1: Ingredients 2 pounds of ground beef 2 cups of seasoned bread crumbs 1 cup milk 1/4 cup dried minced onions 2 tsp, garlic salt 1/4 tsp.pepper or to taste 1 block {8 oz.} mozzarella { can use other kinds to } cheese 1/3 cup flour 1/4 cup cooking oil 1 jar pizza sauce { can use tomato soup and package of spaghetti sauce. | Directions In a bowl, combine the first 6 ingredients just until mixed. Shape into 48 small meatballs. Cut cheese into cubes and put into centre of each meatball.cover cheese with meat. Roll lightly in flour and in a large skillet cook meatballs. (I skip that step and out into slow cooker and put sauce on each layer. If using the slow cooker, user the skillet to brown on all sides) Drain, then add pizza sauce bring to a boil. Reduce heat cover and simmer for 25 to 30 minutes or until meatballs are no longer pink. Serve as a appetizer. When we have pot luck or card party down in Mazatlan I am always ask too bring this dish. | Pizza Meatballs

2: Canned Fish (Graydon's Favourite) | Instructions Makes 14 Jam Jars Cut 1 Ice Cream Pail of fish (jack or whatever you have) into small pieces. Place in a large roaster. Add 1 cup vinegar, 1 tin small tomato paste, 1 1/2 cups oil 2 tbsp. pickling salt. Combine, cover and bake at 350 for 4 hours. Stir often. Turn heat lower if necessary. After the 4 hours, add 3/4 cup vinegar, 1 tin tomato soup and 1 cup oil. Bake another hour. Place in jars, add lids and rings. Process for 2 hours on stove top. Serve mixed with miracle whip, green onions, and pepper if desired.

3: Surprise Spread | Instructions 6-8oz Cream Cheese 1/2 Cup Sour Cream 1/4 Cup Miracle Whip 1 Jar Red Seafood Sauce 1 Tin Shrimp, well drained (broken shrimp may be used) 2 Medium Tomatoes, cut up small 3 Chopped Green Onions Grated Cheese Mix together first 3 ingredients. Spread even in a pie plate or shallow dish. Add remaining items in layers, topping with grated cheese. Use as a dip with crackers.

4: Salads | Ingredients 3/4 cup olive oil 3 tbsp lemon juice 3 tbsp vinegar 1 egg 4-5 garlic cloves crushed | Directions Mix with a blender Add to romaine lettuce, croutons bacon bits,and Parmesan cheese. | Caesar Salad Dressing

5: Our Simple Spinach Salad | Ingredients Pecans or Walnuts - Pieces Grapes - Halved Blue Cheese - Crumbled Raisins Cherry Tomatoes - Halved Carrots - Sliced Pear - Sliced Green onions - Chopped Spinach | Directions Mix all ingredients in a large bowl. Usually the spinach is half in volume compared to the rest of the ingredients. Let the salad sit in the fridge for about 15 minutes to allow the ingredient flavours to blend. No dressing required as this combination is yummy enough. Enjoy

6: Ingredients 6-8 tortillas Salsa Shredded Cheese Bell Peppers (any variety) Onion Ground Beef Taco Seasoning Sour Cream | Directions 1.Cook 1 lb of ground beef in a medium frying pan until almost browned. 2.While the meat is cooking, chop up a medium yellow or white onion. Also chop up one whole pepper, or two halves of different colours of peppers. 3.Preheat oven to 400 F. 4.Add the onion to the meat with a bit of olive oil and sauté them. 5.Add the peppers and sauté them all together with the meat and onions. 6.Add taco seasoning until mixture is well covered (a couple tablespoons). 7.Add cup of salsa and of cheese (or more to taste). 8.Spray a 9x13 casserole dish with cooking spray. 9.Take a tortilla, spread sour cream on the inside, and place some of the meat/vegetable mixture inside. Roll the tortilla up and place in the casserole dish, seam side down. 10.Repeat until casserole dish is full. 11.Spread sour cream, salsa and cheese on top of the enchiladas. 12.Bake in oven for about 20 min, or until cheese is bubbly. | Easy Enchiladas

7: Ingredients 1 cup salt 1/2 cup garlic salt 1/2 cup pepper 1/2 cup mustard seed 1/2 cup brown sugar 25 pounds of wild meat 25 pounds of pure pork or beef Mix, add some water | Albert's Homemade Sausage

