4: Natalie | Broccoli and Cheese Soup | 1 pound of frozen broccoli florets 1 can Rotel diced tomatoes 32 oz. Reduced fat, low sodium chicken broth 10 oz. 2% Velveeta Light, cubed Add the first three ingrediants in a soup pot. Bring to a boil. Reduce and simmer for 1 hour. Remove from heat and add cheese, stirring until melted. If you prefer a smoother soup you can blend it in a blender. | 65 min. | 6
