2: Bourbon Hot Dogs Ingredients 3 lbs Hot Dogs (cut into 5 pieces) 1 1/2 cups Bourbon (more if desired) 3 Cups Ketchup 1 Cup Light Brown Sugar 2 tbsp Onion (minced) Directions Simmer onions sugar an d Ketchup for 10 minutes, add bourbon and hot dogs, Simmer for 30 minutes let simmer until ready to use Serve Hot | Deviled Eggs | Ingredients 6 hard cooked eggs 1/4 t.salt 1/8 t. pepper 1 t. mustard 1/2 t minced onion 1/8 t powder (garlic) 1/4 t hot sauce 1 t. vinegar 1/4 cup onions Directions Peel eggs Cut in half and remove yolks Mash yolks and all everything except paprika, Mix well Put into egg whites, Garnish with paprika
4: Bread&Butter Pickles Ingredients 30 Cucumbers - 1 inch in diameter 10 onions (medium) 4 T. salt Directions Slice cucumbers and onions. Sprinkle with salt Let stand 1 hour Drain in cheese cloth bag Make a spiced vinegar using the following: 5 Cups Vinegar 2 t celery seed 2 t ground ginger 4 Cups Sugar 1 t turmeric 2 t white mustard seed Let spiced vinegar come to boil add cucumbers and onions, bring to a boil Simmer for 10 minutes. Seal in jars | Cucumber Salad Ingredients 5 Cucumbers 2 cups mayonnaise 1/2 cup + 2 T sugar 3/8 Cups vinegar (white) 1 Lg onion Directions Heat the vinegar Add sugar after it cools Add mayonnaise Put in blender and blend Add to the cucumbers and onions Put in refrigerator and chill
5: Boiled Dressing Ingredients 2 tablespoons sugar 1 tablespoon flour 1 teaspoon dry mustard 1/2 teaspoon salt 1/4 teaspoon pepper 1 Cup milk or light cream 1/3 cup cider vinegar 2 egg yolks beaten slightly Directions In a small saucepan, mix the sugar, flour, mustard, salt and pepper until lump-free. Stir in milk and cook over medium heat, stirring constantly, until mixture comes to a slow boil and is thickened, about 3 min. Stir in vinegar and return to a simmer. Off heat, gradually beat a little hot mixture into the egg yolks in a bowl, return egg mixture to pan, stirring constantly. Reduce heat to low and cook 30 sec. or longer or until dressing coats a metal spoon. Pour into glass container, cool to room temp. Refrigerate 4 hours. For serving, toss with raw cabbage mixture

8: Potatoes Scalloped Ingredients 6 Med. Potatoes 4 T butter 4 T Flour 2 tsp salt 2 1/2 C milk Directions Cook all ingredients but potatoes, add potatoes with sauce Bake 1 1/2 hrs @ 375 | Stuffed Green Peppers Ingredients 5 Medium green peppers 1 C cooked rice 1 8 oz can tomato sauce 3/4 lb ground beef 1 egg 1 t salt 1/4 c water 1/4 c chopped Onions Directions Remove seed section from green peppers and cut in half Cook Onions and beef until all pink has left meat Stir several times during cooking. Cook rice according to directions Mix tomato sauce with water, Combine onion and beef mixture with cooked rice, half of tomato mixture, egg, salt and pepper. Stuff pepper halves and place in a glass dish Pour remaining tomato sauce over top Bake in oven at 350 until done between 20 mins and 30 mins
11: Ingredients 8 cucumbers, about 6 inches long each sliced Mix together 4 cups white vinegar, 4 cups sugar 1/4 cup salt 1 teaspoon turmeric 1 teaspoon mustard seed 1 teaspoon celery seed 7 Directions Pour over sliced cucumbers Refrigerate for 3 days, stirring once a day Always keep refrigerated. Put into small jars if you like. Makes 1 gallon | Refrigerator Pickles | V.I.P Pickles Ingredients Mis well in a large bowl 3 1/2 Cups sugar 1/4 cup salt 2 cups white vinegar Directions Add 3 or 4 cucumbers, peeled and thinly sliced 1 lg white onion sliced 1 1/2 t salt free seasoning optional Add 4-6 ice cubes and store in gars Do not pressurize keep refrigerated "Quick and easy, gets better with age and when you've eaten all the cucumbers, add another to the brine"
