2: Chile Relleno Casserole 1 C half and half 2 eggs 1/3 C flour 2 7oz cans whole green chilies 1/2 lb each jack and cheddar cheese, grated 1 8oz can tomato sauce Preheat oven to 375 degrees. Beat half and half with eggs and flour until smooth. Split open chilies, rinse out seeds and drain on paper towels. Mix cheeses (reserve some for top). In deep 1 1/2 qt casserole, make alternating layers of chilies, egg mixture and cheese (about three layers, so about 1/3 of the egg mixture with each layer). Pour tomato sauce over all and top with reserved cheese. Bake at 375 for 1 hour or until knife inserted in center comes out clean.

3: "Mom, ever the task master, taught me most of what I know about cleaning, cooking, sewing, ironing (everything got ironed then) and general organization. I was the oldest and "best" worker in those days. So, around the Holidays or before a big party, she would keep | me home from school to help her. I learned to clean the oven, shampoo the carpet, mow the lawn and much more." | do the dishes and I'll sew something for you." She stayed up and made me the cutest sailor shirt and "short shorts". On the eve of my senior "Ditch Day", I was bemoaning at not having something suitable to wear. Mom said, "Okay, you

4: Baked Beans 2 large cans pork and beans (drain a little) 1/2 C dark Karo syrup or molasses 1/2 C ketchup 1/2 C brown sugar 2 tbsp chopped onion 2 tbsp chopped celery Mix, top with bacon. Bake at 250 until thick.

5: "When I was a little girl, I have a vivid memory of seeing my mom ironing and knowing in that moment I was safe and loved. I will carry that picture of my Mom in my mind always. I also remember in Junior high I was lucky enough to be | able to come home for lunch. Mom always made the time to sit and have lunch with me! No matter how bad the day was going, this was a safe haven filled with love!" -Margy

6: Potatoes Au Gratin 2 lb frozen hash browns 3/4 C melted butter 1 tsp salt 1/4 tsp pepper 1/2 C onions 1 C cream of chicken soup 1 pint sour cream 2 C cheddar cheese 1/2 C crushed corn flakes Defrost bag of hash browns. Combine potatoes, 1/2 C melted butter, salt, pepper, onions, soup, sour cream and cheese. Pour into 3 qt casserole. Mix 1/4 C melted butter with corn flakes. Sprinkle corn flake mixture over potatoes. Bake at 350 for 45 minutes.

7: "I have many memories of my Mom, but mostly it is her sense of humor and her hospitality that I love the most about her. She is a very giving person especially to her family. She is also a very good cook who enjoys feeding her family and entertaining. 8: Potato Pancakes 2 C cooked grated or mashed potatoes 2 well beaten eggs 1 1/2 tsp flour salt Mix ingredients. Make a pancake patty in your hand. Coat in flour and fry in oil or butter.

9: "Grandma, We are so blessed to have you in our lives. Your unconditional love, patience and generous spirit are why we love and adore you so much. Thank you for opening your heart and | Grandma, I have so many wonderful memories of our time together and some of my favorites include your famous pancakes, my amazing Halloween costumes, wrapping myself in your arms and quilts, and eating homemade Oreo cookie shakes when I was sick! 10: Ham Loaf and Mustard Topping 8 to 10 lbs boneless ham - ground 1 lb fresh ground pork 1 lb lean ground beef 4 beaten eggs 2 C milk 4 C finely crushed soda crackers 1/4 C ketchup dash pepper Mix milk and beaten egg into crushed crackers. Allow to stand to absorb. Add ketchup and pepper. Mix all ingredients well (hands work best). Makes about 4, 3lb loaves and freezes well. Bake at 350 for 1 1/2 to 2 hours. Add topping 30 minutes before taking out of oven. | "When I first heard of "ham loaf", I had no idea what that was. But after having it, it has become one of the many delicious things that will always remind me of Grandma. Along with red hots in apple pie, "hot dishes" and rhubarb pie." -Mary

11: Mustard Topping 1/2 C sugar 1 tbsp flour 1 tbsp dry mustard 1/2 C vinegar 4 beaten eggs 1/2 C water Mix sugar, flour and mustard. Stir in remaining ingredients. Use a double boiler to cook over boiling water, stirring constantly. | "I'm filled with love and gratitude for my mother and feel so blessed to have her active in my life." -Sharon

12: "When we were little and Grandma used to come to Minnesota, we would get up in the morning and Grandma would make us Mickey Mouse pancakes. | We thought they were the coolest and best things ever. I hope to do that for my son too, when he is old enough" Love, Renea | Meatballs 1 16 oz can jellied cranberry sauce 1 12 oz bottle chili sauce 1 2lb bag frozen, pre-cooked, cocktail sized meatballs Combine sauces in a large saucepan. Cook over medium-low heat, stirring until smooth. Add meatballs. Cover and cook for 15 minutes or until meatballs are heated through, stirring occasionally.

