2: Meet the Teacher Night at Shackelford Elementary | Thomas Gilbert Kindergarten - K2 | Mrs. Nutt | Shackelford

4: We went to the State Fair of Texas for the first time. We rode the DART train to the Fair. We went to the auto show, a dog show, saw farm animals and sea animals, and we enjoyed some different foods. We rode the ferris wheel. Tommy loved seeing all of downtown Dallas.

5: Todd tried fried beer, but didn't like it much. Tommy and I tried fried chocolate. It was absolutely delicious! We also tried some fried corn dogs and fries which were tasty.

6: That Chocolate Cake | Ingredients: FROSTING: 1 1/4 cups granulated sugar 1 cup heavy cream 5 ounces 99% unsweetened chocolate, finely chopped 8 tablespoons unsalted butter, cut into 1/2-inch pieces 1 teaspoon vanilla extract CAKE: 2 cups granulated sugar 1 3/4 cups all-purpose flour 3/4 cup unsweetened cocoa powder 1 teaspoon salt 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 2 large eggs, lightly beaten 1/2 cup canola oil 1 cup whole milk 1 cup boiling water | FOR THE FROSTING: In a small saucepan, combine the sugar and cream and bring to a boil over medium heat, stirring occasionally. Reduce the heat and simmer for 6 minutes. Add the chocolate and butter and stir until melted. Pour into a bowl and stir in the vanilla. Let the frosting cool, whisking gently from time to time. Don't overwhip, or you'll create air bubbles. FOR THE CAKE: Position a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly butter and flour two 9-inch round cake pans. In the bowl of a stand mixer fitted with the paddle attachment, combine the sugar, flour, cocoa, salt, baking powder, and baking soda, mixing on low speed Mix in the eggs, oil, and milk. Increase the speed to medium and beat for two minutes. Reduce speed to low and mix in the water. The batter will be soupy. Divide the batter between the cake pans. Bake for 30 to 35 minutes, or until a skewer inserted in the center comes out clean. Remove from the oven and cool on a cooling rack for 5 minutes, then turn the layers out onto a cooling rack to cool completely. When the cakes have cooled, check the frosting. It should have the consistency of mayonnaise. If it is still too thin, allow it to cool longer. TO FROST THE CAKE: Place one cake layer on a serving plate. Spread the frosting with a hot palette knife or icing spatula to give the frosting a beautiful shine: Run the knife under hot tap water and dry with a towel. Spread about 3/4 cup of frosting over the top of the first layer.. Top with the second layer. Spread the remaining frosting over the top and sides of the cake, heating the knife again as necessary.

9: Thomas' class dressed up like Indians and had an Indian Pow-Wow. They ate popcorn, got their faces painted, made bead bracelets, and played Indian games. Thomas made a cute little Indian!

11: A Day to Give Thanks

13: Thomas (actually Mommy) sold 15 boxes of cookie dough which earned Thomas a limo ride to CiCi's for pizza. He also earned one hour playing in the bounce houses in the gym. He had so much fun!

14: The Dallas Arboretum We visited the Arboretum before Christmas. We enjoyed the beautiful scenery. Thomas sat on Santa's lap and enjoyed cookies and milk from Mrs. Clause.

18: "Families are like fudge ... mostly sweet with a few nuts."


20: Fort Worth & Dallas Museums

21: Thomas loves spending time at museums. He loves to build, play, and explore. We visited the planetarium and IMAX theater. We love our membership!

22: Thomas' Cities

23: Thomas enjoys building cities from anything. | Thomas wants to be an architect.

24: Thomas "the future architect" loves to draw cities.

25: Thomas is a very lucky little boy. He has a bedroom with a play kitchen and grocery store. He also has a playroom where he builds cities.

26: We took Tommy to the Fort Worth museum for his birthday. We had so much fun taking pictures. We also played with a huge light bright!

27: Thomas built his first Build-a-Bear. He created a dog named Red Racer. Red Racer has become his new best friend! | Red Racer Owner: Thomas Gilbert | Born: January 2, 2011


29: Tommy had his birthday dinner at Genghis Grill. It is his favorite place to eat.

30: We had 5 snow days this year! We spent 3 whole days stuck in our house. We put on lots of clothes, put a fire in the fireplace, and ate lots of soup. We also made some snow ice cream! We could not believe all the ice and snow we got!

32: Baxter joined our family in March | Baxter | His first night with us he got out of the backyard. We didn't find him until 5 pm the next day. We were so glad to have him back.

33: The Dallas Zoo

35: EASTER | happy | Spring Time

36: Thomas played t-ball with the Orioles this year. He had a great year and improved so much! | Orioles

37: Go Orioles! | Way to go Tommy!
