3: Eclair Cake (From Mom) Butter 9 x 13” pan. Line the bottom with whole graham crackers. Mix 2 small pkgs. French Vanilla instant pudding with 3 C milk. Beat at medium speed 2 mins. Blend in 8 oz. Cool Whip. Pour half the batter over graham crackers. Put second layer of crackers on top; pour the rest of the batter over crackers. Put third layer of crackers on top. Refrigerate overnight after icing. Icing 6 Tb cocoa 2 Tb oil 2 tsp. white Karo syrup 2 tsp. vanilla 3 TB softened butter 1 C 10X sugar 3 Tb milk Beat together until smooth. Spread on Cake. Refrigerate

Mix flour, baking powder, soda, and salt. 2. In another bowl beat sugar and butter together, add eggs, vanilla, beat. Add dry ingredients. Mix thoroughly. Mix in coconut and Special K. 3. Drop a level top onto ungreased cookie sheet. Bake @ 375 for 12 minutes. (These cookies are addicting!) (From Adriane)

8: Ham Balls (From Mom!) 3 lbs ham loaf 1 c graham cracker crumbs 3 eggs 1 C milk Mix together and shape into balls Sauce 1 C brown sugar 1 Tb mustard 1/3 C water 1/3 C vinegar 4 oz. crushed pineapple with juice Bring sauce to a boil, pour over ham balls. 10: Baked Potato Soup (Katie Byler) 4 large baked potatoes 2/3 c. butter 2/3 c. flour 6 c. milk, whole or 2% 3/4 tsp. salt 1/2 tsp. pepper 4 green onions, chopped 12 slices bacon, fried & crumbled 2 c. shredded cheddar cheese 1 c. (8oz) sour cream | Anniversary Chicken (Katie Byler) 2 tablespoons vegetable oil 6 skinless, boneless chicken breast halves 1/2 cup teriyaki basting sauce 1/2 cup Ranch-style salad dressing 1 cup shredded Cheddar cheese 3 green onions, chopped 1/2 (3 ounce) can bacon bits Preheat oven to 350 degrees F (175 degrees C). In a large skillet, heat oil over medium-high heat. Add chicken breasts, and saute 4 to 5 minutes each side, until lightly browned. Place browned chicken breasts in a 9x13 inch baking dish. Mix teriyaki sauce, and salad dressing. Spoon over chicken. Sprinkle with cheese, green onions and bacon bits. Bake for 25 to 35 minutes, or until chicken is no longer pink and juices run clear. | Faithful Support

11: Recipes | Barbecued Roast Beef (Katie Byler) 4 lb chuck roast 1 c. ketchup 1 c .barbecue sauce 2 c chopped celery 2 c. water 1 c. chopped onions 4 Tbs. vinegar 2 Tbs brown sugar 2 Tbs. Worcestershire sauce 1 tsp. chili powder 1 tsp garlic powder 1 tsp salt *Combine all ingredients in large bowl. * Spoon into slow cooker. * Cover. Cook on Low 6-8 hours, or High 3-4 hours. *Slice meat into thin slices and serve in barbecue sauce over mashed potatoes or rice.

12: Recipes | Pumpkin Chocolate Chip Muffins (Katie Byler) * 4 eggs * 2 cups white sugar * 1 (15 ounce) can pumpkin * 1 1/2 cups vegetable oil * 3 cups all-purpose flour * 2 teaspoons baking soda * 2 teaspoons baking powder * 1 teaspoon ground cinnamon * 1 teaspoon salt * 2 cups semisweet chocolate chips | Directions for the Muffins! 1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease two 12 cup muffin pans, or line with paper baking cups. 2. Beat the eggs in a large bowl, and mix in the sugar, pumpkin and oil. 3. In a medium bowl, mix the flour, baking soda, baking powder, cinnamon and salt. Blend into the egg and pumpkin mixture. Fold in the chocolate chips. Transfer to the muffin pans. 4. Bake in the preheated oven 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Remove muffins from pans, and cool on a wire rack.