12: Sweet Pickles Ingredients 7 1/2 lbs peeled cucumbers cut into strips 2 gallons cold water 2 cups household lime - also called slike lime (purified form) Directions Mix lime in cold water. Pour this over cucumbers and let stand 24 hrs. Stir several times with wooden spoon Then wash thoroughly until all lime is gone Mix 2 qts vinegar 4 1/2 lbs, sugar, and 1 t mixed sickling spices. Tie spices in cheese cloth. Let mixture come to a boil. Cool before pouring over cucumbers. Let stand 12 hours. Cook over medium heat until transparent. Food coloring may be added to liquid if desired. Seal in glass jars. Process for 10 minutes at 180 | Sweet Pickle Chunks Ingredients 1 gal cucumbers 1 gal water 1 cup lime 1 qt vinegar 5 cups sugar 1 T mixed pickle spice 1 T celery seed 1 t salt Directions Mix lime into two gallons water soak cucumbers (cut in chunks) overnight Rinse Put in fresh water and soak 2 hrs Drain Put in remaining ingredients Then cook for 30 minutes. Add coloring if desired. Put into hot sterilized jars and seal
14: Ingredients 2 cans crab meat 1 egg 2/3 c finely diced green peppers 1/4 c finely diced pimentos 2 t. dry mustard 2 t salt 1/4 t pepper 3/4 c mayonnaise paprika 7 Directions Drain crab meat Cut meat into chunks Beat egg Stir in green pepper, pimento, mustard, salt, pepper,and all but 2 T. mayonnaise until well blended Fold in crab meat Spoon into 6-10 oz custard cups, or baking dishes Spread top of each with 1 t of remaining mayonnaise. Sprinkle with paprika Bake in oven (350) for fifteen minutes | Imperial Crab
16: Crab Dip Ingredients 1 lb Crab meat 1/4 TSP lemon pepper 1 8 oz cream cheese 1 TSP Worcestershire sauce 1 TPS Milk 1 TBSP Old Bay seasoning 1 TBSP finely chopped onions Directions Melt ingredients in microwave Bake at 375 for 20 minutes Enjoy! | Shrimp Dip Ingredients 2 (6 oz) cans small shrimp 4 oz shredded cheddar cheese 1 small onion chopped 1 T Worcestershire sauce Garlic salt ( a little heavy or to taste) Sprinkle of celery salt Directions Mix above ingredients together Add 1 Cup mayonnaise Refrigerate!
18: Dumplings Ingredients 1 1/2 cups flour 1 teaspoon salt 1/4 cup shortening 1/2 cup buttermilk 1 egg beaten Directions Combine flour, salt, soda and sugar, stir well. Cut in shortening until mixture resembles coarse meal. Stir in buttermilk and beaten egg. Shape mixture into a ball. Wrap and place in the freezer for 30 to 40 minutes. Then turn dough out onto floured surface. Roll dough into an 1/8 inch thickness and cut into 1 inch squares. Drop squares into boiling broth. Do not lift lid. Reduce heat and while still covered, simmer for 20 minutes. | Crab Puff Ingredients 1 pound back fin crab meat 3/4 teaspoon seafood seasoning 1/2 teaspoon dry mustard 1/2 teaspoon salt 1/8 teaspoon pepper 1 egg 3/4 cup mayonnaise Directions Put crab meat in a greased 1 1/2 quart casserole. Mix next 4 dry ingredients. Beat egg and mix with mayonnaise. Spread on top of crab meat Bake at 350 for 30 minutes Serve hot
20: Ingredients 1/4 C. Butter 1 pt. Oysters 1 qt. Milk 1 t. Salt Pepper (dash) paprika 7 Directions Heat oysters in own liquid until edges begin to curl. Add butter and milk and heat to boiling. Do not boil. Season to taste with pepper and paprika and salt | Oyster Stew
22: Spaghetti Sauce Ingredients 1 large onion 1 stalk celery 1/2 green pepper 1 4 oz bottle olive oil 2 cans tomato paste 1 can tomato sauce 1 lg. can tomatoes 1 lb. ground beef 1 tsp. sugar Dash of: oregano, garlic salt, onion salt, parsley Directions Put onions and celery in frying pan and saute. Then put in ground beef and brown. Put all other ingredients and cook in medium heat for 1 1/2 hours
