2: Lemon Drop Cookies! Ingredients! 1 c. Butter 5 1/2 tbsp. sugar 3/4 c. cornstarch 1 c. flour 1 tsp. lemon extract
3: Preheat oven to 350 degrees Cream together butter and sugar until light; add lemon extract, cornstarch and flour. Form into small balls, about 3/4 inch or the size of a nickel Bake for 20 mins or until firm. Frost with icing made my mixing powdered sugar with a few drops of lemon juice.
4: Egg Rolls Ingredients 1/2 lb ground pork 1/2 teaspoon ground ginger 1/2 tsp. garlic powder 2 c. peanut oil for frying 1 tbs all purpose flour 1 tbs water 1 c. shredded cabbage 1 once shredded carrots 4 egg roll wrappers 1 tbs sesame seeds (optional)
5: Directions 1. Season pork with ginger and garlic powder, mix thoroughly. Heat mixture in a medium skillet, stirring until pork is cooked through and no longer pink. 2. In another large skillet heat oil to about 375 degrees F or medium high heat. While oil is heating, combine flour and water in a bowl until they form a paste combine cabbage, carrots and pork. 3. Lay out the wrappers, play about 1/4 c. of cabbage/pork mixture. Fold left anf right coners toward center and roll. Brush a bit of flour paste to seal roll. 4. Place rolls into heated oil and fry, turning occasionally until golden brown.
6: Sweet and Sour Chicken 1/2 Green pepper, seeded and cut into cubes 1/2 lb lean boneless chicken 1 egg, slightly beaten 1/2 tsp salt 2 tbs corn starch 2 tbs flour 2 tbs chicken broth 1 1/2 C. oil Sauce 1/2 tbs oil 1/2 tsp garlic 1/4 C chicken broth 2 tbs sugar 2 tbs red wine 1/2 tsp soy sauce 1/2 tbs cornstarch dissolved in 1 tbs of water
7: Directions Cut chicken into cubes Mix egg, starch, flour, chicken broth. Add chicken pieces and stir to coach each piece. Heat oil in a pot and fry chicken to a golden brown. Sauce Mix oil, garlic, broth, sugar, wine, and soy sauce into a bowl. Heat it up until warm. Add the starch and water to mixture after warm.
8: Egg Foo Yung 1/2 Cup Bean Sprouts 4 fresh mushrooms, diced 1/2 lb. shrimp 2 to 4 tbsp. oil 3 eggs 3/4 c. chicken broth 1 tbsp. soy sauce 1/2 tsp. salt 1 tbsp. cornstarch dissolved in 2 tbsp. cold water.
9: Directions! 1. Bring broth to boil 2. Add soy sauce, salt and cornstarch mixture. 3. Reduce heat. Cook for 2 minutes until sauce is thick and clear. Keep warm. 4. Rinse fresh bean sprouts. Drain and pat dry. 5. Rinse shrimp under cold water. Pat dry. Dice into 1/4 inch pieces. 6. Place bean sprouts, shrimp mushrooms, eggs, oil, stock, soy sauce, salt, and cornstarch mixture within easy reach. 7. Set wok over high heat for 30 seconds. Pour in 1 tbsp. oil, swirl around wok, and heat for another 3o sec. Add shrimp and stir fry 1 minute. 8. Beat eggs well. Add shrimp, sprouts, and mushrooms.
10: Beef Lo Mein 3/4 lb boneless beef steak 2 tsp. soy sauce 2 tsp. dry sherry 1 tsp. cornstarch 2 packages ramen noodles 4 c. boiling water 3 c. broccoli flowerets 1 1/2 tbs oil 3 tbs oyster sauce 2 tsp. cornstarch dissolved in 2 tsp water.
11: Directions! 1. Slice beef into thin slices, about 2 inches long. Place in a bowl and stir in soy sauce, sherry, and cornstarch. Break Ramen noodle blocks into 6 pieces. Place in a bowl, sprinkle with seasoning, and cover with 4 cups of boiling water. Stir and let soak. Steam Broccoli in microwave until barely tender, about 2 mins. 2. Heat oil in a large skillet or wok. When hot, stir fry beef till no longer pink. Mix in broccoli. 3. Pour 2/3 c. of broth into a cup, add oyster sauce and stir. 4. Add broth and oyster sauce mixture to the skillet and bring to a simmer. Stir in cornstarch mixture and cook. Add noodles and eat.
12: Almond Cookies 1/2 c. butter 1/2 c. sugar 1/2 tsp. almond extract 1 egg 1 1/4 c. flour 1 tsp. baking soda Dash of Salt Red Food coloring. Frosting Powdered sugar Milk Food coloring Butter Mix All together!
13: Directions! 1.Cream butter with sugar until light and fluffy. 2. Add egg and mix well. Add almond extract. 3. Sift dry ingredients together. Add to mixture and mix well. 4. Shape into balls. Place on ungreased cookie sheet. Flatten slightly by pressing center of cookie with thumb. 5. Apply food coloring 6. Bake in preheated oven at 350 degrees for 10 minutes.
14: Egg Drop Soup 6 cups chicken broth 4. oz spinach 1 green onion 2 eggs 1 tsp. salt 2 tbsp. cornstarch dissolved in 2 tbsp. cold water.
15: Directions! 1. Wash and separate spinach leaves. Break into 4-inch sections 2. Beat eggs 3. Bring chicken stock to boil. Add salt and spinach 4. Add cornstarch paste. Stir a few seconds until stock thickens 5. Slowly add eggs. Stir gently in one direction so threads form. Turn off heat immediately. Taste and add salt if need to. 6. Pour soup into warm bowl. Garnish with chopped green onion. Serve at once. Serves 6.
16: Enchiladas 1lb ground beef 1 onion chopped 1/2 tsp salt 12 corn tortillas 1 cup cheddar cheese 1 can black olives 1 can enchilada sauce Oil for frying
17: Directions! 1. In a frying pan, cook beef and onion until done. 2. In another frying pan, heat 1/4 inch of oil until hot. Fry tortillas briefly on both sides until soft. STack fried tortillas between sheets of paper. 3. Drain oil from frying pan. Wipe with paper towel. Add enchilada sauce. Heat until hot. 4. Set up assembly line, tortillas, enchilada sauce, ground beef mixture, cheese, and olives. 5. To fill enchiladas, dip tortilla in sauce, place 2 tbsp, beef across middle, sprinkle beef with cheese and olives. 6. Roll each up and place seam down in oiled pan. Pour remaining sauce and cheese over enchiladas. place in 350 degree oven for 20 minutes or until cheese is melted.
18: Mexican Rice 1 cup long grain white rice 1 tbs oil 1 1/2 cups chicken broth 1./2 onion 1/2 green pepper 1 jalapeno 1 tomato 1 cube chick bouillon salt and pepper to taste 1/2 teaspoon ground cumin 1/2 cup chopped fresh cilantro 1 clove garlic
19: Directions In a medium sauce pan, cook rice in oil over medium heat for about 3 minutes. Pour in a chicken broth, bring to broil. Stir in onion, green pepper, cumin, cilantro, and garlic. Bring to a boil, cover, and reduce heat to low. Cook for 20 min.
20: Mexican Wedding cakes 1 cup butter, softned 3/4 cup sugar 2 tsp vanilla 2 cups flour 1 cup finally chopped walnuts powdered sugar
21: Directions 1. In a large bowl, cream butter and powdered sugar. Stir in vanilla and tbsp of water. 2. In another bowl, mix flour and nuts together. Add to butter mixture. 3. Shape into balls 4.Place on ungreased sheet 5. Bake in 300 degree over for 20 minutes 6. Roll in sugar.
22: Empanadas 2 cups flour 1/2 tsp salt 2/3 cups shortening 6 tablespoons water 2 1/2 cups peeled apples 1 cup white sugar 1 tsp ground cinnamon 1/2 tsp ground nutmeg 1 yellow onion 1 green pepper 1 tbs oil 8 ounces tomato paste 1/2 cup water 1 tbs white vinegar 1 pound steak
23: 1. To make dough, in a medium mixing bowl. combine flour and salt. Cut in the shortening till peices are the size of small peas. Add a small amount of water to slightly moisten. From dough into a ball, roll out the dough to about 1/8 inch thick and cut into 4 inch circles. Lightly flour both sides of circles. 2. To make fruit filling, In saucepan combine, fruit, sugar, cinnamon, and nutmeg. Heat over medium until hot, thoroughly mixing. 3. To make meat filling, in a medium skillet saute the onion and green pepper in oil. Add paste, water, and vinegar. cook for 20 minutes. 4. Place either meat or apples in dough. Bake at 350 degrees until brown.
24: Bunuelos 4 eggs 1/4 cup sugar 2 cups flour 1 tsp baking powder 1 tsp salt oil for frying 1 cup sugar 1 tsp. cinnamon
25: 1. In a bowl, beat together with electric mixer, eggs and 1/4 cup sugar until thick and lemon colored. 2. Stir together 1 1/2 cups of flour, baking powder, and salt. Gradually add to egg mixture. 3. stir in flour. 4. Turn dough onto board coated with remaining flour. Gently knead for about 5 minutes until dough is smooth. 5. Divide dough into 16 equal pieces. Shape each piece into ball. 6. On board, roll each ball into 5 inch circle. 7. Heat oil in pan 8. Mix sugar and cinnamon. 9. Fry dough in oil. cover with sugar and cinnamon mixture.

