S: Recipes for Jennifer & Randy Christmas 2011 Volume 1
2: 5 C Tomatoes, Chopped 1 Large White Onion, Chopped 1 or 2 Green Peppers, Chopped 2-3 Large Cloves of Garlic, Minced 1 Can Tomato Paste (5 1/2 oz) 3/4 C White Vinegar 1/3 C Brown Sugar 1 Tbsp Pickling Salt (or regular salt) 1 Tsp Paprika 1/4 - 1/2 Tsp Cayenne Pepper (if you like it spicy add more) Simmer for 1 hr. Then add 1 Tbsp. cornstarch to thicken. Bottle. Batch makes approx. 4 mason jars | Erin & Debbie's Salsa
3: Erin & Debbie's Taco Salad | Brown 1 Lb Hamburger Rinse with hot water and drain Add 1 Pkg Taco Mix Let Cool In Large Bowl Layer: Hamburger, shredded lettuce, chopped tomatoes (onions if you like), shredded cheese. Just before serving add ranch dressing (1/2 - 3/4 small bottle) and crushed nachos. Mix and serve.
4: Homemade Granola - Erin Langley | Preheat oven to 250 1/2 C Oil 1/2 C Water 1/2 C Honey Mix above ingred., put in baking pan (12 or 13 x 8 or 9) & put in oven until heated & slightly bubbly. Meanwhile, in bowl, mix together 3 C rolled oats (not quick oats), 3 C of other flakes/ingred. (rye, wheat, bran. etc) nuts (how many/types you want). Mix into liquid mixture. Bake for 1 - 1 1/2hrs. mixing occasionally. 15 mins. before mixture is done, add in dried fruit seeds (flax, sunflower, coconut, etc.), if desired.
5: Lorna & Allison McRury | Greek Bruchetta | 1/2 C Mayo 1/2 C Parmesan Cheese (grated) 1/4 C Black Olives (Chopped) 2 Tomatoes (Seeded & Chopped) 1 C Mozza cheese or if you like to use half Feta 1 Tsp Oregano 1/4 Tsp Basil (a Tsp fresh chopped is best) 1/2 Tsp Pepper. Slice & Butter bread. Add above. 350 15 min
6: "There is no love sincerer than the love of food." ~George Bernard Shaw | Erin Langley | Oriental Coleslaw Salad | 1 Bag Regular Coleslaw 1 Bag Broccoli Slaw 2 C Slivered Almonds 1/2 C Soy Nuts 1 Drained Can of Corn Kernels 1 Pkg of Oriental Mr. Noodles Sauce: 1/2 C Oil 4 Tbsp of Vinegar 3 Tbsp White Sugar Add the flavour pouch from the Oriental Mr. Noodles. Mix and add noodles to top of salad. YUMMY!!
7: 2 Lbs Stew Meat 1 Large Chopped Onion 2 Stocks Celery (chopped) Turnips Carrots Potatoes (if you wish) "or" whatever veggies you want to use 1 1/2 C Tomato Juice 3 Tbsp Tapioca 1 Tbsp Sugar Salt & Pepper Put everything in a roast pan & bake 4 hours at 275. 9: Rice Krispies Caramel Crisps Jennifer's Aunt Alice | 14 Oz Pkg Caramels (approx 35-40) 1/4 C Milk 5 Tsp Butter 5 C Rice Krispies Melt caramels, milk & butter together over low heat and mix well. Remove from heat. Stir in cereal until coated. Press in a buttered 9" pan. Chill until set. Yields about 36 squares.
10: Alice MacIntosh | Best Brownies "Ever" | 1 1/2 C Flour 1 C Canola Oil 2 C White Sugar 1 Tsp Vanilla 1/2 C Cocoa 1/2 C Water 4 eggs 1/2 C Walnuts Mix all ingred. & put in 9x13 pan (ungreased). Bake at 350 for 20 mins & top springs to touch. Let cool, then top with chocolate icing.

