FC: Mom's Recipes

1: Oyster Crackers 2 bags oyster crackers 1 pkg. Hidden Valley Ranch dressing mix 1/2 c. oil 1 1/2 tsp. lemon pepper 1 tsp. dill Heat oil slightly and add ingredients except crackers. Put crackers in a large Tupperware bowl or paper bag. Pour mixture over and shake to coat. | Almond Crackers 1 pkg. Keebler Club crackers 2 sticks butter 2/3 cup white sugar 1/2-1 cup slivered almonds Melt Butter, add sugar, beat 2 min. until sugar is dissolved. Put foil on cookie sheets, then put crackers on, single layer. Put almonds on crackers, then pour butter/sugar. Bake 300 degrees 10 min. Sit 5 min. Turn onto waxed paper, cool, separate | Polish Mistakes 1 lb. hot pork sausage 1 lb. lean ground beef 1 lb. Velveeta cheese Loaf small party rye Cook meat until lightly browned, crumble.(mom cooked this in the microwave) Melt Velveeta in non-stick skillet,add meat and mix. Spread on rye bread (have extra loaf on hand) At this point you can freeze and use later. Bake 350, 15 min. | Party Starters

2: Swedish Traditions | 1 qt. water 1 qt. alcohol (vodka) 2 qt. Port wine 1 lb. raisins 20 cloves 2 sticks cinnamon | 2 large ginger root 1/4 cup orange peel 10 cardamom seeds (or 3 bags spices-Jamestown) | Glog | Boil spices, sugar, raisins in water 1 hr. Leave on heat, pour in wine, boil again. Take off fire, add alcohol (vodka) Light match to vapors for show!! (only momentarily-cover to put out) | Swedish Cucumbers 1 large cuke 5 Tbsp. water 5 Tbsp. sugar 5 Tbsp. vinegar Parsley flakes Slice cucumber w/skin on and put in to Juice. Let sit a couple of days.

3: Swedish Korv 2 lb. shoulder beef-ground 4 lb. pork-ground 1 onion sautéed in butter 2 lb. cooked potatoes 5 tsp. salt 1/2 tsp. pepper 1 Tbs. sugar 1 lb. pork casings (or make into patties) Cook potatoes to mushy, grind. Mix all ingredients in a large pot and knead well. Put casing attachment on grinder and no other attachment. Lay in flat pan, sprinkle with salt, let sit 12 hrs., wash off. If you want it to dry hang for 12 hrs. (gross) To cook in casing, place in shallow pan and cover w/ 1/2" water, bake, uncovered 300 degrees, 1hr., turning once. For patty style, make into patties and fry.

4: Kaldolmar 1lb. ground beef 1 1/2 c. boiled rice (not well done) 1 egg 1 onion, cut up fine 1 tsp. salt 1 tsp/ allspice 1/2 c. milk 1 head cabbage | Work ingredients together, except cabbage. Cook 1 head cabbage until about 1/2 done.. Form meat into balls, wrap a cabbage leaf around each ball. Brown in butter, put in baking dish, add a little water and gravy coloring to drippings in pan, pour over meat. Bake 375 degrees, 1 hr.

5: Kroppkakor Potato dumplings w/pork stuffing 5 lb. potato 3 egg yolks 2 Tbsp. cream 2 c. (or more) flour 1 1/2 tsp. salt Cook potatoes until almost done, mash, cool. Add yolks to the cream. then the flour, salt and potatoes (cold). Fry the pork cubes, well and saute the onion slightly. Mix meat, onions and allspice. Roll out the potato mixture on a floured board, handling as little as possible. Cut strips and make small round dumplings, each with a hole in the center. Fill hole with full tsp. of the mixture, closing each dumpling. Cook 15 min. in boiling salted water (about 5 qt. and 5 tsp. salt) When they rise to the top, lift out with a slotted spoon. 35 dumplings, keep in refrigerator and reheat in fry pan. | Stuffing: 1 lb. lean pork, cut into small cubes 1 Tsp. finely chopped onion 1 tsp. allspice, ground fine

