1: This Cookbook is a collection of all Momma Chesley's greatest recipes.
2: Cheese and sausage casserole 1 cube butter melted, 1 loaf sour dough, 1 Lb sausage, crumbled, fried. 1 Lb jack cheese, 1/2 Lb muenster cheese, 5 eggs, 1 pint half and half, 1 tsp salt, 1 tsp dry mustard. Remove crust. Grease pan, place half bread cubes on bottom. Pour melted butter over the top, then sausage, then all the cheese. Next rest of bread cubes, beat eggs and half n' half, salt, mustard. Pour over the top. refrigerate over night. In morning bake at 350 for 40 min. Serves 12
3: Quiche Crust: 1C butter, 1 Tbl oil, 2C flour, pinch of salt, 1/4C water, or buy deep dish frozen crust. Filling: 1 onion chopped, pinch of thyme, 1 bay leaf, 1/2 Lb bacon chopped, 5 eggs + 2 egg yolks, 1C half and half and pinch of nutmeg. 3oz. grated swiss cheese and 3 oz. grated mild cheddar, dash of Worcestershire sauce and dash Lawry's seasoning salt. Sauté onion with thyme and bay leaf. remove bay leaf. Cook bacon. Combine eggs, yolks, half and half, nutmeg, Worcestershire, and seasoning salt. place bacon, onion and cheese into crust. Cover with egg mixture. Bake at 350 for 50 min or until it sets. Let cool for 10 min before cutting.
4: Cinnamon Rolls | 2 Tbl yeast, 1 1/2C warm milk, 1/2C warm water, 1/2C sugar, 1/2C butter (melted), 1 tsp salt, 2 eggs, flour until doughy about 4 cups. Filing: butter, cinnamon, sugar, brown sugar, nuts Mix ingredients. Let rise until double in a warm place. Roll out dough and spread softened butter over top of dough. Sprinkle with cinnamon and sugar mix. Roll back up and cut into sections. Bake at 350 degrees for 12-17 min. | Bran Muffins 1 1/2C flour, 3tsp baking powder, 1 tsp salt, 1/2C sugar, 1 1/2C all bran cereal, 3/4C raisins, 1C milk, 1 egg, and 1/2C shortening. Combine flour, baking powder, salt and sugar. set aside. Place proper amount of bran and milk in a mixing bowl. Stir to combine. Let stand 2-3 min until absorbed. Add egg and shortening- beat well. Add raisins. Add dry ingredients to all. Stir until combined. Fill greased muffin pan cups 3/4 full. Bake at 400 for 25 min. Yields 12.
5: Dutch Babies Put 1 cube of butter in a 9X13 baking dish and bake at 425. Let butter melt while mixing together the batter. Put 5 eggs in blender- whirl at high speed for 1 minute. With motor running, gradually pour in milk, 1 1/4C of milk then slowly add 1 1/4C of flour. Continue whirling for 30 seconds. Remove pan from oven- pour batter into the hot melted butter. Return to oven and bake until puffy and well browned. 20 to 25 min. Dust with nutmeg and powdered sugar. Squeeze a little lemon juice all over (1/2 l3mon) and lastly pour a little syrup over to finish. Serve hot with fruit.
6: Holiday Allspice Wassail! 1 can (6oz.) frozen concentrate lemonade 1 can (6oz) frozen orange juice 1 gallon of apple cider 1/2C brown sugar, firmly packed 1 1/2 tsp whole cloves pushed into a whole orange. Float in bowl. 1 1/2 tsp ground allspice 2 sticks of cinnamon Combine all ingredients in a large sauce pan except cinnamon sticks. Cover and simmer for 20 minutes. Remove clove ball before serving. Add 2 quarts squirt and cinnamon sticks just before serving. Serve it up hot! And let the sweet smell fill the house.
