39: Roe and Johna Worbes host a huge party every 3rd of July for both sides of their family. Every one brings food, but Roe produces fantastic food from his grill. Here are his instructions. Grilled Corn Guacamole 3 ears corn, shucked 6 whole avocados 1 whole large tomato, diced 1/3 cup diced red onion 2 cloves garlic, finely minced 2 tbsp fresh jalapeno 1 whole lime, juiced 1/2 tsp kosher salt 1/4 tsp ground cumin 1/2 cup cilantro leaves, chopped Grill corn until golden, with grill marks across the kernels. Allow to cool a bit, then cut the kernels off the cob. Set aside. Halve avocados and removed pit. Cut avocado into dice inside the skin, then scoop out with a spoon. Combine corn kernels, avocados, diced tomato, jalapenos, garlic, lime juice, salt & cumin. Stir gently to combine. Fold in cilantro. May be prepared in advance with avocados added just before serving. | Grilled Corn on the Cob Corn Butter Seasoning such as mesquite steak seasoning Pick nice big fresh green ears of corn. I usually grill 10-20 ears at a time. Soak the ears in a sink of water for about 10-15 minutes. Then peel back the husk (don't pull it off) and pull out the silk strings. Put the husk back over the corn. I grill on high heat. Put the corn on the hot grill and close the lid. Cook for about 20 minutes or so. While corn is cooking, melt 2 sticks of butter. Pour in whatever kind of seasoning you want but I use Mesquite flavored steak seasoning (3-4 tablespoons or more). Turn the corn, move some from one place to the next, and you may even stack the corn depending on how many you are cooking. The husks will burn somewhat and that is ok, just keep turning and moving them. You can use a spray bottle of water to spray them with water or pour a little of your beer on them. Once the corn is soft to the touch, break off the husk be using a dish towel or mitten because they are very hot. Then grill the corn without the husk until you get the brown char you want. I baste each side of the corn once with butter mixture. When it is done I baste it once more in the pan. I usually grill the corn first, because you can cover it and keep it warm in the oven without messing it up.

40: Grilled Vegetables Zesty Italian Dressing Yellow and zucchini squash Asparagus Red Onion Tomatoes Bell Pepper Mushrooms Carrots Pick whatever fresh vegetables you like. I use those listed above. Turn a couple of times; halfway through grilling dump more dressing on the whole pile. Grill until a little soft and some charring. Return to original pan with dressing. I cook vegetables last; otherwise they get too soft.

41: Grilled Honey Teriyaki Chicken 2 3 lbs bag white meat chicken tenderloins 1 bottle Ken's Steakhouse Honey Teriyaki Marinade Thaw chicken and clean thoroughly. Return all to one bag. Use 1 bottle of marinade for 6 pounds of chicken. Let marinate overnight. I take the chicken out of the frig about an hour before I am going to cook so it will be at room temperature. I grill on high heat and baste the chicken on both sides. When chicken is done, I return to the pan and baste one more time.
