1: MEMORIES | Food is what brings us together often, it is a reason for gathering, which gives us the chance to talk, to laugh, to love each other. We cannot imagine our lives without the memories that have been made around your kitchen table. We are lucky to have been given such a gift as this.
2: Julie Marie | Breakfast Casserole | 400 | 15-20 min | 12 | 8 Slices of Bread , cubed and lined in a buttered 9" x 13 " pan. Mix together: 4 Eggs beaten, 2 1/2 Cups Milk and 3/4 tea. Dry Mustard. Pour over bread. Add cubed Ham or Sausage. Mix together: 1 can Cream of Mushroom Soup and 1/2 Cup Milk. Pour over bread and egg mixture. Top with grated Cheese. Cover and refrigerate over night. | 350 Degrees | 1 1/2 hours 8 - 10 | 6 Eggs 1 Cup Milk Cooked Bacon or Ham, chopped 2 Tbs. Green Pepper, diced 1/4 Cup Onion, diced 4-6 Mushrooms, sliced 1 Cup Cheddar Cheese, grated Beat eggs and milk Add all other ingredients, topping with the cheese. Cook in greased 9x9 pan at 350 15-18 minuets until eggs are cooked through. | Egg and Cheese Frittata
3: Blueberry French Toast | Blueberry Sauce | 12 slices bread, cubed 8 oz. Cream Cheese 1 Cup fresh or frozen Blueberries 12 Eggs 2 Cups Milk 1/3 Cup Maple Syrup Put half the bread cubes in a greased 13x9 pan. Cube the cream cheese and sprinkle it over the bread. Distribute blueberries evenly over the bread cubes and cream cheese. Add the remaining bread cubes. Combine the eggs, milk, and syrup. Mix together well and pour over the bread-cube mixture. Cover with foil and refrigerate overnight. In the morning, bake the dish, covered, in a preheated 350 oven for 30 minutes. Uncover and cook another 30 minutes, or until set. Serve with sauce below. Serves 10-12. | 1 Cup Sugar 1 Cup Water 2 Tbs Cornstarch 1 Cup Blueberries, fresh or frozen 1 Tbs. Butter Cook water, sugar, and cornstarch until thickened. Stir in blueberries and simmer for 10 minutes. Add butter and stir until melted. Serve over the french toast. Julie Rae
4: 2 Cups Sugar 1 piece Ginger Root, 3 inches or so 4 Cups Water 4 Cups Orange Juice 2 Cinnamon Sticks 1-2 Cups Lemon Juice 8 Allspice Berries 2 Quarts Apple or Pineapple Juice 10 Whole Cloves (I do one quart of each) Combine sugar and water in a large pot. Boil 5 minutes. Allow to stand covered one hour with spices in it. Remove spices, add juices, bring to boiling point. Serve at once. | 1 1/2 hrs. 25 | Wassail | Grandma Norma Banks | Easy Fruit Smoothies -Julie Rae 1 c. Frozen Fruit, any kind or combination 1/4 Cup Powdered Milk 3/4 Cup Skim Milk 1/2 Cup Plain or Vanilla Yogurt Combine ingredients in blender. Cover. Blend at high speed until smooth. | Orange Julius Julie Rae 3/4 Cup Frozen Orange Juice Concentrate 3/4 Cup Milk 3/4 Cup cold Water 1/4 Cup Sugar 1 tsp. Vanilla 12-15 ice cubes Combine ingredients in blender. Cover. Blend at high speed until smooth.
5: Hot Cocoa Mix Julie Rae 1 box instant dry milk (to make 8 qts.) 1 lb. powdered sugar (about 3 cups) 1 large box (32-ox.) instant chocolate milk mix, any brand 1 11-oz. container non-dairy creamer Mix well and store in an airtight container. For a mug of hot chocolate use about 1/3 c. mix with hot water. Makes lots. | Dad's Homemade Rootbeer
6: Fake Red Lobster Biscuits 2 Cups Bisquick 1/2 Cup cold Water 3/4 Cups grated Sharp Cheddar Cheese 1/4 cup Butter 1 tsp. Parsley Flakes 1/2 tsp. Garlic Powder 1/2 tsp. Italian Seasoning Preheat oven to 450. Mix together baking mix, cold water, and grated cheese. Cut biscuits with a cutter or spoon onto baking sheet. Melt butter and seasonings together. Brush with butter and seasonings and bake for 8-10 minutes. One of our favorites when we have fresh crab! - Dave & Diana | 60 Minute Rolls Chris 3 1/2 - 4 1/2 Cups Flour 1 Cup Milk 3 Tbs. Sugar 1/2 Cup Water 1 tsp. Salt 1/4 Cup Butter 2 packages Yeast Combine 1 1/2 cups Flour & all dry ingredients. Heat Milk, Water and Butter to 120-130 degrees. Add to dry ingredients. Beat and add the rest of the flour. Knead 5 minutes. Let rise 15 minutes. Make into rolls. Let rise 15 minutes again. Bake at 425 for 12 minutes. | Soft Pretzels Julie Rae 1 tea. Salt 1 Cup warm Water 4-5 Cups white Flour 2 Tbs. Sugar 1 Tbs. Yeast Beaten Eggs Mix water, sugar, and yeast. Then add the rest of the ingredients. Knead well until mixed. Let it sit until it rises above the mixing bowl. Roll dough into pretzel shapes. Brush with beaten eggs and sprinkle with coarse salt. Bake at 425 for 12-15 minutes. | Soft Pretzels Julie Rae 1 tea. Salt 1 Cup warm Water 4-5 Cups white Flour 2 Tbs. Sugar 1 Tbs. Yeast Beaten Eggs Mix water, sugar, and yeast. Then add the rest of the ingredients. Knead well until mixed. Let it sit until it rises above the mixing bowl. Roll dough into pretzel shapes. Brush with beaten eggs and sprinkle with coarse salt. Bake at 425 for 12-15 minutes.