23: Lasagna Ingredients 8 ounces lasagna noodles 1 pound ground beef 1 onion, chopped 2 cloves garlic, minced 2 cans (6 ounces each) Hunt's tomato paste 1 1/2 cups water 1 tablespoon minced parsley 2 teaspoons salt 1/2 teaspoon basil or rosemary 8 ounces ricotta or cottage cheese 2 eggs, beaten 3/4 pound Mozzarella cheese, sliced 1/4 cup grated Parmesan cheese | Directions Cook noodles according to package directions; drain. In a skillet brown ground beef with onion and garlic; pour off fat. Stir in tomato paste, water parsley, salt and basil; simmer 10 minutes. Meanwhile, blend ricotta and eggs. In a 13 x 9 x 2 inch baking dish spread thin layer of meat sauce; top with half the noodles, the remaining meat sauce and all remaining noodles. Top with remaining meat sauce and Mozzarella. Sprinkle with Parmesan. Bake at 350 for 30 minutes. Let stand 10 minutes before cutting
24: Cottage Bread Ingredients In a blender on high speed, mix: 2 1/4 cups warm mater 2 packages active dry yeast 3 tablespoons sugar 1 tablespoon salt 2 tablespoons soft shortening Directions Pour into 3 1/2 cups flour and beat until smooth. Add 3 more cups flour. mix throughly. Cover, let rise until double. Beat batter down for 1/2 minute Pour into 2 greased loaf bans. Let rise 30 to 40 minutes. Brush with melted shortening. Bake until brown. Makes 2 loaves | German Potato Pancakes Ingredients 1 Cup mashed potatoes 1/2 cup flour 2 T baking powder 2 beaten eggs 1/2 t salt pepper to taste Directions Combine all ingredients Form into patties Fry on both sides until golden brown
26: Vegetable Casserole Ingredients 3 cans veg-all (drained) 1 medium onion 8 oz sour cream 1/2 cup salad dressing 1/2 cup grated cheddar cheese 2 cups cheese nips on Cheezits (crushed) 1 stick margarine, melted 7 Directions Put vegetables in 9x13 baking dish Add onion Mix sour cream and salad dressing Spread over veg-all and onions Sprinkle on cheese Mix cracker crumbs and margarine Sprinkle on top Bake 30 minutes at 350 | Beefy Casserole Ingredients 1 lb ground beef 1 small onion (chopped) 1 can tomato soup 1/2 cup water 1 can string beans (drained) lg 1 cup cooked noodles 1/2 cup Parmesan cheese or shredded cheddar cheese Directions Saute onion and ground beef in skillet Add remaining ingredients except cheese Pour mixture into casserole Top with cheese Bake at 375 for 25 minutes Serve with hot rolls and green salad
29: Gram's Slaw Ingredients 3 heaping TBSP mayonnaise 1 egg 3 heaping TBSP sugar Little milk Little sweet pickle juice Little celery seed 7 Directions Put in a glass jar Shake well and serve over sliced cabbage | Cole Slaw Ingredients 1 head cabbage shredder or cut finely 1 green pepper diced 1 medium onion, diced 7 Directions Combine above ingredients and pour 1 cup of sugar over all 1/2 cup vinegar 2 teaspoons celery seed 2 tablespoons sugar 1/4 cup salad oil 1 teaspoon salt Bring vinegar, celery seed, sugar, oil and salt to a boil. Pour over slaw. Let stand at least 4 hours Chill and serve
30: Swedish Meatballs Ingredients 1 pound ground beef 1/2 pound ground pork 1/2 cup minced onion 3/4 cup fine dry bread crumbs 1 tablespoon minced parsley 1 1/2 teaspoons salt 1/8 teaspoon pepper 1 teaspoon Worcestershire sauce 1 egg 1/2 cup milk 7 Directions Mix all ingredients throughly. Shape into balls the size of walnut. Brown in 1/4 cup hot fat or oil. Remove meat balls and make gravy (recipe follows). Return balls to gravy; cook 15-20 minutes. Gravy - Stir 1/2 cup four, 1 teaspoon paprika, 1/2 teaspoon salt and 1/8 teaspoon pepper into hot fat, stir in 2 cups boiling water and 3/4 cup sour cream
