FC: Diet Food can be Beautiful
1: For my knees and general health | Chicken salad corn on the cob and fresh tomatoes
2: Becky | Steel-cut Oats and Fruit | Steel-cut oats have a very nutty flavor and are more firm than rolled oats. (I actually like them better than rolled) Topped with any kind of fresh fruit and nut - pecans, apples, blueberries, strawberries and blackberries are some of my favorite.
3: Using quick cooking oats only takes about 10 minutes - cut up the fruit while the oats are cooking. | "All happiness depends on a leisurely breakfast." ~John Gunther
5: Egg/Chorizo Scramble and Fruit | This is a delicious filling breakfast that is colorful too. Soy Chorizo - browned with Fresh Garlic and Onion Eggs - beat until fluffy Add to pan with chorizo mixture When the egg is just beginning to cook add Fresh Spinach and a touch of water Cover to finish cooking and wilt the spinach. Serve with Fruit - I like pineapple, blueberries and banana.
7: "I myself prefer my New Zealand eggs for breakfast." ~Elizabeth the 2nd | Becky | Cheesy Spinach Eggs | Diced Onion and garlic sauteed in olive oil Add diced mushrooms to the pan Add eggs wells beaten - I didn't use New Zealand eggs :) Cook mixture until eggs are nearly done Cover with chopped fresh Spinach and shredded Cheese Add teaspoon of water to the cover and place over the pan. Turn off the heat and leave covered until the cheese is melted. I ate this with a slice of rice flower bread and a bit of my favorite hot sauce.
8: For Breakfast or anytime | Not the most beautiful but tastes good. Blend together Banana Apple (I used home made apple sauce) Mango Broccoli (I used cooked leftovers) Spinach Thinned with some Soy Milk
10: Strawberry and Honeydew Smoothie | frozen Strawberries blended with enough water to make smoothie frozen Honeydew melon and fresh Basil (I cut it into cubes and then put in an egg carton to freeze) with enough water to make smoothie Layer in glass and enjoy - I know the Basil sounds weird but it is good.
11: The delicious blend! | Becky | SWEET PINK SMOOTHIE | This was an experiment with fruit and carrots in a smoothie, that turned out very yummy. Blended in my bullet: frozen strawberries, frozen banana, and some fresh baby carrots, thinned with some soy milk. | this is the view before blending
13: "The food that enters my mind must be watched as closely as the food that enters my body." ~Pat Buchanan | Becky | Red, White & Blue Smoothie | This was a fun attempt at making a patriotic smoothie. Blue layer - blueberries and soy milk White layer - Banana and soy milk Red layer - Strawberries and soy milk (all the fruit was frozen before blending) Add some sweetener to taste. The banana layer does not need added sweetness. Garnish with fresh fruit

When cooking, go by your own taste." ~Laiko Bahrs | Becky | RICE AND VEGGIE SALAD | Brown Rice - cooked and cooled Red Bell Peppers - diced Green Onion - thin sliced Corn - grilled and cut from the cob I didn't care for the dressing so...this is a work in process. Will use a honey mustard type dressing next time.
16: Tex-Mex Flavor | Layer - brown rice/ shredded lettuce/ grilled chicken or steak/ black beans/ pico de gallo/ and mashed avocado. Serve with toasted corn tortillas. | Grilled Steak, onions and Red Bell Peppers served with fresh avocado and soft corn tortilla make a great fajita dinner.
18: This salad is delicious and beautiful. Mixed green lettuce is the best choice. Chicken - I use canned or left overs. Top with your favorite fruits Strawberries Blueberries Mandarin Oranges or Cuties Pineapple Finally sprinkle with Chopped Pecans With all the flavors I did not use any dressing! | Chicken Summer Salad
21: Almost Healthy Pasta Salad | Rice pasta - I used spiral Green Onion White Onion Boiled Eggs Celery Prepared Mustard Lite Mayonnaise Salt and Pepper
22: Grill Anything | Kabobs of chicken or steak with onion and sweet peppers Onion and zucchini cut in half and brushed with olive oil Veggie Kabob of sweet peppers, onion and tomato Grill corn on the cob Grilled salmon steak Grilled Peaches add a delicious dimension
25: Tofu Curry Pasta | Sautee lots of onion and garlic in olive oil Add tomato, spinach and extra firm tofu Season with curry seasoning to your taste. Served over spiral rice noodles
27: Making TOFU Tasty | Onion, zucchini, spinach and lots of garlic with tofu. Served over brown rice. Depending on the seasoning you can really change the flavor of the same ingredients. Hot pepper and bamboo shoots with mushroom and green onion made this one interesting.
28: Fresh seasonal fruit | Fresh Strawberries are always good | Honey Dew Melon and Cherries
29: After a meal of curry or other hot spices a fresh dessert is necessary. Fresh fruit with Greek yogurt is not only good but cools the taste buds and stomach.