7: Crescent Rolls Julie Marie | 2 Cups warm water 2 Tbsp. Yeast 3/4 Cup Sugar 1 Cup margarine, melted 2 Eggs, beaten 1 tsp.. salt 1 tsp.. Baking Powder 6-7 Cups Flour Mix warm water with yeast. Let set for about 5 minutes. Mix sugar, margarine, and eggs. Add yeast mixture. Add dry ingredients. Let dough rise one hour to double. Divide dough into 4 parts. Roll out each part into a circle. Cut into 12 pieces, roll up into crescent shape. Place on greased cookie sheets. Let rise another hour. Bake at 350 degrees for 8-10 minutes or until the tops of the rolls are nice and golden brown.
8: Perfectly Easy Dinner Rolls Chris 1 Cup warm Water 3 Eggs 2 pkg. Yeast 1 tea. Salt 1/2 Cup Butter, melted 4 - 4 1/2 Cups Flour 1/2 Cup Sugar Combine water, yeast and sugar until foamy. Stir in butter, eggs and salt. Add flour 1 cup at a time. Refrigerate for 2 hours or up to 4 days. Grease a 9 x 13 pan. Divide into 24 pieces, roll into balls. Let rise about 1 hour. Bake at 375 for 15-20 minutes. Rolls will be pull apart rolls. | Crescent Rolls Chris 1 Cup warm Water 1 Cup warm Milk 2 Tbs. Yeast 1/2 Cup Butter, melted 1/2 Cup Sugar 1 tea. Salt 2 Eggs 5-6 Cups Flour Proof yeast in warm water with sugar. Bring eggs to room temperature by soaking in hot water. Add milk, butter and eggs. Add salt and just enough flour, dough should be a little sticky. Let rise until double. Divide into thirds, roll into rounds, brush with more melted butter and cut into 12 or 16 pieces. Roll up and let rise again on baking pan. Bake 10-12 minutes at 350.
9: Chris - 3rd Grade | Plain Muffins | 1 Egg 2 Cups Flour 1 Cup Milk 1/4 Cup Sugar 1/4 Cup Vegetable Oil 3 tea. baking powder 1 tea. salt - Mix all dry ingredients together, make a well. Mix all wet ingredients, pour into well. Stir just until mixed. Spoon into greased or lined muffin tins. | 400 | 15-20 | 12 | Mom's Bread
10: Mom | Chicken Won-Ton Salad | 1 head of Lettuce Dressing: 1 tea. MSG 1/4 Cup Sesame Seeds 2 Tbs. Sugar 1 Can Water Chestnuts 1 tea. Salt 4 Green Onions, sliced 1/4 tea. pepper Slivered Almonds 1/4 Cup Oil Won-Tons 3 Tbs. Rice Vinegar Fry Won-Tons and crush. Whisk dressing ingredients together. Toss all ingredients together.
11: Mom's Potato Salad 15-20 Potatoes, boiled until soft 6 Eggs, hard boiled Green Onion, sliced Celery Seed Mayo and Miracle Whip Mustard Pickle Juice Salt and Pepper Paprika Dice potatoes in small cubes. Dice eggs, reserving some slices for garnish. Stir potatoes, eggs and onion together, season to taste with salt, petter and celery seed. Mix mayo, Miracle Whip and mustard together to make a sauce, add enough pickle juice for good consistency. Stir into potato mixture. Garnish with egg slices and paprika. Chill. | Mom's Macaroni Salad Small Shell Macaroni, cooked Green Onion, sliced Celery, sliced Small Shrimp Miracle Whip Salt and Pepper Mix all together adding enough Miracle Whip for desired consistency. | Fruit Salad 1 can fruit cocktail, undrained 1 small can mandarin oranges, drained 1 small can pineapple tidbits, drained 1 3-oz. pkg. instant lemon pudding Combine. Save pineapple juice, add if mixture is too thick. (Julie R: We also add a chopped apple and sliced bananas, plus we’ve tried it with frozen mixed berries.)
