1: I decided to put this cook book together in memory of my mother Debbie Lang and one of her all time favorite hobbies, Making other people happy through foods she felt were comfort foods. To her the foods that put a smile on your face. Every day mom had her usual routine of falling asleep while watching the food channel. In her mind if she fell asleep watching a show that she loved and made her happy that waking up to the same shows would naturally make her happy in the morning. Shortly after waking up it was time to print out her favorite recipes she saw during the night so she could tell the first person she saw about these new wonderful recipe ideas. Her intentions were to one day put together a cook book just like this one for her friends and family. Those recipes are what make up this book for you. Over the last few years being at the hospital was a home away from home for my mother, No matter how bad the days had gotten we always new things were going to be all right when we heard something to do with a recipe or some type of food. Mom had a way of becoming friends with all her nurses. It wasn't long after them walking into her room that the plan of what everyone was going to go home to cook for there family's for dinner was discussed.
2: Coming home and glad to be out of the hospital meant it was time to get back to her hobby, Mom would rush home to call her friends and neighbors to discuss almost all of the recipes she was taught by her nurses. Sometimes mom would create shopping lists for all of her new favorites hoping that one day she would be able to try them all just once so she could tell everyone her spin on these recipes. Since my mother taught me how to cook i adapted to her style of cooking. Having cooked her recipes to her liking for many years for Thanksgiving, Christmas, and just the normal dinner made it definitely worth the smile on her face that I am sure we will always remember. I hope you enjoy these recipes and hope they put as big of a smile on your face as they did for my mother. Some of these are recipes we have cooked together many times and some are recipes mom just really wanted to try. Please enjoy them.
3: Shrimp Mouse | 1 (8 oz.) pkg. cream cheese 1 can tomato soup 1 can milk 1 pkg. unflavored gelatin 1/4 cup cold water 3/4 cup celery, finely chopped 3/4 cup onion, finely chopped 1 cup mayonnaise 2 cans small shrimp (do not use frozen) Wheat Thins | Mix soup and milk, heat and add cream cheese keep warm over heat until cheese is completely melted. Mix gelatin in cold water then add to soup mixture, set aside to cool. When soup mixture is cooled add to it the celery, onion, shrimp and mayonnaise. Place in mold and refrigerate overnight or until mold is well set. Serve with Wheat Thins.
4: Ingredients 1 jar (12 ounces) Campbell's® Slow Roast Beef Gravy 1 tablespoon grated orange zest 2 tablespoons orange juice 1/2 teaspoon garlic powder or 2 cloves garlic, minced 1 boneless beef top round steak, 1 1/2-inch thick (about 1 1/2 pounds) | Directions 1. Stir the gravy, orange zest, orange juice and garlic powder in a 1-quart saucepan. 2. Heat the broiler. Place the beef on a rack in a broiler pan. Broil 4 inches from the heat for 25 minutes for medium turning the beef over halfway through cooking and brushing often with the gravy mixture. Thinly slice the beef. 3. Heat the remaining gravy mixture over medium-high heat to a boil. Serve the gravy mixture with the beef. | Orange Beef Steak
5: Sausage Frittata | 1 19oz Pkg Johnsonville Italian mild sausage sliced Non stick spray 1 Package 8oz mixed vegetables 1 Tbsp water 6 Eggs beaten 1/2 Tsp Dried Basil 1/4 Cup Parmesan cheese. shredded Directions 1. In a skillet sprayed with non stick spray, cook and crumble sausage until well done. 2. In a medium Pot add vegetables and water, and bring to a boil 3. Cover and cook on medium heat for 3 minutes. 4. Add sausage 5. Combine eggs and basil, pour over sausage mixture 6. Sprinkle with cheese. 7. Cover and cook over medium to low heat for 12-15 minutes or until eggs are set 8. Cut into wedges.
