1: Mexican Fudge 12 ounces Cheddar Cheese shredded 12 ounces Monterey Jack Cheese shredded 16 ounces salsa 3 eggs beaten Combine cheeses in bowl. Beat together salsa and eggs in large bowl till blended. Stir in cheese. Pour into 9 x 13 baking dish bake 350 degrees for 30 minutes. Let stand 10 minutes serve with tortilla chips | Nippy Meatballs Either buy meatballs already made or make them. 1 pound ground beef 1/2 cups dry bread crumbs 1/4 cup minced onion /1/4 cup half and half 1 teaspoon salt 1 egg 2 teaspoons minced parsley dash pepper 1 teaspoon Worcestershire sauce 12 ounces chili sauce 12 ounces grape jelly Mix all ingredients except last 2 and shape into 1 inch balls, in oil brown meatballs. Remove and discard fat. Add chili sauce and jelly to skillet. Stir and heat till jelly is melted. Return meatballs to skillet simmer uncovered 30 minutes.

2: Pineapple Salsa by Kelly Sweeney 2 Cups diced fresh pineapple 2 green onions chopped 1/4 cup finely chopped green pepper 1/4 cup minced fresh cilantro 4 teaspoons line juice 1/8 teaspoon salt several dashes cayenne pepper Combine and refrigerate | Pizza Dip 8 ounces cream cheese 8 ounces sour cream 1 tablespoon garlic powder 14 - 16 ounces pizza sauce 2 cups mozzarella cheese Pepperoni cut in small pieces Mix cream cheese, sour cream & garlic powder. Put in 8 x 10 pan, Pour on pizza sauce. Top with cheese & Pepperoni Bake 350 degrees for 30 minutes Serve with crackers or tortilla chips

3: Cheese Ball Make day ahead 2 8 ounce packages cream cheese 1 8 1/2 ounce can crushed pineapple drained 2 cups chopped pecans 1/4 cup finely chopped green pepper 2 tablespoons chopped onion 1 teaspoon Lowery season salt In med bowl using fork cream the cheese, add pineapple, 1 cup of the pecans, green pepper, onion and salt. Shape into 2 balls and roll in remaining pecans. Wrap in plastic wrap and refrigerate overnight can be frozen | Taco dip 1 1/2 pounds ground beef 1/2 bottle hot salsa 1/2 bottle mild salsa 1/2 grated med. onion 1 tsp accent 1/2 cup shredded cheddar cheese Brown meat then add salsas, onion, accent and cheese Lower heat and cook 1 hour Serve with tortilla chips

4: Cornbread 1/2 cup butter 2 eggs 2/3 cup sugar 1 cup buttermilk 1/2 teaspoon baking soda 1 cup cornbread 1 cup flour 1/2 teaspoon salt Grease 8 " square baking pan. Melt butter, stir in sugar and quickly add eggs and beat till well blended. Combine buttermilk and baking soda. Add to butter mixture. Stir in cornmeal, flour and salt. Stir till well blended. A few lumps will remain. Pour in pan Bake at 375 degrees for 30 - 40 minutes Can add can of creamed corn!

When cooking, go by your own taste." ~Laiko Bahrs | Pumpkin Bread 3 cups sugar 1 teaspoon cinnamon 3 1/2 cups flour 1 cup oil 2/3 cup water 1 teaspoon nutmeg 4 eggs 1 1/2 teaspoons salt 3 teaspoons baking soda 2 cups pumpkin 1 cup walnuts Add all ingredients in large mixing bowl and mix well. Preheat oven to 350 degrees Pour batter in size pans you want filling 1/2 way. Bake 1 hour if using loaf pans. Less time for smaller loaves.

