pot. Drain and set aside. Slice chicken into 2 inch pieces and cook in a wok for 10 to 12 minutes or until meat is no longer pink. Cool. In the wok, cook margarine, onion and mushrooms for 3 to 4 minutes. Stir in flour and cook for 1 minute. Add remaining ingredients and cook on HIGH for 10 to 12 minutes or until sauce is boiling and thickened. Stir in fettuccine noodles and chicken. Cook 2 to 3 minutes. Makes 6 servings. | 30

31: Mom | Meatloaf | 1 envelope Lipton Recipe Secrets Onion Soup Mix 2 lbs. ground beef 3/4 cup plain dry bread crumbs 2 eggs 3/4 cups water 1/3 cup ketchup | 350 | 1 hour | 8 | Meat Loaf | Shape into loaf in 13 x 9-inch baking or roasting pan bake uncovered. | 31

32: Mom's Roast with potatoes, carrots and cabbage Rub roast with Kosher Salt, Browning & Seasoning Sauce place in a large pan cover the roast with garlic, black pepper and Cajun seasoning place 2-3 beef bouillon cubes in the pan fill pan with 2 inches of water surrounding roast place 2 Bay Leaves in the water Cook on 325 degrees for 2 to 3 hours *the longer you cook, the more tender it gets When the roast is done cooking, remove it and add carrots, cabbage and potatoes to the juice. Continue to cook the vegetables for one hour or until tender. **With leftover roast you can make Beef and Noodles | 32

33: Beef and Noodles made with Roast When roast is finished cooking in broth, take out the roast and pour the leftover broth into a large pot. Add to the broth/ make new broth: 2 Bay Leaves 2 Beef bouillon cubes 4 to 6 cups of water parsley flakes, basil, salt, pepper and garlic When broth begins to boil, add a 12 oz. package of Extra Wide Egg Noodles. Pull apart the roast and add it to the pot cook egg noodles for 7 to 8 minutes or until tender Serve with Mashed Potatoes -- see page 26 | 33

35: Swiss Steak | Tenderized Cube Steak or Tenderized round steak Dip steak in flour Brown it on each side for a couple of minutes on medium heat in a little bit of grease (Crisco, Canola oil or olive oil) JUST BROWN, DON'T COOK grease a large roasting pan cover bottom of pan with 2 cans of tomato soup Season with: 4 Bay leaves Garlic Salt Pepper Seasoning salt Basil (fresh) Place Browned Steaks in pan on layer of soup 2 more cans of Tomato soup to cover steaks Add Onions and Bay leaves on top *Add 1 cup of Beef Bouillon Broth (to insure moistness) Cook at 325 degrees for a couple of hours Serve with Mashed potatoes | 35

36: 1. Make the Dough - use Country White bread dough - place in bread machine - each batch of dough will make 12 Bierocks | 2 Hamburger - Cabbage Mixture - brown 2 lbs of hamburger in a pot - season with salt, pepper and garlic - drain the hamburger - chop fresh cabbage, add to the pot of hamburger and mix on low heat (cabbage cooks down) | Bierocks | total preparation time - 2 hours bake time - 15 to 20 minutes | "then out of tradition, you put the cabbage on your head" - Mom | 36

37: 3. putting it together - knead the dough - roll on cutting board covered with flour - cut the thickly rolled dough into fourths - then cut the fourths into thirds, in a triangular shape - thinly roll each triangle - place one twelfth of the hamburger-cabbage mixture on the dough - pinch the edges of the dough together | 4. Let them Rise - place the beirocks on a cookie sheet covered with parchment paper - let the Beirocks rise for 30 minutes | 5. Baking the Bierocks Bake the Bierocks for 15 to 20 minutes at 350 - 375 degrees | Serve with butter or mustard | 37 | 37

38: Smoked Brisket | rub kosher salt on brisket let it sit for 24 hours smoke directly on the grill, uncovered, fat side down let smoke until the fat is burnt and slightly crunchy then turn the meat fat side up for 6 hours after 3 hours, wrap the meat in foil rub BBQ sauce on the meat when almost done cooking | Mom's Favorite! | 38

