1: My Own Sauce 1/4 C. chopped onion 1/2 C. Catsup 1/4 C. Molasses 1/2 t. salt splash of vinegar | Harvard Beets 1 T. cornstarch; 2 T. sugar 2/3 C. liq. or water; 1/8 t. salt 1/4 C. vinegar. Cook 'til thick & clear--add beets heating thoroughly (303 size can) Cranberry Salad 1 C. (4oz) condensed milk; 1/4 C. lemon juice; 1 can (20 oz) crushed drained pineapple; 1 can (16 oz) whole cranberry sauce: 2 C. min. marshmallows; 1/2 C. chopped pecans; Red food coloring (optional); 1-8 oz. cool whip Combine milk & lemon juice. Mix well. Stir in pineapple, cranberry sauce, pecans, marshmallows, & food coloring if desired. Spoon into 13X9X2" baking dish. Freeze 'til firm (4 hrs. or overnight). Cut into squares. 12-16 servings

2: Spinach Dip 10 oz frozen spinach (thawed & squeezed); 1/2 C. sour cream; 1 C. mayonnaise; (water chestnuts optional); 1 Bx Knorr Veg. soup mix. Mix & chill 2 hrs. | Paradise Salad Dissolve 1 bx lemon jello in 1 C. water. Chill 'til syrupy. Beat in 1 C. sour cream. Fold in 1 C. cream cottage cheese & 1 C. drained crushed pineapple. Pour in mold. Garnish with rest of pineapple & orange slices around the edge. Meat Balls 1# ground beef; salt; pepper; pinch garlic; 1 t. parsley; 2 T. Italian cheese. Fry fast & brown. Make sauce of tomato juice, garlic, cheese (tomato soup may be used). Add meat balls. Simmer 'til thick.

3: Chex Party Mix 2 C. Wheat; 2 C. Corn; 2 C. Rice; 1/4 C. salted nuts; 4 t. Worcestershire; 1 t. seasoned salt; 6 T. butter. Heat oven 250. Melt butter over low heat. Stir in Worcestershire & salt. Add cereals & nuts. Mix over low heat "til coated. Heat 45 min. in oven, stirring every 15 min. Spread out on absorbent paper to cool. Yields 6 3/4 C. | Baked Caramel Corn 1 C. (2 sticks) butter 1/2 t. baking soda 2 C. packed brown sugar 1/2 C. corn syrup 1 t. salt; 1 t. vanilla 6 qts. popped corn Melt butter, stir in brown sugar, corn syrup & salt. Bring to boil stirring constantly. Boil without stirring 5 min. Remove from heat, stir in soda & vanilla. Pour slowly over pop corn mixing well. Turn into 2 lg. shallow baking or roasting pans. Bake in 250 F oven for 1 hr. stirring every 15 min. Remove from oven & cool completely. Break apart & store in lightly covered container. Makes about 5 qts. of corn.

4: Pop Corn Balls 1 C. sugar; 1/4 C. butter; 1/3 C. white corn syrup; 3/4 t. salt; 1/3 C. water; 3/4 t. vanilla; 3 qts. popped pop corn. Keep corn in 300 oven. Stir & cook sugar, corn syrup, water, butter & salt until sugar is dissolved. Continue cooking without stirring (270) until syrup forms a brittle ball in cold water. Add vanilla. Pour syrup slowly over popped corn, mix well to coat every kernel. Grease hands with butter before shaping in balls. Makes 12 medium-sized balls. Nuts, candied cherries or raisins may be added before combining with syrup. | Meat Loaf 2 eggs; 3/4 t. salt; 3/4 C. milk; 1/2 t. sage; 2/3 C. dry bread crumbs; dash pepper; 2 T. chopped onions; 1 1/2# ground beef. Shape into loaf pan. Bake 350,1 hr. Spoon 1/4 C. Catsup, 2 T. brown sugar, 1 t. dry mustard, 1 t. lemon juice mixed, over top. Bake 15 min. more. 1/11/80

5: Christmas Breakfast 7 slices white bread (remove crust) & cut to line bottom of buttered 9 X 13 glass pan. On bread, spread 8 oz. grated cheddar cheese. Stir together in blender 6 eggs, 2 1/2 C. milk, 1 t. dry mustard, 1/2 t. salt, 1/4 t. pepper. Pour over bread & cheese. May be made night before. Add bacon, sausage or ham before baking. Bake 350 for 50-55 min. | Sauerkraut Balls 1 1/2# (2 cans) corned beef 1 med. grated onion; 1 t. salt 1 T parsley (dry); 2 C. milk 1/4 t. dry mustard; 2 C. flour 4 # sauerkraut, cut up Mix well & chill 3 hrs. Roll in flour then beaten egg, then bread crumbs. Cook in oil for 3 min. med. heat. 11-4-79 Macaroni & Cheese Boiled 8 oz. macaroni (2 C); 2 T butter; 1 1/4 C. (1/2" cubes) sharp cheese or 1/3# longhorn; salt/pepper; 2 C. milk plus paprika; 2 eggs Place alternate layers in buttered 12 X 7 1/2 X 2 baking dish. Scald milk, add eggs & cheese. Add macaroni. Bake until golden brown on top. About 350 for 40 min.