6: Ingredients 1 12oz Pkg Johnsonville Brown Sugar & honey Breakfast sausage links 1/4 Cup Butter 3/4 Cup packed brown sugar 1/4 Cup honey 2-1/4 Cups Granny smith apples cubed and peeled 1/4 Cup Apple Butter 2 Eggs 1 Cup of Milk 2 Cups Pancake mix 1 Tbsp ground cinnamon 3 Granny Smith Apples peeled and grated 1/2 Cup toasted pecans Directions 1. Place sausage on a backing pan, Bake at 375 degrees until sausage is well done. 2. Drain and slice into 1/2" pieces 3. In a saucepan, melt butter, stir in brown sugar and honey 4. Bring to a boil, stirring constantly. Cook and stir for 1 minute. 5. Add apples and apple butter. Return to a boil. 6. Reduce heat and simmer until apples are tender. 7. Add sausage and keep warm. 8. Beat eggs and milk in a bowl. Stir in pancake mix and cinnamon. 9. Fold in apples. Pour 1/2 cupfuls onto a greased hot griddle. 10. Flip when bobbles form on top. 11. Serve apple topping over pancakes. Sprinkle with pecans | Apple Sausage Pancakes
7: Fast and Easy Shrimp Mousse | Ingredients 1 Can condensed tomato soup 1 8oz cream cheese. 1 Envelope Knox unflavored gelatin 1/4 Cup Water 1/2 Cup each Chopped onion, Green pepper, Celery 1 Cup Mayonnaise 2 Small cans of baby Shrimp Directions Mix gelatin with the water and let sit. Heat tomato soup and cream cheese in a pot over low heat until thoroughly mixed. Mix onion, celery, pepper mixture with baby shrimp and mayonnaise. Add gelatin mixture to warm soup and cheese. stir until gelatin dissolves. When cool add vegetable mixture. Pour into a mold greased with mayonnaise add chill until firm.
8: Gingered Pumpkin Crumble | Filling Ingredients 1 15oz can pumpkin ( not pumpkin filling ) 1 14oz can sweetened condensed milk. 2 tablespoons packed brown sugar 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon ground nutmeg 2 eggs Topping and Garnish Filling Ingredients 2 tablespoons chopped crystallized ginger 1 box (18.25 oz) butter recipe white or yellow cake mix with pudding in the mix 3/4 cup chopped walnuts or pecans 1/2 cup butter, melted Top with whipped cream | Directions 1. Heat oven to 350 degrees Spray 13x9-inch pan with cooking spray. In large bowl, with electric mixer on medium speed, beat all filling ingredients until smooth. Pour into pan. 2. In medium bowl, mix crystallized ginger, cake mix, walnuts and butter until well blended. Sprinkle evenly over filling. 3. Bake 40 to 50 minutes or until top is golden brown. Cool at least 30 minutes before serving. 4. To serve, cut into squares; place on individual dessert plates. Top each serving with whipped cream. 5. If desired, sprinkle with additional chopped crystallized ginger. Store in refrigerator.
9: 1 Pkg. Pillsbury crescent rolls 3/4 Cup Raisins 1/4 Cup Chopped nuts 1/4 Cup Coconut 1 Tsp Cinnamon Sugar 1 Tbsp Soft Butter Separate package of rolls into individual sections. Mix remaining ingredients and spread on top of each roll. Roll into crescent shape and follow the package directions. Sprinkle some cinnamon sugar on top of each roll. | Raisin Cinnamon Rolls
10: Deviled Eggs | 18 Large Grade A Eggs 1/2 Cup Hellman's Mayonnaise 1/3 Cup of Miracle Whip Salad Dressing 1/4 Cup of Yellow Mustard | 1. Submerse the eggs in cold water lightly seasoning the water with table salt. 2. Cook on high heat to boil water. 3. Once water is to a rolling boil. set a timer and continue to boil the eggs for 10 minutes. Having the sink full of cold water ready to quench the eggs until cool enough to handle. 4. Peel the eggs and slice them in half putting the yolks into a large zip lock bag. 5. Add all ingredients into the bag, and close the bag removing all air. 6. Now for the fun part squeeze the ingredients in the bag until mixed together really good. 7. Cut the end of the bag and use the zip lock like a piping bag to fill the egg half's | ( The Miracle Whip was my addition mom would never allow this however has been in every batch for the last 10 years "Mom loved it" ) " Sorry Mom "
11: Taffy Apple Salad | Peel and Chop 8 Granny Smith Apples 1 Cup Sugar 16 oz Can crushed pineapple with juice 16 oz Cool Whip 2 Tbsp Flour 2 Eggs 4 Tbsp Apple Cider Vinegar 2 Cups dry roasted peanuts ( chopped ) | Mix flour, sugar, pineapple & juice, eggs, and apple cider vinegar in a small pan, stir over medium heat until thick. Refrigerate until cool. Fold into cool whip, chopped apples & 1 cup peanuts, sprinkle remaining nuts on top.
