In 5-quart dutch oven, mix remaing onions,the broccoli,cream cheese, bell pepper and red pepper sauce. cook;cook over medium-low heat 20min, stirring once halfway through cooking,till sauce chips are melted. transfer to ungreased 2-to 3-quart casserole, . Bake uncovered 20-25min. or till vegies.are tender. sprinkle reserved onions around outer edges of casserole; bake 5min. longer*
2: Tuscan Chicken 4bonless skinless chicken breast halves salt & pepper 2tbls. olive oil 2 garlic cloves, minced 1/2tsp.sage 2tsp rosemary 1/2tspdreid thyme | Flatten chicken to 1/2in thickness; sprinkle with salt & pepper. In lg. skillet over med. heat, cook & stir th garlic, rosemary, sage & thyme in oil x 1min. add the chicken & cook for 5to 7min. on each side or until chicken juices run clear
3: 1pound pork 1/2pound ground veal 6slices bacon,cut up 1/2c.chopped onion 1/2c chopped pepper 1clove garlic,minced 2tsp salt 1/4tsp.pepper 11/4c waterthe pice 2tbs. cornstarch pastry for double-crustpie | Tourtiere | In dutch oven brown pork,veal and bacon pieces .Drain off fat. stir n onion,celery,garlic.sage, salt and pepper. Stir in 1 c. water;bring meat-vegie mixture to boiling. Reduce heat and simmer,covered,for 10 to 15min. or till onion is tender,stirring frequently.Combine cornstarch,and the remaining 1/4c. water Add to hot meat-vegie mixture,cooking and stirring till bubbly and thick.Cook and stir 1 to 2 min. more. Remove pan from heat;cool slightly. Meanwhile,prepare pastry for Double-Crust pie. On a well-floured surface roll out half pastry to a circle 12in. in diameter. Fit into 9-in. pie plate. Trim pastry to 1/2in.beyond the edge of the pie plate. Fill pastry shell with meat-vegie mixture. Roll out remaining to a circle 12in. in diameter. Make maple leaf cut-out,if desiered, or cut slits in top crust. Carefully place atop meat filling. Seal and flute pastry edge. Bake meat pie in a 400* oven about 25min. or till golden brown. Sprinkle with cheese&bread crumbs. Bake 45-50minuts in 350* oven 13x9x2in.pan

Add beans and remaining ingredients. stir often , and cook slowly for several hours. Add water if sauce thicken too much. Serve with crackers
6: Spinach Casserole 2pkg.spinach chopped 8oz.cream cheese 1stick oleo 1c.Pepperidge Farm dressing(Herb seasoning) Cook spinach,Drain Water(but not entieraly0 Mix in cream cheese and 1/2 stick butter melt other 1/2 stick and mix with bread crumbs. spread spinach in a 10to 12in. casserole dish- spread crumbs on top Bake 20 to 25 min. at 350*
7: Canadian Cretons 2pound boneless pork shoulder,cut up 2 medium onions 1tsp.cinnamon 1/2tspground cloves 1/2c fine dry breadcrumbs hard cooked egg(optional) parsley(optional) bread slices or crackers | Using the fine blade of a food grinder,grind pork and onion.Grind once more. In skillet place pork mixture, 1/2c. watre,cinnamon,cloves,1tsp.salt,and 1/4tsp.pepper. Cook, covered,over low medium heat 15to 20 min;stir occasionally. remove from heat.Drain off meat juices;reserve and chill over ice water.Remove fat layer that accumulated on top ;add 1c. of meat juices to meat mixtuture.return to skillet and heat through. stir in bread crumbs. Turn mixture to a 1 1/2 -quart mold lined with plastic wrap,pressing gently to smooth surface. Cover; chill several hours. Invert onto serving plate and remove plastic wrap. Garnish with hard cooked egg and parsley,if desierd. Serve with bread slices or craker

9: Baked Haddock 1 lb. Haddock 1/2c. mayonnaise 1/2c. sour cream 1/2c. parmersan 1/2c.melted butter | Crush cracker mix in melted butter 1/3c. of cracker mixter,place on bottom of casserole dish. Place fish on cracker mixture . Mix mayonnaise and sour cream. Spread on fish sprinkle parmersan on fishand remaining crackers on top.Bake 30 min. at 350*
10: Roast Turkey Position oven rack at the lowest level. Preheat to 325. Remove the giblets and neck. Rub the body, neck cavity, and skin with salt. Loosely pack body and neck cavities with stuffing and skewer or sew the openings closed. Set turkey breast side up on a rack in the roasting pan. Brush skin with 6 tbsp. melted butter. Baste every 30 min. with additional melted butter or pan drippings, until temp. of thickest part of thigh is 170, 12-15 min. per pound. Stuffing should reach 165 before eating. Remove turkey to platter and let rest about 30 min. before carving. | Gravy juice from roasted turkey 4 c. chicken broth 1/4 c. water 3 tbsp. cornstarch salt and pepper Simmer juice and chicken broth over medium heat for 5 min. Mix the water and cornstarch together to form a smooth paste. Whisk the paste into the simmering broth for 1 min. Season to taste. Makes 4 cups.
