4: Pear Marmalade 3 oranges 3 lemons Cut up very fine. Add cup for cup of cold water, plus one extra cup and refrigerate overnight. 6 peaches 6 pears 6 apples Add to orange and lemons. Add cup for cup of sugar (or less). Boil slowly until thick. Place in sterilized jars and seal.

6: Beet Pickles Partially boil beets & peel. Cut into pieces and place in sterilized jars. Brine: 1 cups vinegar 2 cups water 1 cups sugar 2 tsp pickling spice Boil all ingredients for 5 min minutes. Pour over beets & seal.

7: Chutney 6 pears 6 peaches 6 onions 2 green peppers 2 red peppers 30 tomatoes 2 heads of celery 3 tbsp salt 6 cups sugar (or less to taste) 1 package mixed spices 1 quart white vinegar Bring to a boil and simmer for three hours. Spoon into sterilized jars and seal.

8: Two Way Fudge 1 cup white sugar 1 cups brown sugar 1 cup canned milk 1 square margarine or cup Boil for 15 minutes, stirring constantly. Remove from heat, add one 6 ounce package of chocolate chips, 1 6 ounce package of butterscotch chips, 1 bottle of marshmallow cream. Beat until smooth, add walnuts if desired. | Chocolate Caprices 1 pkg bakers chocolate chips 3/4 cup sweetened condensed milk 1 cup finely crushed graham wafers 1/2 cup raisins 1/4 cup nuts 1 tsp vanilla Heat chocolate chips over hot water, remove from heat and stir throughly, add other ingredients. Mix well, drop from tsp. on waxed paper. Cook till firm

9: Orange Sauce Miss Esch 1935 1 cup Sugar 1 tbsp Flour 4 Egg Yolks (slightly beaten) 1 cup Orange Juice 1 Lemon Juice 1 Orange Rind (grated) Cook in a double boiler till it thickens then add 12 Marshmallows (Large) 1 cup Fine Coconut Stir till marshmallows melted. Place in a sealer and chill add to whip cream or dream whip. Serve over squares of sponge cake. The sauce will keep in the refrigerator for weeks. Mix with whip

12: Fudge Squares 1 well beaten egg 1 cup brown sugar 1/3 cup milk 1/2 cup margarine/butter Mix together over heat and stir until rolling boil. Add one cup of graham wafer crumbs, cup chopped nuts, and 1 cup coconut. Place whole wafers in 8 x 8 pan, spread mixture over. Place layer of wafers on top. Add butter icing.

13: Marshmallow Dream 24 Marshmallows 4 squares semi-sweet chocolate 2 heaping tbsps butter 1 cup icing sugar 1 tsp vanilla 1 egg 1 cup chopped walnuts or almonds Melt chocolate & butter together. Cut marshmallows into pieces and mix into chocolate mix. Add rest of ingredients. Mix well and divide into three. Place in wax paper and roll into log. Roll into graham wafer crumbs. Refrigerate overnight. Cut into cookies as needed. 1/2 - 1/4 cup Graham wafer crumbs

14: Thimble cookies 1/2 cup butter 1/4 cup sugar 1 egg (separated) 1 tsp vanilla 1 cup flour 1 cup very finely chopped nuts (could use packaged ground nuts instead) Raspberry Jam Separate egg and beat egg white until foamy. Combine all ingredients including egg yolk. Mix well. Form into 1 inch balls. Dip balls in egg whites and roll in ground nuts. Place on lightly greased cookie sheet. Press middle of cookie with thimble. Bake for ten minutes at 350 degrees. Take out and place jam in thimble hole. Put back in the oven for approximately ten minutes or until very light brown. This recipe is a Christmas Tradition | Butter Tarts (Everybody's Favorite) Pastry as per pie recipe 2 cups butter 3 cups golden syrup 3 cups brown sugar 3 cups raisins (more if desired) 3 tsp vanilla 1 tbsp salt 6 eggs Melt butter and add all ingredients. Beat eggs and pour into above. Mix the hell out of it and pour into pastry. Bake in oven 400 - 425 degrees till pastry is brown.

15: Perfect Raisin Cookies 2 cups raisin 1 cup water Boil together for 5 minutes, stir in 1 tsp of baking soda and let stand 1 cup shortening 1 cup brown sugar 2 eggs 3 cups flour 1 tsp cinnamon 1 tsp vanilla tsp salt tsp nutmeg 1 cup chopped nuts Cream shortening and sugar, add the eggs, add dry ingredients and raisin mixture wit the flour. Drop by tsp full on greased cookie sheet and bake at 350 F for 15 minutes.