12: Egg Rolls | 1 Package Egg Roll Wrapper 2 Sweet and Low Packets 1 Large Chicken Breast or Pork Chop 1 Bag of Shredded Cabbage or Cole Slaw Mix 2 Eggs Whisked ( glue for egg roll wrappers ) 1 Bottle Sweet and Sour | Filling Instructions 1. In a skillet cook chicken or pork to well done and cut into small pieces. 2. Put cold water in a large pot, just enough to cover the bottom about 1/4" 3. Put the cabbage and your choice of cooked meat in the pot and sprinkle the Sweet and Low packets on top of the mixture. 4. Cook on medium to low heat stirring frequently until the cabbage turns soft. 5. Pour mixture into a colander to remove any water. Assembly Instructions 1. Scoop Desired Amount of filling onto 1 Egg Roll Wrapper 2. Fold over 3 corners, wet the 4th unfolded corner over with the Egg wash 3. Roll up and Deep Fry until golden brown,
13: One Pot Chili | 1 Large Can of Crushed Tomatoes 1 Medium Sized Onion Chopped Finely 6 Tomatoes Cubed 2 Lbs Lean Ground Beef 1/3 Cup Tomato Paste 2 Tbsp Chili Powder ( Adjust to make hotter ) 1 Tbsp Garlic Powder | 1. In a large pot brown the ground beef and onions. 2. Drain the grease off the meat. 3. Add all the ingredients to the pot. 4. Simmer until hot, add oyster crackers and cheese to the top and enjoy......
14: Italian Party Rye | 1 Large Soft serve Philadelphia Cream cheese 1 Package of Italian Dressing Seasoning Mix 1 Loaf of Mini Part Rye Bread ( pre-sliced ) 1 Cucumber 1 Dash of Dill Weed | 1. Mix Cream cheese and Italian dressing together really well ( best if left to rest in the fridge over night after mixing ) 2. Spread the Cream cheese mixture on the party rye slices 3. Set a cucumber on each slice 4. Very lightly Sprinkle Dill Weed to taste. ( be careful to much gets over powering )
15: Celery Parmesan | 1 (8 oz.) pkg. Cream Cheese 1/4 Cup Parmesan Cheese 1 Package of Celery | 1. Add Cream Cheese and Parmesan Cheese into a zip lock bag, and close removing all air. 2. Now back to the fun part squeeze the ingredients in the bag until mixed together really good. 3. Cut the end of the bag and use the zip lock like a piping bag to fill the celery slices.
16: Spaetzles | 2 cups all-purpose flour 1 teaspoon salt 2 eggs 3/4 cup milk 1/3 Cup Margarine or Butter | 1. Stir together the flour and salt. Combine eggs and milk; stir into the flour mixture. 2. Pour the batter into the hex and place it on the lip of a large pot of boiling, salted water, moving hex back and forth to cut the Spaetzle.. 3. Take care to let the extruded pieces of dough fall into the slightly bubbling water. 4. Let them cook until Spaetzles swim to the surface, gather with a large slotted spoon, 5. Drain and place into a serving dish, Stir in some melted butter or margarine
17: Golumpki | 1. In a large skillet brown the ground beef. 2. Mix all items together and bake at 350 degrees for 40 minutes | 1 Lbs Lean Ground Beef 1 Bag of Shredded Cabbage or Cole Slaw Mix 4 Cups of Cooked Minute Rice 1 Large Ragu Meat Sauce 1 large Onion Diced
18: Philly in Summer | 1 20oz Soft Serve Philly Cream Cheese 2 Packages of Oscar Myer Hard Salami | This is the easiest recipe to complete. Spread the Soft Serve Cream Cheese on a slice of Hard Salami roll up and hold together with a tooth pic.
19: Potato Salad | 1 Bag of Red Potato's cut to 1/2" Squares 1 Medium Onion 6 Hard Boilded Eggs Sliced thinly 1 Cup Helman's Mayonaise 1/2 Cup Miracle Whip 3 Tbsp Yellow Mustard | 1. Boil Potato's until a fork slides into them easily. 2. Drain water and let cool in a mixing bowl 3. Boil Eggs for 10 minutes in lightly seasoned water. Peel and slice thinly 4.