8: Raspberry Spinach Salad Spinach leaves Fresh raspberries Sliced almonds Cover with dressing and mix Dressing 1 10oz. package of frozen raspberries 1/3C olive oil 1/4C whipping cream 2TBL raspberry vinegar 1/4 tsp salt Puree raspberry in blender. Strain puree for seeds. Blend oil, cream all over ingredients in blender until well combined. Stir in raspberry puree | Curried Chicken salad 4TBL major Grey's chutney 5C cooked chicken 2C pineapple 1C water chestnuts, sliced 1/2C sliced celery 1/2C minced onion 1 can large chow mien noodles dressing 1 scant tsp curry powder 1C mayonnaise 1C sour cream mix together all except noodles and blend with dressing an hour before serving. When ready to serve, add noodles. serves 8-10 | Wild Rice Chicken Salad 2/3C uncooked wild rice 2C water 1 tsp salt 2 whole chicken breasts 2/3C mayonnaise 1/3C milk 1/3C lemon juice 1C water chestnuts 1/2LB seedless grapes 1C cashews 1/2 small onion grated, wash rice in warm tap water. drain. Add 2C water and salt to rice and bring to boil. cover cook on low heat for 45-60 min. Steam chicken until tender (1 hr). cube chicken. combine rice, chicken and all other ingredients, adding cashews and grapes last. serve cold on lettuce leaf. serves 8-10.
9: Tumi Salad 1 pkg. chopped cabbage (8oz) 8 Tbs slivered almonds 8 Tbs sesame seeds 8 green onions 1 pkg. top roman noodles Brown almonds and sesame seeds in a pan. In a large bowl mix cabbage and onions. Last minute add almonds, seeds and roman, pour dressing over it. Dressing Mix: 3 Tbs sugar, 4 Tbs rice vinegar, 1 tsp pepper, 1 tsp salt, 1C salad oil | Tostada salad | 1 Lb ground beef, 1 onion chopped, one 15oz. can of kidney beans, drained. 1 pkg taco seasoning mix, 1/4 tsp salt, 1 head of lettuce cut into pieces, 4 oz. cheddar cheese shredded, 1C thousand island, Caesar, or whatever you prefer dressing. 1 pkg (7oz) tortilla chips, 1 large avocado sliced, 4 tomatoes cut into small wedges.
10: Meatballs | 1-1.5 Lbs of ground beef 2 eggs 1 pkg French onion soup mix dash of salt and pepper 1/2C ketchup (+or- depending on if it looks like it needs more) Mix all together in a bowl Roll into balls Place pan over medium heat pour layer of beef broth into pan. Place meatballs in the pan and keep an eye on them flipping them over as needed while they simmer. Let simmer until they cook all the way through. Makes a whole lot of meatballs!
11: Crab Dip 1 tsp chopped onion 3/4C mayonnaise 1 8oz cream cheese 1 can crab 1 egg Mix all ingredients in a blender. Pour into baking dish. Put in oven for 30 min. at 350 degrees. Serve hot! | Bud's mix nuts sunflower seeds Honey roasted cashews or peanuts La Choy Chinese noodles Arare hot and spicy Mix nuts Chopped dates Raisins
12: Bruschetta 1 loaf French bread- cut very thin. Lay bread on cookie sheet, gently sprinkle olive oil over bread. Sprinkle bread with salt and pepper. Place thin slices of fresh mozzarella cheese on bread. Put under broil until edges brown. Top with leaf of fresh basil and thinly sliced tomato. Sprinkle again with salt, pepper and olive oil. Place under broiler until cheese melts and bread browns- about 10 min.
13: Chili Dip 2 cans (4oz) diced green chili's 2 cans chopped black olives 2 green onions chopped 3 or 4 tomatoes chopped 5 Tbl oil 3 Tbl vinegar Serve with Frito's
14: 1 recipe of overnight rolls (up to rolling out point) 1/3C melted butter 1/2C sugar Grated rind of one orange Confectioners sugar icing. Mix well, roll out 1/2 of the dough at a time and spread with butter, orange, and sugar mixture. Roll up jelly roll style and slice in 1'' slices. place in well greased tins. Let rise for 3 hours. Bake at 400 for 15-20 minutes. Spread with icing while its still hot. | Orange rolls | Orange Rolls 2.0 3 pkg Pillsbury buttermilk biscuits 3/4C butter-melted 3/4C sugar Zest from 1 orange Pam a large bundt pan Separate biscuits and place on edge in large bundt pan sprayed with pam. (they will be a tight fit) Mix butter, sugar, and zest in a bowl. Pour over biscuits in pan. Place in the center of oven for 40 min. at 350 degrees. When done let cool for 3 min. Place on heat safe plate and invert. Serve immediately in domed form and pull apart at table.