When cooking, go by your own taste." ~Laiko Bahrs | Lorna McRury's Fall Fruit Crisp 2 Pears, Peeled, Cored & Sliced 2 Apples, Peeled, Cored & Sliced 2 Peaches, Peeled & Sliced 1/2 C Dried Cranberries 1/2 C Brown Sugar 1 1/2 Tbsp Tapioca 1 Tbsp Finely Chooped Preserved Ginger (Optional) 1/4 Tsp Grated Nutmeg 1 Tbsp Grated Orange Rind 1 Tbsp Orange Juice Combine all the above and put in a greased casserole. Crisp: 1 C Flour 1/2 C Oatmeal 1/2 C Brown Sugar 1/4 Tsp Cinnamon 1/4 Tsp Ginger Pinch of Salt 1/2 C Butter Combine everything & then cut the butter in until it looks like coarse crumbs. Place on top of the fruit mixture & bake at 350 for 45 mins or until the topping is crisp & brown around the edges. It is very tasty & you can add any kind of fruit. Serve with a good French Vanilla ice cream.
12: Carole Chisholm's Chicken Cassarole | Chicken Breasts, Unfrozen 1 Can Mushrooms, Drained 6 Tomatoes (Halved or Quartered) 1 Can Mushroom Soup Salt, Pepper, Garlic Salt, Dash of Lemon to Taste, Dash of Worchestershire Sauce 1 Onion Finely Chopped Cover above ingred. with grated cheddar cheese or grated parmesan cheese. Cook for 1 hr. 20 mins. at 375.
14: Ham Casserole Alice MacIntosh 1 1/2 C Chopped Ham (Cubed) 1 Bag Hash Browns 1 Small Bag Cheddar Cheese 1 Tsp Onion Powder or Chopped Onion 1/2 C Milk Mixed With 1/2 C Miracle Whip Mix together in large bowl & put in casserole dish. Take 4-5 slices of bread & pull into pieces & pour 1/2 C melted butter or margarine over bread & mix till bread is all covered then spread on top of casserole & bake at 350 for 3-35 min. Freezes great & is delicious. If you freeze it, don't put bread on it till you are ready to cook it!
15: 1/3 C Shortening 3/4 C Sugar 1 Egg 1 1/2 C Flour 1 Tsp Salt 1/2 Tsp Baking Soda 1 Tsp Baking Powder 1/2 Tsp Cinnamon 1/4 Tsp Cloves 1 C Crushed Pineapple Cream shortening & sugar. Add egg & beat well. Mix together dry ingred. Add pineapple to shortening mixture then blend. Add dry ingred. Bake 350 until brown. | Pineapple Muffins Jennifer's Aunt Alice
16: Morgan's Favorite Blueberry Cheesecake Base: 1 1/2 C Graham Wafer Crumbs 1/2 C White Sugar 1/4 C Melted Butter. Save A little for top. Put in oven for about 10 min. Middle: 8 Oz Philly Cream Cheese (Cream) 2 Beaten Eggs 1/2 C White Sugar Put on top of base. Bake 350 for 15-20 mins or until done. Cool in fridge until heat is gone. On top put 1 can of ED Smith blueberries. . Then top with coolwhip or dream whip (2 pkgs). Sprinkle with remaining crumbs. Use a 13x9 pan. Can be doubled. YUMMY!! Thanks Nannie Beaton
17: "There is no love sincerer than the love of food." | Scallop Casserole Jennifer's Aunt Alice Scallops 1 1/2 C White Wine Celery Green Pepper Onions Seafood Seasoning Sauce: About 2 Tbsp butter (melted) in microwave. Mix in about 1/4 C flour until flour is yellow & smooth. Add about 1 C milk. Put back in microwave on med. for 8 mins. Put over scallop mixture & microwave about 10-15 mins. Turn once or twice during cooking. YUMMIE !!!
18: Nannie Bennett's Scottish Shortbread - Randy's Mom | 1 Lb Softened butter 1 1 4 C White sugar (use extra fine if possible) 1 Tsp Salt (if the butter is not too salty) Combine and beat with blender till smooth and well blended. Gradually add using blender till no longer able, then use hands, add 5 C Flour. Turn onto board and knead well. (it will be difficult at first but the more you work the dough the better as it starts to hold together). Pat or roll out and bake at 350 for 20 minutes (should be golden brown when coming out of oven). Cool on racks. Ice if you wish.
19: Chocolate Cake Randy's Sister, Amanda | 2 C White Sugar 3/4 C Margarine 1 1/2 C Boiling Water 2 C |Flour 1/2 C Cocoa 1/2 Tsp Salt 2 Tsp Baking Soda 2 Eggs, Beaton 1 Tsp Vanilla Put sugar & margarine in a bowl, add boiling water. Stir until margarine is melted. Mix dry ingredients together, add to sugar mixture and mix well. Add beaten eggs & vanilla. Mix. Pour into greased & floured 9x13 pan. Bake at 350 for 30 min or until toothpick comes out clean. Takes about 20 min.