6: Taco Salad 1 1/2 pounds ground beef 8 ounces tomato sauce 2 cans water 1 envelope taco seasoning Brown meat then add rest of ingredients cook on med. heat till cooked down 20 - 30 min. Lg head lettuce 4 ounces shredded cheddar cheese tomato small onion taco chips crushed | Taco dressing 1/2 cup sugar 1 teaspoon salt 3/4 - 1 tsp pepper 1 onion diced 1/3 cup Ketchup 1/2 cup oil 6 teaspoons lemon juice put in blender and blend | Put lettuce, cheese, tomato, onion and chips in bowl then add taco meat. Or you can put all items in separate bowls and let people put on what they want

7: Chicken Salad 4 cups cooked & shredded chicken breast 1 cup chopped freeze dried nuts 1 teaspoon salt 2 cups miracle whip mayo you can use light 4 tablespoons lemon juice 4 teaspoons grated onion Combine and serve in sandwiches or tomatoes. To cook chicken,boil in salted water for 1 hour med. to med. low heat | Pretzel Jello Salad 2 cups crushed pretzels 3/4 cup margarine melted 3 tablespoons sugar Mix above and press into 9 x 13 pan. Bake 400 degrees for 7 minutes. Blend and whip 8 ounces cream cheese 1 cup sugar and 9 ounces cool whip and spread over crust Make sure you go to edges of pan to seal it before you add the Jello 1 lg box strawberry Jello 20 ounces frozen strawberries (Birdseye in box in juices) 2 cups boiling water 15 ounces crushed pineapple drained Dissolve Jello in water add strawberries and pineapple. Pour over cheese layer and refrigerate

8: Frozen Lime-Mint Salad 1 8 ounce can crushed pineapple, drained 1 20 ounce can crushed pineapple, drained 1 3 ounce package lime Jello 3 1/2 cups mini- marshmallows 1 cup pastel butter mints, lightly crushed 8 ounce carton cool whip Combine pineapple, Jello, marshmallows and mints. Refrigerate till butter mints soften. Fold in cool whip. Turn into large mold or individual paper lined muffin tins. Freeze at least 6 hours or overnight Serves 12 | Sweet & Sour Bean Salad Mix thoroughly! 1 1/2 cup sugar 1 cup cider vinegar 1 teaspoon salt 1/ 4 teaspoon pepper 1 teaspoon oregano 1/4 cup oil Drain and rinse: 1 can red kidney beans, 1 small can Lima beans ( optional ), 1 can yellow wax beans, 1 can cut green beans, 1 red onion sliced and ringed. Add all to mixture and let 24 hours. Mix occasionally. Drain before serving.

9: Chili 1 pound ground beef 1 1/2 pounds ground turkey 14 1/2 ounces canned tomatoes 14 1/2 ounces stewed tomatoes 2 15 1/2 ounces dark red kidney beans 1 15 1/2 ounces red kidney beans 1 yellow sweet onion rough chop 2 tablespoons virgin olive oil 1 large green pepper diced 1 tablespoon garlic powder 3-4 tablespoons chili powder 3/4 - 1 tablespoon cayenne pepper 1 tablespoon crushed red pepper flakes 46 ounces tomato juice 1/2 cup ketchup salt and pepper 8 teaspoons sugar In large pot heat oil, cook onions to clear (opaque) over med. heat. Add meats and brown. Add salt and pepper and green pepper, cook approximately 4 minutes. Add rest of ingredients. Reduce heat to low and simmer 1 hour Can freeze!

10: Chicken Tortilla Soup | 64 ounces chicken stock 1/2 teaspoon pepper Combine and bring to a boil To thicken make a roux 1/2 cup butter & 1/2 cup flour Melt butter and add flour, cook over low heat till smooth and thickened. Stir into broth 1/2 cup Monterey Jack Cheese 1/2 cup shredded Cheddar Cheese 1 pint 1/2 and 1/2 10 ounce can Rotel tomatoes and chillies 1 cup cooked shredded chicken cooked 1 envelope taco seasoning Add cheese mix till melted, add remaining ingredients to stock and heat. Tortilla strips- Cut tortillas in strips and put in oven on baking sheet. Bake 350 degrees till crisp. Stir often. Add to soup when you serve it