8: Mom's Casserole | Ingredients 1 med onion--- Diced 1/2 pkg Bacon -- Sliced thinly 1--795 ml Diced Tomatoes with Juice 8 cheese slices-- kraft reg works best 2 cups elbow macaroni 1 can mushrooms--opotional Pepper | Directions Saute onions til soft, set aside. Cook bacon until showing signs of crispiness. Set in bowl on papertowel. While this is being done cook your macaroni til aldente. Place onions, bacon, mushrooms and macaroni in casserole dish, 2L works best. Pour on can of tomatoes over top and stir well. Make sure all is mixed together. Level out top and place your cheese slices over it covering all areas, if you need more slices, go ahead. Shake pepper all over top of cheese. Bake in oven at 350 F for 3/4 hour or until cheese bubbles and starts to turn brown. Remove from oven and let rest for 10 minutes.. Enjoy with a side salad and my wifes delicious Greek Ribs. ;-)

9: Greek Ribs | Ingredients Ribs Oregano Leaves Seasoning Salt Oyster Sauce Lemon Juice | Directions Cook Ribs on choolie sheet at about 350-375f with lots of oregano and seasoning salt( on both sides) until nice and brown. Take ribs out and brush on plenty of oyster sauce (both sides) and put back in oven for about 20 minutes ( make s sure you are flipping ribs). Take out of oven and cup between bones for individual sizes and put into large bowl. Pour a couple table spoons of Lemon Juice ( or to taste) and put back into oven for 10-15 minutes. Take out and enjoy Ribs can be parboiled before hand if desired.

10: Boneless Dry Ribs | Directions Cut pork into small cubes. Dredge in flour seasoned with salt and pepper. Mix eggs beaten with milk to make wash. Dip flour-coated pieces in egg wash, then in bread crumbs. Cook in hot oil or in deep fryer for 5 to 8 minutes depending on the size of pork cubes. Bread crumb coating will be brown and crispy. Serve hot with fresh lemon. | Ingredients Pork Cubed Flour seasoned with salt and pepper 2 eggs 1 1/2 cups milk 2 cups seasoned bread crumbs 1 tbsp oregano 1 tbsp lemon pepper 1 tsp garlic powder Seasoning salt, salt and pepper and other spices to taste

11: Directions Prepare pasta as directed, drain and set aside; return to saucepan and keep warm. Meanwhile in a separate saucepan, heat broccoli pieces until tender-crisp and set aside. Heat olive oil, cook mushrooms, carrots, peppers and onions, stirring frequently until vegetables are tender-crisp. In a two-cup measuring cup with a fork, mix skim milk, bullion, cornstarch and salt (the Tupperware shaker also works great for this). Stir the evaporated milk mixture into the vegetables. Over high heat, heat to boiling, boil one minute. Add diced tomato, Parmesan cheese, parsley, broccoli, tossing to coat well, heat through (can also be served separate if desired). Great for company. Serve with garlic toast and a glass of red! | Ingredients 3/4 package of spaghetti or linguine 1/2 small bunch of broccoli, cut into pieces 2 tbsp olive oil 1 12 oz package mushrooms, cut in half 1 small onion, minced (I add minced garlic as well) 1 – 2 small carrots cut into matchstick strips 1 small red pepper, chopped into strips 1 medium tomato, seeded and diced | Lite Pasta Primavera | This recipe just tastes like you are cheating on your diet – it looks really rich but it’s actually good for you!! -Melissa | 1 12 oz can evaporated skim milk (2%) 2 tsp chicken bouillon 3 tsp cornstarch 1/2 tsp salt 2 tbsp grated parmesan cheese 2 tbsp minced parsley (I mix the two)

12: Meat Loaf | Ingredients 1 1/2 lbs ground beef 2 eggs salt and pepper 1 onion, grated 1/2 cup grated carrots 1 cup cheese, grated 3 slices bread, crumbled 2/3 cup milk Topping 1/4 cup brown sugar 1/4 cup ketcup 1 tbsp dry mustard | Directions Break eggs into a large bowl, beat lightly with fork. Add rest of ingredients, mix and pack into loaf pan. Then combine brown sugar, ketchup and dry mustard. Spread over loaf. Bake in 350 degree oven for one hour. (I bake this in the microwave as it is much faster and still browns nicely. I usually cook it about halfway(no lid) before putting on the brown sugar topping when I do it in the microwave. Makes great sandwiches next day.)

13: Pork Chops in Mushroom Sauce | Ingredients Pork Chops 2 Cans Mushroom Soup Paprika Garlic Powder Seasoning Salt Cooking Oil (just to help brown Pork Chops) | Directions Preheat oven to 400F. Brown Pork Chops in frying pan with oil. Place Pork Chops in baking dish in single layer. Cover with Mushroom Soup, and season with all spices. Add remaining pork chops, and repeat with Mushroom Soup and Spices. Cover and place in oven for 45-60 minutes. (The longer they bake in the sauce, the juicier they are) Note: To cook in slow cooker, prepare the same way, layering in cooker. Bake on Low throughout the day. Serve with Rice and use soup mixture as a gravy for an added bonus.

