1: Ingredients 1 (8oz.) cream cheese 1 jar salsa 6-8 oz. shredded cheese Mix all together and serve with chips or crackers. | Salsa & Cheese Dip
2: Cheddar Ranch Crab Spread 1 (8oz.) pkg cream cheese, softened 1 (6oz.) can lump crab, drained 1 cup shredded sharp Cheddar cheese 1 packet Hidden Valley Ranch Salad Dressing & Seasoning Mix 3 T. chopped green onions 1 tsp. hot sauce Toasted baguette slices Combine all ingredients except toast slices, mix well. Refrigerate, covered, at least 1 hour to allow flavors to blend. May garnish with fresh thyme. Serve with toasted baguette slices. Note: Spread also can be heated in microwave for 1 to 2 minutes for a warm dip.
3: Bacon Wrapped Pineapple | Ingredients 1 pound Bacon 1 can Chunked Pineapple (large Chunks) 1/2 cups Brown Sugar | Directions Set your oven to 375F. Cut the pound of bacon in half. Put the brown sugar in a shallow bowl. Take a half a slice of bacon and dredge it through the brown sugar. Put a chunk of pineapple on one end of the bacon slice and roll up. Secure with a toothpick. I put a cookie cooling rack into a foil-lined jelly roll pan. Lay the bacon pineapple bundles onto the rack. Bake for at least 25 minutes, or until the bacon looks brown and crispy. Sometimes I pop them under the broiler for the last few minutes just to get them really crisp. But watch out – the sugar will burn! Try to wait for them to cool slightly – only because the tasty goodness will burn your lips if it's too hot! Enjoy.
4: Easy Pepperoni Rolls 3 cans Pillsbury Buttermilk Biscuits (10 biscuits per can) 56 pepperoni slices Block of cheese (I use Colby & Monterey Jack) 1 beaten egg Parmesan Italian seasoning Garlic powder 1 jar pizza sauce Instructions: Cut the block of cheese into at least 28 squares. Flatten a biscuit out and stack pepperoni and cheese on top. Gather up the edges of the biscuit. Line the rolls up (seam side down) in a greased 913 in. pan. Brush with beaten egg. Sprinkle with Parmesan, Italian seasoning and garlic powder. Bake at 425F for 18-20 minutes. Serve the rolls with warm pizza sauce for dipping.
5: Salads | Ingredients 1 pt. strawberries, sliced 1 head romaine lettuce Approx. 3/4 bag spinach 1 c. sunflower seeds 1/4 c. red onion (opt.) Dressing: 1/2 c. mayonnaise 2 tsp. apple cider vinegar 1/3 c. sugar 1 T. poppy seeds 1 1/2 T. sour cream | Directions Mix lettuce, spinach, sunflower seeds and onion. Add strawberries and dressing just before serving | Strawberry Salad & Dressing
6: Macaroni Pasta Salad | Ingredients 3 carrots, shredded Onion 8-oz. noodles, cooked 1 can sweetened condensed milk 1 cup vinegar 1 cup sugar 2 cups Miracle Whip 2 cups diced ham- | Directions Mix milk, vinegar, sugar, and dressing. Pour over rest of ingredients.
7: Frozen Fruit Salad | Ingredients: 1 (20 oz.) can crushed pineapple, with juice 1 (12oz.) can frozen orange juice concentrate 4 bananas, diced 2 (11 oz) cans mandarin oranges 2 pt. strawberries, sliced, or 1 (16 oz) bag frozen strawberries, sliced 1/2 c. sugar | In large bowl, mix all ingredients until sugar is dissolved. Put in 1-gallon resealable plastic bag. Lay flat in freezer and freeze overnight. Thaw 3 hours prior to serving.