6: Spareribs In Sauerkraut Allow 3/4# per person. Put in kettle, cover with boiling water, simmer until almost tender--about 1 1/2 hr. Add kraut allowing 1/2 to 1 C. per person. Continue cooking until tender, arrange together on platter. [Dish may be baked. Put 1 layer of spareribs in roasting pan, cover with kraut then cover kraut with another side of ribs & roast uncovered, med. oven 2 hrs.] | Pigs In Blanket 2# ground beef; salt; pepper; onion; 1/2# sausage; 1 C. tomatoes; 1 C. rice Mix above (except tomatoes) wrap in cabbage leaves, cover with tomatoes or juice. Cook, simmering about 2 hrs. Popovers 1 C. sifted flour; 1/4 t. salt 1 C. milk; 2 T. melted shortening; 2 eggs, beaten. Mix and sift flour & salt. Combine eggs. Mix & add shortening. Gradually add to flour mixture beating about 1 min. or until batter is smooth. Fill greased sizzling hot popover pans 3/4 full & bake in preheated 450 oven about 20 min; reduce heat to 350 & bake 15 or 20 min. longer

7: Chicken Casserole Supreme 2 Chicken breasts (boned & skinned); 1/2 C. chopped celery; 1/2 C. Chopped onion; 1 sliced carrot; 1 C. frozen peas; 1 can cream. of chicken soup; 1/2 can cream mushroom soup; 1/2 C. sour cream; 1/2 C. water. Combine soups, sour cream & water. Spray casserole with Pam. Put thin layer of mixture on bottom, then chicken in next. Sprinkle vegetables over chicken. Pour remaining mixture over all. Bake 350, 1-1 1/2 hrs. Good served over rice. Can be prepared ahead & refrigerated then baked when ready. (I use the whole can of mushroom soup). | Cheese Puffs 2 C. flour; 1# sharp grated Cheddar cheese; 1 C. (2 sticks) butter or margarine. Mix all ingredients in a bowl. Roll into 1" balls and place on ungreased cookie sheet. Refrigerate overnight. Bake for 10 min. in oven preheated to 400. Makes about 5 dozen. Butter in the recipe should be melted before it is added to the dry ingredients.

8: Dad's Candy 3 C. sugar; 2 T. butter; 1 C. canned milk; 1/4 t. salt 4 T. white corn syrup 1 t. vanilla; 6 T. cocoa 3/4 C. nuts Mix sugar, milk & corn syrup. Cook, stirring 'til boils. Cook to soft boil stage. Cool add butter and hand beat. | Butterscotch Haystacks 1 C. butterscotch chips 1/2 C. peanut butter chips 1 T. shortening (not butter) 1 can (3oz.) chow mein noodles, coarsely broken Place chips and shortening in a medium microwave-safe bowl. Microwave on high power 1 min. Sitr. Continue heating 15 sec. at a time, until chips are melted. Stir in chow mein noodles. Drop by heaping t. onto a tray covered with waxed paper. Let stand until firm. 10/20/95

9: Cream Puffs 1 C. water; 1 stick marg.; 1/2 t. salt Boil & melt marg., lower heat. Add 1 C flour all at once & stir to ball. Add 4 eggs one at a time in ball above. Stir until eggs mixed, add next egg until all 4 are used up. On greased cookie sheet, put big spoonful. Bake 400 for 30 miin. Cool. Slice top off and put in filling. (whipped cream or cream filling). Put powdered sugar on top. | Peanut Bars 4 eggs; 2 C. sugar Beat together 15 min. Add 2 C. flour, little at a time. Add 1 C boiling water. Lastly, add 1/2 C. flour in which 2 t. Baking Powder has been added. Add vanilla and Bake 375 for 15 -20 min.. [Cream 1/2# creamery butter, 1 bx conf. sugar, enough milk to make thin to spread. Spread over cut squares of cake, roll in ground fresh (no salt) peanuts .]

