2: Sweden | Swedish crayfish cake | Ingredients: 6 -8 pc malt bread, 80 g butter, 400 g shrimps, 1-2 red onions, 2 dl cream, 1 dl low-fat mayonnaise, 3 leaves of gelatin, fresh dill, 150 g Philadelphia cream cheese. 1. Mix the bread crumbs with melted butter and press onto bottom of a springform pan (20 cm). 2.Place the gelatin leaves in cold water for 10 min. Whip the cream and mix with Philadelphia, and mayonnaise. Add chopped onions, dill, and shrimps. Melt the gelatin leaves and mix with the other ingredients. 3. Keep the cake in fridge for at least 4 h and decorate it. | 1 h | 8 portions | There are many ways to study for the Swedish matriculation exam and cooking is one of them. 5: Nora's Chocolate Cupcakes Ingredients: Dough: 1.5 dl flour, 0.5 dl cocoa, 125 g butter, 1.5 dl sugar, 2 eggs, 1.5 ts baking powder, 1 ts vanilla. Frosting: 100 g butter, 3-4 dl icing sugar, 0,75 ts vanilla, 0.5 dl cocoa, 300 g cream cheese. 1. Beat the eggs and sugar until light and fluffy. Add butter and vanilla and beat until well incorporated. 2. Sift the flour, cocoa and baking powder and stir. 3. Bake in the oven (200 C) for 20 min. 4. Frosting: Beat the butter first and then the cream cheese. Sift the icing sugar and cocoa into the cream-cheese-butter mixture. 5. Decorate the cupcakes when cooled. | If you want to make the frosting stiffer, only use butter. You can also use vanilla or peppermint extracts to give the frosting more flavor.

Melt 50 g milk chocolate and let it cool down. Beat the butter, white and brown sugars until stiff. Add egg, chocolate spread, and milk chocolate and beat until incorporated. 2. In a separate bowl, sieve and combine flour, cocoa, baking powder, and vanilla. Add the dry ingredients to the dough and stir. Add the chocolate chips. 3. Bake in the oven (175 C) for about 10-15 min.

9: Ingredients: 24 snails, one fresh garlic, 20 g butter, 2 onions, one leek, one small carrot, piece of celery, 500 ml broth, 3 tbs creme fraiche, parsley, 2 tbs dry white wine or lemon juice, salt, pepper, and chervil. 1. Wipe with the garlic the sides of the saucepan. Melt the butter and glaze the onions. Chop the vegetables and fry them as well. 2. Chop the snails and fry for a short time. Add the broth. Spice with salt and pepper and let the soup boil for 5 min. 3. In the end, add the creme fraiche, parsley, and white wine. Filling: 2 egg yolks, 100 g cream cheese, 1 dl sugar, 2 ts vanilla, 1 tbs lemon juice, 2 tbs cream, 2 egg whites, 2 ts cornstarch flour. 1. Beat butter and sugar until stiff. Add the egg and stir. 2. Mix the baking powder with flour and add it to the dough. 3. Bake in the oven 200 C for 10 min. 4. Make the filling by mixing the cream cheese, sugar, vanilla, lemon juice cornstarch flour, and egg yolks together. Whip the cream and add it. 5. 14: Pancakes, Waffles and Crepes | Banana-nutella-crepes | Ingredients: 4.5 dl milk, 2.5 dl flour, 2 eggs, 0.25 tbsp salt, and 0.5 dl sugar. 1. In a large bowl, whisk first half of the milk into rest of the ingredients. 2. Add rest of the milk, mix until smooth, and let the dough swell for a few minutes. 3. If you are doing waffles or small pancakes (letut), heat a slightly buttered frying pan or waffle iron and pour some dough on it. Brown on both sides and serve hot. 4. In order to make an oven pancake (pannukakku), butter a large cake tin, pour the dough in it, and bake in the oven 225 C for 20 min. 5. Serve with banana, blueberries, whipped cream, raspberries, ice cream or nutella.
15: Apple pie | Finland | Apple pie | Ingredients for the base: 125 g butter, 0.75 dl sugar, 1 egg, 2.5 dl flour, and 0.5 ts baking powder. Filling: 2-3 red apples, 2 tbs sugar, 2 dl sour cream, 1 egg, and 1 ts vanilla | 200 | 1 h | 10-12 | PIES | 1. Beat butter and sugar until stiff. Add the egg and stir. 2. Mix the baking powder with the flour and add to the dough. 3. Peal and chop the apples. Fill the cake tin with them. 4. Make the filling by mixing the sugar, sour cream, egg, and vanilla. Stir and pour on the apples. 5. Bake in the oven 200 C for 30 min.
