1: I created this book to share some of your favorite Vadala and Eisnor recipes along with some old family photos. I hope you enjoy it. Merry Christmas, Love Kathy 2011

2: The Infamous, One and Only Eisnor Family Turkey Stuffing | This recipe was shared with Nana when she was first married by Grandpa's stepmother. The original recipe called for grating 2 loaves of stale bread into crumbs. After doing that a few years, Nana realized she could substitute canned breadcrumbs... Grandpa never complained so guess it's the same! The original recipe also called for mixing everything in the large potato pot using your hands, and that was how Nana did it and how she taught me. I prefer to use my large Kitchenaid mixer and that works well to get it mixed thoroughly. The only thing is, this is a BIG recipe and you need a BIG bowl & a heavy duty mixer...the stuffing is too heavy for a small mixer to handle... I have also found that halving the recipe is usually plenty to stuff a 20 lb bird. So what you do is up to you!

3: 10 lbs potatoes 2 cans Plain Breadcrumbs 1 dozen Eggs 1 lb Butter 2 onions 1 large bunch Celery Bell Seasoning Peel and boil potatoes until soft While potatoes are cooking chop onions and celery fine Drain and mash potatoes add butter while mashing add onions and celery Add 6 eggs mix well then add 1 can of breadcrumbs and bell seasoning...about 2 Tablespoons Mix well Add remaining eggs, then depending on consistency add more breadcrumbs as needed...somewhere between 1/4 and full can. The stuffing should not be soft like mashed potatoes but firm almost stiff, dry. The stuffing will gain some moisture from the turkey At this point add more Bell seasoning if necessary based on taste... usually this requires a consensus of everyone in the house! | The pictures are of Grandpa's father; Kenneth and his mother, Esther...the young child is Uncle Johnnie

5: 1 pint sour cream 5 tbsp mayonnaise 1 tbsp Worcestershire 1/2 tspn dry mustard 1/4 tspn garlic powder 1/4 tsp lemon juice About 4 ounces Bleu Cheese Mix all together If too thick, add a little milk Enjoy | Grandpa's Bleu Cheese Salad Dressing | Frances & Wellington Eisnor 12/31/1944

7: Onion Soup 4 large Onions thinly sliced 2 Tsp Butter 1 quart Beef broth 3 tablespoons White wine 1/2 tsp salt and pepper French Bread Swiss Cheese Brown the onions in butter until soft, add the broth and wine. Simmer 10 minutes Ladle individual servings of soup into oven-safe bowls add a slice of French bread to each and top with a slice of swiss cheese. Place in 350 degree oven a few minutes, just until cheese melts Enjoy!

8: 1 12 cups water (boiled and cooled) 1 cup white vinegar 1 tbsp kosher salt 2 tbsps dill seed 1/4 tsp celery seed 1 tsp mustard seed 1 tsp red pepper flakes 1 bay leaf 2 garlic cloves (minced) 4 1/2 cucumbers Add salt and spices to each jar. Add cucumbers whole (ends trimmed) or spears, packing them in tightly. Fill jar to within 1/2 inch of the top. Add pickling liquid to cover the cucumbers. Put a lid and ring on the jar and shake for a few seconds to distribute the salt and spices evenly. Refrigerate for 7 days, shaking the jar for a few seconds every day. | Fran Eisnor | Kosher Pickles | Fran made these pickles with cucumbers from the garden or the market at the end of the summer. You can also use green tomatoes quartered. For both recipes wash the cucumbers well with cold water. Trim ends and cut into either thick slices.for the bread & butter or keep whole. for the kosher. Use hot sterilized pint or half-pint canning jars. Both recipes are ready to eat in about 7 days and I believe will keep refrigerated for 6 months or more. Seemed like they were always eaten or given away long before then. | Pickle Things