16: Lemon Custard Bars 1 cup soft butter 1/2 cup sugar 2 cups flour Bake 20 minutes until set. Beat together : 4 eggs 1 tsp baking soda 1 tsp salt, 2 cups sugar 5 tbsp lemon juice and grated rind of two lemons Pour gently into pan and bake for 30 minutes. When cool if desired sprinkle lightly with icing sugar.

17: Bran Muffins 5 tsp baking soda 2 cups of bowling water 1 cup butter 2 cups sugar 4 eggs 1 quart (4 cups) butter milk 5 cups flour 1 tbs salt 2 cups bran 4 cups all bran 2 cups nuts 2 cups chopped dates Cream butter and sugar, add eggs,blend well. stir in butter milk. Add flour and salt. Add soda to water. Combine remaining dry ingredients, add to first mixture. Fill paper cups in muffin tins 2/3 full. Bake at 400 F for 20-25 minutes.

20: Cheese Straws 1 cup butter 4 ounces imperial cheese 2 cups flour Roll into a inch roll and cut into strips. Line on a cookie sheet and bake at 350 F for about 10 minutes, watch carefully! | Lemon Loaf (very good) 1/2 cup butter 2 eggs 1 cup sugar 1 cups flour 1 tsp baking powder 1/2 tsp salt 1/2 cup milk Grated rind of 1 lemon Mix all ingredients together. Pour into loaf pan and bake at 350 degrees for 35 min or until done. Glaze with juice of 1 lemon, 1/2 cup sugar Mix together and pour over hot loaf.

21: Scotch Current Buns 1 1/2 cups flour 1/2 tsp baking powder pinch of salt 1 tbsp sugar 4 ounces butter Sift flour, salt, sugar, baking powder. Rub in butter. Mix in enough cold water to make stiff dough. 2 cups flour 1/2 sugar 1 pound currents 1 pound raisins 1 1/2 tsp ground ginger 1 1/2 tsp all spice 1 1/2 tsp cinnamon 1/2 tsp ground pepper 1 cup milk Sift flour, add all dry ingredients and sift again. Add to the fruit then add milk and mix well. Put in pan lined with crust 1 inch from the top. Brush with a beaten egg and sprinkle with 1 tsp of caraway seeds.

22: Impossible Pie 4 eggs 1/2 cup margarine 1/2 cup flour 2 cups milk 2 tsp vanilla 1 cup coconut Blend in mix master, pour into 16 inch pie plate. Bake at 350 F for 1 hour.

23: Do ahead Pumpkin Chiffon Pie 1 envelope Know Gelatin 3/4 cup Brown Sugar 1/2 tsp Salt 1/2 tsp Nutmeg 1 tsp Cinnamon 3/4 cup Milk 3 Egg Yolks 1 cups Canned Pumpkin 3 Egg Whites (beaten stiff) 1/4 cup White Sugar 9 inch Baked Pie Shell Mix first 5 ingredients in top of double boiler. Stir in milk, egg yolks + pumpkin. Mix well. Place over boiling water. Cook stirring constantly until gelatin dissolves + mixture is heated through, about 10 minutes. Chill until mixture mounds when dropped from a spoon. Beat egg whites stiff + beat in sugar, fold in pumpkin mixture + turn into baked pie shell. Top with whipped cream.

24: Tutti-Fruti Cake 3/4 cup butter 1/2 cup sugar 3 large eggs or 4 small 1/2 pound glazed cherries, cut up 1/4 pound citron peel, finely cut 3/4 pound sultan raisins 3 oz. Blanche almonds, cut fine 1 tsp nutmeg tumbler pineapple marmalade tumbler crab apple jelly 1/4 cup cider/sherry 1/2 tsp each of vanilla & almond extract 2 cups bread flour 1 tsp baking powder 1/2 tsp salt Mix well. Bake at 350 degrees until done. Almond Paste Icing 6 oz. Ground almonds 1 cup icing sugar 1 egg Mix into a paste. Spread on cooled cake.

25: Matrimonial Cake 1 cup flour tsp baking soda 1/8 tsp salt 1 cup butter 1 cup brown sugar 2 cups rolled oats Mix all ingredients together, until crumbly. Pat down half ingredients into greased 8 x 8 cake pan (for thinner bars put into 8 x 14 pan) Boil together: 1 package of dates 1 tbsp brown sugar 1 tbsp lemon juice (or a little less) 1 cup water Boil until it's mushy Spread on top of bottom layer. Place the rest of the crumbled mixture on top and press lightly. Bake at 350 degrees for hour.