16: Brownies ingredients: 150 g butter, 2 eggs, 3 dl brown sugar, 2 ts vanilla, 2.5 dl flour, 100 g chocolate, 2 tbs cocoa, 1 ts baking powder. 1. Melt the chocolate and butter in a bowl over boiling water. Let it cool down for a moment. 2. In another bowl, beat the brown sugar and eggs until stiff. Add the chocolate-butter-mixture. 3. Sieve and add the flour, vanilla, cocoa, and baking powder. 4. Pour into a buttered cake tin and bake in the oven 175 C for 25 min | 12/2011
17: 4/2013 | Name | Korvapuusti | Ingredients: 2.5 dl milk, 1 bag dry yeast or 25 g yeast, 1 dl sugar, 1 egg, 1 ts cardamom, 0.5 ts salt, 7 dl flour, 75 g butter, cinnamon ( I beaten egg) 1. Dissolve the yeast into warm milk. Add the sugar, egg, and spices and stir well. 3. Still stirring, add over half of the flour. Use your hand to knead the dough as you add the rest of the flour. Melt the butter and add it as well. 4. Let the dough rise in a warm place for at least 15 min. 5.Using a rolling pin roll the dough out into a large rectangle. Spread the butter and sprinkle the sugar and cinnamon over the surface of the dough. Roll the dough tightly and cut it into pieces. 6. Before baking the rolls in the oven (225 C) for 10 min, press a hole with your finger in the center of each roll, let the rolls rise, and brush them with beaten egg.
18: Italian Style Pasta Ingredients: 200 g fresh pasta, 6-8 slices of Parma ham, ricotta cheese, fresh spinach, sun dried tomatoes, pine seeds, and a pinch of salt. Put the parma ham slices on a baking tray and bake in the oven for a few minutes. Rip the slices into small pieces. Cook the pasta, and when it is almost done, add the ham slices, sun dried tomatoes, spinach, and salt. Serve with pine seeds and ricotta cheese sprinkled on the top. You can also use cherry tomatoes, shrimps, or avocado in this recipe.
19: Shrimp Wok Noodles, 50 g green beans (or peas), half a sweet red pepper, 100 g shrimps, 50 g cherry tomatoes, a small onion, ginger, and a lime. Chop and cook the green beans and carrots for a few minutes and glaze the onion. Cook the noodles. Add the melted shrimps, chopped sweet red pepper, ginger, boiled green beans, and carrots. Just before serving add the cherry tomatoes and spice with lime juice. | Risotto 1 onion, 2 tbsp oil, 2 tsp paprika powder, 2 tsp curry, 1.5 dl rice, 4 dl water, 0.5 stock cube, 0.5 sweet red pepper, mini-corn, 0.5 dl peas, 0.5 carrot, and 200 g broiler Chop the onion and glaze the onion, rice and spices in a pot. Add the water and stock cube. Poach until the rice is almost done (10 min). Fry the broiler and add it with chopped carrot, sweet red pepper, peas, and mini-corn to the pot. Poach for additional 10 min.

21: Cake Pops | Ingredients: 500 g chocolate cake, 200 g cream cheese, 400 g chocolate or candy melts-buttons, lollipop sticks, and nonparallels. Recipe for chocolate cake: 2 eggs, 2 dl sugar, 100 g butter, 1 dl flour, 0.75 dl cocoa, and 2 ts vanilla. Beat the eggs and sugar until fluffy and add the melted butter. Mix the flour, cocoa, and vanilla in another bowl and sieve the mixture into the eggfoam. Stir until incorporated. Pour the dough into a buttered cake tin (20-24 cm) and bake in the oven 175 C for 25 min. Cake Pops: Crumble the cake and add the cream cheese. Roll the dough into small balls and let them cool in the fridge (15 min). Melt 50 g of the chocolate and dip the other end of the lollipop stick in the chocolate. Push the stick in the middle of the ball and put the cake pops back to the fridge (15 min). Melt the rest of the chocolate and dip the cake pops into the icing. Decorate immediately with nonparallels, nuts, or coconut flakes.