13: Mocha Punch (Katie Byler) 1 1/2qt. Water 1/2 c. Instant chocolate drink mix 1/2 c. Sugar 1/4 c. Instant coffee granuals 1/2 gallon Vanilla Ice Cream 1/2 gallon Chocolate Ice Cream * Boil water and remove from heat. * Add drink mix, sugar and coffee * Cover and refridgerate 4 hours or overnight. * 30 minutes before serving add ice cream by scoopfuls and mix to partially melt * Garnish with whipped cream and chocolate curls. yields 5 quarts

14: Notes of Encouragement | Doc, I am forever thankful and grateful for your friendship. What began on the basketball court our freshman year at PBU; has developed into a wonderful relationship filled with extra hot mochas, trips to Gabes, grad classes, and Farm Show excursions. Your love for Christ and others is a constant encouragement and challenge to me. I am thrilled for you as you begin this lifelong journey with John. 15: Michelle, I'm so excited for you as you head into this next stage of life! You are going to be a wife, and a good one at that! Thank you for all your support over the years; you are definitely one of the most trustworthy and caring friends I know. I've appreciated all of our Coffee Company dinner dates, and look forward to many more. Plus, evenings away from our husbands every once in a while will only make our marriages stronger, right? ;) Enjoy setting up your home, and figuring out this whole homemaker thing; I'm still learning every day! We don't need magazine-worthy homes. (But if you pick up any tips, feel free to pass them along!) I will say, dinner is a sweet way to get to a man's heart, and making it together is one of the highlights of married life. A few more words of advice, to take with a grain of salt: Leave on a good note in the mornings, and don't go to bed angry; pray together as a couple; flirting is still mandatory; keep date nights sacred, and laugh together EVERY DAY. I'm excited to see how the Lord will use you and John as a couple. Best wishes for the rest of your engagement, and I cannot wait for the big day in July! Love ya, Kelsey

16: Dress Up! | Black Bean Soft Tacos (Ready in less than 30 Minutes) Ingredients: 1 medium onion, chopped 2 garlic cloves, minced 1 tablespoon olive oil 2 (15 ounce) cans black beans, rinsed and drained 1 (14.5 ounce) can diced tomatoes 1 (4 ounce) can chopped green chilies (a MUST!) 1 tablespoon chili powder 1 teaspoon ground cumin 1 teaspoon dried oregano 1/2 teaspoon salt 1/4 teaspoon garlic powder 1/4 teaspoon pepper 8 (6 inch) flour tortillas, warmed 1/2 cup shredded Cheddar cheese Sour cream (optional) 1 large ripe avocado, peeled and sliced (optional) | Directions (recipe from Kelsey Fox) In a nonstick skillet, saute onion and garlic in oil until tender. Stir in the beans, tomatoes, chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until mixture begins to thicken. Spoon about 1/2 cup off center on each tortilla; sprinkle with cheese and sour cream. Fold one side of tortilla over filling. Garnish with avocado. These make great leftovers as well!! One of the reasons I love this recipe is that for husbands who love their meat, the black beans make a great substitute (and it’s cheaper than taco meat or chicken).

Cheese and Washington D.C. with the Teacher Education Club (Both of the same importance of course!) * Game nights at Vanbilliard's * Helping each other through a tough semester of student teaching * Surviving living with Mary * Shopping at the outlets and Green Dragon * Weekly calls from you when I was in China * Heart-to-heart discussions about life, love, teaching and faith * Riding elephants in Thailand * Seeing Anchor Wat in Cambodia (and surviving the taxi rides!) * Showing you around Kunming * Hearing about this guy named John from small group and watching you fall in love :) I love you Michelle, and I am so happy for you as you enter this new and exciting stage of life! ~ Love, Sarah Day | Asian Pot Stickers (I'm pretty sure this is an American recipe, but it's great!) FILLING 8 ounces water chestnuts, finely chopped 1 small zucchini, grated 1/2 cup scallions, thinly sliced, with tops 1/4 c. carrot, grated 1 tsp. fresh gingerroot, peeled and finely grated (or 1/4 t. dried ginger) 1 tbls. soy sauce 2 medium chicken breasts, cooked, diced 1 egg white, lightly beaten 1/8 c mayonnaise 1 garlic clove, pressed 24 wonton wrappers (Recipe from Sarah Day) | SAUCE 1/2 c. red jalapeno jelly (can find in the Asian food section, sometimes called sweet red chili sauce.) 1/4c rice vinegar (any vinegar works well) 2 tbl. soy sauce 1 tbl. corn starch or flour For sauce - warm jelly. Combine cornstarch with vinegar and soy sauce. Then add to jelly. Whisk well and cook until thickened. (I usually double or triple the recipe) | Place filling in wonton wrappers. Close wrappers by wetting the edges with water. Place on a lightly oiled cookie sheet and brush with olive oil. Bake at 425 F for 12-15 min., until edges of potstickers are golden brown.