12: Cheese Ball Julie Rae 1 tsp. Garlic Salt or Powder 1 tsp. Onion Salt or Powder 1 tsp. Lemon Juice 1 tsp. dried Parsley 2 8-oz. Cream Cheese, softened 1 Kraft Olde English spread 1/2 c. Cheddar Cheese, I like sharp for this Chopped Pecans Beat ingredients until well blended. Roll into a ball and wrap in plastic or wax paper. Refrigerate until firm. Roll in chopped pecans and serve with crackers. | Christmas Cheese Ball 2 8 oz. Cream Cheese 1 15 oz. Can Crushed Pineapple, drained 1/2 Green Pepper, finely chopped 2 Green Onions, chopped 2 tsp. Season Salt Chopped Pecans Mix well, wrap in plastic wrap and refrigerate overnight. | Diana 1 lb. Sliced Bacon 1 16 oz. package Lil' Smokies 1 Cup packed Brown Sugar Cut each bacon strip in thirds. Wrap one piece of bacon around each sausage. Place in a foil-lined 15x10x1 pan. Sprinkle with brown sugar. Bake uncovered at 400 for 30-40 minutes or until bacon is crisp and sausage is heated through. | Bacon Wrapped Lil' Smokies
14: Mom | Enchilada Sauce | 2 Qts. Chicken Broth, may make with bouillon & water 1 chopped Onion 2 tea. Garlic Powder 1 Cup Flour 2 Tbs. Oil 1 Quart Tomatoes, pureed 6 Tbs. Chili Powder Salt to taste Prepare chicken broth and bring to a boil. Brown onion and garlic powder in oil. Puree tomatoes and mix with remaining ingredients. Pour slowly, stirring constantly, into hot boiling chicken broth. Stir over medium heat 5 to 10 minutes until mixture thickens. Simmer 10 minutes more. | 4 Quarts | & Sauces
15: 1/2 Cup Butter 1/2 Cup Flour 1 Cup Chicken Broth 3 Cups Milk 3/4 Cups Mozzarella 3/4 Cups Medium Cheddar 1 tsp. Ground Pepper 1 tsp. Salt Dash of Nutmeg (Julie R.) 1 16 oz. Bag Cut Broccoli 1 to 1 1/2 Cups Diced Ham 3-4 Potatoes Prior to beginning, steam broccoli and boil, skin, and dice potatoes. In a large pot melt butter. Add flour to the melted butter then slowly add the chicken broth. Add the milk and stir until smooth. Add cheese and stir until it is melted. Wait for the soup to thicken (5-10 minutes) while stirring enough to prevent burning. Add broccoli, ham and potatoes at the end. | Broccoli, Ham, Cheese, Potato Soup | Diana & Julie Rae
16: Marinade for Meat 1/4 Cup Soy Sauce 3 Tbs. Honey 3 Tbs. Vinegar 1 tsp. Garlic Powder 1 tsp. Ginger 3/4 Cup Oil 2 Tbs. minced dried Onion Mix all ingredients well. Marinate meat several hours or overnight before grilling. Best if prepared 2 days before. Meat can also be frozen in marinade. | Dry Onion Soup Mix This is the equivalent of one package of dry onion soup mix. 1 Tbsp. Beef Bouillon granules 2 Tbsp. dried minced Onion 1/2 tsp. Onion Powder Mix all ingredients in a small bowl. Store in an airtight container. | Aunt Vickie's Cocktail Sauce 1/2 Cup Ketchup 1/4 Cup Heinz Chili Sauce 1/2 Lemon, no seeds ends cut off 1/2 tea. Worcestershire Sauce Blend all ingredients in blender until mixed well.