11: Barbecue Beef Ribs 3 1/2lbs. beef short ribs 1tbls.veg.oil 1 large onion,cut into wedges 4medium potatoes peeled 4carrots cut up 1c. water 1c. ketchup 1/3c.red wine vinegar 1tlbsp peperika 1 tsp.curry powder 1/2 tsp.chili powder 1/2tsp dry mustard 2tsp.salt 1 tlbsp.cornstarch 2 tlbsp.water | Brown ribs in veg. oil, place in crock pot with onions,potatoes and carrots. Mix next 8 ingredients and pour over ribs and vegies..cover and cook in low 8-10 hours . Thicken with cornstarch with the water if desired. | Crab Cakes 1lb. crabmeat About 10-12 Ritz crackers rolled into crumbs 3tsp. parsley flakes 2tbsp.mayonnaise 1 egg 2tsp. Old Bay Seasoning if mixture is to soft just add more crackers Mix all together
12: Date-coconut balls 1/2c. butter or margarine 6oz. pitted dates finely snipped 1c. 1/2 c. sugar 1 egg 3c. rice crisp cereal 1c. coconut | In medium sauce pan heat butter or margerine over medium-low heat till melted. add snipped dates and sugar Add egg; beat well. Cook and stir over medium-low heat for 4 to 5 min. or till mixture thickens or begins to bubble.In a mixing bowl place rice cereal . Pour date mixture over cereal; toss to mix well.cool about 10 min.(till mixture is easy to shape into balls).with butter hands shape into 1-in. balls(about 1-tbls. each). roll date balls in coconut. Cover and chill before serving. Makes about 40 balls.
13: Lazy Boy Cake 6oz.dates finely snipped(1c.) 1c. boiling water 1 1/3c. flour 1tsp. salt 1tsp. baking soda 1/ c. shorting or butter 1c. sugar 2 eggs 1 tsp vanilla 1 6-oz. package (1c.) semisweet chocolate chips 1/4c. walnuts or pecans | In a bowl combine dates and boiling water;cool to room temperature. In a mixing bowl stir together the flour, salt and baking soda; set aside. In a mixing bowl beat shorting, butter,on medium speed of electric mixer for 30 seconds. gradually beat in sugar till light and fluffy. Add eggs and vanilla; beat well. Add flour mixture alternating with the cooled, undrained date mixture;mix well.(batter will have a slightly curdled appearance). turn batter into a greased 11x7x1 1/2inch baking pan. sprinkle top with chocolate pieces and chopped nuts. Bake in a 350* oven for 35 min. or till done. Cool on a wire wrack. cut into squares.
14: Swedish Palt 12 red potatoes salt white and wheat flour 2 tbsp. milk sausage Peel and grind potatoes. Season with salt to taste. Add equal parts of white and wheat flour to the potatoes until the mixture is a thick consistency and able to form into a soft ball. Add milk. Make small balls of sausage. Put water on hands, then form larger potato mixture balls around the smaller sausage balls. Drop the balls into simmering salt water. Gently stir with a wooden spoon to prevent them from sticking to the bottom of the pot. Simmer until cooked through, at least 45 minutes. Serve with salt, pepper and butter.