19: Dear Michelle, Oh, friend, I am so happy for you as you embark on this super fun new adventure in your life!!!! I have missed you so much in this past year and I am so excited to be able to come to your wedding! We have such amazing memories, you and I. :) Thinking back over them, there is just no way to write out all that I would want to write. How can you fit the years of being roommates in college, traveling across Europe and Asia (yeah we are THAT cool, haha), traveling up and down the east coast together (do you realize that we have done Florida to Maine in all together?!?), and every single visit between MD and PA and NY that we have possibly done?!? I love every single one of our times together, all the adventures and laughs and excitement in jumping into loads of new countries, experiences...and crazy foods (please do not remind me). :) And no worries, we will have more adventures like when you and your HUSBAND (Yay!!!) visit me in Spain. :) Michelle, thanks so much for all the laughs, the memories, standing by me in the good times and the bad, and for being one of the very best friends that God has brought into my life! Your laughter is contagious, your smile brightens everyone's day, and your love for those around you is evident every day that I have seen you! 20: Easy Parmesan Garlic Chicken * 1/2 cup parmesan cheese * 1 envelope of Good Seasons Italian Salad dressing mix * 6 boneless, skinless chicken breast halves (about 2 lbs) * 1/2 tsp garlic powder ~ Mix cheese, garlic powder, and salad dressing mix. ~ Moisten chicken with water; coat with cheese mixture. ~ Bake at 400 degrees for 20-25 min or until chicken is cooked through. | Quinoa and Black Beans 1 tsp vegetable oil 1 onion, chopped 3 garlic cloves, peeled and chopped 3/4 cup vegetable broth 1 tsp cumin 1/4 tsp cayenne pepper salt and pepper to taste 1 cup frozen corn kernels 2 (15 ounce) cans black beans, rinsed and drained 1/2 cup chopped fresh cilantro Heat oil in medium saucepan over medium heat. Stir in onion and garlic, and saute until lightly browned. Mix quinoa into saucepan and cover with vegetable broth. Season with cumin, cayenne, pepper, and salt. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 min. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

21: Starting a Home | Establishing a Family | All recipes on this page are from Kim Rutt :) | "He who finds a wife, finds what is good and receives favor from the Lord" (Prov. 18:22). | Corn Pone 1/2 cup sugar 1/4 cup butter 1 egg 3/4 cup milk 3/4 cup cornmeal 3/4 cup flour | Gluten Free Brownies 1/2 cup butter 1/2 cup cocoa powder 1 cup brown sugar 1 tsp vanilla 2 large eggs 1/4 cup corn starch 1/2 tsp salt 1 cup chocolate chips (optional: 1/2 cup macadamia nuts) --> Melt butter, add cocoa, and mix. --> Add brown sugar, eggs, and vanilla, and mix. Add corn starch and salt, and mix. Stir in chocolate chips (and nuts). Bake at 350 for 30-35 min. | Chile Cheese Dip 1 1/2 packages cream cheese 1 can hormel chile with beans 1 jar 1 package shredded taco cheese Spread cream cheese around bottom of glass or plastic pie plate. Spread the chile on top. Spread the salsa on top of that. Spread the cheese on top as the last layer. | Peanut Sauce 1/3 cup natural peanut butter 1 tsp garlic powder 2 Tbsp lemon juice 2 Tbsp soy sauce 1 tsp sugar 1/3 cup warm water sprinkle of cayenne to taste Mix (may need to microwave to get it smooth). DELICIOUS served over rice, noodles, fried veggies, chicken, etc.