15: Banana Bread 3/4C sugar, 1/2C shortening, 2 eggs beaten, 1 1/2 tsp baking soda in 2 Tbl hot water, 1/2C of sour cream, 1C mashed bananas, 2C flour, 3/4 tsp salt, 1/2C chopped nuts or chocolate chips. Cream sugar and shortening, add eggs and beat smooth. Add dry ingredients alternately with mashed bananas and baking soda. Beat smooth after each addition. Stir in nuts/choc. chips. Bake in greased pan at 350 for 1 hour. | Overnight Rolls 1 pkg yeast, 1/4C lukewarm water, 3 eggs well beaten, 1/2C butter, 1 1/2 tsp salt, 1C warm water, 4 1/2C flour. Dissolve yeast in lukewarm water. Beat eggs and add sugar, butter, 1c warm water, salt and 2 1/2c flour. Beat until very smooth. Add rest of flour to mixture. Dough will be soft but no kneading is necessary. Cover and let rise in warm place until double the size. Mix down and put in refrigerate overnight. 3 1/2 hours before serving roll out 1/4 to 1/2 inch thick and cut in rounds with glass. Dip in melted butter and fold over. Let rise appx. 3 hours. bake 10 at 400.
16: SIDES | Green Beans and Walnuts 2 Lbs green beans trimmed, 2 Tbl butter, 2 Tbl walnut oil, 1C chopped walnuts toasted. 2 Tbl minced fresh parsley. Cool beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water and drain well. (Can be prepared hours ahead. Let stand at room temp). Melt butter with oil in heavy large skillet over high heat. Add beans and toss until heated through, about 4 minutes. Season with salt and pepper. Add walnuts and parsley and toss. Transfer to bowl and serve.
17: Creamy Guacamole 1 (3oz) pkg cream cheese, 1/2C sour cream, 2Tbl lemon juice, 3/4 tsp salt, 1/4 tsp ground white pepper, 4-6 chopped green onion, 2 medium ripe avocados. Dash of garlic salt/Tabasco. Beat creamy cheese until very smooth. Stir in sour cream, lemon juice, salt, pepper, Tabasco and onion. Blend well. Mach avocado- add to cream cheese mixture. blend well. Pol;e into serving bowl makes 2 cups. | Sweet Potatoes Boil potatoes (skinned) till soft, then cut short ways in rounds. Place a slice of butter on each round. Sprinkle brown sugar over all. Cook until they candy. enjoy!
18: Chicken and Rice 1 chicken cut up 1C uncooked reg rice 1 13oz can of evaporated milk 1 can cream of mushroom soup Line in a medium sized flat pan with foil. layer with uncooked rice. Mix soup, milk and 1/2 pkg liptons soup, pour over rice. Place chicken pieces on top of rice and sprinkle rest of dried soup over it. Bake 325 for 2 hours. | White chicken fry chicken in oil place in pan for oven cook 45 min at 375 Add the mixture of mushroom soup, sour cream, fried mushroom and onion over the chicken Continue baking for 1/2 hour, serve over rice.
19: Hawaiian Chicken Brown chicken in flour Remove chicken and brown cut up onion in chicken fat In another pan: 1C ketchup 6 Tbl brown sugar 3 Tbl vinegar Juice from 1 can chunky pineapple 1Tbl mustard 1 Tbl Italian salad dressing Place chicken in 9x13 pan. Pour sauce over chicken in baking dish, add onion and pineapple on top of chicken Bake in oven 350 for 1 1/2 hours
20: Rio Grande Pork Roast 1t salt 1/2-1 t garlic salt 1t chili powder 1c apple jelly 1c ketchup 2T vinegar 1/2c corn chips 4-5 lbs boneless rolled loin pork roast Place pork fat side up in a crock pot- cook all day on low. Put in oven for 1/2 hour with sauce on it.combine salt, garlic salt and the first 1/2 t chili powder, rub into roast. in small saucepan, combine jelly, ketchup, vinegar, and the remaining chili powder. bring to boil, reduce heat and simmer for 2 min. brush roast with glaze. continue roasting 10-15 min more. serves 4-6 | Skirt Steak flank steak marinade in Mr. Yashindas all day flip over in sauce halfway through the day so both sides are marinaded well. you can BBQ or cook under the broiler oven for about 6 min on each side. Cut slices at an angle against the grain. Oven Steak Supper 1 pork tenderloin 1 envelope onion soup mix small carrots potatoes- peeled and cut thin like potato chips 2 T butter salt pepper Place meat in the center of a long piece of tin foil on a cookie sheet. sprinkle with soup mix, cover with veggies, spot of butter and sprinkle with salt. fold the foil and seal tightly. Put in a hot oven 450 for 1 1/2-2 hours.