9: Fran Eisnor | Bread & Butter Pickles | 2 pounds pickling cucumbers 2 1/2 cups sugar 2 cups White Vinegar 1 Chopped onion 2 Tbsp non-iodized salt 2Tsp Celery Seed 2Tsp Mustard Seed 1 Tsp Ground Turmeric Place cucumber slices into 4 hot sterilized pint or 8 half-pint canning jars. Mix remaining ingredients in medium saucepan. Bring to boil on medium-high heat, stirring to dissolve sugar and salt. Reduce heat to low; simmer 5 minutes. Ladle over cucumbers, leaving 1/4-inch headspace. Stir each jar well. Cool. Cover with metal lids and screw on bands. Refrigerate pickles. Shake jars once a day for 7 days. | The pictures on these pages are of a younger Fran and Anne, Nana and Kris

11: Grandpa's Cheesecake | 3Lbs Cream Cheese at room temp 1 1/2 cups Sugar 1/4 cup Lemon juice 6 Eggs 1/2 Tsp Vanilla Preheat oven to 400 degrees Grease a 10 inch Springform pan Whip cheese until creamy, add sugar and cream together Then add eggs one at a time mixing well after each Then add Lemon and Vanilla Pour into greased pan and bake for 1 hour, then shut off oven and leave cake in oven until cool. Chill until cold, gently release spring form side. | This picture is Dad's 8th grade graduation photo

14: Grammy & Pop with his parents Joseph & Josephine | Lucille Vadala | Meatballs | 1 lb lean Hamburg 1Egg 1Onion 3 Heaping Tbsp Good Grated Romano Cheese Italian Breadcrumbs ( Progresso is Best ) Chop onion fine, then mix with meat and egg, & cheese. Add Breadcrumbs. - There was never a specific measurement for it. The way Grammy taught me was to just give the can a shake over the bowl enough to lightly cover the mixture- mix & form small balls Fry in olive oil, til cooked through,,,Add to sauce

15: Grammy's Sauce 2 cans whole tomatoes 2 cans tomato paste Salt pork - about 2 inch square 1 onion chopped about 3 cloves Garlic Italian Sausages & Grammy's Meatballs Sauté onion, minced garlic & salt pork in olive oil in large pot until soft and pork skin is crispy. remove pork and add tomatoes & paste. Add water 2/3 of can for each empty can of tomatoes & paste. Stir til paste is mixed in. Cover & bring to a slow boil, continue slow boil until whole tomatoes break up, about 1/2 hour, stirring occasionally so it doesn't burn on bottom.When tomatoes have broken up, remove cover & add cooked sausages, reduce heat & simmer until thickened, about 2hrs. Throughout keep stirring occasionallyDuring the last 1/2 hour add the cooked meatballs.

17: Grammy's Chicken Soup 1 whole chicken, cleaned & rinsed 1 Onion 2-3 Carrots 2-3 Celery Stalks 2-3 spoonfuls of Sauce or tomatoes salt & Pepper 1 box small soup pasta like Pastina, orzo or mini macs Place Chicken & Veggies in large pot, add enough water to cover chicken. Cover and bring to boil, then reduce heat & simmer 1-2 hrs Add Sauce, salt & pepper to taste.. Remove chicken When almost ready to serve - Cook Pasta in a separate pan. Drain Pasta & add to soup broth. Serve with Lots of Good Romano Cheese Grammy always served the chicken separately, and let people add to the soup or eat on a separate plate. ..Best Cure for Any Sickness!!

18: Grammy's Lasagna Grammy's Sauce !6 oz Ricotta Cheese 8oz Mozzarella 6 Eggs 1 Box Lasagna noodles Cook noodles until al dente & drain. In lg bowl mix ricotta, eggs & mozzarella ( reserve about 1/4 of mozzarella for top). Ladle a small amt sauce in large rectangle baking pan just enough to thinly coat. Add a layer of noodles then add layer of cheese mixture., top that with thin layer of sauce. repeat sequence until all noodles are used. Cover last noodle layer with sauce and then mozzarella. cover with tin foil and bake for 1 hr in 350 degree oven. Then remove foil and bake about another 15 min to 1/2 hour until a little drier. Let sset about 15 min before cutting into squares. Serve with extra sauce & Romano cheese on table. Yummy!