20: Chocolate Nuggets Jeff's Favourite | 2 C Chocolate Chips 1/4 C Butter 11 oz Can Sweetened Condensed Milk 1/4 C Sugar 1 Tsp Vanilla 1 C Flour 1/2 C Nuts (optional) Melt first 5 ingred in saucepan on med heat, stir often. Add flour & nuts. Stir until no flour remains. Drop onto greased cookie sheet & bake at 350 for 10-12 min.
21: Butter Curry Chicken Amanda Shepherd, Randy's Sister | 1 Onion 2 Tbsp Butter 1-2 Lbs of Cubed Chicken Butter Curry Chicken Paste (found in indian section at Superstore) 1 Can Crushed Tomatoes 1 Can Coconut Milk Dice onion & start to sautee in butter in dutch oven. Add chicken & curry paste. Cook on med-low till chicken is cooked. Add tomatoes until mild. Simmer stirring occasionally. Add curry/cumin to taste. Serve over Basmati or Jasmine rice with a dallop of sour cream on top.
22: "All happiness depends on a leisurely breakfast." ~John Gunther | Amanda Shepherd | Pancakes | 1 C Milk 1 Tbsp Oil 1 Egg 1 C Flour 1/4 Tsp Salt 2 Tsp Baking Powder Butter For Pan Mix flour, baking powder and salt. Beat egg in a separate bowl with whisk. Add Milk & oil. Add to flour mixture, it's OK lumpy.
23: "There is no love sincerer than the love of food." | OGIE'S BANANA BREAD 1/2 C Margarine 1 C White Sugar Cream Butter & Sugar 2 Eggs - Beat in Eggs Mix 1 Tsp Baking Soda with 4 Tsp of Boiling Water. Then add to above. Mix in 1 C of Mashed Bananas (approx 3) Mix 2 C Flour, 1 Tsp Baking Powder, 1/2 Tsp Salt & then add to wet ingred. Last mix in 1 Tsp Vanilla. Grease and flour a loaf pan, bake at 350 for 40 mins. Makes a very large loaf or 6 cupcakes & a smaller loaf. Muffins take about 20 minutes.
24: TERRY-LYNN BENISON'S CHILI CON CARNE 1 to 1 1/2 Lb hamburger 2 Med Onions, Chopped 1 Garlic Clove 2 Tins Campbell's Tomato Soup 2 Tins (19 Oz) Heinz Kidney Beans 1 Tin (28 Oz) Delmonte Stewed Tomatoes 2 Tims Mushroom Pieces or Fresh Brown meat. Saute onions. Put this plus all other ingred. in large roasting pan. Sprinkle with chili powder. Mix & cover at 350 for 1 hr.
25: Michelyn Grenier's Russian Chicken | 1 C Russian Salad Dressing 1 C of Apricot Jam 1 Packet of Onion Soup Mix Chicken Drumsticks Preheat oven to 350. You can skin chicken or leave skin on. Season according to taste, add water to the bottom of the roaster, cover and cook for about 20 minutes. While waiting, make up the sauce. Mix the ingred. until completely blended together. Drain the water off the chicken & add the sauce. Try to cover the chicken thoroughly & cook uncovered for another 30 minutes. Do not exceed the time because it is a sauce that will burn easily. Serve with rice or potatoes. Serves about 4 people.
26: CARRIE/MARTINA'S CRACKER JACK COOKIES | 1 C Margarine 1 C Brown Sugar 1 C White Sugar 2 Eggs 1 1/2 Tsp Vanilla 1 1/2 C Flour 1 1/2 Tsp Baking Powder 1 Tsp Baking Soda 2 C Rolled Oats 2 C Rice Krispies 1 C Coconut Mix margarine, sugars, eggs & vanilla together until smooth, add flour, baking powder, baking soda then fold in rolled oats rice krispies & coconut. Roll dough into small balls, press down with fork & bake at 350 degrees oven for 10-12 minutes.