15: Pecan Pie 3eggs, slightly beaten 1c.Karo syrup light or dark corn syrup 1c. sugar 2tbsp.butter, melted 1tsp.vanilla 1 1/2c. Pecans 1 9in. pie crust preheat oven and cookie sheet to 350*. In large bowl stir first 5 ingrediants till well blended. Stir in pecans.Pour into 9in. pie crust.Bake on cookie sheet 50-55min.or until knife inserted halfway between center and edge comes out clean. do not over bake.
16: Swedish Meatballs 1/ 4 c. + 1 tbsp. butter 1 tsp. salt 1 tbsp. minced onion 1/4 tsp. pepper 2/3 c. bread crumbs 1/4 tsp. ground nutmeg 1 c. water 1/4 tsp. ground allspice 12 oz. ground beef 16 oz. cream of mushroom 12 oz. ground pork 1 c. sour cream 2 egg yolks 1 tsp. Worcestershire sauce 1/4 c. milk Sauté 1 tbsp. butter and onion. Set aside. Combine bread crumbs and water and let sit 1-2 minutes. Add onions, beef, pork, egg, salt, pepper, nutmeg and allspice. Beat on low speed until smooth, then on high speed until mixture is fluffy- about 10 minutes. Shape into 2" balls. Heat 1/4 c. butter in a large skillet over medium heat. Brown the meatballs in batches. Cover to keep warm. Simmer sauce ingredients until gravy forms. Pour gravy over the meatballs to serve.
17: Chocolate Cake 1/2 c. sugar 1/2c. lard or shorting 2 eggs 1/2c. cocoa 1/2c. boiling water 1 1/4 tsp. soda and 1tbsp. hot water 1tsp salt vanilla 1tsp. 1 1/4c. flour | Put cocoa in bowl and pour in boiling water. Dissolve the soda in hot water and add to ingredients. Mix well with mixer. Pour in a 8x8in. cake pan. bake at 350* | In medium bowl beat together soften cream cheese and whipping cream.Spread mixture over bottom of the cooled pie shell; chill. Reserve half of the raspberries.In a large mixing bowl mash the remaining raspberries.Stir in sugar; let stand for 1 hour.Sieve berry mixture. in a saucepan combine pineapple juice and cornstarch;stir in sieved berry mixture. Cook and stir over medium heat till berry mixture is thickened and bubbly. Reduce heat; cook and stir 2 min. more.Remove from heat; let cool.Spread three-fourths of the thicken berry mixture over cream cheese layer in pie shell.Arrange 1 1/2c. of the reserved whole raspberries over top of pie. Spoon the remaining cooked berry mixture over whole berries. Chill 2 hours or till set.Garnish with whipped cream and reserve raspberries | Red Raspberry Cream cheese Pie 1 3-oz. cream soften2/3c.whipping cream 1 9-inch pastry shell,cooled 1quartfresh raspberry 1c. sugar 1/2c. unsweetened pineapple juice `/4 c cornstarch Unsweetened whipped cream
18: Shannon's Swiss Vegetable Casserole | 16 oz. frozen broccoli, carrots & cauliflower, thawed and drained 1 can cream of mushroom soup 1 c. shredded swiss cheese 1/3 c. sour cream 1/4 tsp. pepper 8 oz. chopped pimento 2.8 oz. French fried onion rings Combine vegetables, soup, 1/2 c. cheese, sour cream, pepper, pimento & 1/2 can onion rings. Pour into 1 quart casserole dish. Bake covered at 350 for 30 min. Top with remaining cheese and onions. Bake uncovered 5 min. longer. Serves 6 to 7.