17: Gail's Famous Cranberry Sauce 1/2 Cup Water 2 Cups Sugar 1 package Cranberries 1 package Certo Mix water, sugar and Certo. Add Cranberries. Cook over medium-high heat until cranberries pop. | Mom | Chili Sauce
19: Name | Moms Chili From: Mom | 1 1/2 C. red beans (soaked over night & cooked for 2 hrs. w/salt) 1 Jar Tomatoes 1 Can tomato sauce 1-2 TB. Chili powder 1/2-1 tea. salt/pepper Bay Leaf 1 lb. beet 1 large onion
20: Chocolate Marshmallow Surprise Cookies | 1/2 Cup Shortening 1/2 Cup Cocoa 1 Cup Sugar 2 Cups Flour 1 Egg 1/2 tea. Baking Soda 1 tea. Vanilla 1/2 tea. Salt 3/4 Cup Milk 20 Marshmallow's cut in half | 3 Tbs. Cocoa 1 Cup Powdered Sugar 1 Tbs. Butter 3 Tbs. Milk 1 Tbs. Butter Mix Cocoa and Powdered Sugar together with 1 Tbs. soft Butter. Heat Milk and Butter over medium heat. Stir in dry ingredients. Ice cookies while still warm, icing will drip down the sides! | Beat Egg, Sugar and Shortening together. Add Vanilla and Milk. Mix all dry ingredients together and stir into mixture. Drop by spoonfuls onto cookie sheet. Bake 8 minutes at 350 degrees. Add 1 Marshmallow on top of each cookie. Bake one additional minute. | Frosting
23: " | Mom | Cinnamon Jumbles | 1/2 Cup Shortening 2 Cups Flour 1 Cup Sugar 1/2 tea. Baking Soda 1 Egg 1/2 tea. Salt 3/4 Cup Butter Milk 1 tea. Vanilla (or Milk with 1 Tbs. Lemon Juice) 1/4 Cup Sugar 1 tea. Cinnamon Cream Shortening, Sugar, Egg and Butter Milk together. Add Vanilla. Mix in dry ingredients. Chill dough. Drop on greased cookie sheet and sprinkle with cinnamon and sugar mixture. | 400 Degrees | 8-10 Min. | 3 Dozen
26: Hot Milk Cake | 1 1/4 Cups Milk 1/2 Cup Butter 4 Eggs 1 3/4 Cups Sugar 2 Cups Flour 2 tea. Baking Powder 1 tea. Vanilla 1 tea. Almond Heat Milk and Butter over medium heat on stove. Beat Eggs until think, add Sugar. Add Flour and milk mixture alternately until blended. Sprinkle Baking Powder over the top of mixture and sir in. Add flavorings. Bake in a greased 9" x 13" pan for 25 minutes at 350 degrees.
27: Topping (the right way to eat Hot Milk Cake) 6 tea. melted Butter 2/3 Cup Brown Sugar 1/4 Cup Cream or Milk 1 Cup Coconut 1 tea. Vanilla Mix together and pour over cake. | Powdered Sugar Frosting (if you must) 3 Tbs. Butter 1/4 Cup Shortening 1 Tbs. Milk 2 Cups Powdered Sugar 1 tea. Vanilla or other flavoring
29: Mom's Lasagna | Sauce: Filling: 1 lb. Ground Beef 2 Eggs 1 Onion 16 oz. Cottage Cheese 1 Clove Garlic 1/2 Cup Parmesan Cheese 16 oz. can of Tomatoes or 2 Tbls. Parsley 2 - 8 oz. cans Tomato Sauce 1 Can Tomato Paste Lasagna Noodles 1 tea. Salt Mozzarella Cheese Brown ground beef with onion and garlic. Add tomatoes, salt and pepper to taste. Put a small amount of the meat sauce on the bottom of a 13 x 9 pan. Place a layer of noodles on top. Spread with half of the cheese mixture, mozzarella cheese and half of the meat sauce. Repeat layers again. Bake covered for 30 minutes at 375 degrees.
31: Pumpkin Roll & Filling | Roll: 5 eggs 1 1/2 C. sugar 1 1/4 C. flour 3/4 tea. cinnamon 1 C. pumpkin 1 1/2 tsp. soda Grease cookie sheet, line w/ wax paper & grease wax paper Bake at 357 for 15 min. sprinkle dish towel w/ powdered sugar. roll up cake & cool completely. Filling: 3 Tbs. butter 12 oz. cream cheese 1 1/4 tsp. Vanilla 1 1/2 C. powdered sugar Whip until creamy. Unroll cake & spread filling. Re-roll. Sprinkle w/powdered sugar. Chill 1 hour.
32: Greek Soup Gail Allred | Chicken bouillon 1 can white meat chicken lemon juice 3 eggs 2 C. quick cooking rice heat about 4 to 6 cups of water, add enough chicken bouillon to flavor. Add 1 can white chicken meat. Add 2 C. of quick cooking rice. Separate 3 eggs. Beat the yolks and when the broth is hot, add about 1/2 to 1 cup of broth to the egg yolks to temper. Then add the yolk mixture to the soup. Add about 1/2 C. lemon juice. beat the 3 egg whites until frothy.(not stiffly beaten) When the rice is done, fold the egg whites into the soup and mix until smooth. Add more lemon as needed.