22: Mix all ingredients by hand - batter will be sticky and tough to mix grease baking pans (I use 2 large bread pans and 1 small one, but it all depends on how large you would like your bread. I have also used 4 small ones.) bake at 350 for 40-45 minutes | Irish Scones 3 C flour 2/3 C sugar 1 tbsp baking powder 2 tbsp melted butter 1/4 tsp salt 1 tsp baking soda 1 1/2 C butter milk 1 1/2 C raisins caraway seeds to your liking (optional - I don't use them) | Michelle, you are such a sweet woman with a deeply caring heart. You bring a smile to my face every time I see you. Most importantly, you are a woman who reflects God's love in all you do. ~Brittany Weir | Some words about Michelle from Meghan Nephin.... 23: Potato Frosted Hamburger Casserole (Brittany Weir) 4 medium potatoes (about 2 lb.), peeled, cut into qtrs boiling salted water 1 1/2 lbs ground lean beef 3 T butter or margarine 1 large onion, finely chopped 1 clove garlic, minced or pressed 1 t salt dash of pepper 2 t vinegar 1/4 cup chopped parsley 1 bay leaf dash of paprika dash of nutmeg 1/4 cup milk 1/2 cup shredded swiss cheese Cook potatoes in boiling salted water until tender, 15 minutes; drain well. While potatoes are cooking, brown ground beef in 1 T of the butter in large frying pan. Mix in onion. Continue cooking, stirring frequently, until onions are limp and lightly browned. Spoon off excess fat. Mix in garlic, salt, pepper, vinegar, parsley, and bay leaf. Spread beef mixture in a greased 2 to 2 1/2 quart casserole. To drained potatoes, add remaining 2 T butter, paprika, nutmeg, and milk. Beat potato mixture evenly over ground beef. Sprinkle top with cheese. Bake uncovered at 400 degrees until casserole is heated through and top browns lightly, 20 to 25 minutes. Yields 4 servings. | New Foods...

I love the times that we get together and talk about life and support each! ~Amber Shellenberger | Sticky Buns: (Amber Shellenberger) Take 2 loaves of frozen bread dough. Thaw and cut into small pieces. Grease a 13X9” Pan. Sprinkle nuts or raisins on bottom of pan (optional). Put dough pieces on top in a single layer. Mix: 1/2 Cup of melted butter or margarine, 1 large box of vanilla pudding (not instant), 1 Cup brown sugar, 2 Tablespoons of mild, and 1 Tablespoon cinnamon. Pour over dough & refrigerate overnight to raise. Bake at 350 Degrees for 30 minutes. Let sit for 5 minutes and turn onto platter or another 13X9” Pan.

With love, Barb Peachey | Jalapeno Popper Dip (Barb Peachy) 2 – 8 ounce packages of cream cheese cup mayo 6 fresh jalapeno peppers 1 can green chilies 1 cup parmesan cheese cup panko breadcrumbs Mix cream cheese and mayo then microwave for 3 minutes. Add chilies and jalapenos. Put mixture in oven safe dish. Mix parmesan cheese and breadcrumbs then top cream cheese mixture with cheese/crumb topping. Bake at 350 degrees until topping is lightly browned

26: Life Together | Teriyaki Steak Skillet 1 T. oil 1 boneless beef sirloin steak (1lb.) cut into strips 2 cloves garlic minced 1 1/2 C. water 1/3 C. light teriyaki sauce 2 C. Minute Premium rice (uncooked) 4 C. small broccoli florets 1 large red pepper cut into strips Heat oil in large skillit on high heat. Add steak & garlic. Cook & stir 5 min, or until steak is cooked through. Add water & teriyaki sauce, stir. Bring to a boil. Stir in rice, broccoli & red peppers. Return to boil. Reduce heat to low; cover. Simmer 5 min. Remove from heat. Let stand 5 min. Fluff with fork. (Makes 4 servings). | Thank you for exhibiting some of my favorite verses of God's Word: "Be devoted to one another in love.