28: CHICKEN CASSEROLE ROB MURRAY - JENN'S GREAT UNCLE 2 C Chicken, cooked & cubed 1 C Chopped Celery 1 C Chopped Toasted Slivered Almonds 2 C Cooked Rice 1 C Mayonnaise 2 Tbsp Chopped Onions 1 Can Cream of Chicken Soup 1 Can Cream of Mushroom Soup 1 Tsp Salt 1/4 Tsp Pepper 1 Tbsp Lemon Juice 2 Chicken Bouillon Cubes dissolved in 1/2 C Water Combine all ingreds, mixing thoroughly. Place in a casserole. Cover with crushed potato chips and/or almonds. Bake at 400 for 45 mins or until heated through. Serves 8.
30: Marlene's 7 Layered Salad Jenn's Aunt | 1 Pkg (12 oz ) Frozen Peas 1 Sm Head of Lettuce (Romain) 1 Lg Green Pepper 1 Med Spanish Onion 3 Stalks Celery, Thinly Sliced Diagonally 1 3/4 C Mayo or Miracle Whip 1 Tsp Sugar 1 C Grated Cheddar Cheese 8 Slices Bacon, Cooked, Drained & Crumbled GARNISH - TOMATO WEDGES & COOKED EGG SLICES Blanch peas in boiling water for 1 -2 mins. Drain, cool under cold water, drain & dry. Line the bottom of a salad bowl about 8-9 inches in diameter with a layer of lettuces, shredded thinly layered. Over lettuce layer separately green pepper, onion, celery and peas. Spread with mayo or miracle whip. Sprinkle with sugar and cheese. Refrigerate covered for at least 8 hrs. Just before serving sprinkle top with crumbled bacon. Top with tomatoes, egg slices. Serves about 8 servings.
31: Carol Anne & Jennifer MacInnis MEAT LOAF | 2 Eggs 2/3 C Milk 1 Tsp Pepper 1/2 Tsp Salt 2 Bread Slices (crumbled) 1 Onion 1/2 C Carrot (Shredded} 1 C Cheddar Cheese (Shredded) 1 1/2 Lbs Lean Beef 1/4 C Brown Sugar 1/4 C Ketcup 1 Tsp Mustard Mix first 9 ingredients together in a bowl. Add to a medium loaf pan. Bake at 350 for 1 1/2 hours. Twenty minutes before servings add the sugar, ketchup and mustard mixture.
32: Ingredients 2 Cans of Crab Meat 1 Pkg Softened Cream Cheese 1/2 C Mayo 2 Tbsp Ketchup 3 Tbsp French Dressing 2 Tbsp Finely Chopped Onion Combine all ingredients. Refrigerate until all ingredients are merried together. Serve with crackers, vegetables, chips. | Cold Crab Dip From: Arthur Langley
33: Pomegranate Feta Salad From: Lorna & Allison McRury | Dressing: Combine 1/3 C Olive Oil (see below*) 1 Tbsp Red Wine Vinegar 2 Tbsp Maple Syrup 1 Tsp Dijon Mustard 1/2 Tsp Oregano Salt & Pepper Salad: Romaine Lettuce Spinach Pine Nuts (1/4-1/3 C) Toast in 350 oven for 5 mins. Feta to Taste Pomegranate Seeds (if unavailable use fresh cut strawberries or whole or cut raspberries) *(I use Canola Oil)as I only use cold pressed extra virgin olive oil for most salads. This is one of the best salads we have ever eaten... ENJOY !!
34: Erin & Debbie's Carrot Cake | 3 Eggs 2 C White Sugar 1/4 C Oil 2 Tsp Vanilla Beat by spoon then add: 2 C Flour 1 Tsp Cinnamon 2 Tsp Soda 1 Tsp Salt Beat by spoon then add: 2 C Coconut 2 C Grated Carrots 1 C Crushed Pineapple ( with juice) Beat by spoon. Bake 350 35-40 mins; 8:x8" square pans. Icing.

37: Breakfast Crepes Laura LeDuc Prep Time: Approx 5 mins Cook Time: 30 mins Makes about 18 crepes In a bowl combine 2 beaten eggs, 1 1/2 C of milk, 1 C all purpose flour, 1 Tbsp cooking oil & 1/4 Tsp salt; beat until combined. Heat a lightly greased 6 in skillet. Remove from heat. Spoon in 2 Tbsps batter. Lift & tilt skillet to spread the batter. Return to heat; brown on 1 side only. Invert over paper towels. Remove crepe. Repeat with remaining batter, greasing occasionally.