8: Calico Bean Bake 1/2 lb. hamburger 1/2 lb. bacon, cut up 1 cup onion, chopped 1/2 c. catsup 3/4 c. brown sugar 1 tsp. salt 2 tsp. vinegar 1 tsp. dry mustard 1 #2 can pork & beans 1 #2 can kidney beans 1 #2 can lima beans (drained) Brown meat & onion. Pour off a little fat. Put in a casserole dish & mix in the remaining ingredients. Bake at 350 for 1 1/2 hrs. | An empty belly is the best cook. -Estonian Proverb-
9: Ingredients: 8 oz. cream cheese (softened) 1 cup sour cream 1/2 cup white sugar 1/2 tsp. vanilla 4 lbs. grapes, red &/or green 3/4 cup brown sugar 1 cup chopped pecans, optional | Directions: Mix cream cheese, sour cream, white sugar and vanilla together until creamy. Add washed grapes and mix with spoon. Mix chopped pecans and brown sugar together, sprinkle on top of grape mixture. Cover with plastic wrap. Refrigerate at least 2 hours. | Grape Salad
10: Beef Stroganoff | Ingredients 1 lb stew beef, seared and just cooked through 1 can beef broth 2 cans cream of mushroom soup 1/4c worcestershire sauce 1 pack brown gravy mix 1 tbsp pepper 1 lb. egg noodles 16oz. sour cream | Directions: -Cook mixture in crock pot on low for 8 hours. Stir in 16oz sour cream for the last hour. Serve with 1lb of egg noodles. -Freezes in Ziploc Bag great! Add sour cream & noodles when cooking
11: Ingredients 1 (16 oz.) pkg. angel hair pasta 1 (10 3/4 oz.) can condensed cream of mushroom soup 1 1/2 lb. ground beef 1 (26 oz.) jar spaghetti sauce 1 c. (8 oz.) sour cream 2 (8 oz.) cans tomato sauce 2 c. (8 oz.) shredded Colby-Monterey Jack cheese | Directions -Cook pasta according to package directions. -Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in spaghetti sauce and tomato sauce. Remove from the heat. Drain pasta. Combine soup and sour cream. In 2 (8-inch) square baking dishes, layer half of the meat sauce, pasta, soup mixture and cheese. Repeat layers. Cover and freeze one casserole for up to 3 months. Cover and bake the remaining casserole at 350 for 55 to 66 minutes, or until cheese is melted. Note: to use frozen casserole, thaw in refrigerator overnight. Remove from the refrigerator 30 minutes before baking. | Spaghetti Casserole
12: Ingredients: 2- 12 roll packages of sweet Hawaiian rolls 1 1/2 lbs of Virginia ham 12 slices swiss cheese 1 stick real butter 2 tsp. Worcestershire sauce 1 tsp. Garlic powder 1 tsp. Onion Powder 1 tsp. poppy seeds | Directions: You will need two 9x13 pans. Place the bottoms of 12 rolls in each pan. Place ham (about 2 shaved slices) on the rolls. Cut the cheese slices into 4 parts & place 2 pieces on each sandwich. Put the dinner roll tops on. In a sauce pan, mix butter, Worcestershire sauce, onion powder, garlic powder & poppy seeds. Wait until all butter is melted and then brush the melted mixture over the ham sandwiches. Cover with foil & let sit in fridge for 1 hour or overnight. (If you want to bake them right away, you can also.) Preheat oven to 375 and bake for 15 minutes or until cheese is melted. Serve. Enjoy! | Hawaiian Ham & Cheese Sandwiches
14: Stove-Top Beef Casserole 2 lbs. hamburger -Brown hamburger & drain 2 cans vegetable soup 2 cans spaghettios -Add all cans to hamburger and cook over stove. ~Yummy & Easy | Chicken Tortilla Soup 1 can tomato soup 1 can Cheddar cheese soup 1 can Fiesta nacho cheese soup 2 cans chicken broth 1 can chunk chicken 1 (4oz.) can chopped green chilies -Mix together and heat to taste. Top with tortilla or Frito chips and cheese on each serving | Meat Loaf 1 1/2 pounds ground beef 3/4 cup oatmeal 1/3 cup chopped onion 1 1/2 tsps. salt 1/4 tsp. pepper 1 egg 1 cup tomato juice Mix all together and bake 1 hour on 300-350 temperature.
15: Sour Cream Enchiladas | Ingredients 1 1/2 c. Cheddar cheese, grated 1 1/2 c. chicken cooked & diced, or 1 (10 oz. ) can of chicken 1 1/2 c. + 1 T. green onions, chopped 1 1/2 c. sour cream 2 (10 3/4 oz.) cans of cream of chicken soup 4 oz. green chilies, diced & peeled 10 med. flour tortillas | Directions -Combine cheese, chicken and onions in a medium bowl. -Combine soup, sour cream and chilies in a small bowl. -Evenly divide chicken mixture among the 10 tortillas. Place 1 1/2 tablespoons sauce on top. -Roll up tortillas and place, seam-side down, in a greased 9x13-inch pan. -Spread remaining sauce over all. Bake at 350 for 30 minutes, or until bubbly. -Sprinkle extra Cheddar cheese on top and return to oven for 5 minutes or until melted, if desired. Serve with salsa.
16: Brown Sugar Chicken | Ingredients 4-6 chicken breasts 1 cup packed brown sugar 2/3 cup vinegar 1/4 cup lemon-lime 2-3 Tablespoons minced garlic 2 Tablespoons soy sauce 1 teaspoon fresh ground pepper | Directions Spray slow cooker with non-stick cooking spray. Place chicken (frozen, thawed or fresh) inside slow cooker. Mine were frozen Mix together brown sugar, vinegar, soda, garlic, soy sauce, and pepper together. Pour over chicken. Cook on low for 6-8 hours or high for 4 hours. -Makes a great freezer meal!