19: Apple Raisin Cobbler Pie 2cans(20-oz.each)apple pie filling 1c. sun maid raisin 1/4tsp.nutmeg 1/3c. flour 1/4c. brown sugar 3tbls.melted butter | 1)Heat oven to 375*.Combine apple filling, raisins and nutmeg. Spoon into crust.Combine flour and sugar; cut in butter till crumbly. Stir in walnuts; sprinkle over filling. 2)Bake 35 to 45 min. or till topping is golden. Makes 1 pie
20: Sweet Potatoes with Streusel 6-7 sweet potatoes 3/4 c. flour 1 1/2 c. cranberries 1 c. oatmeal juice from 1 orange 1/2 c. cold butter 1/2 c. brown sugar 1 tsp. salt Peel, quarter and boil sweet potatoes until soft. Put in buttered casserole dish and add cranberries. Pour juice over top. Make streusel by combining remaining ingredients in a bowl. Crumble with a fork. Pour over top of sweet potatoes. Sprinkle with cinnamon. Bake at 350 until crusty on top- about 45 minutes.
22: Maple Pumpkin Cheesecake 1 1/4 graham crackers crumbs 1/4c. sugar 1/4c.butter or margerine melted 3 (8-oz.) packages cream cheese soften 1(140z.)sweetened condensed milk 1(16oz.) can pumpkin 3 eggs 3/4c. pure maple syrup 1 1/2 tsp ground nutmeg Maple walnut Raisin Glaze(recipe follows) | Heat oven to 300* Combine crumbs, sugar and butter; press firmly on bottom of 9 in. springform pan. With mixer, beat cream cheese until fluffy; gradually beat in sweetened condensed milk until smooth. Add pumpkin, eggs, 1/4c maple syrup, cinnamon, nutmeg and salt; mix well. pour into prepare pan. Bake 1 hour and 15 min. or until edge springs bake when lightly touched (center will be slightly soft). Cool , Chill. Maple Walnut Raisin Glaze: Combine 2 tbls. water and 4tsp. cornstarch. In small saucepan ,melt 2 tbls. butter or margerine. Add remaining 1/2c. maple syrup and cornstarch mixture; cook and stir till slightly thicken .Add 1/2c. walnuts and 1/2c. raisins. Cool slightly. Spoon over cheesecake
23: Heat oven to 350*. Beat together eggs, corn syrup, sugar and butter. Add remaining ingrediants and mix well. Pour into crust . Graham Cracker crust 3 eggs 1c. light corn syrup 1/2 c. brown sugar 3 Tbls. butter 3/4 c. quick-cooking oats 1 Tbls. flour 1tsp. cinnamon 1/4tsp. salt 3/4c. raisons Whipped cream | Chocolate Raspberry Cheese Pie 2 (3oz.) pkg.cream cheese, soften 1 (14oz.) can sweetend condensed milk 1 egg 3 tbls.lemon juice 1tsp.vinella 1c. fresh or frozen raspberries 1 196oz.) chocolate pie crust( Chocolat glaze gramcrcker ) | Heat oven to 350*. with mixer, beat cream cheese until fluffy. Gradually beat in condensed milk until smooth. Add egg, lemon juice and vanilla; mix well. Arrage raspberries on bottom of crust. Slowly pour cheese mixture over fruit. Bake 30 to 35 min. or until center is almost set. Cool. Chocolat Glaze: In small suoce pan , over low heat, melt 2 (1-oz) squares semi-sweet chocolate with 1/4c. whipping cream. Cook and stir till thickened and smooth. Remove from heat. Top cheesecake with chocolate glaze; chill.

