Yield: 14 servings

11: Ingredients: 8 ounces rotini pasta 1/2 cup olive oil 1/2 cup red wine vinegar 1 1/2 teaspoons garlic powder 1 1/2 teaspoons dried basil leaves 1 1/2 teaspoons dried oregano 3 cups sliced mushrooms 15 halved cherry tomatoes 3/4 cup crumbled feta cheese 1/2 cup chopped green onions 1(4 oz) can chopped black olives Directions: 1) Bring a large pot of lightly salted water to a boil.Add rotini pasta and cook 8-10 minutes or until al dente; drain. 2)Mix together cooked pasta, oilive oil, vinegar,garlic powder, basil,oregano,mushrooms,tomatoes, | Greek Pasta Salad | feta cheese,green onions, and olives.Cover and chill for at least 2 hours, serve cold. Yield: 10 servings | Greek pasta Salad

12: Bifteki | Ingredients: 1 1/3 pounds ground beef 1 tablespoon plain yogurt 2 tablespoons dried thyme 4 oz feta cheese salt and pepper, to taste Directions: 1)Preheat grill for indirect heat 2)In a large bowl mix together ground beef, yogurt, thyme, and slat and pepper.Form meat into 8 patties 2-3 inches in diameter. | 3)Cut the cheese into 4 slices. Place one cheese slice between 2 patties, seal edges.Repeat with remaining patties and cheese slices.Set aside. 4)Brush grate with oil and arrange bifteki on hot grate. Cover and for 15-20 minutes or until meat is cooked through and cheese is melted. Yield: 4 servings

13: Phyllo Dough Tarts | Ingredients: 4 oz reduced fat cream cheese 1/2 cup reduced fat sour cream 2 tablespoons sugar 1 teaspoon vanilla extract 30 phyllo dough tarts 1 can (11 oz) mandarin oranges,drained 1 kiwi, peeled, sliced, and cut in quarters | Directions: 1)In a large bowl, beat cream cheese, sour cream, sugar, and vanilla until smooth. 2) Spoon filling into tarts.Top each with an orange slice and a kiwi piece. Yield: 2 1/2 dozen