38: STRAWBERRY AVOCADO SALAD Tracy Dawn Murray | 2 Tbsp White Sugar 2 Tbsp Olive Oil 4 Tsp Honey 1 Tbsp Cider Vinegar 1 Tsp Lemon Juice Whisk sugar, oil, honey vinegar & lemon juice. 2 C Salad Greens 1 Avocado, peeled & sliced 10 Strawberries, sliced (more optional) 1/2 C Chopped Pecans Mix in a bowl. Optional additions are blueberries, blackberries, raspberries. Let chill 2 hrs.
39: CHICKEN SUPREME Carol Anne MacInnis | 4 Chicken Breasts 1 Can Cream of Mushroom Soup 4 Slices of Mozza Cheese 1 Box of Stuffing Mix Place in 8 x 8 pan. Top each chicken breast with a slice of mozza cheese. Pour undiluted soup all over. Prepare dressing according to directions on box and spread over chicken. Bake and serve with rice or mashed potatoes. Bake at 350 F for 35 minutes.
46: Choc0late Whoopie cookies From Sue 1 cup sugar 1/2 cup shortening 1/2 cup coco Mix above ingredients and add 2 egg yolks 1 tsp vanilla 2 cups flour 1 tsp baking powder 1 tsp baking soda 1 tsp salt 1 cup milk Mix flour, baking soda, baking powder and salt and add to sugar mixture. Stir in vanilla. Gradually blend milk. Bake at 350 for 9 - 11 minutes Center filling 2 egg whites 1/2 cupshortening 2 cups icing sugar 1 tsp vanilla pinch of salt Mix all together
47: chocolate chip squares From Susan 1 cup butter 1/2 cup white sugar 1 cup brown sugar 2 eggs 2 1/4 cups flour 1 tsp baking soda 1 tsp salt 1 1/2 cups choc chips Cream first four ingredients together. Mix in remaining items. Spread in 9 x 13 pan. Bake at 375 for 20 minutes or until crust turns light brown
48: TURKEY CUPS From: Jenn's Aunt Sue | Ingredients 20 Slices of bread 1/4 C Butter 1 Cup Mushrooms, Minced 1 Cup Onions, Minced 1 Can flaked Turkey 3 Tbsp Flour 1 Cup Milk Salt, Pepper to taste 1/4 Tsp Lemon Juice Chedder Cheese To Prepare Cups Remove crust from bread slicesl Butter bread on both sides. Shape into muffin tins. Place in 350 oven until lightly toasted. Fill cups with turkey mixture, top with cheese and return to oven for 5 minutes or until cheese melts. Cups can be frozen, stuffed and reheated. In med sauce pan melt butter and saute onion and mushrooms. Break turkey apart with fork and add to onion mixture. Sprinkle with flour and blend well. Add milk gradually. Heat over med heat until thick. Remove from heat and add salt pepper and lemon juice.
49: Hamburg Tarts | Ingredients 1 Lb Hamburg 1 Can Cream of 2 Eggs Mushroom Soup Salt & Pepper 1 1/2 Sliced Bread 1/2 C Fine Bread Crumbs 1 Small Onion, Chopped) 2 Tsp Ketchup 1/2 C Grated Cheese | Follow recipe for cups on turkey cup recipe
50: Chocolate Crisps From: Aunt Allice Beaton | Ingredients 1 Pkg Milk Chocolate Chips 1 Pkg Butterscotch Chips 1 1/3 C Crushed Ripple Potato Chips Walnuts, pecans or almonds (Crushed) Melt chips together over low heat. Remove and add nuts, then potato chips last. Put in little cups and refrigerate for about 15 minutes.
51: Mix and heat 1, 8 oz pkg. cream cheese 6 Tbsp Mayo 1 Tbsp Grated Onion 1/2 Tsp Prepared Mustard 2 Tbsp Chili Sauce 1 Tbsp Parsley Flakes When heated through, add 1, 6 oz can crab meat drained. Pour into casserole dish, sprinkle with the following: 2 Tbsp Melted butter 1 C Fine bread Crumbs Put into 375 oven until heated through and bread crumbs are golden. | Hot Crab Dip - Jenn's Mom
52: Cabbage Rolls - Jenn's Mom | 12 to 14 Cabbage Leaves 1 Lb Hamburg 3/4 C Uncooked Rice 2/3 C Milk 1/2 C Chopped Onions 1 Beaten Egg 1 Tsp Worchestershire Sauce 1 Tsp Sugar Salt & Pepper Place cabbage leaves in pan and cover with boiling water. Let stand 1/2 hr or until tender. Add 1/4 Tsp salt. Mix remaining ingred. well. Take each leaf, add 1 Tbsp meat mixture. Roll up and put together with a toothpick, put in bottom of pan. Sauce: 1 Can tomato sauce 1 Can water 1 Tbsp brown sugar, add 2 cloves & 2 or 3 bay leaves. Pour over rolls & bake 2 hrs at 350 oven.