6: Breads | 1 c. milk 3 Tbsp. shortening 1 pkg. yeast 1 Tbsp. salt 3 c. white flour | 3/4 c. cold water 2 1/2 c. rye flour 1/4 c. molasses 3/4 c. brown sugar | Swedish Rye Bread | Scald milk, cool, add shortening, and salt. Blend yeast w/1 c. white flour, add remaining flour. All water. Stir in molasses, brown sugar and rye flour. Use about 1/2 c. white flour for kneading. Raise until double in bulk. Knead and place in loaf pans and raise again. Bake at 325 degrees 45 min. Makes 2 loaves Note: May add 1/2 Tbsp. caraway or 1/2 Tbs. fennel seed or grated orange rind Note: I (Mom) mix ingredients together and raise in bowl. Knead and place in pans, raise again, bake.

7: 8 c. flour 2 pkg. dry yeast 2 1/2 c. lukewarm milk 2 tsp. saffron | 1- 1 1/2 c. sugar 1 egg 1 c. melted margarine 1/4 tsp. salt | 1 can seedless raisins 30 almonds, chopped & ground | Saffron Bread | Dissolve yeast in 1/2 c. lukewarm milk. Dry saffron in warm oven, pound w/small amount of sugar or dissolve in 1 tsp. warm milk,. Mix milk, saffron, next 5 ingredients and a small amount of flour. Beat w/wooden spoon until smooth & firm. Knead on floured board. Place in bowl, cover, rise 2 hrs. Turn on floured board, knead until smooth. Divide into loaves, braid, place on buttered baking sheet, let rise. Brush w/beaten egg, sprinkle w/sugar and almonds. Bake 375 15-20 min. Makes 6 braided loaves. | 3 c. flour 2 3.4 c. sugar 1 1/2 tsp. baking powder 1 1/2 tsp. salt 3 eggs 1 1/2 c. milk 1 1/2 c. oil 3 Tbs. poppy seed (add more) 3 tsp. vanilla, almond & butter flavoring | Almond Poppy Seed Bread | Blend, beat 2 min. Turn into 2 greased and floured load pans. Bake 1 hr. 350 degrees. Insert straw in center, it should come out clean.

8: Soups, Sides, and Salads | Split Pea Soup 1 lb. whole yellow peas 3 qt. cold water 1 ham bone, small shank end of ham OR small pork roast (cheap cut o.k.) 1 Large onion, minced 3 stalks celery, chopped fine 1 sprig parsley Soak peas overnight-important Add ham, onion, celery and parsley. Heat to boil; cover & simmer 4-5 hrs. until peas are tender and liquid partially cooked down. Season to taste w/salt & pepper. | Layered Lettuce Salad 1 head lettuce 4 eggs (boiled , sliced) 1/2 c. diced green pepper 8 slices bacon (fried, diced) 1 Tbs. sugar 1 c. celery, chopped 1/2 10 oz. pkg. frozen peas (uncooked) 1 small sweet onion, diced 2 c. mayonnaise 4 oz. grated cheddar cheese Add Sugar to mayo. Tear up lettuce and put into 9 X 13 glass dish. Layer rest in order except cheese and mayo. Use mayo as frosting. Top w/grated cheese. Cover and refrigerate 8-12 hrs.

9: Calico Beans (Booner Beaners) 6 slices bacon 1/2 lb. ground chuck 1/2 c. copped onion 1/2 c. catchup 1 tsp. salt 3/4 c. brown sugar 1 tsp. dry mustard 2 tsp. vinegar 12 ox ( 1 can) pork & beans (Campbell) 16 oz. (1 can) kidney beans 16 oz. (1 can) Lima or butter beans Cook bacon in skillet until crisp, drain on paper towel and crumble. Cook beef in bacon drippings until no pink remains, add onion and sauté until tender. Drain grease off. Combine beef, onion, catchup, salt, brown sugar, mustard and vinegar in 3 qt. baking dish. Partially drain all the beans. Place in baking dish, stirring gently to mix. Sprinkle w/bacon. Bake 350 degrees- 40 min. (Mom uses small crockpot on low for long)