32: Raisin Sauce for Baked Ham Ingredients 1/4 Cup brown Sugar 2 teaspoons dry mustard 1 tablespoon flour Salt and pepper 1 1/2 cups boiling water 1/4 cup vinegar 1/2 cup raisins 1 tablespoon butter Directions Combine all ingredients, except raisins and butter, and cook over low heat for 10 minutes, stirring until sugar is dissolved. Add raisins and cook five minutes longer. Add butter and serve | Chili Sauce Ingredients 24 tomatoes 8 green peppers 8 onions 4 T salt 4 Cups vinegar 1 t dry mustard 1 t celery seed 1 t cinnamon 1 t cloves 5 Cups sugar Directions Cook until thick
34: Egg Potato Salad Ingredients 3 pound potatoes, cooked, peeled and sliced 6 hard - cooked eggs 1/2 chopped onions 1/4 cup diced celery 1/2 cup relish 1 1/2 teaspoon celery seed 1 teaspoon prepared mustard 1 cup mayonnaise salt and pepper to taste Directions While the potatoes are still warm, mix the next 5 ingredients. Add mustard to mayonnaise and add to potato mixture. Add salt and pepper to taste. Add more dressing if necessary. Chill throughly overnight. | Take Along Egg Macaroni Salad Ingredients 2 cups (6 oz) spiral macaroni uncooked 6 hard cooked eggs (chopped) 3 oz cheddar cheese (cubed) 1 cup sliced celery 3/4 cup sliced celery 3/4 cup mayonnaise 2 At finely chopped onion 1/2 t dry mustard 1/4 t salt Directions Cook Macaroni according to package directions. Cover and chill. Meanwhile combine all other ingredients. Stir in macaroni. cover and chill. Serve in lettuce lined bowl and sprinkle with almonds.
35: Grandmas German Potato Salad Ingredients 3 or 4 pounds potatoes 1 bunch green onions (cut up) 6-8 slices bacon 1/2 cup vinegar 1/2 cup water 1/2 t sugar pinch pepper, pinch salt, pinch accent, pinch garlic salt Directions Boil potatoes with skins on until done. Peel and slice. Add onions and tops, cut bacon into bite size pieces and fry. Mix vinegar, water and sugar. Add bacon to potatoes, and pour some of the vinegar, water mixture over all, along with some bacon grease. With 2 large spoons, lift the potatoes gently to mix and add enough of the vinegar, water mixture to moisten well. Add seasoning and mix gently.
37: Tuna Cakes Ingredients 2-7 cans tuna 4 slices soft bread crumbs 3 well beaten eggs 1/2 cup celery (minced) 2 T. mayonnaise 1 t. seafood seasoning Directions Combine bread crumbs with eggs Saute celery and onions in pan in a small amount of oil Mix all ingredients together in a bowl Shape in cakes Brown in a small amount of oil | Crab Cakes Ingredients 2 eggs, beaten 1/4 cup Mayonnaise 1/2 t. Worcestershire sauce 1 t dry mustard 1/4 t pepper 1/4 t salt 3/4 C bread crumbs 12 oz Giant crab meat margarine or butter Directions Blend together eggs,mayonnaise and seasonings. Remove any bits of shell from crab meat Add bread crumbs and crab meat and toss Form mixture into cakes and saute in butter or margarine until lightly browned
38: Barbecue Ingredients 3 lbs ground beef 1 lg onion 1 small pepper Brown in skillet and drain. Directions Put in lg kettle 3 small cans tomato paste, 6 small cans water, 2 T parsley, 3 t. parsley, 3 t. garlic powder, 2 T Barbecue spice, 6 T vinegar, 6 T sugar Salt and pepper to taste | Ground Beef Barbecue Ingredients 1 small onion 1 lb. ground beef 2 tsp. flour 2 tsp. brown sugar 1/2 t. salt dash of pepper 1 T mustard 3/4 C. Ketchup 1/4 C. water Directions Brown onion and beef. Add other ingredients. Simmer for about 1/2 hour.