11: Chicken Fajitas | 1/4 cup lime juice 2 Jalapeno peppers seeded and finely chopped optional 4 skinless boneless chicken breast for about 1 1/4 pounds chicken cut into strips 1/2 cup onion wedges 1 1/2 cup red or green pepper sliced 2 tablespoons oil 1/4 pound Velvetta light cheese cubed 1/2 teaspoon ground cumin flour tortillas 6 inch warmed Pour combined lime juice and Jalapeno peppers over chicken and cover. Refrigerate 30 minutes. Drain. Cook and stir onion and peppers in oil over med heat till tender. Add chicken cook 5 - 7 minutes or chicken is no longer pink. Add remaining ingredients except tortillas stirring till Velvetta is melted. Serve with warm tortillas

12: 3 whole chicken breasts boned and skinned 2 eggs 1 1/2 cup Pepperidge farm herb bread stuffing finely crumbled 6 tablespoons butter 1 chicken bouillon cube 1 cup water 8 ounces sliced mozzarella cheese Beat egg. Marinate chicken in this for 1 hour in refrigerator. After 1 hour, roll chicken in bread crumbs to coat completely. Fry chicken in butter. Place fried chicken in 9 x 13 baking dish. Dissolve chicken bouillon cube in 1 cup hot water. Pour this over chicken. Bake, covered, in a preheated 300 degree oven for 45 minutes. Uncover and place slices of mozzarella cheese on top. Bake for 15 minutes or until cheese is melted and slightly browned May be prepared the day before and add the bouillon cube before baking | Mozzarella Chicken | Mozzarella Chicken

13: Coke Chops 6 3/4 inch thick pork chops 3 tablespoons oil 1/2 cup Ketchup 1 cup coca-cola 1 tablespoon Worcestershire sauce Heat oil in skillet or electric skillet till hot. Brown chops on both sides. Mix Ketchup, cola and Worcestershire sauce in bowl. Pour over chops. Cover and simmer until chops are tender about 1 1/2 hours. Sauce thickens into a BBQ sauce | Honey Crunchy Chicken Fingers 1 pound boneless chicken breasts 1/4 cup honey slightly warm 1/4 cup water 1 cup crushed corn flakes 425 degree oven Spray veg oil on baking sheet. Cut chicken crosswise into 3/4 inch strips. In small bowl combine honey and water. Put corn flakes on a plate. Dip chicken strips in honey mixture then coat with corn flakes. Put on baking sheet and bake 10 - 15 minutes turning chicken over halfway 6 servings

14: Chicken & Cheese Enchiladas 1 can 10 3/4 ounces condensed cream of chicken soup 1/2 cup sour cream 1 cup Pace Picante sauce 2 teaspoons chili powder 2 cups shredded cooked chicken 1/2 cup shredded Monterey jack cheese 6 flour tortillas warmed 1 small tomato chopped 1 green onion sliced Stir the soup, sour cream, Picante sauce and chili powder in med bowl Stir in 1 cup Picante sauce mixture, chicken and cheese in lg bowl. Divide the chicken mixture among the tortillas Roll the tortillas up and place in 11 x 8" shallow baking pan. Pour the remaining Picante sauce over the filled tortillas. Cover the baking dish and bake 350 degrees for 40 minutes or hot and bubbly. Top with tomato and green onion

15: Beef Sandwiches Lg onion sliced 3 - 4 pound chuck roast 1 cup dry red wine 1/2 cup Ketchup 1/4 cup packed brown sugar 8 ounces beef broth Place onions in bottom of crock pot Top with meat. Mix remaining ingredients and pour over meat. Cover and cook 8 hours on low. Remove meat from crock pot and let stand until cool enough to handle. Shred beef. Can reheat in sauce if desired. Serve with buns | BEEF