(10 to 12 cookies) chocolat sandwich cookies, corsley chopped | Beat together milk and pudding for 1 min. until well blended. Let stand 5 min. Fold in whipped topping and crushed cookies. Spoon into crust. Freeze until firm,about 6 hours. | Heat oven to 350*. Beat together butter, sugar ,egg and vanilla. Add flour, baking soda and salt; mix well stir in oats,raisins, walnuts and candy pieces. Drop by tbls.p onto lightly greased cookie sheet. 25: Chocolate Caramel Walnut Fudge 3 c. (18oz.) semisweet chocolate pieces 1 (14oz.)can sweetend condensed milk dash salt 1c. chopped walnuts 1/2c. caramel ice cream topping 1 1/2 tsp. vanilla | In saucepan, over low heat , melt chocolate pieces with sweetend condensed milk and salt. Remove from heat; stir in walnuts, caramel topping and vanilla. Spread evenly into foil-lined 8- or 9-inch square pan. Chill 2 hours or till firm. Turn fudge onto cutting board; peel off foil and cut into squares | White Chocolate Mousse Tarts 2 (4-oz.) ready, single serve grahm cracker crust 1 (6-oz.) pkg. white chocolate baking squares 1 (14oz.)sweetend condensed milk 1/2tsp.almond extract 2c. ( 1pint) whipping cream, stiffly whipped | In sauce pan, over low heat, melt chocolate with condensed milk; stir in extract. Cool to room temperture. Fold in whipped cream. Spoon into crusts. Chill 4hours or till set. Serve with fresh fruit if desiered
26: Fruit Soup 1 gallon grape juice 2 packages large tapioca 1 package each: dried peaches, dried pears, dried apples, dried cranberries, dried apricots 1 c. raisins 1 c. prunes 3-4 cinnamon sticks Soak tapioca according to directions overnight. Add fruit and cinnamon stick to grape juice. Simmer over low heat until tapioca is clear. Do not boil. Serve warm or cold.
27: Lemon Raisin Bars 2c. raisins 1(14oz) sweetened condensed milk 1tbls .lemon juice 1c. butter or margerine soften 1 1/3c brown sugar 1 1/2tsp. vanilla 1c. flour 1/2tsp.baking soda 1/4tsp.salt 2 1/2c. oats 1c. chopped walnuts | Heat oven 375* . In sauce pan, combine raisins, sweetened condensed milk, lemon juice and lemon rind. Cook and stir over medium heat just till bubbly. Cool slightly. In bowl, combine butter, brown sugar and vanilla; beat well. add flour, baking soda and salt; mix well. stir in oats and walnuts. Reserve 2c. oat mixture for topping.Press remaining mixture into 13x9inch greased pan. Spread raisin mixture to within 1/2inch of edges. Sprinkle with reserved oat mixture; press lightly. Bake 25 to 30 min. till golden brown. Cool.

29: Buttermilk Pie | 1/2 c butter at room temp. 1 1/2 c. sugar 3 eggs 3 tblsp. flour 1 c. buttermilk 2 tblsp. Rum Grated rind of one lemon Preheat oven at 350*. Cream butter and sugar. Add eggs, one at a time, mix till smooth with the butter and sugar. Blend in the flour. Add buttermilk/ rum and sugar. Blend in the flour. Add buttermilk, rum, and lemon rind. Mix all well. Pour into prepare pie crust and bake for 45-50 minutes

Melt 2sqares. semi sweet chocolate dip balls in chocolate let set | Rhubarb Pie 3tbl. flour 1c.sugar 1egg beaten 2c. rhubarb cut up small Sift flour, sugar,add egg, mix together well. Than all together put in lined pie pan, cover with another crust. Bake at 4258 for 10min. then at 350* for 35min
33: Cranberry Coffea Cake 1stick butter 1c.sugar 2 eggs 1tsp.baking soda 2c. flour 1c. sour cream 1/2tsp. almound 1/2tsp. vanilla Mix together all ingredients pour 1/2 of batter into pan(ex. bundt pan). add 1/2 can whole cranberry sauce to pan. sprinkle with chopped walnuts. Add remaining batter cut through with knife. sprinkle with chopped walnuts Bake at 350* for 40-50min
34: Freezer Peanut Butter Pie 18 graham squares 1/4c. sugar 6tbl.butter,melted 1 8-ounce package cream cheese, soften1/2c. peanut butter 1c.sifted powdered sugar 1/2c. milk 1 8oz. container frozen whipped dessert topping thawed 1/4c. chopped peanuts | Crush grahmcrackers into fine crumbs; measure 1 1/4 c. crumbs. In mixing bowl combine the crumbs and sugar. stir in butter;toss to combine.Press crubm mixture onto bottom and sides of 9in. pie plate to form a firm , evan crust. Chill while making filling.