31: Instructions 1. Pour the liquid ingredients into the dry ingredients and stir only until moistened 2. Stir in 2 cups of chopped apples 3. Stir in a greased and floured 9 x 9 Pan 4. Bake at 350 for 40-50 minutes or until tooth comes out clean
32: Poached pineapple chicken | . | 1 (16 oz.) can pineable chunks, unsweetend 2 tsp. lemon juicetsp. brown sugar 2tsp soy sauce 1/2 tsp. ground ginger 8 oz. fine egg noodles, cooked Place chicken in frying pan with pineable juice, cover and cook low heat for 15 minutes or until chicken is cooked Remove chicken; add brown sugar, lemon juice, soy sauce and ginger to pan. Cook and stir until smooth and hot. Add pineapple chunks and chicken to sauce. Serve over noodles.

35: Baked apple pancakes 3 apples 1/2 cup milk 1 egg 1/2 tsp vanilla 2 tsp oil 5 tsp sugar 3 tsp butter place rack in center of oven and preheat to 425. in a medium bowl, beat milk, egg, oil and vanilla until well blended spread slices in an even layer in skillet stir batter is cooked and puffs up around the edge of the pan. remove and loosen the edges from the pan. place a serving platter over the skillet and flip the pancake onto the serving platter, garnish worth powdered sugar or maple syrup.

Gradually beat in white sugar and brown sugar. Beat in eggs and vanilla. combine flour, baking soda, and cocoa. Gradually add to butter mixture, beating well. Stir in 1/2 cup walnut. cover and chill
38: Poached pears 2 c apple or orange juice 1/3 c sugar 1/2 tsp. ground cinnamon 2 ripe pears ice cream Heat 1st boil till sugar dissolved peal pears, in half and remove core add to syrup, cone and simmer till tender 15-20 minutes