13: A grandmother is warm hugs and sweet memories. A grandmother remembers all of your accomplishments and forgets all of your mistakes. A grandmother is someone you can tell your secrets and | worries to, and she hopes and prays that all your dreams come true. She can see past temper tantrums and bad moods, and makes it clear that they don't affect how precious you are. She is an encouraging word and always a tender touch. A grandmother is a person in the world who loves you with all her heart, who remembers the child you were and cherishes the person you've become. | A grandmother loves you, no matter what. "There is nothing I could possibly write that could express a fraction of how much I love you Grandma" -David

14: Green Bean Casserole 2 cans (10 3/4 oz ea) cream of mushroom soup 1 C milk 2 tsp soy sauce 1/2 tsp pepper 8 cups cooked cut green beans 1 can (6oz) french fried onions (2 2/3 C) Stir soup, milk, soy sauce, pepper, green beans and 1 1/3 C onions in a 3 quart casserole. Bake at 350 for 25 minutes or until hot. Stir. Top with remaining onions. Bake 5 minutes more. | "My mom always confessed that she was just a "simple cook". However, if a great chef is judged by taste, then my Mom is a great chef! Her food always tasted great!" -Margy

16: Chicken Enchiladas (double recipe. 2 - 13 x 9 pans) 6-8 chicken breasts 6 cans cream of chicken soup 3 small cans chopped green chilies 1 16oz sour cream shredded cheddar and jack cheese seasoning - salt, pepper, basil, garlic, dried onion, etc flour tortillas (taco sized) Boil chicken. Add seasoning while boiling. Chop into bite size pieces. In a bowl, mix soup, sour cream and chopped chilies. Stir sauce and chicken together. Spray bottom of 13 x 9 pan with cooking spray. Spread thin layer of mixture on bottom of pan. Layer approx 3 tortillas, then chicken mixture, then cheese. Repeat layers (approx 3 to 4 layers) until pan is full. Top with cheese. Cover pan with foil. Bake at 350 for approximately 50 minutes. Remove foil and bake for 10 minutes.

17: "When Dave and I visited over the summer for Grandma's 85th birthday, we stayed with her in her lovely house. Every morning before we left to go anywhere she always made sure we had breakfast in our tummies. Thanks Grandma for all of the hearty breakfasts. We couldn't have made it through the day without them." -Tracie | "Grandma means so much to us. Even though there are many miles in between, Grandma has always been there for us. She is incredible and loving. We especially enjoy playing cards with Grandma, even if she has a terrible "poker face". Grandma has taught us so much about life and love. 18: Special K Bars 4 tbsp butter, melted in saucepan 1 C white Karo syrup 3/4 C white sugar 1 C peanut butter (chunky is best) 1 12 oz package dark chocolate chips 7 C Special K cereal 1 6oz package butterscotch chips Boil butter, syrup and sugar together for one minute...no longer. Remove from stove and add peanut butter. Pour over cereal. Mix well and pour into a large buttered pan. Melt the chocolate and butterscotch ships. Spread on top. Cut into squares. | "I love that she always makes whatever I ask her to. I love to visit her and give her lots of hugs. I hope Grandma has a wonderful Christmas! I love you!" Love, Avery

19: Ice Cream Dessert 30 Oreo cookies - mashed 1/2 gallon chocolate chip ice cream 1 can Hershey fudge topping 1 pt Cool Whip Put about 2 cups softened ice cream in bottom of 13 x 9 pan. Pat mashed cookies into ice cream and spread on bottom of pan. Spread remaining ice cream over cookies - Freeze. Spread fudge topping over ice cream - Freeze. Top with grated chocolate or nuts. | If God ever made a loyal servant, faithful and beautiful wife, loving mother and grandmother and self-less human being, He did so when he made my friend, June Richards. 20: Chocolate Chip Cookies 1 1/2 C margarine (not lite) 1 1/4 C white sugar 1 1/4 C brown sugar 1 tbsp vanilla 2 eggs 4 1/4 C flour 2 tsp baking soda 1 tsp salt 1 32 oz pkg chocolate chips (4 cups) 3-4 chopped walnuts Heat oven to 350 degrees. Mix butter, sugars, vanilla and eggs in a large bowl. Stir in flour by hand, reserving a small amount. Mix this small amount with the chips and nuts. Stir in chocolate chips and nuts. Drop by rounded tablespoons 2 inches apart. Bake 12-15 minutes, until light brown. Makes 5 to 6 dozen.

