4: Minted Melon Salad 1 cup cubed watermelon 1 cup cubed honeydew 1 cup cubed cantaloupe 1/2 cup rough chopped mint 1/4 cup orange juice 3 tablespoons honey 1 tablespoon rice wine vinegar 1 pinch sea salt Combine all ingredients and chill. Serve.
8: Heirloom Tomato & Cucumber Salad 2 cups assorted sliced heirloom tomatoes 1 cup sliced English cucumbers 1/4 cup thin sliced red onion 1/4 cup pitted kalamata olives sliced 1/4 cup crumbled feta cheese 1/3 cup canned chickpeas drained 3 tablespoons red wine vinegar 3 tablespoons extra virgin olive oil 1 teaspoon fresh cracked pepper 2 tablespoons fresh chopped dill Salt to taste Combine all ingredients, chill and serve.
13: Chipotle Pimentos & Cheese 1 cup fresh grated sharp cheddar cheese Chipotle Tabasco sauce to taste 1/2 cup mayo 1/4 teaspoon white pepper 1 tablespoon sugar 2 tablespoons chopped pimentos 2 tablespoons fine chopped chives Combine all ingredients, chill, and serve.