21: Joseph Vadala | Italian Sausage | 5 Lbs Ground Pork Butt 2 Tbsp non iodized salt 1 tbsp Peppercorn ground coarse 1 1/2 Tbsp Fennel Seed 2 Oz Aged Provolone Chopped into small pieces 3/4 cup red wine 1/4 cup sweet vermouth Sausage casings Mix all ingredients together well in large mixer Using sausage stuffing accessory feed meat mixture into casings. as the mixture feeds through twist each link to form about a 4 inch sausage.. Cook on grill or fry. | This recipe was closely guarded and it took Dad years to convince Pop & Uncle Charlie to share it for fear Dad would divulge it to certain individuals...So basically don't give it away!

24: 1lb ground beef 1 Cup uncooked rice 1 small cabbage 1 can V8 Juice Salt & Pepper 1 16oz can Sauerkraut Parboil cabbage head in large pot until leaves are pliable about 2-3 min. Drain and separate leaves. In lg bowl mix meat, rice, 1/4 can of sauerkraut, about 1/2 cup V8, salt & pepper together. Place about a tablespoon of meat mixture on a cabbage leaf, turn in sides and roll up, secure with toothpick.Continue until all meat mixture is used. In large pot mix remaining sauerkraut and V8, gently place in rolled cabbages. Cover and simmer 2-3 hrs. | Stuffed Cabbage

25: Kathy Vadala | Pizza Crust | 4cups flour 2 tsp dry yeast 3/4 tsp salt 3 Tbsp Olive Oil 1 1/4- 1 3/8 cups water Place all wet ingredients in Bread maker pan, add in dry ingredients except yeast. Make a small well in center of flour mixture & spoon in yeast. Follow directions for dough on bread maker. When done divide dough into thirds, preheat oven, Roll dough out on floured board. Place on pizza pan & top as desired Bake 15-20 min or until crust sl browned on bottom | 400 | 20 min | 3 pizzas | News Years Eve 1985 with the Panos, I was pregnant with Michael at the time

27: Clam Chowder 16 oz clams preferably from New England, Drain reserving juice. Dice & boil until tender 4 lg potatoes Cut into small pieces and cook til crisp 3 oz bacon Chop 1 onion fine and add to grease in pan, sauté til soft, drain off grease Stir in 3 tbsp butter into onion mixture, add hard parts of clams, cook stirring for 5 min Sprinkle 3 tbsp flour into pan, mix well. scald 2 cups milk and 1 cup cream, then add to flour mixture stirring in a little at a time Add in reserved clam juice and clams. Cook only until heated through.

29: Best Brownies | Ingredients 1/2 Cup butter melted 1 cup sugar 1 tsp vanilla ( mmm mexican if you can) 2 eggs 1/2 cup flour 1/3 cup Hershey's cocoa 1/4 tsp baking powder 1/4 tsp salt Preheat oven to 350 degrees Grease 9 inch square pan Stir together butter, sugar, & vanilla in bowl. Add eggs,beat well with spoon. Stir together dry ingredients then gradually add to egg mixture, beating well until well blended. Stir in nuts if desired. Spread batter into pan. Bake 20-25 min or until brownies start to pull away from sides of pan. Cool completely & cut into squares. Ok at least try to cool before anyone eats them...

30: Mom's Apple Pie Ingredient's: 2 unbaked 9 inch pie crusts 1/4 cup sugar About 8 cooking apples- I prefer Cortlands or Staymans, but any firm tart cooking apple will do 1 tsp cinnamon 2 tbsp flour 2 tbsp butter spoonful of milk Preheat oven to 400 degrees Place one crust in pie plate Peel & core apples, place into lg bowl add sugar, flour, cinnamon & stir to thoroughly coat. Put apple mixture into pie plate, dab with butter. Top with 2nd crust, crimp & seal edges. Brush crush with milk & cut a few vent slits in crust Place tin foil around crust edge. Bake at the 400 for 10 minutes then decrease temp to 325. Bake for an additional 1 1/2 hrs. Remove the tin foil for the last 15 minutes of baking. The secrets to my pie is really about half the amount of sugar as the average apple pie, so it's not really sweet, but really good apple flavor and cooking it much longer at lower temp makes the apples really soft with crispy crust.