21: Yogurt Pie Crust 1 pack crushed graham crackers 1/4 lb butter Mix grahams and butter together. Put in pie plate - up the sides. Bake at 350 for 5 minutes. Filling 2 8oz yogurts (any flavor) 1 8ox container of Cool Whip Mix yogurt and Cool Whip together. Pour in crust. Chill. | "Grandma has taught me what unconditional love really means. It is nice to know there is someone out there who truly loves you no matter what. Love you Grandma!" -Scott

22: Zucchini Cake 1/2 C margarine 1/2 C oil 1 3/4 C sugar 2 eggs 2 grated zucchini 1/2 C buttermilk (or sour milk) 4 tbsp cocoa 2 1/2 C flour 1/2 tsp baking powder 1/2 tsp baking soda dash salt optional - 1/2 tsp cinnamon, 1/4 tsp cloves Cream first 4 ingredients. Stir in zucchini and buttermilk. Add dry ingredients and mix well. Pour in 13 x 9 greased and floured pan. Add topping: Sprinkle with 1 C chocolate chips and 1/2 C nuts on top of batter. Bake at 350 for 30 minutes.

23: Filling and Frosting for German Chocolate Cake 1 can (12 oz) evaporated milk 1 1/2 C sugar 3/4 C (1 1/2 sticks) butter or margarine 4 egg yolks, slightly beaten 1 1/2 tsp vanilla 1 pkg (7 oz) coconut (about 2 1/3 cups) 1 1/2 C chopped pecans Stir milk, sugar, butter, egg yolks and vanilla in large saucepan. Stirring constantly, cook on medium heat for 12 minutes or until thickened and golden brown. | Remove from heat. Stir coconut and pecans. Cool to room temperature and of spreading consistency. Use frosting/filling with a german chocolate cake!

24: Apple Pie with Redhots Crust 3 C flour 1 1/2 C Crisco 1/2 tsp salt 5 tbsp ice water Mix flour and Crisco and salt until well mixed. Add water one tablespoon at a time - barely mix. Form a ball and set in fridge. After you have made pie filling, roll out the crust dough on a floured board to fit in pie pan. | "My Mom is the definition of hospitable, there was always enough room for one more!" | -Margy

25: (Apple Pie continued) Filling 6 apples - various kinds (Mrs Smith, Golden Delicious and Gala) 3/4 C sugar 1/3 C redhot candies dash of cinnamon 2 tbsp flour Peel and slice apples into small pieces. Let pieces soak in water while you are peeling the other apples. Drain water from apple pieces. Add sugar, redhot candies, dash of cinnamon and flour. Mix well. Put filling in pie crust. Bake at 425 for 15 minutes. Decrease temperature to 350 and bake for 40 minutes until golden brown.

26: Butter Roll Cookies 3/4 C shortening or 1/2 C butter 1 C brown sugar 1 egg 1/2 tsp salt 1 tsp baking powder 1/2 tsp baking soda 2 tsp vanilla 2 C flour Nuts or gum drops | Mix and shape into balls. Roll in sugar. Place a nut or gum drop on top. Bake at 350 for 8-10 minutes.

28: Bundt Coffee Cake Generously grease pan with Crisco and sprinkle bottom with 1/4 C finely chopped nuts. Batter mixture Sugar mixture 1 pkg yellow or lemon cake mix 1/4 C sugar 1 pkg instant vanilla pudding (3 1/3 oz) 1/4 C nuts 3/4 C cold water 3 tsp cinnamon 3/4 C salad oil **Mix together in 4 eggs separate bowl. 1 tsp vanilla 1 tsp butter extract **Beat 8 minutes. | Topping 1 C powdered sugar 1/2 tsp vanilla 1/2 tsp butter extract Mix together with enough milk to thin to a glaze and drop with spoon over cake, approx 10 to 15 minutes after it comes out of oven. | Alternate pouring batter mixture and sugar mixture over nuts in pan. Bake at 350 for 50 minutes.

29: " I can think of one particularly fond Christmas memory. I would spend the night at her house some weeks before Christmas. To keep me busy she would sit me down with the Sears catalog and instruct me to circle all the things I wanted for Christmas. So I would sit on the "davenport", listening to Grandpa laugh at "Hee Haw", marking away at the catalog. I'm sure I would mark at least 100 things. Then she would entice me to narrow it down to 10 things, then 5, then 3, etc. She was "helping" Santa figure out what I wanted. But what I remember is always being amazed on Christmas Eve when I opened the gift, and there was the toy that I wanted. Thank you Grandma. I will always remember the special Christmases at your house and the unconditional love you gave me year- round. I love you" -Sean

30: Chocolate Peanut Bars Whole graham crackers 12 oz milk chocolate chips 8 oz mixed nuts 1 C butter 2 tbsp white corn syrup 1 C brown sugar Line 13 x 9 pan with graham crackers. Top with chocolate chips and nuts. Boil butter, corn syrup and brown sugar for 3 minutes, stirring constantly. Pour over graham cracker layer. Let cool.