16: 2 cups uncooked macaroni, 3/4 cup chopped onion, 1/4 cup chopped green pepper 2 pounds ground beef or turkey 1 tablespoon oil, 32 ounces spaghetti sauce 1/4 cup water 1 teaspoon salt 2 tablespoons butter or margarine 3 tablespoons flour 2 cups milk 2 cups 8 ounces shredded cheddar cheese Prepare macaroni according to general directions on package. Drain and chill in cold water 5 minutes. Set aside. Saute onion, pepper and beef or turkey in oil in large skillet until vegetables are tender and meat browned. Spoon off excess fat. Stir in 1 1/4 cup spaghetti sauce, water and salt. Bring to a boil and cook 5 minutes. Stirring often. In sauce pan, heat butter and stir in flour. Gradually blend in milk. Cook and stir until smooth and thickened. Remove sauce from heat and add cheese, salt and pepper. Stir till melted. Pour the meat into a greased shallow 3 quart casserole or 13 x 9. Spoon the macaroni over top and pour cheese sauce over all. Drizzle remaining spaghetti sauce over all Bake 400 degrees for 30 minutes Serves 6 - 8 | Johnny Marzetti | GREAT MEAL | love it | tasty | delicious

17: Jen's Corn 2 10 ounce boxed frozen corn 8 ounces whipping cream 8 ounces milk 6 teaspoons sugar 1 teaspoon salt pinch cayenne pepper 2 tablespoons melted butter 2 - 3 tablespoons flour Cook corn to package. Combine milk, whipping cream, salt, sugar and pepper. Put in pot bring to boil and simmer 5 minutes. Blend flour and butter add to pot and blend. Add cooked corn. Mix well Put in 9 x 9 pan bake 350 degrees for 20 - 30 minutes Do the night before!! When I make it for family at Christmas I do 2 - 3 recipes | Vegetable

18: Sweet potato bake 2 cans 12.75 ounces sweet potatoes 1 cup sugar 2 beaten eggs 1/2 cup eagle brand canned milk 1/2 teaspoon salt 1 teaspoon vanilla 1/4 cup softened butter Mix with mixer and put in greased 9 x 9 pan Topping 1 cup brown sugar 1/3 cup flour 1/2 cup softened butter 1/2 - 1 cup pecans Put on mixture and bake 350 degrees for 45 - 60 minutes | Side Dish | Cheddar Bake Pineapple 2 20 ounce cans pineapple chunks drained 2 cups 8 ounces shredded Cheddar cheese 1/2 cup sugar 3 tablespoons flour 2 cups coarsely crushed butter flavor crackers 1 cup butter melted Preheat oven to 350 degrees. Coat 9 x 13 baking dish with cooking spray. Place pineapple in dish. In med. bowl combine cheese, sugar and flour. Sprinkle cheese evenly over pineapple. In another med bowl combine crackers and butter mix well. Sprinkle over casserole. Bake 25 - 30 minutes or till heated through & topping golden brown

19: Eclair Cake 2 small packages instant vanilla pudding 3 1/2 cups milk 8 ounces container cool whip Blend ingredients with electric mixer and set aside. Box graham crackers not reduced fat Place layer graham crackers in bottom of 9 x 13 break crackers to fit if needed to cover. add layer of pudding, crackers, pudding, crackers and pudding. Top with glaze and refrigerate 24 hours Glaze 1 1/2 cups powdered sugar 3 pkg cocoa bake Nestle 2 teaspoon Karo syrup 3 teaspoons soft butter or margarine 3 tablespoons milk 2 teaspoons vanilla

20: Pumpkin Squares 2 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 2 teaspoons cinnamon 2 cups sugar 4 eggs 2 cups pumpkin 1 cup oil Mix and put in 9 x 13 pan. Icing 1 teaspoon milk 3/4 stick butter 1 teaspoon vanilla 3 ounces cream cheese. 3/4 box powdered sugar Mix and ice when cool | Chocolate Trifle 1 baked 9 x 13 box chocolate cake mix cut in cubes 2 packages instant chocolate pudding made by adding 4 cups milk to packages 1 cool whip 6 heath bars chopped ( frozen easier to chop ) Layer cake cubes, pudding, cool whip and then heath bars. Repeat layers and refrigerate 24 hours. Spoon into individual serving dishes. If want to make vanilla version. Use yellow or white box cake mix, vanilla pudding and Smuckers Strawberry or Raspberry Jam and cool whip. Layer cake cubes, vanilla pudding, jam and cool whip. Then repeat layers

21: Peanut Butter Pie 1/2 cup peanut butter 1/3 cup milk 3 ounces cream cheese 1 cup powdered sugar 8 ounces cool whip 1 9" graham cracker crust 10 ounces fudge topping Mix peanut butter, milk, cream cheese and powdered sugar 3 minutes Fold in cool whip Put in crust. Freeze 4 hours. Spread topping over pie ( you don't have to use all of it ) Freeze 4 hours. Take out a few minutes before serving!