10: Sunshine Cake (Grandma Shepard's) Beat 5 min: 6 egg yolks & 1/2 C. cold water, 1 t. vanilla, pinch salt. Add 1 1/2 C. sugar--beat 5 min. Add 1 1/2 C. flour--beat 5 min. Fold in 6 stiffly beaten egg whites. Bake in ungreased tube pan 375 oven 30-35 min. | Three Egg Angel Food Cake (Grandma Shepard's) 1 C. sugar; 1 1/3 C. flour; 1/2 t. cream tartar; 1/3 t. salt; 3 t. BP; 2/3 C. scalded milk; 3 egg whites; 1 T. Vanilla or almond Mix 1st 5 (sift) 4 or 5 times. Cool milk slightly, add slowly beating. Add vanilla. Mix well. Fold in well beaten whites. Bake in ungreased angel tin 350 oven, 30-35 min. Allow to cool upside down. (put on a bottle) Sugar Pie or Milk Pie 1 C. sugar(scant); 1/3 C. plus 1 1/2 T. flour, pinch salt, cinnamon to taste; 1 1/2 C. Milk Mix & pour in 9"baked pie shell. Bake 35 oven 'til thick & brown on top

11: Cora's Crust 2 C. flour; 1/2 t. salt Mix 1/3 C. flour with cold water, set aside. Fold in 12 T. Crisco. then add paste and mix. (refrigerate dough 1 hr. before rolling out). Cora's Apple Pie Filling Put a little flour and sugar on bottom of pie shell. Cut up 5 apples or so (Gala, Granny Smith or Melrose-best). Peel & slice. Add sugar & cinnamon to taste, 1 stick butter in pieces on top of apples. Cover with top crust, bake 15 min. @450, then 30 min. @ 350. Cora's Cherry Pie Filling In bowl put some red food coloring, almond (few drops), 3 T. tapioca (bx). 1 1/2-2C. sugar, 3 C. sour cherries, 3/4 stick butter on top. Cover with crust and bake same as Apple. | Note: Use tapioca in either pie for thickening (I put in bottom of pie shells-1 T or so) & sprinkle on pie.

12: Flan Sponge Cake --to Fill Separate 4 eggs; Beat egg whites & 1/8 t. cream tarter 'til stiff-set aside. Beat egg yolks, add 2 t. lemon juice & beat 'til lite in color. Add 6 T. sugar 1 at a time. Beat 'til creamy & light. Stir in 6 T. flour. Fold in egg whites. Pour in well greased & floured flan pan. Bake 350, 25-30 min. Fill with fruit filling | Lemon Squares Bottom: 1/2 C. softened butter; 1 C. sifted flour; 1/4 C. sifted conf. sugar. Mix together & press into 9" sq. buttered baking pan. Bake in preheated 350 oven, 15 min. Top: 1 C. granulated sugar; 2T. flour; 1/2 t. baking powder; 2 slightly beaten eggs; 3 T. fresh lemon juice; additional conf. sugar. Combine & pour over baked bottom layer. Bake in preheated 350 oven 20-25 min. Remove & sprinkle with 2-3 T. conf. sugar. Cut into squares. 12/17/72

13: Good Rolled "Cookies" 1 C. shortening; 1 1/2 C. sugar; 2 eggs, add salt & vanilla. Cream well. 1 C buttermilk, 1 t. salt, 1 t. nutmeg, 1 t. soda, 2 t. BP, 1 t. vanilla, 4 C. flour. Chill overnight. Roll out & cut into shapes. Bake 'til edges turn brown (5-7 min. at 350-400) | Pineapple Cookies 1 C. shortening; 1 C. brown sugar; 2 eggs; 3/4 C. crushed pineapple; 4 1/2 C. flour; 2 t. BP; 1 t. soda; 1/2 t. salt; Add 1 t. vanilla & 1 C. nuts lastly. Drop on greased cookie sheet. Bake 350, 10-15 min. Sugar Pie or Milk Pie 1 C. sugar (scant); 1/3 C. plus 1 1/2 T flour; pinch salt; Cinnamon to taste; 1 1/2 C. milk Mix and pour in a 9" baked pie shell. Bake at 350 F. 'til thick & brown on top.

14: Swedish Cookies Cream 1/2# butter with 1/2 C. powdered sugar slowly, then add 1 3/4 C. flour; 1 C. shopped nuts; 1 t. flavoring Chill--roll in small balls & pat down on cookie sheet. Bake about 12-15 min. at 350. Roll in powdered sugar while still warm. Black walnuts mixed with nuts give excellent flavor. | Leaf Lard "Swedes" 1 cake yeast; 1 C. milk; 3 eggs; 5 C. flour; 1# lard; pinch salt Dissolve yeast in a little warm milk. Beat eggs in milk. Add flour & lard separately. Cut until fine. Add to milk mixture., Chill. Roll out dough-thin (in conf. sugar) & cut in 2" squares. Fill and press together in triangle. Bake 350, 10-15 min. Solo filling preferred; 1/4 t. or less on each square. Orange Cookies 1/2 C. shortening; 1/2 t. soda; 1 C. sugar; 1/2 t. BP; 1 egg; 1/2 t. salt; 2 1/2 C. flour; 1/2 ground Calif. orange; 1/2 C. sour milk or buttermilk; 1/2 t. lemon extract. Mix & chill dough. Drop on greased cookie sheet. Bake 375 until very light brown. Do not over bake. Orange Icing: 2 T. butter; 2 C. conf. sugar; 1/2 gr. calif. orange.