28: Ingredients 1 pound dark seedless raisins 1 pound golden raisins 1 pound currents rinsed and drained 1 pound ready cut mixed peel 1 pound pitted dates diced 1 1/2 pounds glazed cherries cut up 6 rings of glazed pineapple chopped 1 pound blanched almonds or walnuts 1 1/2 cups of butter 1 1/2 cups light brown sugar 9 eggs 5 cups sifted flour 1 tsp baking soda 11/2 tsp salt 1 tsp all spice 3/4 tsp nutmeg 1/2 tsp mace 3/4 cup melted jelly (crab apple or plain apple) 1/2 cup dark molasses 1/3 run (brandy or cherry) 1 tsp almond flavoring 1 tsp vanilla | Prepare all fruit and mix in a large bowl cream butter and sugar gradually mix together, mix well. Add one egg at a time beating well after each addition. Combine melted jelly, molasses and flavorings. Sift together flour, soda and spices. Sprinkle 1 cup of flour mix until lightly coated. Add remaining dry ingredients to batter alternately with molasses mixture, stirring until smooth. Pour batter over fruit and mix well. Line pans with two thicknesses of brown paper. Bake in oven at 275 F for two and a half hours for a four inch deep cake, three to three and half hours for a six inch deep cake, four to four and a half hours for a eight inch cake. | Treasure Cake

29: Ingredients 1/2 cup Crisco 1 1/2 cups Sugar 2 Eggs 1/4 cup Red Food Coloring 2 tbsp Cocoa 1 tspVanilla 2 1/2 cups Sifted Swansdown Flour 1 tbsp Vinegar 1 tsp Baking Soda 1 tsp Salt 1 cup Buttermilk Cream Crisco + sugar, add one egg at a time. Beat one minute. Make a thin paste of cocoa + food coloring add salt, put vanilla in buttermilk, add to mixture alternating with flour. Add soda to vinegar in a cup + mix well, add to mixture. Bake in two nine inch pans at 350 for 30-40 min. When your cake is cool spread on icing. Icing 1 cup Milk 5 tbsp Flour 1 cup Butter Make a paste with milk + flour, cook until thick. Cool thoroughly. Beat 1 cup butter, one cup icing sugar, add to flour a little at a time. Beat until creamy. Really good delish cake, beat like hell to make. Don't attempt if you're tired or if some one is talking to you or if you have company or it you are in a hurry. Good Luck, Mom | Strawberry Velvet Cake

31: White Christmas Cake 3/4 pound butter 1 1/2 cups sugar 6 eggs 1/4 cup milk 1/4 cup orange juice 1 tbsp baking powder 1 tbsp vanilla 1 tsp almond extract 1 dessert spoon of rosewater 4 cups flour pinch salt Grated rind of 1 lemon 1 pound white raisins 1 bottle of cherries 1/2 cup citron Boil raisins slightly (day before) leave on a tea towel to dry all night. Also dry cherries. Add some flour to fruit in a large bowl. Mix cake part usual way. Cream butter, sugar, add eggs then milk and flour. Sifted with baking powder. Add to the floured fruit and blend by hand. Line pan with brown buttered paper. Bake in a slow oven for 3 hours (275 degrees). Use small pans with water underneath. | May Douglas

32: Carrot Cake 1 cups Sifted Flour 2 tsp Baking Powder 1/2 tsp Cinnamon - Mace Salt 1/2 cup Margarine 1 cup Sugar 2 Eggs Vanilla 3/4 cup Grated Carrots 1/4 cup Hot Water | Pumpkin Cake 1 cup Flour 1 tsp Baking Powder 1 tsp Baking Soda 1/2 tsp Salt 1 tsp Cinnamon 3/4 cup Oil Beaten 1 cup Sugar 2 Eggs 1 cup Pumpkin 1/2 cup Raisins 350 1 Hrs 1-2 8 oz can makes 3 loaves.

33: Pearl's Cherry Cake 3/4 cup butter 1 cup sugar 2 eggs 1/4 cup cold water 1 3/4 cups flour 1 tsp baking powder 2/3 cup cherries or raisins Cream butter and sugar, add egg one at a time beating well. Add water and beat well. Stir in sifted dry ingredients saving some of the flour to coat the fruit. Add flour to fruit use small greased tube pan. Bake at 350 degrees for 45 minutes.