21: Enchiladas 12 corn tortillas 3c shredded jack cheese 6 Tbl chopped green onions 5-6 chicken breasts cooked-cut 2 cups chicken broth 1c sour cream 4 oz can diced green chilies 1/4c butter 1/4c flour Melt butter- Add flour and chicken broth, make a sauce add sour cream and chill after you remove from flame. Dip tortillas in sauce and fill with chicken onions and sauce. Fill 9x13 pan, cover with remaining sauce- top with remaining cheese: jack, cheddar and heat through. bake 350 for 30 min. | Curry Chicken Casserole 1pkg frozen broccoli spears (cook, cut up) 3 chicken breasts (cooked, cut) 2 cans cream of chicken soup 1/2c mayonnaise 2 tsp lemon juice 1/4tsp curry powder 3/4c sharp cheese, shredded Mix all ingredients together except broccoli: put a layer into baking dish. Then a layer of broccoli, then the rest of the soup mixture. Top with buttered crumbs and a little shredded cheese. Bake at 350 for 30 min.
22: Chicken Wings 3 Lbs chicken wings or drummettes, 1C soy sauce, 1C brown sugar, 1/2C butter, 1 tsp dry mustard, 3/4C water. Disjoint wings, discard tips (not if you use drummettes). Arrange wings in baking pan- combine remaining ingredients and heat until sugar and butter are dissolved. Cook and pour over wings. Marinate for 2 hours. Or bake at 350 for 1 1/2 hours turning and basting. Serves 4 | BBQ Skewers 3 lbs lean beef sirloin serves 6 Dressing: 1C oil 2tbls soy sauce 4 tbs finely chopped onion 4tbls sesame seeds (Chinese section) 1 tbs vinegar 1/4c sugar 1tsp salt 1/2 tsp pepper 2 gloves garlic chopped Cut meat cubed Mix ingredients poor over meat Marinate 24 hrs Separate veggie and beef skewers. BBQ separately. Veggies: pineapple, potatoes, bell peppers, onions, & cherry tomatoes.
23: Sweet and sour pork 2 Lbs pork chop cut into pieces, 1 can pineapple cubes, 1 tomato, 1 large green pepper chopped, 1/2C brown sugar, 1/3C vinegar, 2Tbl soy sauce. Brown meat, meanwhile combine pineapple, vinegar, brown sugar, and soy sauce. Bring to a boil and mix in cornstarch, then green peppers, and cook a few minutes. Then add tomato and meat. Serve with hot sauce. Spare Ribs 4 Lbs spare ribs cut and spread meaty side up in single layer large shallow pan. Sprinkle lightly with BBQ spice and curry powder. Place in oven 450 degrees for 30 minutes. Pour sauce over ribs. Reduce heat to 350 and bake for 45 min. Basting occasionally. Three 15 min intervals placing sauce on each time. Sprinkle with more salt and celery salt and bake for 15 min or more. Sauce: 1C red wine, 1/4C vinegar, 1C ketchup, 1 onion shredded, 1/2 tsp salt, 1 tsp dry mustard, 1 tsp chili powder, 2Tbl brown sugar, 2Tbl Worcestershire sauce, and dash of Tabasco sauce.
24: Baked Apples Golden delicious, Gala or Macintosh apples. Core out center of apple. Be sure not to go through the bottom of the apple. Mix together brown sugar, butter, golden raisins, cinnamon and nutmeg. Place about 2Tbl of mixture in the cored out center. Place a little butter on top and sprinkle with brown sugar. Place apples in a water and orange juice bath about 1 inch high. Bake at 350 for 1 hour. | Peanut Butter Haystacks 1C (6oz) butterscotch chips 1/2C peanut butter 1C salted peanuts 1C chow mein noodles Makes about 2 1/2 dozen Place chips and peanut butter in a bowl cover with plastic wrap. Microwave on medium for 3-5 min, until chips are soft and shiny. Blend well stirring in peanuts and chow mein. Drop by forkfuls onto wax paper.