10: Squash Apple Bake 2 LB. Butternut or Buttercup squash 1/2 c. brown sugar 1/4 c. melted butter 1 Tbs. flour 1 tsp. salt 1/2 tsp. mace (or nutmeg) 2 baking apples, cored and cut into 1/2" slices Heat oven to 350 degrees. Peel squash, remove seeds and fiber and cut into cubes. stir together remaining ingredients, except apples. Arrange squash in ungreased baking dish. Top with apples and sprinkle w/sugar mixture. Cover, bake 50-60 min. or until squash is tender. | Poppy Seed Dressing 1/4 c. honey 1/4 c. cider vinegar 2 Tbs. Grey Poupon mustard 2 Tbs. poppy seeds 2 Tbs. grated onion 2/3 c. oil Combine ingredients, shake well, add salt/pepper to taste. Serve over spinach salad. | Spinach Salad 1 pkg. fresh spinach 1 c. mandarin oranges 1/3 c. sliced almonds Mix, make only as much as you want each time.

11: Main Dish | Swedish Meatballs 1 lb. shoulder beef (ground) salt & pepper to season 1/4 tsp. ground allspice 4 moistened skorpors ( 1/3 c. bread crumbs) 1/4 tsp. sugar Mix ingredients & form into small balls. Add a touch of water if too dry. Brown in skillet w/small amount of fat. Add 1 cup water & cover. Simmer 1/2 hr. or until no juice is remaining. | Cocktail Meatballs 2 lbs. ground beef 3 gingersnaps,crushed 3 Tbs.grape jelly salt & pepper Mix, form into balls, simmer for one hour in 1 bottle of chili sauce and 1 bottle of water.

12: Chicken and Rice Chicken parts 2 Tbs. butter 1 pkg. dry onion soup mix 2 cans mushroom soup 2 cups milk Mix all ingredients, except chicken in a 9 X 13" pan. Lay chicken on top. Cover with foil. Bake at 350 degrees, 1 1/2-2 hours. Take off foil last 15-20 min. to brown chicken. | 1 1/2 c. uncooked rice (not instant) 1 (4 oz.) can mushrooms, partially drained | Porcupine Meatballs 1/2 c. rice ( regular uncooked) 1 lb. ground beef 1 Tbs. minced onion 1 tsp. salt 1/2 tsp. pepper 1 (10 1/2 ox.) can tomato soup 3/4 cup water Combine 1st 5 ingredients and form into balls. Mix soup and water. Place meatballs in mixture and bake. 375 degrees 50 min.

13: Beef Stroganoff 1 lb. round steak (1/2" thick), cut into 3 X 1 strips 2 Tbs. shortening 1/4 c. onion, cut up 1 tsp.salt 1/4 tsp. pepper 2Tbs flour 1 1/2 cup tomato juice 4 oz. mushroom stems & pieces 1/2 c. evaporated milk 1 Tbs. lemon juice Brown steak in shortening in 10" skillet. Add next 3 ingredients. Blend in remaining ingredients. Cover, cook over low heat 1 hr. until meat is tender. Stir in evaporated mild & 1 Tbs. lemon juice. Heat, do not boil. Serve over rice or noodles. 4 servings

14: 2 c. mayo 2 c. half & half 8 slices of bread, cubed 6 hard cooked eggs, diced 1 lb. crab meat 1/4 c. sherry wine | 4 oz. can mushrooms, drained 5 oz. can water chestnuts, drained 2 Tbs. onion, chopped 2 Tbs. green pepper 2 oz. can pimento corn chips crushed | Crab Casserole | Mix mayo & half/.half. Add bread crumbs. stir until smooth. Add remaining ingredients except corn chips. Put into 9 X 13 dish & refrigerate overnight. Top w/ chips. Bake 325 degrees 1 hr. | 1 lb. ground beef 1 med. onion, chopped 1 can whole kernel corn 1 can chicken soup 1 can mushroom soup | 1 c. sour cream 1/4 c. chopped pimento (optional) 3/4 tsp. salt 1/4 tsp. pepper 3 c. med. noodles, cooked & drained | Hamburger & Corn Casserole | Brown meat, add onion. Cook until tender. Add drained corn & next 6 ingredients. Mix well. Add noodles. Press into 9 X 13 pan. Crumb topping: 1 c. soft bread crumbs, 1/4 c. melted butter, 1/4 tsp. paprika. Sprinkle over top or use canned crumbs. Bake 350 degrees 45 min.