39: Barbecue for Rolls Ingredients/Directions 4 Lb. Ground beef 2 green peppers 1 bunch celery 5 lg onions 2 bottles ketchup 1 bottle barbecue sauce 3 cans tomato puree dash parsley, salt an pepper | Chipped Beef Roll-Ups Ingredients 3 oz cream cheese 1 T. Chopped chives Dash of paprika Directions Mix cream cheese (softened) chives, add paprika. Spread a thick layer on chipped beef slice. Roll up for jelly roll. Chill. Cut in short length and serve on toothpicks!
40: Pan Roast Oysters Ingredients 1 Pt. Oysters 2 T Butter 1/2 t. salt 1/8 t. pepper Buttered Toast Directions Drain Oysters. Place in shallow pan melt better, add seasonings Pour over Oysters Bake in hot oven 400 degrees about 10 minutes. Serve at once in toast | Impossible Seafood Pie Ingredients 1 pkg (6 oz) frozen crab meat or shrimp thawed and drained or 1- 6 oz can fresh crab meat or 1 - 4 1/2 oz can shrimp 1 cup shredded process sharp American cheese 1 pkg (3oz) cream cheese cut in 1/4 in cubes 1/4 cup sliced green onions 1 jar (2 oz) chopped pimiento (drained) 2 cups milk 4 eggs 3/4 t salt dash nutmeg Directions Heat oven to 400. Grease 10 in pie plate. Mix crab meat, cheeses, onions, and pimento in plate. Beat remaining ingredients until smooth, about 15 seconds in blender on high or 1 minute with hand beater. Pour into plate over the mixture. Bake until knife inserted in center and edge comes out clean. 35 to 40 minutes. Cool 5 minutes, serves 6-8. Easy to make and delicious!
41: Sheldon's Salmon Loaf Ingredients 1 can (14.75 ounces) salmon, liquid drained 4 tablespoons butter 1/4 cup milk 1 cup saltine crackers (about 12) crumbled 3 eggs, separated 2 tablespoons parsley 1 tablespoon grated onion 1 tablespoon lemon juice 1/2 teaspoon Worcestershire sauce 1/2 teaspoon salt 1/8 teaspoon pepper Directions Grease a 9 x 5 x 3 inch loaf pan. Fold a sheet of wax paper and fit into bottom and up sides of pan leaving a 1 inch overhang. Grease the paper. Place salmon liquid into pan, add butter and milk. Heat until butter melts. Stir in saltines, let stand 5 minutes. Flake salmon and fold into crumb mixture. Beat egg yolks and blend into salmon mix. Add onion, lemon, Worcestershire sauce, salt and pepper. Beat egg whites to soft peaks and fold into salmon mixture and pour int pan. Set loaf pan into a pan with 1 in. boiling water. Bake st350 for 40 min. Let stand 5 minutes and un-mold. Serve with egg sauce, cucumber yogurt sauce.