22: Chocolate Delight Cake \ 1st layer 1 cup flour 1 stick softened margarine 1/2 cup chopped pecans Mix until crumbly. Pat into a 9 x 13 baking dish. Bake 15 minutes at 350 let cool 2nd Layer 1 cup powdered sugar 8 ounces softened cream cheese 4 ounces cool whip Mix until light and fluffy with mixer. Spoon onto crust 3rd Layer 2 small packages chocolate pudding instant 3 cups milk Combine until smooth. Spread over 2nd layer 4th Layer Spread entire cake with 4 ounces cool whip or slightly more. Refrigerate Can top with chopped pecans

23: 1/2 cup butter or margarine softened 1 package yellow cake mix 1/2 cup flaked coconut 1 can 20 ounces pie-sliced apples well drained or 2 1/2 cups sliced pared baking apples 1/2 cup sugar 1 teaspoon cinnamon 1 cup dairy sour cream 2 egg yolks or 1 egg Heat oven to 350 degrees. Cut butter into cake mix ( dry ) until crumbly. Mix in coconut. Pat mixture lightly into ungreased 9 x 13 baking dish, building up side edges slightly. Bake 10 minutes. Arrange apples on warm crust. Mix sugar and cinnamon; sprinkle on apples. Blend sour cream and egg yolks or whole egg and drizzle over apples. ( Topping will not completely cover apples ) Bake 25 minutes or until edges are light brown. ( Do not over bake) Serve warm 12 -1 5 servings Peach Kuchen- Substitute 1 can ( 29 ounces ) sliced peaches, drained on paper towels for the apples and 1 package white cake mix or sour cream white cake mix for the yellow cake mix | Apple Kuchen

24: Peanut Blossom Cookies 1 3/4 cup flour 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup butter softened 1/2 cup creamy peanut butter 1/2 cup brown sugar packed 1/2 cup sugar and 1/2 cup sugar divided 1 egg 1 teaspoon vanilla approx. 45 Hershey Kisses Sift flour, baking soda and salt in medium bowl. Beat butter, peanut butter, 1/2 cup sugar and brown sugar. When creamy beat in egg and vanilla. Add flour mixture 1/2 at a time, beating well after each addition. Heat oven to 375 degrees. Put 1/2 cup sugar in a small bowl. Roll balls into about 1 inch then roll in sugar and place on ungreased cookie sheet. Bake 10 minutes remove from oven and put Kiss in top return to oven bake 2 - 4 minutes. Remove and place on rack | Cookies

25: Buckeyes 2 1/4 cup graham cracker crumbs 1 pound powdered sugar 1 1/2 cups crunchy peanut butter 1 12 ounce package semisweet morsels 1 cup margarine or butter melting chocolate Melt margarine or butter mix with peanut butter add sugar and graham cracker crumbs form into balls refrigerate 2 hours. Melt chocolate and dip them in the chocolate. | Boston Drop Cookies 1/2 cup crisco 1 teaspoon vanilla 2/3 cup sugar 1/2 teaspoon salt 2 eggs 1 teaspoon baking powder 1 1/2 cups flour Cream eggs, butter and sugar add remaining ingredients. Drop by teaspoon on greased baking sheet. Bake 375 degrees for 10 minutes or lightly browned. Frost when cooled. You can use the same frosting as for Christmas cut out cookies