39: Squash Casserole | Mix together in a greased dish: 3 eggs 3 cups oyster crackers 1/2 cup Milk 1 can Rotel 1 Chopped Onion Cubed Zucchini and Summer Squash Shredded cheese mixed in and on top Bake @ 350 degrees 45 minutes to 1 hour | 39 | Kent Stannard's Recipe

40: Mom | Macaroni and Cheese | Boil and Drain 1 Package of Large Elbow Noodles place one inch layer of needles in greased casserole dish. layer of butter, Velveeta (1/4 inch slices), crushed crackers, salt, pepper and garlic. Repeat the layering again. pour 1/2 cup milk onto noodles sprinkle cheddar cheese on top bake | 325 degrees | 45 min | 6 | 40

41: dinner | Twice Baked Potatoes | Cover outsides of 6 large baking potatoes with Crisco bake at 325 degrees for 2 hours When done baking, cut the potatoes in halves (save the outside skin and place on pan) dig out the centers into a large bowl mash the potatoes with 2 sticks of butter, 1/4 cup sour cream, salt, pepper and garlic. stir into the mashed potatoes: 1 8 oz bag of cheddar cheese. add milk if potatoes are too thick Fill the potato skins with the mashed potatoes and bake. | 350 | 1 hour | 8 | Grandpa's Recipe | 41

42: Stuffing | 45 min | 6 | The Turkey | You will need: a whole Turkey 4 onions (cut into 1/4's) Cajun, mesquite seasoning, salt, pepper and garlic 2 sticks of butter Stuff the turkey with onion 1/4's, 1 stick of butter, Cajun, mesquite seasoning, salt, pepper and garlic Rub the outside of the bird with butter. Bake for 4.5 hours at 325 degrees | 42

43: dinner | Sweet Potatoes | bake 2 sweet potatoes in foil remove foil and slice in to 1/4 inch pieces. melt 1/2 stick of butter pour 1/2 of the butter into the bottom of a greased pan layer slices of sweet potatoes in the pan pour the remaining butter over the sweet potatoes place marshmallows on top of the sweet potatoes bake at 350 degrees for 30 minutes | 43

44: Stuffing | 45 min | 6 | Stuffing | bring to a boil and simmer in a sauce pan: 2 sticks of butter 1 bundle chopped celery stock 1 chopped onion salt, pepper, garlic, poultry seasoning In a large baking pan: stuffing bread mixture pour 2 cans chicken broth over the bread pour hot butter/celery mixture over the bread mix together until all bread is wet add more poultry seasoning and salt on top Bake for 1 hour at 325 degrees | Green Bean Casserole | Mix together in a dish: 2 cans French cut green beans 1 can cream of mushroom salt, pepper and garlic to taste 1/2 can milk Top with French's-fried onions Bake @ 350 for 30 minutes or until hot | 44

45: dinner | Grandma's Cranberry Salad | 1 package fresh cranberries large red grapes 1 package small marshmallows I tub of Cool Whip Sugar to taste Grind cranberries in a food processor, add sugar to sweeten cut grapes into halves add all ingredients together and mix. **Add more cool whip to desired consistency | Dad's Favorite | 45

47: Chocolate Chip Cookies | 2 1/4 cups all purpose flour 1 tsp. baking soda 1 tsp. salt 1 cup (2 sticks) softened butter 3/4 granulated sugar 3/4 cup packed brown sugar 1 tsp. vanilla extract 2 large eggs 2 cups semi sweet chocolate morsels *optional to a 1/2 cup rice crispies Blend all ingredients to creamy, then add morsels Preheat oven to 375 degrees bake for 6 to 8 minutes | 47

48: Puppy Chow | melt together: 12 oz bag milk chocolate chips 1 stick of butter 1 cup of creamy peanut butter mix with 12 oz box of Crispix until all covered. Dump into a paper bag. Combine with 3 cups of powdered sugar until well coated. | Ingredients: 12 oz bag milk chocolate chips 1 stick of butter 1 cup of creamy peanut butter box of Crispix Cereal 3 cups of powdered sugar | 48

49: 14 cups popcorn (popped) 4 cups rice krispies 4 cups mixed nuts (mix together and keep warm in oven on lowest setting) melt together in microwave: 1 cup peanut butter 1 pkg. white almond bark pour over warm popcorn mixture mix together let set until dry | Holiday Popcorn | 49