42: Pork Chops O'Brien Ingredients 1 T. Veg. oil 6 pork chops Salt 1 can cream of celery soup 1/2 C. each milk and sour cream 1/4 t pepper 1 bag hash brown potatoes (24 oz) frozen 1 Cup (4 oz) shredded cheddar cheese 1 1/2 C French fried onions Directions In a large skillet heat oil. Brown pork chops on both sides, drain. Sprinkle chops with salt, set aside. In bowl, combine soup, milk, sour cream, pepper and 1/2 t salt. Stir in potatoes, 1/2 C cheese and 1 cup French fried onions. Spoon mixture into 9x13 dish. Arrange pork chops on top. Bake covered at 350 for 35 to 40 minutes or until chops are done. Top with remaining onions. Bake until golden brown
43: Pork Casserole Ingredients 1 1/2 lb.pork shoulder 1/2 Cup chopped onions 1 Cup chopped celery 3 Cups uncooked noodles 1 small can peas 1/2 t thyme 2 t salt 1/4 t pepper 1/2 cups grated cheese 1/2 C butter crumbs small amount of fat Directions Cut pork into 1/2 in. cubes and cook in small amount of fat until well browned. Add water, celery, thyme and 1 t. salt. Cook over low heat (about 1 hr) cook noodles. Combine noodles, meat mixture, peas, remaining salt and pepper. Pour into casserole and cover with bread crumbs and grated cheese. Bake at 375 for 30 minutes
44: Easy Barbecue Sauce Ingredients/Directions In a saucepan, saute 1/2 C minced onion, 1/2 C. minced green pepper in 2 T butter or margarine. Stir in 3/4 C. tomato Ketchup, 2 TA brown sugar, 2 T. prepared mustard, 1 T. Worcestershire sauce, and 1/2 t salt. Simmer 10 to 15 minutes, stirring occasionally. Use as a basting sauce during last 10 minutes when grilling or broiling chicken or meat. Makes about 1 1/2 cups sauce | Jamaican Barbecue Sauce Ingredients 1 1/2 Cups cider vinegar 4 t Lemon juice 3 T. Worcestershire Sauce 2 t brown sugar 1 T. prepared mustard 3/4 t. salt 1/2 t. flavor enhancer 1 cup ketchup 1 T. liquid smoke 1 t. garlic powder Directions Mix above ingredients well and store in a quart jar. This recipe will make about 1 3/4 pts and will last several weeks in the refrigerator.
46: Baked Macaroni & Cheese Ingredients 2 T. Butter 2 T flour 1 t. salt 1 t. dry mustard 8 oz macaroni 2 cups shredded cheese 1/2 cup buttered bread crumbs paprika 1 cup milk Directions Melt butter, remove from heat. Blend in flour, salt, mustard. Add milk. Heat slowly. Add 1 1/2 C cheese. Cook macaroni. Drain, combine with sauce. Top with 1/2 C. cheese and crumbs. Bake at 375 for 20 minutes. | Bean Casserole Ingredients 6 to 8 slices bacon 1 medium size onion, finely chopped 2 tablespoons bacon grease 2 tablespoons flour 2 1 pound cans string beans 1 large can tomatoes Approximately 6 slices cheddar cheese Directions Fry bacon until crisp, drain.Discard all but 2 tablespoons bacon grease; add onion to bacon grease and saute until transparent,add flour and mix throughly; add tomatoes to flour mixture and stir until thickened slightly. Drain beans. Put beans from one can into bottom of casserole dish crumble 2 slices of cheese and 1/3 of the bacon over beans. Put remaining beans and pour tomato mixture over all. TOp with remaining bacon and cheese, crumbled. Cook 350 until heated through and cheese is melted.
