1: This Cookbook is inspired by fun times in the kitchen with Elsa, Gibson, and Clara Lu Waite

2: "Audra" Mandu 1 pkg. wonton wrappers 1 pkg imitation crab meat 1 pkg cream cheese garlic powder to taste Mix all the ingredients together, scoop a small amount on to each wrapper. Seal the wrapper and fry until lightly browned. *There are many varieties of these out there, but I like this one, plain and simple. Serve with sweet and sour sauce.

4: Emily Day-Chris' college friend | Breadsticks | 2c. warm water 2 pkg yeast (4 1/2 tsp) 1/4 c. oil 1/4 c. sugar 2 tsp. salt 5-6 c. flour Combine all ingredients, with flour last. Add flour one cup at a time until "less sticky'. Roll flat and cut in to 1 inch strips. Fold in half and twist. | 425 | 12 min | 6-8

6: Bread Machine Honey Oat Bread Makes one 2lb. loaf 2c. water 2T vegetable oil 1/2 c. honey 2t. salt 1c. rolled oats 1/3 c. wheat flour 4c. bread flour 2 t. active dry yeast

7: Name | Pipin' Hot Bakery Whole Wheat Tortillas | Makes 8 tortillas 1c. white flour 1/4 c. canola oil 1c. wheat flour 2/3 c. water 1 tsp. salt 1 tsp. baking powder Combine flours, salt, and baking soda. Add oil and water all at once tossing quickly. When dough can be gathered in a small mass, knead a few times. Divide dough in to 8 balls and roll each in to a 7 inch circle, Cook on hot skillet or griddle. Source:

9: Pizza Lovers and | Quick and Easy Pizza Dough | 2c. flour 1 T. sugar 1 T. yeast 2/3 c. lukewarm water 1/4 t. salt Mix 1 c. of flour with all other ingredients. Slowly add the rest of the flour until it forms a ball. Form and knead the dough with your hands. Cover and let rest for 10 min. Roll and spread on to greased pizza pan. Top with your favorite toppings! | 375 | 15 min | 1 pizza

10: Quick and Easy Homemade Macaroni and Cheese | 1 T. vegetable oil 3 T. butter 1/4 c. flour 1 1/2 c. milk 2 1/2 c. shredded cheddar cheese 1/2 tsp. ground nutmeg 1 lb. whole wheat elbow macaroni Cook your macaroni to al dente. Make your cheese sauce while the noodles cook. Over medium heat, heat oil and butter until melted. Gently whisk in flour until smooth and flour has had a chance to slightly brown, about 3 min. Slowly add milk and bring to a boil while stirring constantly. Allow milk to thicken slightly. Stir in cheese and nutmeg. Combine noodles and sauce. Makes 8 servings.

13: Basil Chicken in Coconut Curry Sauce | Serves 6 Source: 3 chicken breast halves 1 T. olive oil 2 tsp curry powder 1 14 oz. can light coconut milk 1 tsp salt 1 T. cornstarch 1/2 tsp pepper 1 T. dried basil 1/4 tsp chili powder 1 tsp. grated fresh ginger 1 medium red onion, chopped 5 cloves garlic, minced 2 jalapeño peppers, seeded and finely chopped Cut chicken into 1-inch pieces. Place in medium bowl. Stir together curry, 1/2 teaspoon salt, pepper and chili powder. Sprinkle over chicken, tossing to coat evenly. Cover and chill for 1 to 2 hours.. In a large nonstick frying pan, stir onion, basil, garlic and peppers in hot oil over medium-high heat for 3-4 minutes, until onion is translucent. Add chicken and remaining 1/2 teaspoon salt and cook for 5-6 minutes until no longer pink. Combine coconut milk and cornstarch and whisk well to combine. Carefully add to skillet, whisking vigorously. Cook and stir until slightly thickened and bubbly. Stir in ginger. Cook and stir for another minute. Serve over hot rice. (we prefer basmati)

14: 1 bag (24 oz) chocolate chips (4 cups) 2 eggs 1 c. butter 2 1/2 c. flour 1 c. brown sugar 1 1/2 tsp baking soda 1 tsp. vanilla 1/2 tsp salt 1 package (6 oz) white chocolate bars, chopped in small pieces 1 c. pecan or walnut halves In a 1-quart saucepan, heat 1 1/2 cups of the chocolate chips over low heat, stirring constantly, until melted. Cool to room temperature, about 15 minutes, but do not allow chocolate to become firm. In a large bowl, beat the butter, brown sugar and vanilla until light and fluffy. Beat in the eggs and melted chocolate. Stir in the flour, baking soda and salt.(Dough will be a little runny-it’s supposed to be) Stir in the remaining 2 1/2 cups chocolate chips, the white chocolate chunks and pecan halves. Bake on an ungreased cookie sheet. at 350 for 12 to 14 minutes or until set (centers will appear soft and moist). Cool on cookie sheet 2 minutes, then remove from cookie sheet to a cooling rack, using a turner. Cool cookie sheets between batches. *We like to make these with mint, or peanut butter chips instead of the white chocolate chunks, and we never have nuts. Makes 4 doz. cookies. 16: Kittencal's Bakery Coconut Cream Pie | 1 (9 inch) deep dish pie shell , baked 1 1/4 cups evaporated milk 1 1/4 cups coconut milk 1 cup sweetened flaked coconut 3/4 cup white sugar , divided 1/4 cup cornstarch 2 eggs 2 teaspoons vanilla 1 cup whipped cream In a saucepan, heat evaporated milk with the coconut milk over medium heat, until steaming. In a large bowl,whisk 1/2 cup sugar with the cornstarch; whisk in the eggs until blended. Gradually mix in hot milk mixture into the egg mixture to thin, in a steady stream. Return the mixture to saucepan; cook, over medium heat, whisking constantly, for about 10 minutes, or until thickened to pudding consistency. Transfer to a bowl; stir in vanilla then mix in 1 cup coconut. Place plastic wrap directly on surface of pudding mixture; refrigerate until cool. Fold the whipped cream into the cooled filling; spread into pie shell. Garnish with additional whipped cream and toasted coconut. Refrigerate for 1 hour, or until set or for up to 1 day | Prize-winning pie

17: Gibson topped his own | Soy Free Gibson and | My No Roll Pie Crust | 1 1/2 cups flour 1/2 cup canola oil 1 teaspoon salt 2 T. milk 2 teaspoons sugar Mix dry ingredients together with a fork in a pie pan.. Make a well in the center and add the oil and milk.. Mix with a fork til it makes a ball. Flatten and press into the pan in pie crust shape and flute the edge. | 375 | 10-12 min | 1 crust