36: Melt 1 package of German chocolate in cup of water and cool. Cream 1 cup butter and 2 cups of sugar until light and fluffy. Add four egg yolks, one at a time. Beat well after each. Add one tbsp of vanilla & chocolate mixture and mix until blended. Sift together: 2 cups swansdown cake flour 1 tsp baking powder 1/2 tsp salt Add flour mixture to chocolate mixture alternately with 1 cup of buttermilk. Beating after each addition until smooth. Beat together 4 egg whites until stiff. Fold into mixture. Line bottom of 3 โ€“ 9โ€ round cake pans with parchment or wax paper. Bake in 350 degree oven for 35 min or until done. Icing Combine in a saucepan, 1 cup evaporated milk, 1 cup sugar, 3 egg yolks, pound butter, and 1 tsp vanilla. Cook together, mix well and add in between layers of cake. | German Chocolate Cake

37: Hazel Spice Cake 1/2 cup fluffo (lard) 1 cup sugar 2 eggs 1/2 tsp salt 2 1/3 cups swansdown cake flour 2 tsp baking powder 1/2 tsp baking soda 1 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp cloves 2/3 cup milk 1/3 cup molasses Cream fluffo with sugar and salt. Add eggs and blend thoroughly. Sift dry ingredients and add to fluffo mixture alternately with milk and molasses. Bake in layers in 9โ€ round greased cake pans at 350 degrees for approximately 35 min or until done. Ice with favorite icing.

39: Re-heat coffee and make it the French way, half coffee, half warm milk. Add half coffee cream to vanilla ice cream. Add 2 cups of chocolate syrup, pour over ice cream. For a spicy cool drink, pour cool coffee into a glass, stir in a pinch of cardamom with crushed ice and lots of sweet cream. For a cake, half a cup of light cream and half a cup of coffee. Brew after dinner Irish coffee for four, 4 cups coffee + cup whiskey + sugar and whip cream | Coffee Cream

40: Granny's Special Oat Cakes 2 1/2 cups flour 2 1/2 cups rolled oats 1/2 cup sugar 1/2 tsp salt 1 cup sugar 3/4 cup margarine 3/4 cup sour milk (add vinegar to sour) 1 tsp baking soda Mix all ingredients, roll out on a cookie sheet and cook until brown.

41: 2 eggs 1 cup sugar 1 tsp vanilla 1 cup sifted all purpose flour 1 tsp baking powder 1/4 tsp salt 1/2 cup milk 1 tbsp butter 3 tbsp butter 3 tbsp brown sugar 2 tbsp cream 1/2 cup coconut Heat oven to 350 degrees. Grease and flour an 8 inch pan. Beat eggs well then beat in sugar and vanilla. Sift flour baking powder and salt together. Add wet ingredients to dry. Heat milk and 1 tbsp of butter together, bring to just a boil. Pour into batter and beat well. Pour into prepared pan and bake for about 35 minutes or until top springs back. Blend 3 tbsp of butter, brown sugar and cream in a small sauce pan. Bring just to a boil, stir in coconut, spread on top of baked cake. Put under broiler for 2-3 minutes to brown. | Lazy Daisy Cake

44: Scotch Short Bread 1 pound butter 3-3 1/2 cups flour 1 cup icing sugar Mix all ingredients and knead for 10 minutes. Roll into balls and place on to cookie sheet. Press with a fork dipped in icing sugar. Another option is sprinkle the tops with colored sugar. Bake at 350 degrees for approximately 10 minutes of until light brown on bottom. (watch carefully) | Granny's Favorite

45: Baking Powder Biscuits 2 cups flour 1/2 cup Crisco 1/4 tsp salt 1 tsp sugar 1 tsp baking soda 2 tsp cream of tarter 1/2 cup cold water 1/2 cup milk Mix dry ingredients together. Mix milk and water together then add to dry ingredients. Bake in either 9 inch square pan or muffin tins for 12 minutes or until lightly brown. Put mixture in the fridge for 30 minutes for a higher biscuit. | Jam Dandy 1 1/2 cups flour 1/4 cup sugar 2 1/2 tsp baking powder 1/4 cup shortening 3/4 cup milk I egg Beat all ingredients 50 strokes with a fork. Pour into a nine inch square greased pan. Sprinkle top with a 1/4 cup of nuts. Dot with Jam and bake 25-30 minutes. Serve warm.

46: Seafood Casserole 1 tin small shrimp 1 tin jumbo shrimp 2 cans mushrooms 2 cans crab/lobster 1 cup mushroom soup 1 cup mayonnaise (miracle whip) green pepper 1/2 cup chopped celery Mix ingredients together. Place in baking pan. Layer 1/2 cup of potato chips on top. Bake at 350 degrees for 45 minutes. Serve with steamed rice.

47: Grams Heavenly Hash | Salmon Cakes 2 tins salmon 1 egg 2 cups Bread crumbs (or less) Form into small patties and fry in butter for 5 to ten minutes or until brown. | 1 pound ground pork 1 pound ground beef Salt and Pepper 1 head celery 1 onion 2 tins tomato soup 1 tbsp chili powder Brown meat with salt and pepper, add the rest of the ingredients. Put into casserole dish and bake in slow over on low temperature for 3 good hours 200-300 degrees. Serve with baking powder biscuits.