31: Pie Crust | Place in large bowl: 3 cups flour 1 tsp salt Cut in 1 1/3 cup shortening mixture should be pea sized crumbs In a lg measuring cup beat 1 egg with 1 tbsp vinegar add enough water to make 1 full cup.. Mix liquid into flour mixture with fork or dough hook until forms a ball. Wrap in plastic wrap & refridgerate at least 2 hrs or up to 4 days (can also be frozen). Cut into quarters & roll out using lots of flour. Makes 4 crusts.

32: Ingredients: 1 cup butter 1/2 cup sugar 1 egg 1 tsp vanilla 2 1/4 cup flour 1 tsp salt 1/4 cup walnuts 1 oz baking chocolate melted 2 tbsp chopped cherries 2 tbsp poppy seeds Beat together egg sugar, butter, & vanilla. Stir in four & salt. Divide dough into thirds, mix cherries into 1st part, chocolate & nuts in 2nd & poppy seeds in 3rd. Line a loaf pan with plastic wrap and spread the dough in in layers pink, brown, white, press down so its firm. Refrigerate at least 1 hour. Remove from pan & slice 1/4 inch thick slices. Lay them flat on cookie sheet & bake at 375 for 10 min or until sl browned, be careful not to burn. Cool on rack. Makes about 4 dozen | Christmas Cookies | Maybe not favorites, but these are a couple of the cookies I make every Christmas. Starting with the Infamous Ribbon Cookies, which no one really likes.... but I always need to make & always end up eaten

33: 1 1/2 sticks butter softened 1 box powdered sugar 1 tbsp vanilla 12 oz peanut butter 12 oz chocolate chips Mix together everything except chocolate. Roll into small bite size balls. Refrigerate at least 1 hour. Melt chocolate in double boiler. Dip balls into chocolate using toothpick, place on wax paper to dry. | Buckeyes | Christmas Bark | 1 sleeve saltine crackers 1 cup butter 1/2 cup brown sugar 1 cup chopped pecans 12 oz semi-sweet chocolate chips Preheat oven to 350 Line a jelly roll pan or cookie sheet with sides with parchment paper. Place crackers in 1 layer on pan. Melt butter & brown sugar in saucepan. Cook for 3 minutes stirring constantly. Pour butter mixture over crackers, spread evenly. Bake for 15 minutes. Remove from oven and sprinkle with chocolate chips. As they start to melt, spread evenly over entire pan. Sprinkle with chopped nuts. Refrigerate at least 1 hour. Remove from pan & crack up into small pieces. Makes about 40 pieces

34: Boomer | Whenever we talk about the Newfoundland club, Crazy Carl is always mentioned, I got this recipe from his Mother-in-law. She always made these Biscuits to sell at the Christmas tree pull and they always sold out fast! Dogs LOVE them! | Zena | Zenaa | Zena

35: Dog Biscuits 8 cups flour 12oz container honey 3 cups oatmeal 2 cups water 3 tsp baking powder 1 cup vegetable oil 1 cup peanut butter 1 cup wheat germ Stir all dry ingredients together, then mix in wet ingredients stir to form a ball flour cutting board and roll out in small amounts at a time, Cut out cookies with cookie cutters. Place on unpleased cookie sheets and bake at 325 degrees for 20 minutes. Turn oven off and leave in oven until cool. This recipe makes several dozen cookies, store in airtight container Dough may aslo be frozen to be rolled out at a later date

37: In large pot place 1 cup dry rice add 2 cups water, bring to boil and simmer 15 minutes. Cool and add 1/4 lbs cooked lean ground beef or boiled white chicken meat Day 1: Feed 1 tbspn every 2 hours Day 2 : Feed 4 tbspnevery 4 hours Day 3 Gradually start to incorporate this diet with regular diet This also works well with oatmeal in place of the rice | Diet for sick dogs with vomiting or diarrhea