31: "Grandma is always willing to offer assistance in any way possible. From the moment I entered this family, I have felt nothing but warmth and love from Grandma!! Our family is so blessed to have her in our lives!! Thank you for being such a special part of the family. Not to mention the guru of all baked goods!!" Love, Michelle

32: Graham Cracker Pie Crust 1 pack of crushed graham crackers 1/4 lb butter Mix grahams and butter together. Put in pie plate - up the sides. Bake at 350 for 5 minutes. Filling 24-25 large marshmallows 1/2 C milk 1 8oz container Cool Whip 1 grated chocolate bar nuts (optional) Cook the marshmallows and milk, stirring often. Watch, can burn. Allow to cool. Add the Cool Whip once marshmallow mixture is cooled. Add grated chocolate and nuts. Pour mixture into pie crust. Sprinkle additional graham cracker crumbs on top.

33: "June is the warmest, most giving human being I have ever met. Certainly, Sharon's equal in these and other positive human attributes. I do not recall any time over the last 40+ years when I did not look forward to seeing her. She has loved me as her own son, even when I did not deserve it. Her home is always welcoming, warm and of great comfort to me and our family. She has embraced and loved me without condition. Her kindness and comfort has been an important part of my life. She remains and always will be one of my favorite human beings." -Mike

34: Pecan Pie 1/4 C butter 1 C brown sugar 1/4 tsp salt 1 C dark Karo syrup 3 beaten eggs 1 tsp vanilla 1 1/2 C pecan halves 1 9 inch unbaked pie crust Cream butter and sugar together until fluffy; add next 4 ingredients. Sprinkle pecans on bottom of pie shell, pour filling over pecans. Bake at 450 for 10 minutes, reduce temperature to 350 and bake 35 minutes longer. Outer edge of filling should be set, center slightly soft or until knife inserted in center comes out clean.

35: "You could always drop in on Grandma for dinner and she could throw something amazing together, and before you were done eating, a fresh baked pie would show up, THANKS MOM!" -Terry | "You are the epitome of "Grandma" for me. 36: Dream Bars Crust 1/2 C butter 1/2 C brown sugar 1 C flour Mix together thoroughly for crust and press into a 13 x 9 pan. Bake 15 - 20 minutes at 350. Remove from oven and spread with topping. Topping 2 eggs 1 C brown sugar 2 tbsp flour 1/4 tsp salt 1 1/2 C coconut (shredded) 1 C nuts, chopped 1/2 tsp baking powder Beat eggs thoroughly, then add brown sugar and beat until smooth. Add sifted dry ingredients. Stir in coconut and nuts and spread over baked crust. Return to oven and bake about 25 minutes at 350, or until brown. While warm, cut into bars and remove from pan.

37: Best Thing Since Robert Redford Crust 1 C flour 1/4 C nuts (pecans) 2 tbsp sugar 1 stick margarine Mix and press into a greased 13 x9 pan. Bake at 375 for 15-18 minutes. Cool. Filling 1 8oz package cream cheese 2/3 C powdered sugar 1 19oz container Cool Whip 3 C milk 1 small pkg chocolate instant pudding 1 small pkg butterscotch instant pudding Soften cream cheese and beat in powdered sugar. Use half of Cool Whip in cream cheese mixture. Save the rest for top of next layer. Spread cream cheese/Cool Whip mixture over crust. Prepare pudding with 3 cups milk - 1 1/2 C for each package. Spread over cream cheese/CoolWhip mixture. Let stand 30 minutes in fridge. Spread remaining Cool Whip on top of pudding. Garnish with shredded chocolate if desired.

38: Brownies 1/2 C butter (1 stick) 1 C sugar 4 eggs 1 tsp vanilla 16 oz can chocolate syrup 1 C plus 1 tsp flour 1/2 tsp baking powder 1/2 C chopped nuts (optional) Cream together the butter and sugar. Add eggs and vanilla. Add remaining ingredients and mix well. Place in 10 x 15 inch pan. Bake at 350 for 30 minutes. Frost with chocolate frosting. | "I love that Grandma made a pocket for me. And I like to play with the toys at her house." -James

39: Molasses Cookies 1 1/2 C shortening 2 C packed brown sugar 2 eggs 1/2 C dark molasses 4 1/2 C flour mixed with 2 tsp baking soda 2 tsp cinnamon 2 tsp ginger 1 tsp cloves 1/2 tsp salt | Preheat oven to 325. Mix shortening, brown sugar, eggs and molasses. Blend in flour, baking soda, cinnamon, ginger, cloves and salt. Shape into balls, roll in sugar. Bake just till tops crack, about 8 - 10 minutes. Do not overbake.