15: No Bake Cookies Melt 1 stick margarine, add 1/2 C. milk, 2 C. sugar & bring to rolling boil. Set off fire & stir in 6 oz. chocolate or butterscotch chips, 3 C. quick oats, 1/2 C. peanut butter. 1/2 C. coconut, or 1/2 C. nuts optional. Drop on greased vanilla paper. | Cherry Winks 2 1/4 C. flour; 2 t. BP; 1/2 t. salt; 3/4 C. softened butter; 1 C. sugar; 2 eggs; 2 T. milk; 1 t vanilla; 1 C. chopped nuts; 1 C. finely cut pitted dates; 1/3 C. finely chopped maraschino cherries; 2 2/3 C. Kellog's corn flakes crushed to 1 1/3 C.; 15 maraschino cherries, cut into quarters; sift together flour, BP & salt. Set aside. In large bowl beat margarine & sugar until light and fluffy. Add eggs & beat well.Stir in milk & vanilla. Add flour mixture. Mix well. Stir in nuts, dates & chopped cherries. Shape level T. of dough into balls. Roll in crushed corn flakes. Place on greased baking sheets. Top each with cherry quarter. Bake at 350 for 10-14 min. or until lightly browned. Yield: about 5 doz.

16: Delicious Creamy Frosting 1/2 C. milk; 1 T. flour. Stir, cook 'til thick. Mix 2 C. conf. sugar & 1/2 C. Crisco. Add to 1st mixture. Beat quite well with electric beaters. Spread when of right consistency. | Applesauce Cookies 1 C. applesauce; 1 C. sugar; 1 C. marg.; 1 egg;, 2 C. flour; 1 C. chopped raisins; 1 C. chopped nuts; 1 t. BP; 1 t. soda; 1 t. cinnamon; 1 t. cloves; 1/4 t. salt Cream shortening & sugar. Add egg. Sift dry ingredients, add to applesauce. Add vanilla. Mix. Drop by t. on greased pans. Bake 350, 12-15 min.

17: Punch 1-14 oz. Eagle brand milk; 1-46 oz. can Pineapple juice; 1-2 L. chilled orange soda; Orange sherbet optional. Stir in punch bowl, add orange soda. Top with Sherbet. Refrigerate leftovers. | Pumpkin Cookies 4 C. unsifted flour; 2 C. quick oats; 2 t. soda; 2 t. cinn; 1 t. salt; 1 1/2 C. butter; 1 egg;, 1 t. vanilla; 2 C. brown sugar; 1 C. gran. sugar; 1 (16oz.) can Pumpkin; 1 C. raisins or choc. chips. Preheat oven to 350. Combine flour, oats, soda, cinn. & salt. Set aside. Cream butter, gradually add sugars, beat 'til fluffy. Add egg & van. Mix well. Alternate additions of dry & pumpkin, mixing well after each addition. Stir in raisins or chips. Drop by t. onto lightly greased cookie sheet. Spread slightly. Bake 350 for 10-12 min. 'til cookies are firm & lightly browned. 11/4/89

18: Thumb Print Cookies 1 C. softened butter; 1 egg yolk; 1 1/2 C. flour; 1 pkg. 8oz. soft cream cheese; 1/2 t. BP; 1 can SOLO filling; 1 T. milk; 1 T. sugar; conf. sugar. Beat butter, cream cheese, milk, & sugar in med. bowl with mixer till thoroughly blended. Beat in egg yolk. Sift flour & BP & stir into butter mixture to make stiff dough. Cover bowl & refrigerate several hrs. or overnight. Preheat oven to 400 F. Roll out dough on lightly floured surface to 1/4" thickness. Cut dough with floured 2"cookie cutter. Place cookies on ungreased baking sheets about 1" apart. Make depression in center of cookie with thumb or back of spoon. Spoon 1 t. SOLO filling into center of cookies. Bake 10 to 12 min. or until lightly browned. Remove from baking sheets and cool completely on wire racks. Sprinkle with confec. sugar just before serving. About 36 cookies.