17: Ingredients: 4 chicken breasts 1 Italian dressing seasoning packet 1/2 cup water 1 (8 oz) block of cream cheese 1 can cream of chicken soup 2/3 cup water Enough rice to feed whoever is eating. | Directions: -Place chicken in a Crockpot and season evenly with Italian dressing. -Add the water and let cook on low for at least four hours. -When chicken is cooked all the way through, shred with a fork or in a mixer – just something to get it shredded. -Place back in Crockpot and add cream cheese, chicken soup, and water. -Mix thoroughly and let sit for another 30 minutes. -Serve over rice. -Makes a great Freezer Meal | Italian Chicken | 1 (3 to 4 lb.) pork butt 1/2 c. apple juice 1/3 c. Worcestershire sauce 1/2 tsp. salt 3/4 c. firmly- packed light brown sugar | Fall Apart Pork Roast | --Preheat oven to 400. Place pork in roaster with lid. Sprinkle pork heavily with Worcestershire sauce; turn it over and sprinkle other side heavily as well. Take a handful of brown sugar and "smush" brown sugar crust all over meat. Turn meat over and "smush" brown sugar all over the other side. Pour apple juice in bottom of pan, not over meat. Cover and put in oven. Turn oven down to 200 and cook about 4 hours, until meat is very tender. Sprinkle with salt, this brings out meat flavors.
18: Maple Bacon Bites Ingredients: 3 cups all-purpose flour 1/4 cup sugar 1/2 tsp. salt 1 Tbs. baking powder 2 cups milk 1 Tbs. white vinegar 2 tsp. vanilla extract 2 eggs 1/2 stick butter, melted For the icing: 1/2 cup cream cheese, softened Pinch of salt 1 cup confectioners sugar 1/4 cup real maple syrup For the topping: 1 pound bacon, cooked crisp & finely chopped Real maple syrup | Directions: Preheat oven to 425 degrees. In a large bowl combine the flour, sugar, tsp salt, and baking powder. Mix and set aside. In a small bowl, combine the milk and vinegar. Stir and let sit for 1 minute. Whisk in the vanilla, eggs, and butter. Pour the wet ingredients into the dry ingredients and mix well. Grease or spray two mini muffin baking pans. Fill cups full. Bake for 9-12 minutes or until lightly golden brown on top. While the muffins are baking, in a small bowl, whisk the cream cheese, sugar, and maple syrup until nice and smooth. Once the muffins are cool enough to handle, dip the tops into the icing and then the chopped bacon. Serve warm with additional real maple syrup! Enjoy!!
19: 1/2 cup unsalted butter, room temperature 2 tsp. lemon zest or more — zest from 1 large lemon 7/8 cup** + 1 tablespoon sugar* 1 egg, room temperature 1 tsp. vanilla 2 cups flour 2 tsp. baking powder 1 tsp. kosher salt 2 cups fresh blueberries 1/2 cup buttermilk * 7/8 cup = 3/4 cup + 2 tablespoons ** This 1 tablespoon is for sprinkling on top Directions: 1. Preheat the oven to 350F. Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy. 2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with cup of flour, then whisk together the remaining flour, baking powder and salt. 3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries. 4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 minutes. Check with a toothpick to see if it is done. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving. | Blueberry Breakfast Cake
20: Desserts | Ingredients 116oz.) angel food cake mix 12 oz. whipped topping 2 (3.4oz.) pkg. instant white chocolate pudding 3 c. sliced strawberries 2 c. milk | Directions Make and bake angel food cake according to package directions. Cool completely & cut into cubes. Whisk both pudding mixes into milk for 5 minutes. Chill for at least 5 minutes and fold whipped topping into it. In a trifle bowl (any bowl works), layer 1/3 of angel food cake, 1/3 of the pudding and 1/3 of the strawberries. Repeat layers two more times. May top with additional whipped topping, if desired. This light dessert is very simple and tasty! | Strawberry Trifle
21: Ingredients: 2 (8 oz) cans Pillsbury butter flake crescent dinner rolls 2 (8 ounce) packages of cream cheese, at room temperature 1 1/2 cups white sugar, divided 1 teaspoon vanilla extract 1 teaspoon cinnamon 1/4 cup butter, melted Directions: Preheat oven to 350F. Spray a 9x13 baking dish with cooking spray. Unroll one can of crescent rolls and press it into the bottom of your baking dish sealing perforations. In a small bowl blend the cream cheese, 1 cup of sugar, and the vanilla. Spread evenly over the top of the crescent dough. Unroll your second can of crescent rolls onto a sheet of saran wrap or some other surface and press the perforations together. Transfer to your baking dish, placing it on top of the cream cheese mixture. Pour the melted butter on top of the crescent dough. In a small bowl, combine the remaining 1/2 cup of sugar and cinnamon. Sprinkle evenly over the melted butter. Bake for 25-30 minutes until bubbly and bottom crust is slightly browned. Let it cool and store in the refrigerator. When ready to serve, slice and add whipped cream and strawberries if desired. | Sopapilla Dessert
22: Ingredients: 1 cup old-fashioned rolled oats 1 cup shredded coconut 1/2 cup creamy peanut butter 1/2 cup ground flaxseed 6 TBS. mini chocolate chips 1/3 cup honey 1 tsp. vanilla extract | No-Bake Energy Bites | Instructions: Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (I used the smallest scoop from Pampered Chef.) Store in an airtight container and keep refrigerated for up to 1 week.
