4: Ingredients: 1/2 c of light brown sugar 1/2 c of chopped pecans 2 tsp of kosher salt 1 tsp of black pepper 1/8 tsp of ground cayenne pepper (optional) 2 Tbsp of maple syrup 1/2 lb of thick-sliced Applewood-smoked bacon | Caramelized Bacon | Appetizer | 4 | 1. Preheat oven to 350 degrees F. 2. Line a baking sheet with aluminum foil. 3. Combine brown sugar and pecans in a food processor or blender. If you don't have either put in a plastic bag and smash together with a meat tenderizer or mallet. Make sure the pecans are finely ground. | Makes 15
5: 1. Preheat oven to 350 degrees F. 2. Line a baking sheet with aluminum foil 3. Combine brown sugar and pecans in a food processer or blender if you don't have either put in a plastic bag and smash together with a meat tenderizer or something that a metal handle. Make sure the pecans are finely ground. 4. Add salt, black pepper, and cayenne pepper (optional), pulse to mix if you have a food processor or a blender, move to a separate bowl if you smashed the nuts and brown sugar together. 5. Add maple syrup pulse to combine if you have a food processor or a blender. Mix with wish in a medium bowl if you don't. 6. Cut each bacon slice in half crosswise and line up pieces on the baking sheet, making sure they’re not touching. 7. With a spoon, evenly cover each slice of bacon with pecan mixture. 8. Bake for 25 to 30 minutes, or until the topping is very browned but not burnt. 9. While the bacon is hot transfer to a plate lined with paper towels to cool, eat at room temperature. | 4. 6: Parmesan Crisps | 1 4 oz bag of Parmesan cheese 1 Tbsp of flour 1 tsp of minced fresh thyme leaves 1 tsp of kosher salt 1 tsp of black pepper | 1. Preheat oven to 350 degrees F. 2. Combine Parmesan cheese, flour, thyme, salt, and pepper in a bowl and mix well. 3. With a measuring spoon, spoon even tablespoons of the mixture onto sheet pans. Spread out into 3-inch disks 4. Bake for 8-10 minutes, or until golden brown. 5. Cool on pan for 5 minutes. Take off pan with metal spatula. Move to cooling rack to cool completely. Serve at room temperature. | Appetizer | 6 | Makes 15
8: Appetizer | 8 | Deviled Eggs | 8 eggs 3 Tbsp of light mayonnaise 1 Tbsp of mustard 1 Tbsp of horseradish salt, pepper, smoked paprika to taste | 1. Put eggs in 4 cups of water and bring to a boil. Right as the water starts to boil take off the burner and cover. 2. Let the eggs stand in warm water for 9-12 minutes. Take the eggs out of the water after time is over and cool by running cold water over them. | Makes 16
9: 9 | 3. Take the eggs and remove the shell trying not to damage the egg. 4. Cut the egg in half and remove the yolk. 5. Place egg yolks, mayonnaise, mustard, salt, and pepper in a bowl and smash together with a fork. 6. Use a spoon to put egg yolk mixture in each egg white half. 7. Top with a pinch of smoked paprika on each egg and enjoy!
10: Appetizer | 10 | Kale Chips | 2 1/2 lbs of kale (about 2 bunches) 1/4 c of olive oil 1 tsp of Salt 1/2 tsp of Pepper | 1. Preheat oven to 350 degrees F. 2. Gather one piece of kale and cut out the hard stem in the middle. Cut the kale piece into smaller chip size pieces. 3. Continue to do this for the rest of the kale. | Serves 4
11: 11 | 4. Once all of the kale is cut, wash kale in a large bowl and dry with paper towels making sure to be gentle. 5. Toss the kale in a large bowl with olive oil, salt, and pepper. 6. Put kale in an even layer (so no piece is on top of another) on a baking sheet, and cook for 15 minutes, or until crisp. 7. Top with more salt if needed.
12: Appetizer | 12 | Baked Beans | 1 12oz can of pork and beans 1 12oz can of butter beans, drained 1 12oz can of kidney beans, drained 3/4 c of brown sugar 1/2 c of ketchup 1 small white onion, chopped 1/2 lb of uncooked bacon, chopped 5 uncooked bacon slices | Serves 5
13: 13 | 1. Preheat oven to 350 degrees F. 2. Mix together all beans, sugar, ketchup, onion and chopped bacon in a medium bowl until well-combined. 3. Pour mixture into a 9" x 12" pan and lay bacon slices on top. 4. Cook for 1 hour or until bacon is cooked.