15: Easy Brunch 12 slices thin bread, crust trimmed off 6 slices American cheese 6 slices Canadian bacon 4 eggs 2 1/2 c. milk 1/2 tsp. salt pepper to taste 1/2 tsp dry mustard Place 6 slices of bread in buttered 9 X 13 pan. Put slices of cheese on each, slice of bacon on each and add top slice. Beat the eggs until fluffy, add milk, salt, pepper, & dry mustard. Pour over bread. Refrigerate 2 hrs. or overnight. Bake 325 degrees, 40 min. or until set & browned on top. | Tuna-Cashew Casserole 1 3 oz. can chow mein noodles 1 can cream of mushroom soup 1/4 c. water 1 7 oz. tuna 1/4 cashew meats 1 c. finely chopped celery 1/4 c. minced onion salt & pepper Set aside 1/2 c. noodles. Combine remaining ingredients. Sprinkle reserved noodles over top. Bake uncovered 325 degrees 40 min. 4-5 servings

16: SWEETS | Gramma Johnson's Ice Box Rolls Combine 1 cup scalded milk w/ the following: 1/2 c. sugar 1 tsp. salt 1 1/2 Tbs. butter Cool until lukewarm. Add 1 beaten egg. Blend 1 pkg. yeast w/2 c. flour, Blend well. Add 2 more cups flour & stir well.Cover tightly & place in refrigerator 3-4 rs. before baking. Grease muffin tin. Lay in slice of butter & good spoon of brown sugar & nuts. Put dough over and let rise in warm place until good and light. Bake 350 degrees 20 min. | Snickerdoodles | 1 c. shortening-part butter 1 1/2 c. sugar 2 3/4 c. flour 1 tsp. baking soda | 2 eggs 2 tsp. cream of tarter 1/4 tsp. salt | Set aside: 2 tsp. sugar & 2 tsp. cinnamon Mix together, roll into balls, roll in cinnamon/sugar mix. Bake 350 degrees, 8-10 min ungreased baking sheet.

18: Pepporkakor (Swedish Spice) 1/2 lb. butter(1/2 oleo, 1/2 butter) 1 beaten egg 1 1/2 c. sugar 1 tsp. each cinnamon, cloves, ginger, cardamom 2 Tbs. dark Karo syrup 3 c. flour 2 tsp. baking soda Cream butter & oleo w/sugar, add egg & syrup. Sift flour w/ other ingredients, add to first mixture, mix well. Let stand over night in refrigerator. Roll out & cut w/cutter using as little flour as possible. Roll thin. 350 degrees 10-15 min. | "No Fail" water beat pastry (for one pie) 3/4 c. shortening (or 1/2 c. butter & 1/4 c. shortening) 1/4 c. boiling water 1 Tbs. milk 2 cups flour 1 tsp. salt Put shortening in medium bowl & add water and milk. Tilt bowl & beat with fork in rapid cross-the-bowl strokes until mixture is smooth and thick. Add flour and salt, stir quickly w/round-the-bow strokes until dough cleans the bowl. Roll in floured piece of wax paper with piece of wax paper on top. Makes 2 crusts: top and bottom.

19: Buckeyes "So Good", Mom 1 lb. butter, 2 lb. peanut butter (32 oz.), 3 lb. confectionery sugar 2 12 ox. milk chocolate bits, 2/3 bar paraffin wax Use large bowl or pan, set in sink and mix 1st 3 ingredients well with hands until completely blended. Divide into 6 balls and wrap each in wax paper. Chill.Can be kept several months. Coating: In top of double boiler, melt chocolate and shaved paraffin. Stir until melted and smooth. Keep heat LOW. Roll into balls onto cookie sheet. Use toothpicks inserted in top of ball and dip into chocolate until coated halfway up. Swirl to drop excess chocolate and place on waxed paper. Set tray in refrigerator to chill & set, Store in refrigerator until served.