53: Delicious Chow - Jennifer's Great Grandmother Nannie Murray 9 Lbs Green Tomatoes, Sliced 6 Lbs Onions 2 Red Peppers 3/4 C Salt over the above and let it stand until morning Drain through cheesecloth Add: 4 C White Vinegar \2 C Water 5 Lbs Sugar(I use less sugar) Pickling spice to taste (5 Tbsp) Cook 1 hr. Take out 3/4 C juice & cool. To this add 1/2 C cornstarch, 1 Tsp dry mustard, 1 Tsp tumeric. Cook 1 hr & add pickle mixture & cook 15 mins untill thick. It makes a large batch.
54: Jenn's Great Grandmother's Refrigerator Bran Muffins Lots of Love: Nannie Murray | 4 C Kelloggs all bran 2 C Natural Bran 1 C fluffo shortening 2 C sugar 1 Tsp Cinnamon 1 Qt Buttermilk 5 Tsp Baking Soda 5 C Flour & 1 Tsp Salt 4 Eggs 2 C Raisins or dates, etc (optional) 2 C Boiling Water Pour 2 C boiling water over all bran cereal mixed with natural bran and let sit 3 to 4 minutes. Beat together shortening, sugar, cinnamon, buttermilk, 4 eggs. Add soda, flour, raisins. Drop in greased muffin tins. Batter unused may be refrigerated in a sealed container for up to 4 weeks. Bake 375 for 20-25 minutes.
55: Swiss Chalet BBQ Pork Back Ribs | Cook ribs 1/2 hrs at 350 in roaster. You can cover with foil if you want or leave it uncovered. If you cover them the juices stay in the meat more. Sauce 1/2 C Honey 1 C Ketchup 1/4 C Soya Sauce Minced Garlic BBQ & ENJOY!!
56: Bacon Quiche Randy's Nanny Shepherd | 12 Slices bacon, cooked and crumbled 2 C Milk 1 C Shredded cheddar cheese 4 Eggs 1/3 C Onion chopped fine 1/4 Tsp Pepper 1 Chopped green pepper 1 C Bisquick mix 1 Can Mushrooms (sliced) 1/4 Tsp salt Heat over 400 degrees. In glass greased pie plat or 9" square pan, layer bacon, cheese, onion, peppers & mushrooms. Beat milk, bisquick. Mix eggs, salt, & pepper together. Pour over top. Bake 30 mins or till golden and center is firm. Do not over cook. This method makes its own crust. Serve with toss salad and fresh bread.
57: Rotini Salad Randy's Mom 1 Pkg Rotini pasta (follow directions on box & cool) MIX THE FOLLOWING AND POUR OVER COOKED PASTA: 1 Large bottle Italian salad dressing 1/2 Bottle honey (or sweeter to taste) 3 Green onions - chopped 1 Red pepper - optional 1 Carrot - Shredded Cubed cheddar cheese - optional Marinate overnight for better results. This dish will keep fresh up to 2 weeks in the fridge.

72: apple crisp Susan's best apple filling 4-5 cups apples 1/4 - 1/2 tsp cinnamon 3 tbsp sugar 3 tbsp flour crispy topping 1 cup flour 1 cup oats 1 cup brown sugar 1 cub cold butter Preaheat oven 350 F take apples and slice them into a pan (make think slices). Then mix 3 tbsp flour, 2-3 tbsp sugar and 1/2 tsp of cinnamon and pour this mix over the sliced apples. mix the apples a bit so they are evenly covered. for the topping take a bigger bowl and mix in 1 cup flour, oats and brown sugar. take the butter and slice it into the bowl. use your fork to mix it in. evenly spread topping over apples. bake for about 45 mins. when it turns golden brown it is done. Let it cool and enjoy. Options: serve with ice cream
73: chicken nacho dip Susan's fantastic 3 boneless skinless chicken 1 can cream of mushroom soup 5-6 slices jalapino pepper rings (bottled) approx. 3 cups tex mex cheese nacho chips preheat oven 350 f cut chicken into bit size pieces. microwave and oven safe dish until pink. drain ofany juices. chop jalapino pepper rings and add to chicken. stir in cream of mushroom soup and half the cheese. mix ingredients together. top with remaining cheese. bake until cheese bubbles cool 5 mins. before serving. serve with nacho chips.