22: Kaaretorttu | Ingredients Base: 3 eggs, 1 dl sugar, 1.25 dl flour, 0.25 dl cacao, 1 ts baking powder Filling: 1 dl cream, 1 dl curd, sugar, vanilla, berries OR 100 g butter, 1 dl sugar, 1 egg yolk, vanilla 1) Preheat the oven 225 C. Beat the eggs and sugar until fluffy. 2) Mix the baking powder into the flour and sieve the flour into the sugar-egg-foam stirring at the same time. 3) Bake in the oven on a baking tray for 5-8 min. 4) Tip over the tart base on a sugared greaseproof paper and let it cool down. 5) Prepare the filling 6) Roll the tart and slice it into pieces
23: Brita cake | Base: 125 g butter, 1.5 dl sugar, 4 egg yolks, 2 dl flour, 2 ts baking powder, 1.5 dl milk Meringue: 4 egg whites, 2 dl sugar, 3/4 dl almond chips Filling: 2 dl cream, 250 g curd, 0.5 dl sugar, 2 ts vanilla, a lot of berries | Beat the butter and sugar with an electric whisk. Add the egg yolks. Sieve in the flour-baking-powder mixture along with the milk. Beat the egg whites and add the sugar slowly. Spread the dough on a sheet and the meringue on top of it. Bake in the oven (175 C) for 30 min. Let the cake cool down and then cut it in half. Make the filling by whipping the cream and adding the curd, vanilla and berries. Spread the filling on the cake halves and then lift the other half on top of the first one.
24: Pea-bacon-mint-pasta Ingredients: 400 g fresh pasta, 6 slices of bacon, 0.5 onion, 2 cloves of garlic, 200 g peas, 2 tbs oil, 2 tbs fresh mint, pepper, salt, and grated Parmesan cheese. Chop the bacon and onions and glaze them on a frying pan. Cook the pasta. Add the peas and mint on the pan. Drain the cooked pasta and add it on the pan. Season with salt and pepper. Serve with grated Parmesan.
25: Avocadopasta | Ingredients: 1 clove of garlic 0.5 chili 1 lime 2 ripe avocados salt and black pepper 0.5 dl olive oil basilica and parsley 1 dl grated pecorino 1 dl grated Parmesan 300 g spaghetti Chop the garlic and chili and mix them in a large bowl. Squeeze the lime juice into the bowl. Peel the avocados, cut them into cubes, and add them. Grind the herbs and grate the cheese. Add the herbs, grated cheese, olive oil, salt, and pepper. Cook the spaghetti and add some of its boiling water to the sauce. Decorate with parmesan.
27: Base: 3.5 dl flour, 125 g butter, 0.25 ts salt, 1 egg, 3 tbs cold water Filling: 100 g Emmental cheese, 4 eggs, 3 dl cream, salt, black pepper, and... 1) ...500 g asparagus and Parma ham, or... 2) ...200 g fresh spinach, 2 tbs butter, 200 g feta cheese, and 200 g cherry tomatoes, or... 3) ...300 g raw salmon (graavilohi), 5 dl champions, and 3 tbs butter. 1) Prepare the base by sifting the flour and salt into a bowl and rubbing in the butter. Add the egg and water and stir. 2) Gently press the dough into the muffin cases and prickle it with a fork. 3) Start preparing the filling by grating the Emmental cheese. Mix in a bowl the eggs, cream, grated cheese, and the ingredients of your option. Season with salt and black pepper. 4) Prebake the tartlet bases in a 225 C oven for 10 min. 5) Fill the tartlets and bake in the oven for 10-15 min. | Tartlets
29: Chocolate Mousse | Ingredients: 200 g chocolate 50 g butter 2 egg yolks 2 egg whites 2 tablespoons cognac/brandy 3 dl whipped cream Melt the chocolate and the butter and let them cool down before adding the egg yolks. Flavor with brandy if you want to. Whip the cream and egg whites in separate bowls and mix them with the chocolate-butter-mixture. Let the mousse cool down in the fridge for a couple of hours. | Epic Cocoa powder | Ingredients: 2 tablespoons cornflour 3 tablespoons icing sugar 4 tablespoons quality cocoa 100 g good-quality dark chocolate (70% cocoa solids), finely grated 1 pinch ground cinnamon Add all the chocolate mix ingredients to a large jar and give it a good shake to combine. You need around 2 heaped tablespoons of the chocolate mix for one mug of hot chocolate. Simply spoon the chocolate mix into the hot milk, give it a good whisk and leave to bubble away for a few minutes before serving.