14: Main Course | Curried Chicken Divan | 2 rotisserie chickens (all chicken pulled off into bite size pieces) 1 fresh head of broccoli 1 10 oz can of Cream of Chicken soup 2/3 c of mayonnaise 1/2 c of grated cheese (cheddar tastes best with recipe, but doesn't matter what kind) 2 tbsp of curry powder 1/3 c of evaporated milk 1 tsp of lemon juice | 14 | Serves 6
15: 1.Preheat over to 350 degrees F. 2. Cut ends of broccoli head off and separate broccoli into bite size pieces. Steam for 10 minutes. 3. Grease a 2 quart casserole dish. Arrange cooked broccoli in bottom of dish. Then top with pulled rotisserie chicken. 4. Mix can of Cream of Chicken soup, mayonnaise, evaporated milk, cheese, lemon juice, and curry powder together in a bowl. 5. Pour over chicken and broccoli in casserole dish and top with extra cheese. 6. Cook casserole for 30 minutes or until cheese is brown and curry mixture starts to bubble. Let cool for about 6-10 minutes and dig in! | 15
16: Main Course | Fish Sandwiches | 2 lbs of white fish, cooked (normally I use Tilapia) 1/4 tsp of grated lemon zest 1/4 c of fresh lemon juice 2 Tbsp of olive oil 1/4 tsp of salt 1/4 tsp of pepper 1/2 c of Cilantro Mayonnaise (recipe follows) 4 French bread rolls (split), tortillas, taco shells, etc. (I normally use corn tortillas) 4 romaine lettuce leaves 1/4 c of thinly sliced red onion 1. Flake fish in a medium bowl. Add lemon zest, lemon juice, olive oil, salt, pepper and mix together with fish gently. 2. Spread Cilantro Mayonnaise on bread. 3. Place the lettuce and fish in your bread. 4. Top with onion. | 16 | Serves 4
17: Cilantro Mayonnaise spread: 3 Tbsp of mayonnaise 1 Tbsp of chopped fresh cilantro 1 tsp of freshly squeezed lemon juice 1 tsp of kosher salt 1/8 tsp of ground black pepper 1 tsp of minced garlic (they sell jars of pre-minced garlic in grocery stores) 1 tsp of extra virgin olive oil 1. In a small mixing bowl combine mayonnaise, cilantro, lemon juice, salt, pepper, garlic, and extra virgin olive oil. | 17
18: Grandma's Meatloaf | Main Course | 18 | 2 lbs of ground beef 2 eggs 1/2 of a large white onion, chopped 1 1/2 tsp of chopped garlic 1/2 c of seasoned bread crumbs salt and pepper to taste 1/4 c of dry Parmesan cheese 1/4 c of ketchup 1 1/2 tsp of dry oregano 1 1/2 tsp of dry parsley | Serves 5
19: 19 | 1. Preheat oven to 350 degrees F. 2. Mix together all ingredients with hands in large bowl and add to a greased bread loaf pan. 3. Cook for an hour and check for a nice brown crust. Internal temperature should be at 155 degrees F. Let cool for 5 minutes and enjoy!
20: Main Course | 20 | Spare Ribs and Sauerkraut | 2 1/2 lbs of cut pork spare ribs 1 1/2 lbs of sauerkraut (they sell bagged sauerkraut in grocery stores) 1 Tbsp of caraway seeds 1. Brown spare ribs in a skillet so the outsides are cooked but the inside is still raw. 2. Place spare ribs on bottom of a large kettle and then on top put sauerkraut and caraway seeds. 3. Cook for 2 hours with lid on kettle over low heat. (do not take lid off!) | Serves 4
21: 21 | 2 cups of flour 4 teaspoons of baking powder 1/2 teaspoon of salt 1 cup of milk 1. Mix together dry ingredients and stir in milk gradually to make a soft dough. 2. After the pork and sauerkraut have cooked for two hours drop spoonfuls of dough on top of sauerkraut in kettle. 3. Cover and cook for another ten minutes making sure not to lift the lid. 4. After ten minutes take dumplings into a separate bowl and serve spare ribs immediately. | Dumplings:
22: Main Course | 22 | Two Sauce Spaghetti | 1 large zucchini 1 6 oz package of Feta 2 Tbsp of lemon juice (about half of a lemon) 1 1/2 c of cream 1 large white onion 1 garlic clove salt and pepper to taste 1. Slice garlic and onion and cook till onion is almost translucent. 2. Cut zucchini into bit size chunks and add to onions. Add pepper and salt. 3. Cook until zucchini is soft and add diced feta. 4. Wait until feta is melted and add cream and lemon juice and cook for 2 minutes stirring occasionally. | Serves 4 | Zucchini-Feta Sauce:
23: 23 | 1 lb of ground beef 1 small white onion 1 garlic clove 1 leek 2 large carrots 1 12 oz can of diced tomatoes 1 6 oz can of tomato juice salt, pepper, and Italian herbs to taste 1. Cut onion and garlic and cook until onion is partially translucent. 2. Add beef and cook until brown. Add salt and pepper. 3. Cut leeks into bite size pieces and add to meat mixture. Cook for 3 minutes and add tomatoes, tomato juice, and bite size pieces of carrots. 4. Add Italian herbs and cook for thirty minutes. | Bolognese Sauce:
24: Dessert | Fourth of July Sugar Cookies | 2 3/4 c all-purpose flour 1 tsp baking soda 1/2 tsp baking powder 1 c butter, softened 1 1/2 c white sugar 1 egg 1 tsp vanilla extract 1 red food coloring bottle 1 blue food coloring bottle 1 can of cream cheese frosting | 24 | 1. Preheat oven to 375 degrees F. In a small bowl, stir together flour, baking soda, and baking powder. Set aside. | Makes 35
25: 2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Then gradually add the dry ingredients to the sugar, butter, egg, and vanilla. 3. Once dough is fully mixed , separate into three equal amounts in separate bowls. Add red food coloring to one bowl, blue to the second, and keep the third the same. Take rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets. 4. Bake 8 to 10 minutes, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks. 5. Put equal amounts of cream cheese frosting into three separate bowls. Add red food coloring to one, blue to the next, and keep the third the same. Once cookies are cooled, add frosting onto each cookie. And enjoy! | 25
26: Dessert | Russian Tea Cakes | 1 c of softened butter 1/2 c of confectioners sugar 1 tsp of vanilla extract 1/4 tsp of salt 2 c of all purpose flour 3/4 c of finely chopped nuts (any kind) | 1. Heat oven to 400 degrees F. 2. Mix butter, sugar and vanilla together. 3. Mix flour, salt, and nuts into the butter, sugar, and vanilla until dough holds together. 4. Shape dough into 1” balls. Place onto ungreased baking sheet. 5. Bake 10-12 minutes. Cookies should be set but not brown. 6. While cookies are warm roll in confectioners sugar. Let the cookies cool and then roll them in confectioners sugar once more. Enjoy! | 26 | Makes 24
28: Dessert | Honey Bananas | 4 bananas 2 Tbsp of honey 1 tsp of ground cinnamon 1. Cut bananas into bite size slices. 2. Put banana slices into a medium pan and put over medium heat. 3. Add honey and cinnamon to bananas, stirring at first so honey and cinnamon cover all the bananas. Leave to cook for 1-2 minutes and enjoy! | 28 | Serves 3
30: Dessert | 30 | Chocolate Chunk Blondies | 2 sticks of unsalted butter 1 c of brown sugar 1/2 c of granulated sugar 2 tsp of vanilla extract 2 large eggs, room temperature 2 c of flour 1 tsp of baking soda 1 tsp of kosher salt 1 1/2 c of chopped walnuts 1 1/4 lbs of semisweet chocolate chunks | Makes 20
31: 31 | 1. Preheat oven to 350 degrees. Grease an 8 1/2 x 12 x 2 inch baking pan. 2. Cream together butter, brown sugar, and granulated sugar with either an electric mixer or a whisk until mixture is light and fluffy. 3. Add vanilla and mix. Then add one egg at a time making sure to mix after each. 4. In another bowl mix together flour, baking soda, and salt. 5. Add flour mixture to butter mixture and stir. 6. Fold walnuts and chocolate chunks into flour and butter mixture until everything is well combined. 7. Put batter into greased baking pan and smooth the top. Bake for thirty minutes. Cool completely and cut into bars.
32: Dessert | 32 | Kuchen | 1 c of flour 2 Tbsp of sugar 1/4 tsp of salt 1/2 c of softened butter 1 24 oz can of favorite pie filling 1. Preheat oven to 350 degrees F. 2. Mix together flour, sugar, salt, and butter in a small bowl with either a mixer or your fingers and press into the bottom of an 8x8 pan. | 3. Spread a 24 oz jar of pie filling (I used blueberry) on top of the bottom layer. | Makes 12
33: 33 | 1/2 cup of flour 1/4 teaspoon of salt 1/2 cup of sugar 4 tablespoons of butter | 4. Mix together flour, salt, sugar, and butter in a small bowl with your hands to create crumbs. Sprinkle on top of pie filling. Make sure to cover the entire top of the Kuchen. 5.Bake for 45-50 minutes or until top is golden brown, let cool for 20 minutes and enjoy! | Top Layer:
34: Dear friends and family, It's through you that I find my love for cooking. If the smell of food was not common in our houses I might not have the same passion. But growing up where a family meal meant the whole family helping in cooking, it is clear that I would develop a love and appreciation for food. I can still remember when I was young and we would decorate 100 cookies and Grandma would be cooking. Every holiday the family would get together | 34
35: and through food we would connect. Many of the recipes in my cookbook are recipes that have been remembered by heart by my family. And each time they are cooked it brings back the memories and love. This is why this cookbook means so much, it's my family and friends in a book.