48: Classic Tuna Noodle Casserole Ingredients 1 can (10 oz) cream of celery soup 1/2 C milk 1 C cooked peas 2 T chopped pimiento 2 cans tuna (drained) 2 C hot cooked medium egg noodles 2 T dry bread crumbs 1 T margarine or butter melted Directions In 1 1/2 quart casserole mix soup, milk, peas, pimiento, tuna and noodles. Bake at 400 for 20 minutes. Stir, mix bread crumbs with margarine and sprinkle over tuna mixture, bake 5 min. more until bread crumbs are golden | Tuna Noodle Casserole Ingredients 1/2 pkg medium or fine noodles 1 can cream of mushroom soup 1/2 C finely chopped celery 1 can tuna fish Directions Boil noodles for 10 minutes. Cook celery in salted water until done. Mix noodles, tuna fish, and celery together. Dilute the mushroom soup and pour over the casserole. Place in preheated oven at 350 for 450 to 50 minutes Sprinkle crushed potato chips on top
49: Red Magic Meat Loaf Ingredients 1 1/2 lbs. ground beef 1 C soft bread crumbs 1/3 C ketchup 1/4 C chopped onion 1 Beaten egg 1/2 t salt 1/8 t pepper Directions Form into a loaf in shallow baking pan. In a large skillet or griddle melt 2 T of the butter over medium heat. Pour out pancakes to about 4 inches in diameter. As pancakes set, place sliced bananas onto their uncooked tops. When the batter bubbles in the tops of the frying pancakes begin to pop, carefully flip them and cook the other side. they will be quite fragile, and the banana slices make them unwieldy, so use a large spatula and a quick firm motion to get under them. 94: UnCooked Fudge Ingredients 1 8 oz pkg cream cheese softened 4 cups powdered sugar softened 4 ounces unsweetened choc. melted1 t vanilla extract dash of salt 1/2 cup pecans or walnuts (chopped) Directions Place cream cheese in bowls. Add sugar, add melted choc. Stir well. Add vanilla, salt and nuts. Mix throughly. Grease 8 in. square pan using a spatula, spread the mixture into it. Chill until firm and cut into small squares. | Quick Nut Fudge Ingredients 1 lb confectioners sugar 1/2 cup cocoa 1/4 t sat 6 T butter 4 T milk 1 T vanilla 1 cup nuts Directions Combine all ingredients except nuts in the top of a double broiler. Place over simmering water and stir until smooth, add nuts and mix, Spread candy smoothly and quickly into a buttered pan. Cool and cut into squares.

96: Hershey's Cocoa Fudge Ingredients 2/3 cup cocoa 3 cups sugar 1/8 teaspoon salt 1 can evaporated milk 1/4 cup butter or margarine 1 t vanilla chopped nuts (optional) Directions Butter an 8 or 9 inch square pan. Mix cocoa, sugar and salt thoroughly in a large pan. Stir in milk. Bring to a bubbling boil over medium heat, stirring constantly. As soon as it really starts bubbling, stop stirring. Do not stir again. Check periodically with a candy thermometer until it reaches 234 degrees or forms a soft ball when dropped in ice water. Remove from heat, do not stir. Add vanilla and butter, do not stir. Let butter melt on top. Cool until pan is barely warm 110 degrees. Add nuts. Beat with a wooden spoon until mixture loses its gloss and begins to thicken 2 to 3 minutes. Quickly spread in prepared pan. Cool completely in refrigerator, cut into 1 inch squares
98: Cottage Cheese Pie Ingredients 1 1/2 cups cottage cheese 1/2 cup sugar 2 T flour 1/4 t salt 2 eggs (separated) 2 cups milk 1/2 t grated lemon rind 1/4 t cinnamon 1 unbaked 9 inch pie shell Directions Combine cottage cheese, sugar, flour, salt, cinnamon and lemon rind beating well. Add beaten egg yolks and mix throughly. Stir in milk gradually. Fold in beaten egg whites. Pour into unbaked pie shell. Bake at 350 for one hour | Frozen Lemon Pie Ingredients 2 eggs. separated 1/3 cup lemon juice 1 T lemon rind, grated 1 cup cream, whipped 1/2 cup sugar 1/2 cup crumbled graham crackers Directions Beat egg yolks; add lemon juice, rind, and all but 2 T sugar. Cook over low heat, stirring constantly. Cool. Beat egg whites with the 2 T sugar (add slowly), fold into cooled cookie mixture and then fold cream into the mixture. Line a greased pan (pie plate) with the crumbs and sprinkle a few on top. Freeze.
99: Ice Cream Ingredients 4 eggs 2 Cups Sugar 3 Cans Pet Milk 1/2 gal milk 2 pts frozen strawberries Vanilla to taste pinch of salt Directions Put sugar eggs and some milk to blend. This mixes sugar throughly. Cook over double broiler. Cool. Mix all other ingredients with this and put in freezer.