26: Cream Wafers 2 cups flour 1 cup margarine or butter softened 1/2 cup whipping cream sugar Mix flour, margarine or butter and cream. Cover and refrigerate Heat oven to 375 degrees Roll about 1/3 of the dough at a time 1/8 inch thick on floured surface. Keep remaining dough refrigerated. Cut into 1 1/2 inch rounds Coat both sides with sugar and put on ungreased cookie sheet Prick each one with a fork about 4 times. Bake until set not browned about 7 - 9 minutes. Remove from cookie sheet and cool. About 5 dozen. Filling Mix 3/4 cup powdered sugar 1/4 cup margarine or butter softened and 1 teaspoon vanilla until smooth and fluffy. Beat in a few drops of water if needed to make smooth and spreadable. Tint with a few drops of food coloring

27: Chocolate Sprinkles 2 cups sugar 1/2 cup vegetable oil 4 ounces melted unsweetened chocolate (cool) 2 teaspoons vanilla 4 eggs 2 cups flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup powdered sugar Mix sugar, oil, vanilla and chocolate. Mix in eggs one at a time. Stir in flour, baking powder and salt. Cover and refrigerate at least 3 hours. Heat oven to 350 degrees. Drop dough by teaspoon-fuls into powdered sugar and roll to coat. Shape into balls. Place 2 inches apart on greased cookie sheet. Bake till no indentation remains when touched. Bake 10 - 12 minutes. makes 6 dozen | Cookies

28: Cookies | Giant Chocolate Toffee Cookies 1/2 cup flour 1 teaspoon baking powder 1/4 teaspoon salt 1 pound semi sweet chocolate morsels 1/4 cup butter 1 3/4 cups packed brown sugar 4 large eggs 1 tablespoon vanilla 5 1.4 ounces Heath candy bar 1 cup walnuts toasted and chopped Combine flour, baking powder and salt in small bowl whisk to blend. Stir chocolate and butter in top of double boiler over simmering water until melted and smooth. Remove from over water. Cool to lukewarm. Using mixer beat sugar and eggs in bowl until thick about 5 minutes. then beat in chocolate mixture and vanilla. Stir in flour mixture, candy bar and nuts. Chill till firm about 45 minutes. Heat oven to 350 degrees. Line cookie sheets with parchment paper. Drop by 1/4 cupfuls on to cookie sheets about 2 1/2 inches apart Bake till tops are dry and cracked but soft to the touch about 15 minutes Cool on racks.

29: 2 cups sugar 1 cup shortening 3 eggs dash salt 1/2 teaspoon nutmeg 1 teaspoon baking soda 1 cup sour milk( 1 tablespoon lemon juice or vinegar added to milk will make sour milk ) 2 teaspoons baking powder 5- 6 cups flour Chill 1 hour and then roll out on floured board. Cut with your favorite cookie cutter shapes. Bake 375 degrees for 10 - 12 minutes | Christmas Cut out Cookies | Frosting 4 1/2 cups powdered sugar 1/2 cup butter softened 1/4 cup milk 1 teaspoon vanilla Blend about 2 cups powdered sugar into softened butter, add milk and vanilla. Mix well. Add enough of the remaining powdered sugar to make the frosting spreadable. Add food coloring as desired

30: Snacks | Chocolate Popcorn 8 cups popped popcorn 3 cups corn pop cereal 2 cups Fritos slightly crushed 1 cup cocktail peanuts 1 pound white choc. 1 tablespoon oil Melt choc and oil in double boiler. Mix in all ingredients into choc. Put on 2 cookie sheets lined with foil & refrigerate

31: Treats for Dogs | Oatmeal-Apple Cookies for Dogs 4 cups whole-wheat flour 2 cups old-fashioned oatmeal 1 1/4 cups water 1/4 cup minced apple 3 tablespoons cinnamon 2 tablespoons vegetable oil 2 tablespoons honey 1 tablespoon ground cloves Heat oven to 325 degrees. Place all ingredients in lg bowl and mix thoroughly till combined. Roll out dough on floured surface about 1/4 inch thick and cut with bone shape cutter. Place cookies on ungreased foil lined cookie sheet bake 30 - 35 minutes Icing Optional 3 cups Carab chips 1 teaspoon vegetable oil Melt chips add oil then dip tip of cookies & place on foil lined cookie sheet to dry You don't have to ice the treats