14: Desserts | Ingredients 2 cups all purpose flour 2 cups firmly packed brown sugar 1/2 cup margarine 1 tsp baking soda 1/2 tsp salt 1 cup milk 1 tsp vanilla 1 egg 1/2 cup chopped nuts (optional) 6 Skor bars, broken into pieces | Directions Heat oven to 350 F. Grease 13 x 9 inch pan. In large bowl, combine flour, brown sugar and margarine until crumbly; reserce 1 cup for topping. Add baking soda, salt, milk, vanilla and egg to remaining crumb mixture; beat 3 minutes. Pour into greased pan. Sprinkle with reserved crumb mixture, nuts and Skor bars. Bake at 350 F for 30 to 40 minutes or until toothpick comes out clean. Cool completely. Serve with whipped cream. | Skor Cake

15: Oatmeal Chocolate Chip Cookies | Ingredients 1 cup softened butter 1 cup packed brown sugar 1 large egg 1 tsp vanilla 1 1/2 cups flour 1 tsp baking soda 1/4 tsp salt 1 cups quick-cooking rolled oats 1 cup milk chocolate chips (or M&M’s or raisins) | Directions Cream butter and brown sugar. Add egg. Add vanilla. Beat until smooth Combine flour, baking soda and salt in a small bowl. Add to butter mixture in 2 additions, mixing well after each until no dry flour remains. Eat good portion of cookie dough only half kidding here as I usually bake with kids and that is what generally happens. Add rolled oats and chocolate chips. Mix well. Drop, using 1 tbsp for each, about 2 inches apart onto greased cookie sheet. Bake at 350 for 8 to 10 minutes until golden. Let stand on cookie sheet for 5 minutes before removing to wire racks to cool.

16: Instructions Bake an Angel Food cake Cool and cut into three layers Beat 500 ml of Whipped Cream Put 1/3 of whipped cream to the side Fold into the remaining cream 1-2 cups of your favourite berries. Put the bottom of the cake on a plate sprinkled with sugar. Cover with half of the whipped cream and berries. Put next layer of cake on top and add remaining whipped cream and berries. Put on top the remaining cake layer and cover with plain whipped cream . Add flour, baking powder and salt. Heat butter and mix to boiling point and add to the batter last. Grease an 8x8 pan. Bake at 350F for 15-20 minutes | A simple cake you can't go wrong with. A wonderful old fashioned flavour. Pat Eckel

17: Instructions 1. Mix together: 1/2 cup sour cream 1/4 cup oil 1 egg 2. In a small bowl combine the following: 1/2 tsp baking soda 1 1/3 cups of flour 1 cup rhubarb 2/3 cup brown sugar 1/4 tsp salt 3. Add the sour cream mixture and stir til moist. 4. The Topping 1/4 cup brown sugar 1/2 tsp cinnamon 2 tsps melted butter 5. Mix into crumbs & sprinkle on muffins. 6. Bake at 350 for 25-30 min. | Rhubarb Muffins | provided by Irene and Ken

18: Grandma's Kuchen Recipe | Crumbs 1 c brown sugar 1 1/2 c flour 3/4 c butter or margarine Blend together and sprinkle over filling. | Crust 4 or 5 eggs 1 c oil 2 c flour 2 tsp baking powder 1 c sugar 1 tsp vanilla 1/2 tsp salt Put any pie filling or cottage cheese and cinnamon on crust. Bake at 350 for 40 minutes. | Grandma's Sex In a Pan Recipe

19: Torta Cake | Torta Cake Layers 11 eggs 1 1/3 cups +2tbsp sugar 1/2 tsp salt 1 cup flour 2 tsp vanilla Combine eggs and sugar beat until blended, place in a pan of hot water heat until slightly hot. Remove from water and beat until it stands in stiff peaks. Combine flour and salt, fold into egg mixture. Bake thin layers on bottom of cookie sheets which have been greased and floured in 300 degree oven. Remove from oven and cut layers in half before removing from sheet while warm. | Icing 11 eggs 22 tbsp sugar 1 1/4 pounds of butter whipped softly 6 squares of melted semi sweet chocolate 2 tbsp vanilla Put eggs and sugar in a large bowl and set in rapidly bowling water beat steadily until thick enough to stand in stiff peaks, remove from water and cool. Have melted chocolate cooled. Add chocolate to egg mixture and beat until mixed. Now add whipped butter a little at a time about 1/4 at a time beating after each time add vanilla and beat again. Cool in fridge until ready to spread. | This is from my Grandma, it's a very famous recipe in our family. My Grandma would make this cake 5 times a year and we never missed out when it came to Torta Cake. In the beginning it would take my Grandma an entire day to make, and she would do so even though she couldn't eat it!! (she's celiac) Her and my grandpa have it down to a few hours now. I have yet to attempt to make it but hopefully soon :) | Stack layers in desired pan, spreading icing between each layer. Finish by icing the top and sides. Usually yields a 13 layer masterpiece :)