74: red velvet cupcakes Tracey's 2 1/2 cups cake flour (not self-rising), sifted 2 tbsp unsweetened cocoa powder 1 tsp salt 1 1/2 cups sugar 1 1/2 cups vegetable oil 2 large eggs, room temp. 1/2 tsp red gel-paste food color 1 tsp pure vanilla extract 1 cup buttermilk 1 1/2 tsp baking soda 2 tsp white vinegar Preheat oven 350 F. Line muffin trays with paper liners. whisk together cake flour, cocoa and salt. with electric mixer on med-high speed, whisk together sugar and oil until combined. add eggs, on at a time, beating until each is fully combined. mix in food color and vanilla reduce speed to low. add flour mixture in three batches, alternating with two additions of buttermilk and whisking well after each. stir together the baking soda and vinegar in a small bowl (it will foam); add mixture to the batter, and mix on med. speed 10 seconds. fill each cupcake tin 3/4 full. bake for 20 mins. or until centres come out clean. add cream cheese frosting on cooled cupcakes (see cream cheese frosting recipe on next page)
75: cream cheese frosting Tracey's 8 ounces (2 sticks) butter; room temp. 12 ounces cream cheese; room temp. 1 pound (4 cups) confectioners' sugar; sifted 3/4 tsp pure vanilla extract beat butter and cream cheese with a mixer on med.-high speed until fluffy, 2 to 3 mins. reduce speed to low. add sugar, 1 cup at a time, and then vanilla; mix until smooth.
76: cheesy scallop potatoes From Aunt Sue 2 pound potatoes (6-8 med sized) 3 tbsp butter 3 tbsp flour salt and pepper to taste 1 1/2 cups milk 1 can cheddar cheese soup 1 medium onion thinly slice potatoes; slice onion. in cassarole dish layer all ingredients as follows: 1/3 sliced potatoes, 1/2 onion, sprinkle 1 tbsp flour, dollops 1 tbsp butter, shake of salt and pepper. Repeat. Finish with remaining potatoes. dump can of cheddar cheese soup into 2 cup measuring cup and stir until smooth. gradually add milk until mixture reads at the two cup line; stir well. Pour on top of potatoes. bake 350 f for 50 - 60 mins or until potatoes are tender. Optional: can be topped with any of the following: crunch fried onions, cheese, or parmesan.
77: fresh herb pasta From Tracey 1 package of favorite pasta 1/4 cup extra virgin olive oil 2 or more tbsp of your favorite fresh italian herb (parsley, thyme, oregano, etc.) 2 cloves fresh garlic, finely minced salt and pepper to taste optional ingredients: 1/2 lbs or more of shrimp or chicken 1 cup or more of fresh or frozen vegetables parmesan cheese 1/3 cup white wine follow directions on package for pasta. in skillet heat olive oil until hot, add garlic and any optional ingredients that may need to cook. chicken will need to be cooked through. vegetables just need to be cooked until tender. shrimp and fresh herbs will only need to cook for about 5 mins, so they should be added near the end with the wine. drain your pasta and toss everything together, seasoning with salt and pepper to taste. add parmesan or other cheese. serve hot
78: Pinapple squares From Susan Filling: 2 eggs 2 cups flour 2 cups sugar 1 tsp vanilla 1 - 19 0z crushed pineapple 1 tsp baking soda mix all together. bake in 9" x 13" pyrex dish at 350 F for approx 25-30 mins. or until golden brown and cooked. Let cool Icing: 1 - 8 oz pk cream cheese 1 cup sugar 1 1/2 cups cool whip 1 tsp vanilla cream sugar and cream cheese then add cool whip and vanilla. Place on squares. toast cocoanut to garnish the top.