23: Caramel Bars | Ingredients 1 box chocolate cake mix 2/3 can of evaporated milk 1 bag chocolate chips 1/2 c. butter melted 1 bag caramels | Directions Mix cake mix, butter & 1/3 of evaporated milk, press 1/2 of batter into 9x13in. pan. Bake at 350 degrees for 8 minutes. Melt caramels and 1/3 of evaporated milk in saucepan Pour caramel over the pan, sprinkle on chocolate chips on & plop the rest of the batter in spoonfuls on top of the pan & bake for 10-15 minutes more @ 350 degrees. | Families are like fudge...Mostly sweet with a few nuts
24: 1 stick of butter 1 bag mini marshmallows 7 cups rice chex 1/2 c. chocolate chips | Melt butter in microwave for 2 min Add marshmallows & melt in microwave for an additional 2 min Take out & stir add rice chex then chocolate chips Spread into a 9x13 Tupperware pan | Rice Chex Bars
25: Cherry Cheesecake Dip 1 small jar of jet puffed marshmallow creme(7 oz) 1 package cream cheese (8 oz) – softened 1 package graham crackers (14 oz) 2 tubs of cool whip (8 oz ea.) 2 cans cherry pie filling (21 oz ea.) 1 9x3 serving dish Crush two sleeves of graham crackers to serve as your base. Pour the graham crackers into the bottom of the dish. Mix your softened cream cheese and marshmallow creme (fluff) in a large bowl. Then, slowly add in your cool whip with your cream cheese and marshmallow blend. Not all at once, just a little at a time and mix well. Pour the fluffy mixture on the outsides of the pan and work your way to the middle spreading the fluffy wonderfulness over the graham cracker crust. And lastly, crack open your cans of cherry pie filling and spread them over the top of the fluffiness. Be sure to spread them out evenly so there isn’t a large concentration of cherries on one section of the dip. Refrigerate until serving. Serve with graham cracker sticks.
26: Instructions: 1 pkg. fudge brownie mix (9" x 13" pan) 2 cups heavy whipping cream (divided) 1 pkg. (3.3oz) instant white choc. pudding mix 1 can (21 oz.) raspberry pie filling | Directions: Prepare & back brownies according to pkg. directions using a greased 9x13 baking pan. Cool completely. In a small bowl, combine 1 cup cream & pudding mix. Stir for 2 min. or until very thick. In small bowl, beat remaining cream until stiff peaks form; fold into pudding. Carefully spread over brownies. Top with pie filling. Cover & refrigerate for at least 2 hours, before cutting. | Raspberry Brownie Dessert | Family life is a bit like a runny peach pie — not perfect but who’s complaining?
27: Chocolate Lasagna | Ingredients: 1 pkg. oreo cookies (do not use double stuffed) 6 Tblsp butter, melted 1 (8oz) cream cheese 1/4 c. sugar 2 Tblsp cold milk 1 container cool whip 2 pkgs instant chocolate pudding 3 1/4 c. cold milk 1 1/2 c. mini chocolate chips | Directions: Crush pkg of oreos. Stir in melted butter. Press into bottom of 9x13 pan. Put in the fridge. Mix cream cheese in mixer until fluffy. Add the 2 Tblsp cold milk, sugar, and mix well. Stir in 1 1/4 cup of the cool whip. Spread over crust. Combine both pkgs of pudding and the 3 1/4 cup milk. Whisk until thickened. Spread over cream cheese layer. Allow to rest for 5 min. Spread remaining cool whip over pudding layer, and sprinkle with the mini chocolate chips. Place in fridge for at least 4 hours to set. Enjoy!