20: Texas Brownies | Directions 1. Combine the flour and the sugar. 2. In a heavy saucepan, combine butter, shortening, coffee or water and cocoa. Stir and heat to boiling. 3. Pour boiling mixture over the flour and sugar in the bowl. Add the buttermilk, eggs, baking soda and vanilla. 4. Mix well, using a wooden spoon or high speed on electric mixer. 5. Pour into a well buttered 9 by 13 pan 6. Bake at 400 degrees F for 20 minutes or until brownies test done in the center 7. While brownies bake, prepare the frosting. In a saucepan, combine the butter, cocoa and milk. Heat to boiling, stirring. 8. Mix in the icing sugar and vanilla until frosting is smooth. 9. Pour warm frosting over brownies as soon as you take them out of the oven. 10. Cool, cut into bars. | Ingredients 2 cups flour 2 cups white sugar 1/2 cup butter or margarine 1/2 cup shortening 1 cup strong brewed coffee or water 1/4 cup dark, unsweetened cocoa 1/2 cup buttermilk 2 eggs 1 tsp baking soda 1 tsp vanilla | Frosting 1/2 cup butter or margarine 2 Tbsp dark cocoa 1/4 cup milk 3 1/2 cups icing sugar 1 tsp vanilla Tip: If you don’t have buttermilk on hand take 2 tsp. vinegar or lemon juice and mix into cup milk. Or use powdered buttermilk .

21: Directions Bake tart shells as directed and set aside. Put the next four ingredients in a blender and process until smooth; fill each tart shell full with raspberry mixture and bake for about 25 minutes until set but center still wobbles a bit. Chill for about 2 hours until set. Put second amount of whipping cream and sugar into a bowl and beat until peaks form. Pipe or spoon whipped cream onto tarts. Garnish each with a fresh raspberry. Makes 12 tarts. | Ingredients 12 unbaked tart shells 1/2 cup fresh raspberries 1/2 whipping cream 3 tablespoons granulated sugar 3 large egg yolks 1/2 cup whipping cream 2 tbsp granulated sugar 12 fresh raspberries | Razzle Dazzle Custard Tarts | Kristen is famous for these tarts

22: Chocolate-Cherry Frozen Pie | Ingredients 2 tbsp plus 1 1/2 tsp chocolate syrup 12 graham crackers, made into crumbs 18 oz chocolate dietary frozen dessert, softened 3/4 cup thawed frozen diary whipped topping (lite) 12 large fresh or frozen pitted cherries (no sugar added), cut into halves | Directions In small bowl drizzle chocolate syrup over cracker crumbs and using a fork, stir to combine. Using the back of a spoon, press crumb mixture over bottom and up sides of 9 inch pie plate; set aside. Using electric mixer, in medium mixing bowl beat frozen dessert until smooth; carefully transfer to graham cracker crust. Cover with plastic wrap and freeze until firm, about 1 hr. To serve, spread whipped topping over pie, or fit a pastry bag with a star tip, fill bag with topping, and decoratively pipe topping onto pie; arrange cherries on top. Variation: Chocolate Strawberry Frozen Pie – Substitute 2 cups strawberries for the cherries. Slice berries, leaving 1 whole, and arrange on top of pie.

23: Directions Preheat oven to 375 F In a large bowl, combine flour, baking powder, and baking soda. Set aside. In a bowl beat milk, eggs, butter, and sugar. Stir in mashed bananas. Mix with dry ingredients and stir until just moistened. Gently fold in chocolate chips. Put into lightly greased bread pan and bake at 375 F for one hour. | Ingredients 3 cups flour 1 tablespoon baking powder 1/2 teaspoon baking soda 1 1/2 cups milk 3 eggs 1/2 cup butter, melted 3/4 cup white sugar 3 ripe bananas, mashed 1 cup chocolate chips | Banana Bread | We chose this recipe because we always used to and still do love making banana bread or you can use the same recipe for muffins as well and we always loved adding chocolate chips.