79: Creamy lemon squares By Chef Tracey 1 cup graham crumbs 1/2 cup flour 1/4 cup packed brown sugar 1/4 cup cold butter 1 pkg cream cheese; softened 1 cup white sugar 2 eggs 2 tbsp flour 2 tbsp grated lemon zest, divided 1/4 cup fresh lemon juice 1/4 tsp baking powder 2 tsp icing sugar Preheat oven 350 F. grease 8" square baking pan. mix graham crumbs, 1/2 cup flour and brown sugar in bowl. cut in margarine with pastry blender or 2 knives until mixture resemble coarse crumbs. press firmly onto bottom of prepared pan. bake 15 mins. beat cream cheese and sugar with mixer on med. speed until well blended. add eggs and 2 tbsp flour; mix well. blend in 1 tbssp lemon peel, lemon juice and baing powder; pour over crust. bake 25-28 mins or until centre is set. cool completely. cover and refridgerate at least 2 hours or overnight. sprinkle with icing sugar and remaining 2 tbsp lemon peel before cutting and serving.
80: Susies shortbread cookies 1/2 cup Corn starch 1/2 cup icing sugar 1 cup flour 3/4 cup butter; softened preheat oven 300 F sift together corn starch, sugar and flour. with wooden spoon blend in butter until a soft smooth dough forms. shape into 1 inch balls. If dough is too soft to handle cover and chill for 30-60 mins. Place 1 1/2 inches apart on ungreased baking sheets; flatten with lightly floured fork. alternatively, roll dough to 1/4 inch; cut into shapes with cookie cutters decorate with candied cherries, coloured sprinkles or nuts if desired bake for 15-20 mins or until edges are lightly browned. cool on wire rack
81: old fashioned sugar cookies 1 cup butter, softened 1 1/2 cups sugar 2 tsp cream of tartar 1 tsp baking soda 1/4 tsp salt 2 eggs 1 tsp vanilla extract 2 3/4 cup flour 1/4 to 1/3 cup sugar preheat oven 375 F in large bowl beat butter with mixer on med.-high speed for 30 seconds. add 1 1/2 cups sugar, cream of tartar, baking soda and salt. beat until combined, scraping sides of bowl occasionally. beat in eggs and vanilla until combined. beat in as much of the flour as you can with the mixer. using a wooden spoon, stir in any remaining flour. cover and chill in refriderator for 2-3 hours or until dough is easy to handle shape dough into 1 inch balls. roll balls in 1/4 to 1/3 cup sugar. place balls about 2 inches apart on an ungreased cookie sheet. bake for 7 - 8 mins or until edges are lightly browned. transfer cookies to wire rach; let cool. makes 30
82: Pumpkin Swirl Cheesecake Tracey's best 18 Peek Frean Ginger Crisps (1 sleeve) crushed (about 2 cups) 1/4 Cup finely chopped pecans 1/4 cup butter, melted 3 pkg (250g each) philadelphia Cream Cheese,softened 3/4 cup sugar, divided 1 tsp vanilla 3 eggs 1 cup canned pumpkin 1 tsp ground cinnamon 1/4 tsp ground nutmeg dash ground cloves Heat over to 350. Mix cookie crumbs, nuts and butter; press onto bottom of 9 inch springform pan. Beat cream cheese, 1/2 cup sugar and vanilla with mixer until blended. Add eggs, 1 at a time, beating after each just until blended. Remove 1 cup plain batter. Stir remaining sugar, pumpkin and spices into remaining batter. spoon half the pumkin batter into srust; top with spoonfuls of half the batter. Repeat layers, swirl with knife. Bake 45 min or until center is almost set. Cool completely. Refrigerate 4 hours.
83: Pumkin Trifle Sue's Amazing dessert 1 Angle Food Cake 1 cup pure pumkin 2 small vamilla pudding 3 cups milk 1 tsp cinnamon 2 cups whipped cream 1/2 cup skor bar bits Cut angel food cake into slices and put on cookie sheet. Put in 350 oven for 8 minutes each side or until golden. Cool and cut into cubes. Mix pumkin, pudding, milk and cinnamon until smooth. Fold in whipped cream. 84: Krackle Tracey's Specialty 1 Sleeve saltine crackers 1 cup butter 1 cup sugar 1 pkg chocolate chips Place salt topped crackers on baking sheet. In med sauce pan mix butter and sugar on med heat. Bring to boil for 3 minutes stiring constantly after it starts to boil. Pour mixture over crackers and put in oven for 12 min at 350.