25: Delicious Desserts | Black Bottom Cupcakes 8oz. cream cheese, 1 Egg, 1/3C sugar, 1/2 tsp salt. Beat until smooth then add 1C chocolate chips. 1 1/2C flour, 1C sugar, 1/4C cocoa, 1tsp baking soda, 1Tbl vinegar, 1 tsp vanilla, 1C water, 1/3C oil. Mix by hand (don't over beat) in a separate bowl. Fill cups 2/3 full of chocolate mix, add 1 Tbl white mix on top. Bake at 350 degrees for 20-30 minutes. Apple Crisp 8 medium apples, 1/2C water, 1 tsp cinnamon, 3/4C sugar, 1/2C butter, 1 1/2C flour Peel and core apples, slice into buttered 8''x 13'' baking dish. Add water and sprinkle with cinnamon. Sift flour and sugar together and cut in butter to make fine crumbs. Sprinkle crumbs over apples and bake at 350 degrees for 45 min. Cut in squares and serve warm with whipped cream, ice cream, or hard sauce. serves 8.
26: Rhubarb Cake Cream:: 1C brown sugar, 1/2C butter. Add: 1 egg and 1 tsp vanilla Sift: 2C flour, 1tsp salt, 1 tsp baking soda. Add alternately with a cup of sour milk. (1C milk + 1 Tbs vinegar). Lastly add 2C diced rhubarb. Sprinkle with toppings. bake 350 for 45 min. in 9x13 pan Toppings: 2Tbl butter, 1/2C brown sugar, 1 tsp cinnamon, 1/2C chopped nuts (opt) | Yummy Chocolate Balls | 1 Large container of cool whip, 3 large Hershey's with almonds Melt Hershey bars in double boiler. let cool slightly, fold into cool whip. Refrigerate for several hours, roll into small balls about the size of walnuts. Roll balls in vanilla wafer crumbs. Makes a lot! keep in freezer! | Cream Cheese Pie 4 (3oz.) pkg. cream cheese, 2 beaten eggs, 3/4C sugar, 2tsp vanilla, 1/2tsp lemon juice. Combine above, beat until light and frothy. Pour into graham cracker crust and bake at 350-375 degrees for 20 min. remove from oven, Allow to cool to room temperature, then pour over toppings. Toppings 1C sour cream blended with 3 1/2 Tbs sugar and 1tsp vanilla. Return to oven and bake for 5 min. at 425. Let cool for 5 hours
27: Name | English Toffee Place greased aluminum foil on cookie sheet and spread with 1/4 to 1/2 pound chopped walnuts. Combine and bring to a boil: 1 cup butter 1 cup sugar 1/8 teaspoon salt 3 tablespoons water 1/2 teaspoon vanilla Stir vigorously until sugar and butter are combined. Continue cooking until mixture is light brown in color and crack stage has been reached. Use a candy thermometer to let you know when you get to that stage. Pour mixture over nuts and spread thin. Sprinkle on hot candy 16 oz. pkg. chocolate chips. Use the back of a wooden spoon to spread it as the chocolate melts. Sprinkle top with 1/4 cup very finely chopped nuts. When it has cooled break into desired serving pieces. Yummy! | Candied Nuts l pound pecans or walnuts 1 cup sugar 2 teaspoons cinnamon 6 tablespoons milk 1/4 teaspoon salt 1 teaspoon vanilla Place nuts on cookie sheet and spread out and separate. Roast for 8 to 10 minutes at 350 degrees. Meanwhile, stir sugar, cinnamon, milk and salt together. Cook over medium heat for no longer than 8 minutes. Be very careful about this- better to under cook than to over cook. Add vanilla stir. Remove nuts from oven and pour mixture over warm nuts. Stir to cover completely. Spread nuts on wax paper and cool. | Custard 1 egg,1 Tbl sugar, 1 C of milk. Add nutmeg, vanilla, and whisk all together. Pour into custard cups place in water bath. Bake at 300 degrees for 5 hours.
